This eggless and gluten-free treat begins with a simple caramel made from sugar and water, which is carefully cooked until it reaches a golden amber hue. The caramel coats the bottom and sides of the ramekins, creating a beautiful, glossy layer that will crown the dessert when inverted.

The vanilla panna cotta mixture is poured over the set caramel in the ramekins. After chilling for several hours, the panna cotta firms up to a perfectly silky texture. 

When ready to serve, invert the ramekins onto plates, revealing the delightful caramel layer now sitting atop the panna cotta. This dessert is not only delicious but also looks beautiful, especially when garnished with fresh berries and sprigs of rosemary or mint. The freshness of the berries and herbs adds a vibrant contrast to the rich, creamy caramel panna cotta.

How to make Caramel Panna Cotta

Begin by preparing the caramel. Place the sugar and water in a saucepan over medium-high heat, and cook without stirring until the sugar dissolves and takes on a caramel color. Immediately divide the caramel among 4 ramekins, each with a capacity of 4-5 oz (120-150ml). Rotate the ramekins to coat the bottoms and sides with the caramel, then set them aside.

Next, prepare the panna cotta. Dissolve the gelatin in 2 tablespoons of cold water and let it swell for 5 to 10 minutes. In a medium saucepan, bring the cream, milk, sugar, salt, and vanilla to a simmer over medium-low heat, ensuring it does not boil. Once the sugar has dissolved, remove the mixture from the heat and let it cool for 5 minutes before adding the bloomed gelatin. Stir until the gelatin has completely dissolved.

Evenly divide the panna cotta mixture into the caramel-coated ramekins. Refrigerate for at least 4 hours or overnight to allow the panna cotta to set.

When ready to serve, dip each ramekin into a bowl of hot water for about 30 seconds to loosen the caramel. Run a sharp knife around the edges of the panna cotta, then invert each ramekin onto a plate. Garnish with fresh berries and sprigs of fresh rosemary or mint

Ingredients

For the caramel

  • 1/2 cup (100g) sugar
  • 2 tbsp (30ml) water

For the panna cotta

  • 7 fl oz (200ml) milk
  • 7 oz (200g) whipping cream
  • 1/2 tbsp (5g) gelatin powder
  • 2 tbsp (30ml) water , for soaking the gelatin
  • 1/4 tsp (1g) salt
  • 1/4 cup (50g) sugar
  • 1 tsp (5g) vanilla extract

Instructions

Prepare the caramel.

  • Place the sugar and water in a saucepan over medium-high heat, and cook without stirring until the sugar dissolves and gets a caramel color.

Perfect for breakfast, a midday snack, or a post-dinner dessert, our healthy oatmeal brownies are a great addition to any diet.

How to make oatmeal brownies

Begin by preheating the oven to 350°F (180°C). Butter the sides and bottom of an 8-inch (20 cm) square baking pan and line it with parchment paper for easy removal.

In a large bowl, whisk together the eggs and honey until well combined. Add the vanilla extract and peanut butter (or vegetable oil) and mix well to combine. Incorporate the buttermilk, continuing to mix until the batter is smooth.

Next, add the salt, baking powder, cocoa powder, and oats to the bowl, mixing well to ensure all ingredients are evenly distributed. Fold in ⅓ cup (60g) of chocolate chips or chunks, blending them into the batter.

Pour the batter into the prepared pan, spreading it evenly. Sprinkle the remaining chocolate chips or chunks on top for an extra chocolatey finish.

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Allow the brownies to cool slightly before serving. Enjoy these delicious, chocolatey treats warm or at room temperature.

Picture ripe strawberries that are gently simmered and turned into a smooth puree. Mix this strawberry sauce with a custard mixture made from egg yolks, milk, sugar, and flour. Then, fluffy egg whites are whipped into clouds of airy perfection, creating a light and airy base. The two are delicately folded together and baked to golden perfection. The soufflé rises in the oven filling the air with its heavenly aroma.

As you take your first spoonful, the delicate crust gives way to reveal a creamy interior, that simply melts in your mouth.

Enjoy the soufflés right away, sprinkled with powdered sugar. Remember that soufflés will start to deflate once taken out of the oven.

Why making custard base souffle

A souffle made with custard incorporates a cooked custard base, usually made with egg yolks, milk, sugar, and flavorings. The custard base gives the souffle a richer and creamier texture compared to the version made only with egg whites. It also provides a more pronounced flavor base.

When baking, the souffle made with custard tends to have a denser and more velvety texture compared to the lighter and airier texture of the egg white-only souffle.

How to make strawberry souffle

Start with preparing the strawberry sauce. Put strawberries, sugar, and lemon juice in a small saucepan over medium heat. Let them boil and cook for about 5 minutes until they thicken slightly. Remove from heat, then strain to remove seeds. Allow it to cool.

Preheat your oven to 375 F (190C) and place a baking sheet in the middle rack.

Grease 4 ramekins (each 8 oz or 230ml) with butter, brushing in upward strokes. Coat the bottom and sides with sugar, shaking off excess.

Separate egg whites from yolks, setting aside until needed. In a saucepan, bring milk to a simmer.

In another saucepan, mix yolks with ¼ cup sugar until slightly pale. Add flour and whisk to combine. Gradually pour about a third of the hot milk over the egg yolk mixture to temper them. Add the rest of the milk and return to heat. Bring to a boil, stirring continuously; cook 1-2 minutes more or until thickened.

Remove from heat, stir in vanilla extract, and transfer mixture to a larger bowl. Let it cool slightly.

Once cooled, mix with the strawberry sauce. Optionally, add red food coloring.

In a separate bowl, whip whites with a pinch of salt until foamy. Gradually add remaining ¼ cup of sugar and continue whipping until stiff peaks form. Gradually fold whipped whites into the yolk mixture.

Divide mixture evenly into prepared ramekins. Run your finger around the inside edge of the ramekin.

Place ramekins onto preheated baking sheet and bake for 15-20 minutes until golden and puffed.

Dust with powdered sugar and serve immediately.

Instructions

Prepare the strawberry sauce.

  • Place strawberries, sugar and lemon juice in a small saucepan and place over medium heat, bring to a boil and cook for about 5 minutes until slightly thickens. Remove from heat and sieve to remove seeds. Let cool.

Prepare the souffle batter

  • Preheat the oven to 375 F (190C). Place a baking sheet on the middle rack in the oven.
  • Grease with butter 4 ramekins of 8 oz (230ml) capacity using a brush and making upward strokes (seems this step helps the souffle rise evenly). Coat the bottom and sides with sugar. Discard excess sugar.
  • Separate whites from yolks and set aside until ready to use.
  • In a medium saucepan bring milk to a simmer.
  • In another saucepan mix yolks with ¼ cup sugar until slightly pale. Add flour and whisk to combine. Pour about a third of the hot milk over the egg yolk mixture to temper the yolks. Add the rest of the milk and return to heat. Bring to a boil, stirring continuously; cook 1-2 minutes more or until thickened.
  • Remove from heat and stir in vanilla extract. Transfer the mixture to a larger bowl and let cool slightly.
  • When cooled, mix with strawberry sauce. Add red food coloring if desired, that is optional.

Ingredients

Chocolate Choux Pastry

  • 2/3 cup (80g) all-purpose flour
  • 1/3 cup (40g) cocoa powder
  • 3.5 oz (100ml) milk
  • 3.5 oz (100ml) water
  • 2 tsp (10g) sugar
  • 1/2 tsp (2g) salt
  • 5 ½ tbsp (80g) unsalted butter
  • 4 eggs

Chocolate Cream Cheese Frosting

  • 7 oz (200g) semisweet chocolate
  • 1/2 cup (120g) whipping cream
  • 9 oz (250g) cream cheese , room temperature
  • 1/3 cup (40g) powdered sugar
  • 1 tsp (5g) vanilla extract
  • 1 ¼ cup (300g) whipping cream (35% fat) , chilled

Instructions

Prepare the chocolate choux pastry.

  • Preheat the oven to 350F (180C).
  • Sift the flour and cocoa powder. In a saucepan bring the milk, water, sugar, salt and butter to a boil.
  • Remove from heat and add flour mixture all at once and incorporate mixing energetically with a wooden spoon until homogenous.
  • Return the saucepan over low heat and while stirring cook for 1 minute or two to pull out the moisture from the batter and until it pulls away from the sides of the pan. You will see some of the dough sticks to the bottom of the pan.
  • Transfer the batter to a large bowl and allow to cool slightly. Add the eggs one at a time, carefully incorporating each into the batter using a wooden spoon or even a stand mixer. It will result in a smooth, homogenous batter that still holds its shape.
  • Transfer the batter to a large pastry bag fitted with a large ½ inch (1cm) round tip and pipe the dough into 1- 1 1/2 inch (3-4 cm) circles on a parchment paper-lined baking sheet.
  • Bake for 25-30 minutes until browned and puffed.
  • Prick each with a skewer to release steam and allow to cool on a wire rack.
  • Cut the top of the cream puffs.

Prepare the chocolate cream cheese frosting.

  • Place chocolate and 1/2 cup (120g) cream into a heatproof bowl and place over a pan with simmering water. Melt over low heat. Let cool to room temperature.
  • In a large bowl mix cream cheese until smooth. Add powdered sugar and vanilla extract and mix to combine. Mix in melted chocolate.
  • Add whipping cream and mix until stiff peaks form.
  • Transfer the frosting to a piping bag fitted with a 1M tip and pipe the frosting to fill the cream puffs. Top with the choux pastry caps.
  • Dust with powdered sugar and enjoy!

Cream puffs are best enjoyed fresh, but if needed to store, refrigerate them in an airtight container. Keep in mind that refrigeration may cause slight sogginess, so consume within a day or two for the best texture. These cream puffs also freeze well, but, if freezing, be aware that the texture may change slightly upon thawing.

How to make mini chocolate cheesecakes

Begin by preheating the oven to 320F (160C). Now, let’s prepare the crust. Place the Oreo cookies into the bowl of a food processor and crush them until crumbs form. Add melted butter and process until evenly moistened. Divide the mixture evenly into the bottom of 12 muffin cup liners and press firmly using the back of a spoon. Bake for 5 minutes, then remove and let cool slightly.

Next, prepare the cream cheese filling. Melt chocolate over a bain-marie and let it cool slightly before going further. In a large bowl, mix cream cheese with sugar, salt, cocoa powder, and vanilla extract until smooth. Add eggs one at a time until well incorporated. Add the sour cream and mix to combine. Then, add the melted chocolate and mix again to combine, being careful not to overmix and incorporate as little air as possible. Divide the filling evenly over the prepared 12 cups. Bake for about 17-20 minutes. Let cool in the pan at room temperature, then refrigerate the mini cheesecakes for at least 4-6 hours or overnight.

Now, prepare the chocolate ganache. Melt chocolate and cream over a bain-marie. Spoon the ganache on top of the cheesecakes. Refrigerate for 10-15 minutes to set. Decorate with cocoa whipped cream and fresh raspberries.

Each spoonful is a burst of fruity delight, perfectly balanced with the subtle sweetness of the vanilla.

Assembling the cake is easy, as we top the vanilla strawberry sponge with some strawberry jam and then with the strawberry yogurt mousse, creating a beautiful contrast of colors and textures. Finally, we top it off with fresh strawberries, vanilla wafer rolls and a dust of powdered sugar, adding the perfect finishing touch to this delectable dessert.

Strawberry Yogurt Mousse Cake

How to make strawberry yogurt mousse cake

The recipe for this Strawberry Yogurt Mousse Cake is easy and quick to prepare. Begin with preparing the sponge cake and while the cake is baking continue with the strawberry sauce. Let them both cool completely and prepare the strawberry yogurt mousse. Assemble the cake and let it set for 4-6 hours in refrigerator. Decorate as desired and enjoy!

How to prepare the strawberry vanilla sponge cake

To make the strawberry sponge cake, start by preheating your oven to 340°F (170°C). Grease and line the bottom of an 8-inch (20 cm) pan with parchment paper.

Next, separate the egg whites from the yolks. In a medium bowl, mix the yolks with 1/4 cup (50g) of sugar, lemon zest, and vanilla extract until creamy and pale yellow. Gradually mix in oil and then add water. Incorporate the baking powder and flour into the yolk mixture, and set it aside.

In a large bowl, mix the egg whites with salt until foamy. Gradually add the remaining 1/4 cup sugar (50g) and continue mixing until soft peaks form. Gently fold a spoonful of whipped whites into the yolk mixture, then gently fold the yolk mixture into the whipped whites.

Toss the chopped strawberries with 2 tablespoons of flour, then gently fold them into the batter. Pour the batter into the prepared pan and bake for 35-40 minutes, until a toothpick inserted into the center comes out clean. Let it cool for about 10 minutes, then remove from the pan and cool completely on a rack.

How to prepare the strawberry sauce

While the cake is cooling, prepare the strawberry sauce by placing chopped strawberries, sugar, and lemon juice in a small saucepan over medium heat. Bring to a boil and cook for about 10 minutes until thickened. Remove from heat and set aside to cool. Reserve 3 tablespoons (45g) of the strawberry sauce.

How to prepare the strawberry yogurt mousse

To prepare the strawberry yogurt mousse, dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Dissolve over low heat and pour over the remaining strawberry sauce. Mix to combine. In a large bowl, mix yogurt with powdered sugar. Add the strawberry gelatin mixture and mix to combine. In another bowl, whip the chilled whipping cream until stiff peaks form, then gradually fold it into the strawberry yogurt mixture.

How to assemble the cake

To assemble the cake, invert it onto a serving platter and spread the reserved 3 tablespoons of strawberry sauce evenly over the cake. Place a cake ring around the cake and line an acetate sheet around it. Pour the strawberry yogurt mousse over the cake and smooth the top. Refrigerate for at least 4-6 hours or overnight.

Before serving, decorate the cake with fresh strawberry halves and vanilla wafer rolls, and dust with powdered sugar.

Ingredients

Strawberry Sponge Cake

  • 2 eggs , separated
  • 1/2 cup (100g) sugar , divided
  • Lemon zest of a lemon
  • 1/2 tsp (3g) vanilla extract
  • 3 tbsp (45ml) vegetable oil
  • 3 tbsp (45ml) water
  • 3/4 cup + 1 tbsp (110g) all-purpose flour
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1g) salt
  • 9 oz (250g) fresh strawberries , chopped
  • 2 tbsp (20g) all-purpose flour , for tossing

Strawberry Sauce

  • 10 oz (300g) fresh or frozen strawberries
  • 1/3 cup (70g) sugar
  • 2 tbsp (30ml) lemon juice

Strawberry Yogurt Mousse Cake

  • 2 ¼ tsp (7g) gelatin powder
  • 3 tbsp (45g) cold water
  • 9 oz (250g) Greek yogurt
  • 1/4 cup (30g) powdered sugar
  • 1 ¼ cup (300ml) whipping cream

For Decoration

Instructions

Prepare the strawberry vanilla sponge cake.

  • Preheat the oven to 340F (170C). Grease and line the bottom of an 8-inch (20 cm) pan with parchment paper.
  • Separate whites from yolks.
  • In a medium bowl mix yolks with 1/4 cup (50g) sugar, lemon zest and vanilla extract, until creamy and pale yellow colored. Gradually mix in oil and then add water.
  • Incorporate the baking powder and flour into the yolk mixture and set aside.
  • In a large bowl mix egg whites with salt until foamy. Gradually add the remaining 1/4 cup sugar (50g).
  • Continue mixing until soft peaks form.
  • Gently fold a spoon of whipped whites into the yolk mixture and then gently fold the yolk mixture into the whipped whites.
  • Place the chopped strawberries into a bowl and toss with 2 tablespoons of flour.
  • Gently fold the strawberries into the batter.
  • Pour the batter into the prepared pan.
  • Bake for 35-40 minutes, until a toothpick inserted into the center comes out clean.
  • Let it cool for about 10 minutes. Remove from the pan and cool completely on a rack.

Meanwhile, prepare the strawberry sauce.

  • Place chopped strawberries, sugar and lemon juice in a small saucepan and place over medium heat, bring to a boil and cook for about 10 minutes until thickens. Remove from heat and set aside to cool.
  • Reserve 3 tablespoons (45g) of strawberry sauce.

Prepare the strawberry yogurt mousse.

  • Dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Dissolve over low heat and pour over the remaining strawberry sauce. Mix to combine.
  • In a large bowl mix yogurt with powdered sugar. Add strawberry gelatin mixture and mix to combine.
  • In another bowl whip the chilled whipping cream until stiff peaks form. Gradually fold into the strawberry yogurt mixture.

Assemble the cake.

  • Invert the cake onto a serving platter.
  • Spread the reserved 3 tablespoons of strawberry sauce evenly over the cake.
  • Place a cake ring around the cake. Line an acetate sheet around the cake and pour the strawberry yogurt mousse over the cake. Smooth the top.
  • Refrigerate for at least 4-6 hours or overnight.
  • Decorate the cake with fresh strawberry halves and vanilla wafer rolls. Dust with powdered sugar. Enjoy!

How to make Raspberry Chocolate Brownies

Begin by preheating the oven to 350F (180C). Butter the sides and bottom of an 8-inch (20 cm) square baking pan, and line it with parchment paper.

Next, melt the chocolate and butter in a medium bowl over a bain-marie, stirring occasionally until smooth. Turn off the heat, but keep the bowl over the water, and stir in the sugar. Remove the bowl from the pan.

Now, add the eggs one at a time to the mixture, whisking until well combined. Stir in the vanilla extract, then add the flour, salt, and cocoa powder, stirring well. Finally, mix in the chopped chocolate and fresh raspberries.

Pour the batter into the prepared pan and bake for about 25-30 minutes until a toothpick inserted in the center comes out with a few moist crumbs sticking to it.

Allow the brownies to cool completely, then carefully lift the parchment out of the baking pan. Cut them into squares and serve.

 In a saucepan, combine the milk and whipping cream over medium heat until it begins to simmer. Pour this hot mixture over the chocolate. Wait for a minute, then stir until the chocolate is completely melted and well mixed.

In a separate bowl, whisk together the egg yolks, sugar, salt, vanilla extract, and, if desired, instant coffee powder. Gradually pour the melted chocolate mixture into the egg yolk mixture, stirring continuously. Sieve the combined mixture for a smooth texture.

Arrange six ramekins in a baking pan, 5 fl. oz (150ml) capacity each. Divide the chocolate mixture evenly among the ramekins. Pour hot water into the baking pan until it reaches halfway up the sides of the ramekins. Bake for 30 minutes.

Allow the pots de crème to cool, then refrigerate for at least 4 hours or overnight. Before serving, feel free to decorate as you like, or simply serve and enjoy this delightful treat!
