This Caramel Panna Cotta is a sophisticated and delicate Italian dessert that combines the creamy elegance of panna cotta with the rich, deep flavor of caramel. It is a delectable finish to any meal, whether it’s a casual dinner or a special occasion. 

This eggless and gluten-free treat begins with a simple caramel made from sugar and water, which is carefully cooked until it reaches a golden amber hue. The caramel coats the bottom and sides of the ramekins, creating a beautiful, glossy layer that will crown the dessert when inverted.

The vanilla panna cotta mixture is poured over the set caramel in the ramekins. After chilling for several hours, the panna cotta firms up to a perfectly silky texture. 

When ready to serve, invert the ramekins onto plates, revealing the delightful caramel layer now sitting atop the panna cotta. This dessert is not only delicious but also looks beautiful, especially when garnished with fresh berries and sprigs of rosemary or mint. The freshness of the berries and herbs adds a vibrant contrast to the rich, creamy caramel panna cotta.

How to make Caramel Panna Cotta

Begin by preparing the caramel. Place the sugar and water in a saucepan over medium-high heat, and cook without stirring until the sugar dissolves and takes on a caramel color. Immediately divide the caramel among 4 ramekins, each with a capacity of 4-5 oz (120-150ml). Rotate the ramekins to coat the bottoms and sides with the caramel, then set them aside.

Next, prepare the panna cotta. Dissolve the gelatin in 2 tablespoons of cold water and let it swell for 5 to 10 minutes. In a medium saucepan, bring the cream, milk, sugar, salt, and vanilla to a simmer over medium-low heat, ensuring it does not boil. Once the sugar has dissolved, remove the mixture from the heat and let it cool for 5 minutes before adding the bloomed gelatin. Stir until the gelatin has completely dissolved.

Evenly divide the panna cotta mixture into the caramel-coated ramekins. Refrigerate for at least 4 hours or overnight to allow the panna cotta to set.

When ready to serve, dip each ramekin into a bowl of hot water for about 30 seconds to loosen the caramel. Run a sharp knife around the edges of the panna cotta, then invert each ramekin onto a plate. Garnish with fresh berries and sprigs of fresh rosemary or mint

Ingredients

For the caramel

  • 1/2 cup (100g) sugar
  • 2 tbsp (30ml) water

For the panna cotta

  • 7 fl oz (200ml) milk
  • 7 oz (200g) whipping cream
  • 1/2 tbsp (5g) gelatin powder
  • 2 tbsp (30ml) water , for soaking the gelatin
  • 1/4 tsp (1g) salt
  • 1/4 cup (50g) sugar
  • 1 tsp (5g) vanilla extract

Instructions

Prepare the caramel.

  • Place the sugar and water in a saucepan over medium-high heat, and cook without stirring until the sugar dissolves and gets a caramel color.
  • Immediately, divide the caramel into 4 ramekins, each ramekin with a capacity of 4-5 oz (120-150ml).
  • Rotate the ramekins to coat the bottom and sides with the caramel.

How to make lemon basil yogurt popsicles

Begin by placing a large banana in the bowl of a blender. Add lemon zest, lemon juice, Greek yogurt, honey, and fresh basil. Blend the mixture until it becomes a smooth puree.

Next, pour the puree into popsicle molds. Insert sticks into each mold, then place them in the freezer for 4-6 hours or until completely frozen.

Once the popsicles are frozen, unmold them and enjoy your refreshing treat!

This recipe is incredibly simple to make and doesn’t contain any eggs or alcohol, making it suitable for everyone, including children, to enjoy this delightful treat.

Since it’s a no-bake dessert, it’s ideal for the summer months, perfect for any occasion, from elegant dinner parties to casual gatherings. If you’re a fan of traditional tiramisu and looking to try something new, this fruity twist on a beloved classic is sure to become a favorite.

How to make strawberry tiramisu

Start by lining the sides of an 8-inch (20 cm) square springform pan with acetate sheets. Simple pans can also be used. Prepare the ladyfingers for two layers, trimming them as needed to fit the pan perfectly.

How to prepare the strawberry sauce

Combine strawberries, sugar, lemon juice, and water in a saucepan. Bring the mixture to a boil, then let it simmer for 5-7 minutes. Once cooked, use a vertical blender to puree the sauce until smooth. Strain the sauce through a sieve to remove any seeds, then set it aside to cool completely.

How to prepare the mascarpone filling

For the mascarpone filling, in a large bowl, blend the Mascarpone cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined. Gradually add whipping cream and continue to mix until stiff peaks form.

How to assemble the strawberry tiramisu

Spread ⅓ cup (80g) of the strawberry sauce on the bottom of the prepared pan. Dip the ladyfingers into the remaining strawberry sauce and arrange them in a single layer in the pan.

Next, spread slightly less than half of the mascarpone mixture over the layer of ladyfingers, using an offset spatula to ensure an even spread. Dip the remaining ladyfingers into the strawberry sauce and arrange another layer on top of the mascarpone mixture.

Transfer the remaining mascarpone mixture into a piping bag fitted with an ½ inch (1cm) plain tip, and pipe it over the layer of ladyfingers.

Cover the pan and refrigerate the tiramisu for at least 4 hours, or preferably overnight, to allow the flavors to meld together.

Before serving, decorate the tiramisu with fresh strawberries. Remember to store any leftovers in the refrigerator to maintain freshness.

Ingredients

  • 28 ladyfingers

Strawberry Sauce

  • 14 oz (400g) fresh strawberries , hulled and cut into smaller pieces
  • 1/3 cup (70g) sugar
  • 2 tbsp (30ml) lemon juice
  • 1/4 cup (60ml) water

Mascarpone Filling

  • 1 pound (500g) Mascarpone cheese , room temperature
  • 2/3 cup (80g) powdered sugar
  • 2 tsp (10g) vanilla extract
  • 1 ½ cups (360g) whipping cream (35% fat) , chilled

For Decoration

Instructions

  • Line the sides of an 8-inch (20 cm) square springform pan with acetate sheets.
  • Have the ladyfingers ready, trimming them as needed to fit the pan perfectly.

Prepare the strawberry sauce.

  • In a saucepan add the strawberries, sugar, lemon juice and water.

 What sets this fudge apart is its distinctive recipe, made without sweetened condensed milk, offering a lighter, less overwhelmingly sweet experience.

With its simplicity and unique ingredients, this fudge is sure to become a centerpiece of your festive celebrations, bringing joy and sweetness to every gathering.

How to make coconut fudge

Begin with preparing the caramelized coconut. In a medium skillet over medium-high heat, combine sugar and water. Let it cook without stirring until the sugar dissolves and turns caramel-colored. Add shredded coconut and stir continuously for about 1 minute until it becomes golden brown. Remove from heat, transfer to a bowl, and set aside to cool.

Now, move on to making the fudge. Grease an 8-9 inch (20-23cm) square pan with butter and set it aside. In a medium bowl, whisk together powdered milk and salt. In a medium saucepan, bring water and sugar to a boil. Simmer over low heat for 10 minutes, then add butter. Stir until the butter melts, and remove from heat. Add vanilla extract and stir to combine.

Pour the syrup over the powdered milk mixture and mix until well blended. Reserve ⅔ cup (50g) of caramelized coconut for the topping. Fold in the remaining caramelized coconut and unshredded coconut. Pour the mixture into the prepared pan and sprinkle the reserved caramelized coconut on top. Allow it to cool completely at room temperature.

Once cooled, cut the fudge into pieces and serve.

Ingredients

Oreo Hazelnut Crust

  • 7 oz (200g) Oreo cookies
  • 1/4 cup (60g) butter , melted
  • 1/4 cup (40g) toasted hazelnuts
  • 1/4 tsp (1g) salt

For Hazelnut Praline – makes 2/3 cup (160g) paste

  • 3.5 oz (100g) toasted hazelnuts
  • 1/3 cup (70g) sugar
  • 1 tbsp (15ml) water

Chocolate Hazelnut Praline Filling

  • 7 oz (200g) semisweet chocolate
  • 7 oz (200g) whipping cream
  • 1 tsp (5g) vanilla extract
  • 2/3 cup (160g) hazelnut praline
  • 1/4 tsp (1g) salt

For Decoration

  • toasted hazelnuts
  • flaky sea salt
Makes: 8inch round

Instructions

Prepare the crust.

  • Grease with butter an 8-inch (20cm) pie or tart pan.
  • If your hazelnuts are raw, toast them in the oven or stovetop before going further with the recipe. For this, preheat the oven to 300F (150C). Place the nuts on a baking sheet and let them toast for 15 minutes. You can also toast them in a skillet, over medium heat, and keep stirring until fragrant.
  • Place the hazelnuts for the crust into the bowl of a food processor. Process until ground.
  • Add Oreo cookies and continue to process until crumbs form. Add melted butter and salt and process until evenly moistened.
  • Press the mixture with the back of the spoon and your fingers where necessary, into the bottom and edges of the pan. Refrigerate until you prepare the filling.

Prepare the hazelnut praline.

  • Place the toasted hazelnuts into a parchment paper-lined baking tray.
  • In a small saucepan heat sugar and water over medium-high heat until it turns golden brown. Pour the caramel over toasted hazelnuts and let cool completely. Break the praline into smaller pieces.
  • Grind in a food processor until it gets into a thick paste, for about 10 minutes. You will get ⅔ cup (160g) of hazelnut praline. Set aside.

Prepare the chocolate hazelnut praline filling.

  • Place chocolate and cream in a heatproof bowl and place over a pan with simmering water. Melt over low heat.
  • Remove from heat and add vanilla extract and salt. Mix to combine.
  • Add the hazelnut praline and mix to combine.

How to make Biscoff Chocolate Bars

For the cookie layer, begin by placing the cookies into a food processor. Give them a whirl until they become crumbs. 

Now, add in the Biscoff spread and melted butter. Process everything until they mix perfectly and the mixture sticks together.

Ready your 8-inch (20cm) square pan by giving it a light greasing. Lay parchment paper inside, making sure to let some hang over the edges. This clever trick will help you lift the treat easily once it’s ready.

Pour the combined mixture into the pan. Press it down with the back of a spoon. Pop it in the freezer while you prepare the chocolate topping.

For the chocolate layer, melt chocolate over a gentle bain-marie method, with 2 tablespoons of Biscoff spread and 2 tablespoons of cream to make it extra luscious. Once it’s all smooth, spread this melted chocolate over the cookie layer.

Chocolate Cream Cheese Filling

  • 4 oz (120g) semisweet chocolate
  • 1/4 cup (60g) whipping cream
  • 9 oz (250g) cream cheese , room temperature
  • 3 tbsp (24g) powdered sugar
  • 1 tsp (5g) vanilla extract
  • 1/3 cup (80g) whipping cream (35% fat) , chilled

Raspberry Sauce

  • 5 oz (150g) raspberries , fresh or frozen
  • 2 tbsp (30g) sugar
  • 1 tbsp (15g) lemon juice
  • 2 tsp (6g) cornstarch

  • Grease with butter a 8-inch (20cm) pie or tart pan.

Prepare the raspberry sauce.

  • In a small saucepan add raspberries, sugar, lemon juice and cornstarch and bring to a boil over medium-high heat, stirring constantly.
  • Simmer for about 5-10 minutes or until thickens. Remove from heat and set aside to cool down until ready to use.

Prepare the crust.

  • Place the Oreo cookies into the bowl of a food processor. Blend until crumbs form. Add melted butter and process until completely combined.
  • Press the mixture with the back of the spoon and your fingers where necessary, into the bottom and edges of the pan. Refrigerate for 15 minutes.
  • Spread the raspberry sauce over the crust. Freeze until you prepare the chocolate filling.

Prepare the chocolate cream cheese filling.

  • Place semisweet chocolate and ¼ cup (60g) cream into a heatproof bowl and place over a pan with simmering water. Melt over low heat. Let cool to room temperature.
  • In a large bowl mix cream cheese until smooth. Add powdered sugar and vanilla extract and mix to combine. Mix in the melted chocolate. Add whipping cream and continue mixing until stiff peaks form.

Assemble the pie.

  • Cover the raspberry sauce with the chocolate cream cheese filling. Smooth the top.
  • Refrigerate the pie to set for about 4-6 hours or even overnight.
  • Decorate with fresh raspberries, chocolate mini rocks and dust with powdered sugar. Enjoy!
