How to make apple crumble muffins

Begin by preheating the oven to 375°F (190°C) and lining a 12-cavity muffin pan with paper liners. Peel, core, and chop the apples into small pieces, tossing them with a tablespoon of flour in a medium bowl. This little trick will help keep the apples from sinking to the bottom of the muffins. Set aside.

In another bowl, whisk together flour, baking powder, cinnamon, and salt. In a large bowl, mix eggs with sugar and vanilla extract. For the best results, make sure the eggs are at room temperature. Start mixing slowly at first, then increase speed until the mixture becomes creamy and fluffy. Gradually, begin to incorporate the oil, pouring it in a slow, steady stream while you continue to mix.

Next, slowly alternate adding the dry ingredients and buttermilk into the wet mixture, a little at a time. Be careful not to overmix, as we want to keep the batter light and airy. Once everything is just combined, go ahead and add the apple pieces. Using a spatula, gently fold them into the batter. Take your time to ensure the apple pieces are evenly distributed throughout, so every bite is packed with juicy apples.

Divide the batter evenly into the muffin cups,  filling them just below the top.

How to make the crumb topping

For the crumb topping, combine sugar, flour, cinnamon, and melted butter in a medium bowl, until the mixture forms a nice, crumbly texture. 

Sprinkle the crumbs on top of each muffin, ensuring they’re all well-covered for that perfect crunchy finish on every bite. 

Bake for about 25 minutes, or until golden and a toothpick comes out clean.  Once done, let them cool slightly, just enough so they’re warm but not too hot.

  • 10 oz (300g) apples , about 2 medium apples, peeled and diced 
  • 1 tbsp (10g) flour , for tossing the apples

Muffin Batter

  • 1 ¾ cups (220g) all-purpose flour
  • 2 ½ tsp (10g) baking powder
  • 1/4 tsp (1g) salt
  • 1 tsp (3g) cinnamon
  • 2 eggs
  • 2/3 cup (135g) sugar
  • 1 tsp (5g) vanilla extract
  • 1/2 cup (110ml) vegetable oil
  • 1/2 cup (120g) buttermilk

Crumb Topping

  • 3 tbsp (45g) sugar
  • 1/4 cup (30g) all-purpose flour
  • 1/2 tsp (2g) cinnamon
  • 2 tbsp (30g) butter , melted or softened

Instructions

  • Preheat the oven to 375F (190C). Line a 12-cavity muffin pan with paper liners.

  • Transfer the apple pieces to a medium bowl and toss with one tablespoon of flour. Set aside until ready to use.
  • In a medium bowl whisk together flour with baking powder, cinnamon and salt.

  • Incorporate the flour mixture alternating with the buttermilk.
  • Don’t overmix the batter.
  • Gently fold the apples into the batter.

  • In a medium bowl combine sugar with flour, cinnamon and melted butter. Divide the crumbs on top of each muffin.

Begin with preheating your oven to 375F (190C) and lining a 12-cavity muffin pan with paper liners. In a bowl, mix flour with salt, cinnamon, ginger, nutmeg, cloves, baking powder, and baking soda. Set this mix aside.

In a large bowl, whisk 2 eggs with sugar until well blended. Add oil and mix to combine. Add pumpkin and vanilla extract, mixing well. Stir in the flour mixture until combined; avoid overmixing and set it aside.

Now, let’s prepare the cream cheese filling. Mix cream cheese with sugar, egg yolk, and vanilla extract. Spoon a generous amount of the pumpkin mixture into the muffin cups. Divide the cream cheese mixture evenly and top it with the remaining pumpkin batter.

Moving on to the crumb topping, in a medium bowl, combine sugar with flour, cinnamon, and melted butter. Divide the crumbs on top of each muffin.

  • 1/4 cup (30g) all-purpose flour
  • 2 tbsp (30g) sugar
  • 1/4 tsp (1g) cinnamon
  • 2 tbsp (30g) butter , melted

Instructions

  • Preheat the oven to 375F (190C). Line a 12-cavity muffin pan with paper liners.

Prepare the pumpkin batter.

  • In a bowl mix the flour with salt, cinnamon, ginger, nutmeg, cloves, baking powder and baking soda. Set aside.
  • In a large bowl, whisk the 2 eggs with sugar until well blended. Add oil and mix to combine. Add pumpkin puree and vanilla extract and mix well. (For pumpkin puree see the notes below)

  • Add the melted butter and mix to combine.

Assemble the muffins.

  • Spoon a large spoon of pumpkin mixture into the muffin cups.
  • Divide the cream cheese mixture evenly.
  • Top with the remaining pumpkin batter.
  • Divide the crumbs on top of each muffin.
  • Bake for about 20-25 minutes until golden brown and a toothpick inserted into the center comes out clean.
  • Cool muffins on a wire rack. Enjoy!

Notes

For pumpkin puree, I always like to use fresh roasted pumpkin. I never use canned pumpkin. I usually roast a whole pumpkin in advance and save some for later. Cut the pumpkin into thick slices and place on a parchment paper-lined baking sheet. Bake at 350F (180C) for about 45 minutes to 1 hour or until tender. Let it cool down. Scoop out the pulp and puree in a food processor until smooth. Refrigerate the puree or freeze it for later use.

  • 2 cups (250g) all-purpose flour
  • 2 tsp (8g) baking powder
  • 1/2 tsp (3g) salt
  • 2 large eggs
  • 1 cup (240g) buttermilk
  • 1 cup (110g) zucchini , grated
  • 1 cup (100g) Cheddar cheese , grated
  • 1/4 cup (60g) butter , melted
  • 1 green onion , chopped

Instructions

  • Preheat the oven to 375°F (190°C). Butter and dust with flour a muffin tray or grease the pan and line with paper cups. Make sure you don't skip this step otherwise the cheese might stick to the pan or paper cups.
  • In a bowl, whisk together the dry ingredients, flour, baking powder and salt.
  • In another bowl mix the eggs with buttermilk and melted butter.
  • Incorporate the flour mixture.
  • Stir in the grated cheese and grated zucchini.
  • Spoon the batter into the muffin cups. Sprinkle grated cheese and freshly ground black pepper on top.
  • Bake for about 20-25 minutes until golden brown.

These muffins are very easy to prepare. Begin by preheating your oven to 375F (190C) and lining a muffin pan with paper liners.

Use a fork to mash ripe bananas into a smooth consistency. In another medium bowl, whisk together flour, baking soda, and a pinch of salt to create a balanced dry mix.

In a larger bowl, combine sugar and eggs until creamy, ensuring a smooth blend of flavors. Add vanilla extract into the mixture and stir until harmonious.

These Mini Cheesecakes are delightful bite-sized mini desserts, perfect for upcoming Valentine’s Day. They have an Oreo crust and a creamy, tangy cream cheese filling and are beautifully and simply decorated with whipped cream and fresh strawberry heart slices. With their creamy texture and rich flavor, these mini cheesecakes are a dessert that is sure to please.

How to make Mini Cheesecakes 

These petite desserts are very easy to make and require less time of baking than a regular cheesecake. 

First, prepare the crust. Place the cookies in the bowl of a food processor and blend until crumbs form. If you don’t have a processor, place the cookies into a zip bag and press with a rolling pin until crumbs form. 

Add melted butter over the cookie crumbs and mix until evenly moistened. Divide the mixture evenly into the bottom of 12 muffin cup liners and press firmly using the back of a spoon. Bake for 5 minutes and let cool slightly before adding the cream cheese filling. 

Mini Cheesecakes with Oreo Crust and whipped cream topping

For the cream cheese filling, mix the cream cheese with sugar, salt, and vanilla extract until well combined. Add eggs one at a time until fully incorporated and mix in the sour cream. This will take just a few minutes as it is important to not overmix the mixture and to incorporate as less air as possible. Otherwise, the cheesecakes might crack in the oven. 

Divide the cream cheese filling over the baked crust and bake the mini cheesecakes at a low temperature for 18-20 minutes. Remove from the oven and let cool completely at room temperature. 

Always refrigerate the mini cheesecakes before serving for at least 4-6 hours or even better overnight.

  • Bake for 5 minutes. Remove and let cool slightly.

Prepare the cream cheese filling.

  • Reduce oven temperature to 320F (160C).
  • In a large bowl mix cream cheese with sugar, salt, and vanilla extract until smooth.
  • Add eggs one at a time, until well incorporated. Add the sour cream and mix to combine. Don’t overmix the mixture, incorporate as little air as possible.
  • Divide the filling evenly over the prepared 12 cups.
  • Bake for about 18-20 minutes.
  • Let cool in the pan at room temperature.
  • Refrigerate the mini cheesecakes for at least 4-6 hours or overnight.
  • Decorate with whipped cream and strawberry slices. Enjoy!

Muffin Pan Chocolate Brioches - Yeast Chocolate Brioches

How to make chocolate brioches. 

The recipe for these chocolate brioches is very easy. It requires only a few ingredients you usually have in your pantry. First, prepare the dough. Dissolve yeast in milk and let it rest for a few minutes to activate. 

In a large bowl combine flour with sugar and salt. Add milk, dissolved yeast, beaten egg and vanilla extract and start kneading the dough, for about 5 minutes, until smooth and slightly pulls away from the sides of the bowl. 

Add butter and continue kneading until well incorporated. Let the dough rise in a warm place for at least 1 hour or until doubled in size. 

Only now, after the first rising time, incorporate the chocolate chips. On a floured surface divide the dough into 12 equal pieces and shape into balls. Transfer to a greased muffin pan and let them rise again for 15-20 minutes. Brush with beaten egg, sprinkle the top with sugar and bake until golden brown. 

Let them cool slightly and enjoy while still a bit warm. These brioches are delightful.

Ingredients

  • cups (400g) all-purpose flour
  • 1/3 cup (70g) sugar
  • 1/2 tsp (3g) salt
  • tsp (7g) active dry yeast (or 25 g fresh yeast)
  • 1 cup (240ml) lukewarm milk
  • 1 egg , beaten
  • 1 tsp (5g) vanilla extract
  • 1/4 cup (56g) butter , softened
  • 1 cup (170g) semisweet chocolate chips

Instructions

Prepare the dough.

  • In a medium bowl add yeast, 1 tsp (5g) sugar and 1/4 cup (60ml) lukewarm milk. Let it rest for 5 minutes to activate the yeast.
  • In a large bowl whisk together the flour, sugar and salt. Add the remaining milk, dissolved yeast, beaten egg and vanilla extract. Start kneading until smooth, for about 5 minutes.
  • Add softened butter, incorporate it into the dough and continue kneading until well incorporated, smooth and pulls away from the sides of the bowl.
  • Transfer the dough into an oiled bowl and cover with plastic wrap.
  • Let the dough rest for about 1 hour at room temperature (warm space) until doubled in size.

Prepare the chocolate brioches.

  • Add chocolate chips to the dough and gently incorporate them into the dough.
  • On a floured surface turn the dough out and divide into 12 equal pieces. Roll each piece into balls.
  • Transfer the dough pieces into a 12-cup greased muffin pan. Cover with a kitchen towel and let the brioches rest for 15-20 minutes.
  • Meanwhile preheat the oven to 350°F (180°C).
  • Brush each brioche with beaten egg and sprinkle sugar on top.
  • Bake for about 20 minutes until golden brown.
  • Let cool slightly and enjoy!

These Double Chocolate Brownie Muffins are by far THE BEST chocolate muffins you can ever make. They are moist, and fudgy, with an intense chocolate flavor that all chocolate lovers will adore.

The recipe for these muffins is really easy and takes only a few minutes to prepare. I have used my recipe for Double Chocolate Brownies and adapted it to create the most decadent chocolate muffins. 

How to make double chocolate brownie muffins. 

First you need to melt the butter with some chocolate. Let it cool slightly before going further. 

In a large bowl mix eggs with sugar, vanilla extract, salt and instant coffee powder if used. Mix until creamy, thick and fluffy, for about 4-5 minutes. The coffee powder is used to intensify the chocolate flavor. If you don’t want to use it, simply leave it out. 

Now you can incorporate the melted chocolate and butter. Sift the flour and cocoa powder and gently fold them in with a spatula. Make sure you don’t overmix the batter. Now you can add the remaining chocolate chips into the batter. 

Divide the batter evenly into the 12 muffin paper cups. Bake for about 20 minutes until a toothpick inserted into the center comes out with a few moist crumbs attached. Don’t overbake as the muffins will continue to set after taking them out of the oven.

While baking, the brownie muffins will rise and crack and create that crispy top that everybody loves. While still warm, add more chocolate chips on top if desired. Let them cool slightly before serving. 

I am telling you, these muffins are a must try recipe. They are simply divine and so easy to put together.

  • 3 oz (90g) semisweet chocolate chips (55% cocoa) , for melting
  • 3/4 cup (170g) butter
  • 3 eggs
  • 1 tsp (1g) instant espresso powder
  • 1 cup (200g) sugar
  • 1/2 tsp (3g) salt
  • 1 tsp (5g) vanilla extract
  • 2 oz (60g) semisweet chocolate chips (55% cocoa)
  • 1/2 cup (60g) all-purpose flour
  • 1/3 cup (40g) unsweetened cocoa powder

Instructions

  • Preheat the oven to 350°F (180°C). Line a 12 cavity muffin pan with paper liners.
  • Melt the 3 oz (90g) semisweet chocolate and butter over a bain-marie until smooth. Let cool slightly.
  • Meanwhile mix the eggs with sugar, salt, vanilla extract and instant coffee using a whisk or mixer until thick and light yellow, for about 5 minutes.
  • Add melted chocolate and mix until well combined.
  • Using a spatula fold in the sifted flour and cocoa powder. Fold in the remaining 2 oz (60g) chocolate chips. Divide the batter equally into muffin cups.
  • Bake for about 17-20 minutes until puffed and cracked or until a toothpick inserted into the center comes out with a few crumbs attached.
  • While still warm, add more chocolate chips on top of the muffins, if desired.
  • Let cool and enjoy!

How to make Christmas Chocolate Cookie Cups

These Christmas Cookies are easy and quick to prepare. First, prepare the chocolate cookie dough. No need to refrigerate the dough before going further with the recipe. Once the dough is prepared, you can simply divide it into muffin cups. Bake and after removing them from the oven, while still warm, use a small jar to press down the center of each cookie.

While they cool you can prepare the chocolate ganache filling. For this you simply melt chocolate with cream, let it cool slightly and pipe into the cookie cups. Let them set for about 30 minutes before pipping the Mascarpone Pistachio Frosting on top of each cup.

The subtle green coloring in the frosting makes these cups resemble small Christmas trees and will surely delight your guests and kids especially. Ingredients

Chocolate Cookie Dough

  • 1 cup (125g) all-purpose flour
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 tsp (3g) baking soda
  • 1/2 tsp (3g) salt
  • 1/2 cup (113g) unsalted butter , room temperature
  • 1/3 cup (70g) packed brown sugar
  • 1/3 cup (70g) sugar
  • 1 egg
  • 1 tsp (5g) pistachio extract
  • 1/4 cup (40g) semi-sweet chocolate chips

Chocolate Ganache

  • 3.5 oz (100g) semisweet chocolate
  • 3.5 oz (100g) whipping cream

Mascarpone Pistachio Frosting

  • 1 pound (450g) Mascarpone cheese
  • 1/2 cup (60g) powdered sugar
  • 1 ½ tsp (7g) pistachio extract
  • 1/2 cup (120g) whipping cream
  • 0.3 oz (10g) green coloring paste

For Decoration

  • mini chocolate pearls

Instructions

Prepare the cookie cups.

  • Preheat the oven to 350F (180C). Grease with butter a standard muffin pan.
  • In a bowl whisk flour with cocoa powder, salt and baking soda. Set aside until ready to use.
  • In another bowl mix the butter with both sugars until creamy. Add egg and pistachio extract and mix until well incorporated.
  • Gradually incorporate flour mixture and chocolate chips.
  • Using an ice cream scoop, divide the cookie dough evenly between the 12 muffin tins.
  • Bake for 12-13 minutes. While still warm, use a small jar to press down the center of each cookie.
  • Cool on the muffin tins for about 10 minutes.
  • Transfer the cookie cups to a cooling rack to cool completely.

Prepare the chocolate ganache filling.

  • Place chocolate and cream in a heatproof bowl and place over a pan with simmering water. Melt over low heat. Let it cool slightly.
  • Fill each cup with chocolate ganache and let it set for about 20-30 minutes.

Prepare the Mascarpone Pistachio Frosting.

  • In a large bowl, beat Mascarpone with powdered sugar and pistachio extract. Add cream and continue whipping until stiff peaks form.
  • Fit a piping bag with 1M (½ inch- 1cm) large star tip. Make 4 lines of green food coloring on the inside of the piping bag.
  • Transfer the frosting into the piping bag.
  • Pipe the frosting over the cookie cups and decorate with chocolate pearls.
  • Serve or refrigerate the cupcakes until ready to serve. Let them get to room temperature before serving.
