This Easy No-Knead Focaccia is a simple, yet flavorful bread that requires minimal effort and delivers excellent results. This recipe is perfect for beginners or anyone looking for a hands-off baking experience. 

The dough is made from just a few basic ingredients: flour, water, yeast, salt, and olive oil. Instead of kneading, the dough undergoes a slow fermentation process, which allows the gluten to develop naturally over time. This method will result in a soft, airy, and chewy texture, with a slightly crispy crust.

I topped this focaccia with olive oil, cherry tomatoes, red onion, fresh rosemary and flaky sea salt. Feel free to experiment with other toppings like olives, garlic, or different herbs to make it your own!

Bake until golden brown, and you’ll have a delicious, homemade focaccia that pairs perfectly with soups, salads, or as a base for sandwiches. It’s a fuss-free, crowd-pleasing bread, perfect for any occasion.

How to make no-knead focaccia

Begin by activating the yeast in a large bowl with 2 tablespoons of lukewarm water. After 5 minutes, mix in the flour, salt, 1 ⅔ cups (400 ml) of room-temperature water, and 2 tablespoons of olive oil. Gently stir until everything is well combined. The dough will be wet and sticky at this stage. Cover the bowl tightly with plastic wrap to prevent the dough from drying out, and let it rest for 30 minutes.

Perform three sets of stretch and folds at 30-minute intervals. Wet your hands, stretch the dough upward, fold it toward the center, and rotate the bowl 90 degrees. Repeat this process for all four sides.

If you’d like, you can also incorporate the coil fold technique. With wet hands, gently lift the dough from the center and let the ends fold under themselves as the dough coils. Turn the bowl 90 degrees and repeat. This technique adds structure without overhandling the dough.

After the third set, lightly oil the dough, cover, and refrigerate for 12 hours or up to 2 days.

How to bake the focaccia

When ready, grease a 9×13 inch (23-x33cm) pan with olive oil, transfer the dough into it, and let it relax for 5 minutes. Gently stretch the dough towards the edges of the pan. Cover and let it rise at room temperature for 2-3 hours until puffy.

Preheat the oven to 425°F (220°C). Drizzle olive oil over the dough, dimple the surface with your fingertips. The dimples will help trap the oil and any toppings you add.  Now, add your favorite toppings like cherry tomatoes, red onion, rosemary, and flaky sea salt. Bake for 25 minutes until golden and crispy. Once baked, allow the focaccia to cool in the pan for 5 minutes before carefully transferring it to a wire rack to cool completely.

Ingredients

  • 4 cups (500g) bread flour or all-purpose flour
  • 1 tsp (4g) active dry yeast
  • 2 tbsp (30ml) water to activate the yeast
  • 2 tsp (10g) salt
  • 2 tbsp  (30g) olive oil
  • 1 ⅔ cup (400ml) water

Instructions

Prepare the dough.

  • In a large bowl, add the active dry yeast and 2 tablespoons of lukewarm water. Let it rest for 5 minutes to activate the yeast.
  • Add the flour, salt, 1 ⅔ cups (400 ml) water, and 2 tablespoons of olive oil. Mix with a spatula until everything is well combined.
  • Cover the bowl with plastic wrap and let the dough rest for 30 minutes.
  • After 30 minutes, perform the first set of stretch and folds.
  • Wet your hands to prevent sticking. Grab one side of the dough, gently stretch it upward, then fold it over toward the center. Rotate the bowl 90 degrees and repeat the process on the next side. Continue this for all four sides of the dough. (you’ll make a total of 4 stretches and folds)
  • Let the dough rest for another 30 minutes.
  • Repeat the stretch and fold process two more times at 30-minute intervals, for a total of 3 sets.
  • Alternatively, after the first round of stretch and folds, you can use the coil fold technique: Wet your hands, gently lift the dough from the middle, and let the ends fold under themselves as the dough coils into the bowl. Turn the bowl 90 degrees and repeat the same motion. This technique adds structure to the dough without overhandling it.
  • After the final set of folds (either stretch and fold or coil fold), spray the dough lightly with oil to keep it from drying out.
  • Cover the bowl with plastic wrap and refrigerate for at least 12 hours up to 2 days.

How to bake the focaccia.

  • Grease a 9×13 inch (23x33cm) pan generously with olive oil to prevent sticking and add flavor.
  • Carefully turn the dough out into the prepared pan. Gently shape it into a rough rectangle without pressing too hard to preserve the dough’s airiness. Let it rest in the pan for 5 minutes, allowing it to relax.
  • After resting, use your oiled fingers to gently stretch the dough towards the edges of the pan. Work from the center outward, being careful not to deflate the dough. If the dough resists stretching, let it rest for a few more minutes and try again.
  • Once the dough is spread to the edges, cover the pan with a clean kitchen towel or plastic wrap. Let it rest at room temperature for 2 to 3 hours, allowing it to rise and fill the pan. The dough should become puffy and soft during this time.
  • Preheat the oven to 425°F (220°C).
  • Drizzle olive oil over the surface of the dough.
  • Using your fingertips, press into the dough to create dimples all over the surface.
  • Now, add your favorite toppings. In this case, top the dough with halved cherry tomatoes, slices of red onion, fresh rosemary sprigs, and a sprinkle of flaky sea salt.
  • Bake the focaccia for about 25 minutes until golden brown and crispy around the edges.
  • Optional: After baking, drizzle a little more olive oil over the focaccia for extra richness and shine.
  • Allow the focaccia to cool in the pan for 5 minutes before carefully transferring it to a wire rack to cool completely. This ensures the bottom stays crisp and doesn’t become soggy.

In the meantime, beat the eggs in a deep plate. Prepare another plate with flour, and a third plate with a mixture of breadcrumbs, cornmeal, salt, and oregano.

Take each zucchini slice, dredge it in flour, dip it into the beaten egg, and coat it with the breadcrumb mixture. Arrange the coated zucchini slices in a single layer on the prepared baking sheet. Spray them with olive oil and bake for 17-20 minutes until golden and crispy.

Start with ripe tomatoes, sliced into juicy wedges. Combine them with crisp cucumber slices, green pepper slices and thinly sliced red onions that are offering a satisfying crunch. Add Kalamata olives to provide a briny contrast. Top with creamy block of feta cheese that is rich and slightly tangy. Sprinkle the salad with dried oregano for a touch of earthy aroma.

Drizzle extra virgin olive oil generously over the salad. Season lightly with sea salt and freshly ground black pepper, letting the natural flavors shine.

How to make Greek salad

I love this Greek Salad, known as Horiatiki in Greece as it bursts with fresh flavors and vibrant colors. This salad, a staple of Mediterranean cuisine, highlights simplicity and quality ingredients. It's a perfect appetizer or side dish, but it can also stand alone as a light, refreshing meal.

Ingredients

  • 1 pound  (450g) tomatoes , about 3-4 tomatoes
  • 1 medium red onion (about 2.5 oz – 80g)
  • 7 oz (200g) cucumber
  • 4 oz (120g) green pepper , about 1 medium pepper
  • 1/3 cup (70g) black olives
  • 7 oz (200g) block feta cheese
  • 1 tbsp (15g) red wine vinegar
  • 1/4 cup (60g) extra virgin olive oil
  • 1 tsp dried oregano
  • salt and freshly ground black pepper

Instructions

  • Cut the tomatoes into wedges.
  • Cut the cucumber into thick moon slices.

  • Slice the onion into thin rings.

What is orzo

Orzo is a type of pasta that is shaped like small rice grains. Despite its rice-like appearance, orzo is made from wheat semolina or white flour, similar to traditional pasta. It is commonly used in Mediterranean and Middle Eastern cuisines and can be used in a variety of dishes, from soups and salads to main courses.

How to cook orzo

Cooking orzo is simple and similar to cooking other types of pasta. Boil a pot of salted water, toss in the orzo, and stir to avoid sticking. Let it cook for around 8-10 minutes until it’s tender. Taste to check if it’s done, then drain the orzo in a colander. If you want it to cool quickly or plan to use it in a salad, give it a rinse under cold water. Your orzo is ready to shine in various dishes, hot or cold, your choice.

If you want to use toasted orzo in your recipes, first heat a bit of olive oil in a pan on medium-high heat. Add the orzo. Toast it for about 5-7 minutes, stirring constantly, until it turns golden brown. This step enhances the nutty flavor of the orzo. From here add the water or vegetable stock and continue cooking until tender.

How to make this Toasted Orzo with Chicken

Begin by cutting the chicken into long strips. Season both sides with salt, freshly ground black pepper, garlic powder, and oregano. Set aside.

Next, toast the orzo by heating olive oil in a large pan over medium-high heat. Add the orzo pasta, stirring constantly, and toast for about 5-7 minutes until it turns golden brown. Transfer the toasted orzo to a bowl and set aside.

In the same skillet, add 1 tablespoon of olive oil. Place the seasoned chicken in the pan and cook for 4-6 minutes on each side until it achieves a golden brown color. Ensure the chicken is cooked through, then transfer it to a plate.

Add chopped onion to the pan and cook for 5 minutes until it softens. Add garlic and cook for an additional 1 minute until fragrant. Toss in red pepper and cook for an extra minute.

Stir in tomato puree, dry oregano, basil and chili flakes if used, cooking for 2 more minutes while stirring constantly. Add the toasted orzo and pour in vegetable or chicken stock. Season with salt and pepper, and bring the mixture to a boil.

Reduce the heat to low and cook uncovered for approximately 15 minutes, allowing the orzo to become tender and the liquid to be almost absorbed. Arrange the cooked chicken on top of the orzo and cook for an additional 2-3 minutes to warm through.

Garnish with fresh parsley and lemon slices, then savor this delightful dish alongside a fresh salad.

For the chicken

  • Season the chicken on both sides with salt, freshly ground black pepper, garlic powder and oregano. Set aside.

How to toast and cook the orzo.

  • Transfer the orzo to a bowl and set aside.

How to make Tortellini Soup

The recipe for this soup is easy. Simply gather all the ingredients and in about 30 minutes you can have an amazing lunch or dinner.

Start by heating olive oil in a big pot on medium heat. Toss in chopped onions and cook until they’re soft, about 5 minutes. Add Italian sausage and cook until it’s no longer pink, around 4-5 minutes. While it cooks, break the meat into small pieces for that hearty feel.

Next, add carrots, celery, and garlic. Let them cook for an extra 5 minutes, stirring every now and then. Sprinkle in thyme, basil, and oregano to amp up the flavors.

Pour in vegetable stock, crushed tomatoes, salt, and pepper. Give it a good mix, turn up the heat until it boils, then reduce to a gentle simmer. Cover and let it cook for 15-20 minutes until the veggies are tender.

Toss in the cheese-filled tortellini and a bit of cream. Let them cook for another 7-10 minutes until the tortellini are just right.

Before serving, throw in some fresh spinach, give it a final stir, and turn off the heat.

Serve it up hot, topped with shavings of Parmesan, a bit of fresh basil, and those tasty cheese garlic toasts.

For the toasts, just slice a baguette, put the pieces on a baking sheet, drizzle or spray with olive oil, cover with grated cheese, and sprinkle with garlic powder and dried oregano. Bake at 400°F (200°C) for 5-7 minutes until the cheese melts.

  • 1 carrot , diced
  • 2 celery sticks , chopped
  • 2 cans (28oz – 800g) crushed tomatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp (5g) salt
  • 1/4 tsp (1g) black pepper
  • 4 cups  (1liter) vegetable stock
  • 9 oz (250g) tortellini , filled with cheese, ham or spinach (your choice)
  • 1 cup (240g) cream
  • 2 cups (40g) fresh baby spinach

For Garlic Cheese Toasts

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the onion and cook for about 5 minutes until softened.
  • Add the Italian sausage and cook until no longer pink, for about 4-5 minutes. Crumble the meat while cooking.
  • Add the carrot, celery and garlic and cook for 5 minutes more, stirring from time to time.
  • Stir in the thyme, basil and oregano.
  • Add the vegetable stock, crushed tomatoes, salt and pepper and stir. Bring to a boil then reduce heat to low. Cover and simmer for 15-20 minutes until the vegetables are tender.
  • Add the cheese tortellini and cream. Cook for 7-10 minutes more minutes or until the tortellini are tender.
  • Add the spinach, give them a stir and turn off the heat.
  • Serve immediately with Parmesan shavings, fresh basil and garlic cheese toasts.

How to prepare the garlic cheese toasts.

  • Cut the baguette into slices and place the slices on a parchment paper lined baking sheet.
  • Drizzle or spray each slice with olive oil. Spread grated cheese on top. Season with garlic powder and dried oregano. Sprinkle salt and pepper.
  • Bake at 400F (200C) oven for 5-7 minutes or until the cheese is melted.

Tips for Making in Advance:

  • Refrigeration: After preparing the soup base, let it cool to room temperature before refrigerating. Store in an airtight container for up to 24 hours. Add the tortellini, cream and spinach when ready to serve. 
  • Freezing: If you plan to keep it longer, consider freezing the soup without the tortellini, spinach and cream. Thaw in the refrigerator and add the tortellini, spinach and cream when ready to serve.

Whenever I’m in Greece, savoring meals at their charming tavernas, I can’t resist indulging in their incredible appetizers. Among my favorites is the delightful Spicy Greek Feta Dip, known as Tirokafteri or Htipiti. It is a creamy, spicy, feta cheese spread that perfectly complements nearly any dish. I find myself ordering it over and over again. This simple yet flavorful recipe combines feta cheese, roasted red peppers, and a touch of garlic to create a mouthwatering dip that’s perfect for any occasion. 

I’m excited to share with you this delightful recipe, as it’s not only simple to prepare but also incredibly rich and bursting with flavor. This recipe ensures a perfect blend of tanginess and creaminess, making it an ideal appetizer idea. Serve it with warm pita bread, toasted bread or crusty bread. You can also serve it with vegetable sticks if desired.

How to make spicy Greek feta dip – Tirokafteri

Start by roasting the red pepper in a pan on the stove until the skin blisters. Once done, remove it from heat, sprinkle with salt, cover, and let it cool. Next, peel the roasted pepper and remove the seeds. Cut into large pieces. 

Place the feta cheese in the bowl of a food processor. Add the roasted red pepper, minced garlic, red chili flakes, and lemon juice. Process until crumbles.

Now, add Greek yogurt and olive oil and continue processing until it turns into a thick, creamy paste.

Transfer the feta dip into a bowl. To add a finishing touch, decorate with feta crumbles, fresh parsley, chili flakes, and a drizzle of olive oil.

This delightful Spicy Greek Feta Dip pairs perfectly with toasted bread, crusty bread, warm pita bread or crispy vegetables like carrots and cucumbers.

  • 1  block feta, (5oz-150g) , cut into triangles
  • 1/3 cup  (40g) flour
  • 2 oz (60g) sesame seeds
  • 1 egg , beaten

During our time in Greece, we had the delightful opportunity to enjoy this dish at numerous tavernas, where it is called Bouyiourdi. It offers a burst of flavors and makes a comforting experience.

At the heart of this dish is the Feta cheese, a traditional Greek cheese made from sheep’s milk. Known for its rich and tangy flavor, Feta is the perfect complement to the sweet notes of the juicy ripe tomatoes and peppers. It is essential to use a good quality Feta cheese in brine that will make this dish a favorite among cheese lovers.

To prepare this amazing Greek baked dish, first slice the tomatoes into thick rounds and layer on the bottom of a baking dish. Cut the red pepper, green chili pepper and the onion into slices and arrange on top of the tomatoes. Cut the Feta cheese into thick slices and arrange over the layers of tomatoes and peppers. Top the Feta with the remaining tomato, pepper and onion slices. 

We like to add tasty herbs like oregano and thyme, giving the dish a lovely smell and earthy taste. A good drizzle of olive oil finishes the dish, giving it a delicious richness and making the taste even better.

Place the dish in the oven and bake to perfection. The heat of the oven melds the flavors together, resulting in a harmonious blend of tangy, sweet notes. The cheese becomes slightly golden creating a delightful contrast in textures.

How to make Greek baked Feta with tomatoes

Star by preheating the oven to 425°F (220°C). Take the ripe tomatoes and cut them into thick slices, then set them aside. Proceed to slice the red pepper, onion and green chili pepper, and set them aside as well. Take the feta cheese and cut it in half, then slice each half lengthwise.

Now, it’s time to layer the ingredients. Start by arranging the tomatoes, peppers, onions, and green chili slices. Enhance the flavors by seasoning with oregano, chili flakes, a moderate amount of salt, and freshly ground black pepper. Remember not to overdo the salt since Feta in brine is already quite salty. Drizzle a generous amount of olive oil over the layered ingredients.

Next, place the feta cheese slices on top of the arrangement. Add the remaining tomatoes, peppers, onions, and green chili to complete the layers. Once again, season with oregano, chili flakes, a touch of salt, and freshly ground black pepper. Give another good drizzle of olive oil for added moisture and flavor.

Transfer the dish to the preheated oven and bake for about 35-40 minutes, until the feta cheese becomes soft and the vegetables turn tender. Before serving, garnish with fresh thyme to enhance both the taste and visual appeal. With every bite, I am reminded of the warm hospitality and rich culinary heritage of Greece. It’s a culinary masterpiece that brings a taste of Greece into my kitchen, allowing me to relive those cherished moments and share them with loved ones.

Serving Pastitsio is a joyous occasion in Greek households. As the golden-brown dish comes out from the oven it fills the air with its tantalizing aroma. Each slice is a work of art, revealing layers of pasta, meat sauce, and béchamel with an amazing blend of flavors.

How to make Greek Pastitsio

To prepare the meat sauce, heat oil in a large pan over medium-high heat. Sauté the chopped onion for 5 minutes until it softens. Add the garlic and cook for an additional minute until it becomes fragrant. Stir in the tomato paste and sauté for 1-2 minutes more. Next, add the ground meat and cook it until it changes color, breaking it up with a spoon. Incorporate the tomato puree, cinnamon, sugar, salt, black pepper, and bay leaves. Simmer the sauce over medium-low heat for 20-25 minutes until the meat is cooked and the sauce is reduced. Remove the pan from the heat, discard the bay leaves, and set the sauce aside.

For the pastitsio pasta, cook the pasta in salted water according to the package instructions until it reaches the al dente stage. Drain the pasta and brush a 10×14 inch (25x35cm) pan with 2 tablespoons of olive oil. Add the drained pasta, Greek Kefalotyri or Parmesan cheese, and fresh parsley. Toss to coat the pasta and set it aside. Meanwhile, preheat the oven to 350F (180C).

To prepare the bechamel sauce, heat olive oil in a medium heavy saucepan over medium-low heat. Add the flour and stir until smooth and bubbling, approximately 1 minute. Gradually stir in the milk until the mixture becomes smooth. While stirring continuously, gradually pour in the beaten eggs. Add salt, pepper, and nutmeg. Cook the sauce while stirring constantly until it boils and begins to thicken.

How to assemble the pastitsio

To assemble the pastitsio, spread the meat sauce evenly over the pasta layer in the prepared pan. Pour the bechamel sauce over the meat sauce, spreading it evenly. Sprinkle Greek Kefalotyri or Parmesan cheese on top. Bake the dish for 40-45 minutes or until it turns golden brown. Allow it to rest for at least 30 minutes before cutting and serving.

For the Meat Sauce

  • 2 tbsp (30g) olive oil 
  • 2 medium onions (6oz – 180g) , chopped
  • 2 cloves of garlic , minced
  • 1/3 cup (70g) tomato paste
  • 1 ⅔ pounds (750g) ground beef
  • 1 can (14oz- 400g) tomato puree
  • 1 tsp (5g) salt
  • 1 tsp (5g) sugar
  • 1/2 tsp (1g) ground black pepper
  • 1/3 tsp (1g) cinnamon
  • bay leaves

For the Pasta

  • 1 pound (500g) Greek pasta, Bucatini No.2
  • 2 tbsp (30g) olive oil
  • 1/4 cup (25g) Greek Kefalotyri or Parmesan cheese , grated
  • 2 tbsp fresh parsley

For Bechamel Sauce

  • 1/3 cup (80ml) olive oil
  • 2/3 cup (80g) all-purpose flour
  • 4 cups (1 liter) milk
  • 1/2 tsp (1g) nutmeg
  • 3/4 tsp (4g) salt
  • 3 large eggs , beaten

For Topping

  • 1/2 cup (50g) Greek Kefalotyri or Parmesan cheese

Instructions
