This Easy No-Knead Focaccia is a simple, yet flavorful bread that requires minimal effort and delivers excellent results. This recipe is perfect for beginners or anyone looking for a hands-off baking experience. 

The dough is made from just a few basic ingredients: flour, water, yeast, salt, and olive oil. Instead of kneading, the dough undergoes a slow fermentation process, which allows the gluten to develop naturally over time. This method will result in a soft, airy, and chewy texture, with a slightly crispy crust.

I topped this focaccia with olive oil, cherry tomatoes, red onion, fresh rosemary and flaky sea salt. Feel free to experiment with other toppings like olives, garlic, or different herbs to make it your own!

Bake until golden brown, and you’ll have a delicious, homemade focaccia that pairs perfectly with soups, salads, or as a base for sandwiches. It’s a fuss-free, crowd-pleasing bread, perfect for any occasion.

How to make no-knead focaccia

Begin by activating the yeast in a large bowl with 2 tablespoons of lukewarm water. After 5 minutes, mix in the flour, salt, 1 ⅔ cups (400 ml) of room-temperature water, and 2 tablespoons of olive oil. Gently stir until everything is well combined. The dough will be wet and sticky at this stage. Cover the bowl tightly with plastic wrap to prevent the dough from drying out, and let it rest for 30 minutes.

Perform three sets of stretch and folds at 30-minute intervals. Wet your hands, stretch the dough upward, fold it toward the center, and rotate the bowl 90 degrees. Repeat this process for all four sides.

If you’d like, you can also incorporate the coil fold technique. With wet hands, gently lift the dough from the center and let the ends fold under themselves as the dough coils. Turn the bowl 90 degrees and repeat. This technique adds structure without overhandling the dough.

After the third set, lightly oil the dough, cover, and refrigerate for 12 hours or up to 2 days.

How to bake the focaccia

When ready, grease a 9×13 inch (23-x33cm) pan with olive oil, transfer the dough into it, and let it relax for 5 minutes. Gently stretch the dough towards the edges of the pan. Cover and let it rise at room temperature for 2-3 hours until puffy.

Preheat the oven to 425°F (220°C). Drizzle olive oil over the dough, dimple the surface with your fingertips. The dimples will help trap the oil and any toppings you add.  Now, add your favorite toppings like cherry tomatoes, red onion, rosemary, and flaky sea salt. Bake for 25 minutes until golden and crispy. Once baked, allow the focaccia to cool in the pan for 5 minutes before carefully transferring it to a wire rack to cool completely.

Ingredients

  • 4 cups (500g) bread flour or all-purpose flour
  • 1 tsp (4g) active dry yeast
  • 2 tbsp (30ml) water to activate the yeast
  • 2 tsp (10g) salt
  • 2 tbsp  (30g) olive oil
  • 1 ⅔ cup (400ml) water

Instructions

Prepare the dough.

  • In a large bowl, add the active dry yeast and 2 tablespoons of lukewarm water. Let it rest for 5 minutes to activate the yeast.
  • Add the flour, salt, 1 ⅔ cups (400 ml) water, and 2 tablespoons of olive oil. Mix with a spatula until everything is well combined.
  • Cover the bowl with plastic wrap and let the dough rest for 30 minutes.
  • After 30 minutes, perform the first set of stretch and folds.
  • Wet your hands to prevent sticking. Grab one side of the dough, gently stretch it upward, then fold it over toward the center. Rotate the bowl 90 degrees and repeat the process on the next side. Continue this for all four sides of the dough. (you’ll make a total of 4 stretches and folds)
  • Let the dough rest for another 30 minutes.
  • Repeat the stretch and fold process two more times at 30-minute intervals, for a total of 3 sets.
  • Alternatively, after the first round of stretch and folds, you can use the coil fold technique: Wet your hands, gently lift the dough from the middle, and let the ends fold under themselves as the dough coils into the bowl. Turn the bowl 90 degrees and repeat the same motion. This technique adds structure to the dough without overhandling it.
  • After the final set of folds (either stretch and fold or coil fold), spray the dough lightly with oil to keep it from drying out.
  • Cover the bowl with plastic wrap and refrigerate for at least 12 hours up to 2 days.

How to bake the focaccia.

  • Grease a 9×13 inch (23x33cm) pan generously with olive oil to prevent sticking and add flavor.
  • Carefully turn the dough out into the prepared pan. Gently shape it into a rough rectangle without pressing too hard to preserve the dough’s airiness. Let it rest in the pan for 5 minutes, allowing it to relax.
  • After resting, use your oiled fingers to gently stretch the dough towards the edges of the pan. Work from the center outward, being careful not to deflate the dough. If the dough resists stretching, let it rest for a few more minutes and try again.
  • Once the dough is spread to the edges, cover the pan with a clean kitchen towel or plastic wrap. Let it rest at room temperature for 2 to 3 hours, allowing it to rise and fill the pan. The dough should become puffy and soft during this time.
  • Preheat the oven to 425°F (220°C).
  • Drizzle olive oil over the surface of the dough.
  • Using your fingertips, press into the dough to create dimples all over the surface.
  • Now, add your favorite toppings. In this case, top the dough with halved cherry tomatoes, slices of red onion, fresh rosemary sprigs, and a sprinkle of flaky sea salt.
  • Bake the focaccia for about 25 minutes until golden brown and crispy around the edges.
  • Optional: After baking, drizzle a little more olive oil over the focaccia for extra richness and shine.
  • Allow the focaccia to cool in the pan for 5 minutes before carefully transferring it to a wire rack to cool completely. This ensures the bottom stays crisp and doesn’t become soggy.

In the meantime, beat the eggs in a deep plate. Prepare another plate with flour, and a third plate with a mixture of breadcrumbs, cornmeal, salt, and oregano.

Take each zucchini slice, dredge it in flour, dip it into the beaten egg, and coat it with the breadcrumb mixture. Arrange the coated zucchini slices in a single layer on the prepared baking sheet. Spray them with olive oil and bake for 17-20 minutes until golden and crispy.

This eggless and gluten-free treat begins with a simple caramel made from sugar and water, which is carefully cooked until it reaches a golden amber hue. The caramel coats the bottom and sides of the ramekins, creating a beautiful, glossy layer that will crown the dessert when inverted.

The vanilla panna cotta mixture is poured over the set caramel in the ramekins. After chilling for several hours, the panna cotta firms up to a perfectly silky texture. 

When ready to serve, invert the ramekins onto plates, revealing the delightful caramel layer now sitting atop the panna cotta. This dessert is not only delicious but also looks beautiful, especially when garnished with fresh berries and sprigs of rosemary or mint. The freshness of the berries and herbs adds a vibrant contrast to the rich, creamy caramel panna cotta.

How to make Caramel Panna Cotta

Begin by preparing the caramel. Place the sugar and water in a saucepan over medium-high heat, and cook without stirring until the sugar dissolves and takes on a caramel color. Immediately divide the caramel among 4 ramekins, each with a capacity of 4-5 oz (120-150ml). Rotate the ramekins to coat the bottoms and sides with the caramel, then set them aside.

Next, prepare the panna cotta. Dissolve the gelatin in 2 tablespoons of cold water and let it swell for 5 to 10 minutes. In a medium saucepan, bring the cream, milk, sugar, salt, and vanilla to a simmer over medium-low heat, ensuring it does not boil. Once the sugar has dissolved, remove the mixture from the heat and let it cool for 5 minutes before adding the bloomed gelatin. Stir until the gelatin has completely dissolved.

Evenly divide the panna cotta mixture into the caramel-coated ramekins. Refrigerate for at least 4 hours or overnight to allow the panna cotta to set.

When ready to serve, dip each ramekin into a bowl of hot water for about 30 seconds to loosen the caramel. Run a sharp knife around the edges of the panna cotta, then invert each ramekin onto a plate. Garnish with fresh berries and sprigs of fresh rosemary or mint

Ingredients

For the caramel

  • 1/2 cup (100g) sugar
  • 2 tbsp (30ml) water

For the panna cotta

  • 7 fl oz (200ml) milk
  • 7 oz (200g) whipping cream
  • 1/2 tbsp (5g) gelatin powder
  • 2 tbsp (30ml) water , for soaking the gelatin
  • 1/4 tsp (1g) salt
  • 1/4 cup (50g) sugar
  • 1 tsp (5g) vanilla extract

Instructions

Prepare the caramel.

  • Place the sugar and water in a saucepan over medium-high heat, and cook without stirring until the sugar dissolves and gets a caramel color.
  • Immediately, divide the caramel into 4 ramekins, each ramekin with a capacity of 4-5 oz (120-150ml).
  • Rotate the ramekins to coat the bottom and sides with the caramel.

Prepare the panna cotta.

  • Dissolve gelatin in 2 tablespoons of cold water and let it swell for 5 to 10 minutes.
  • In a medium saucepan bring the cream, milk, sugar, salt and vanilla to a simmer over medium-low heat (Do not boil). When the sugar has dissolved remove from heat. Let cool for 5 minutes before adding the bloomed gelatin.
  • Add gelatin to the milk mixture and stir until the gelatin has completely dissolved.
  • Divide the panna cotta mixture evenly into the ramekins.
  • Refrigerate for at least 4 hours or overnight to set.
  • When ready to serve, Dip each ramekin into a bowl of hot water for about 30 seconds, run a sharp knife around the edges and invert onto a plate.
  • Garnish with fresh berries and fresh rosemary or mint. Enjoy!

I love this Greek Salad, known as Horiatiki in Greece as it bursts with fresh flavors and vibrant colors. This salad, a staple of Mediterranean cuisine, highlights simplicity and quality ingredients. This salad offers a delightful combination of textures and tastes, from the juicy tomatoes to the creamy feta. Every time we visit Greece, we enjoy serving this salad at their local tavernas near the sea.

Start with ripe tomatoes, sliced into juicy wedges. Combine them with crisp cucumber slices, green pepper slices and thinly sliced red onions that are offering a satisfying crunch. Add Kalamata olives to provide a briny contrast. Top with creamy block of feta cheese that is rich and slightly tangy. Sprinkle the salad with dried oregano for a touch of earthy aroma.

Drizzle extra virgin olive oil generously over the salad. Season lightly with sea salt and freshly ground black pepper, letting the natural flavors shine.

Greek salad not only delights with it refreshing flavor but also brings a piece of sunny Greece to your table. Enjoy it with crusty bread or alongside grilled meats for a complete Mediterranean experience.

How to make Greek salad

Begin by preparing the vegetables. Cut the tomatoes into wedges and the cucumber into thick moon slices. Thinly slice the red onion into rings and slice the green pepper. Add all the cut vegetables into a salad bowl along with the olives.

Season the salad with salt, pepper and a sprinkle of oregano. Drizzle extra virgin olive oil and red wine vinegar over the vegetables, then toss everything together until well coated.

Top the salad with a block of feta cheese. Drizzle the feta with olive oil and sprinkle with dried oregano for extra flavor.

Ingredients

  • 1 pound  (450g) tomatoes , about 3-4 tomatoes
  • 1 medium red onion (about 2.5 oz – 80g)
  • 7 oz (200g) cucumber
  • 4 oz (120g) green pepper , about 1 medium pepper
  • 1/3 cup (70g) black olives
  • 7 oz (200g) block feta cheese
  • 1 tbsp (15g) red wine vinegar
  • 1/4 cup (60g) extra virgin olive oil
  • 1 tsp dried oregano

Instructions

  • Cut the tomatoes into wedges.

These Cream Cheese Buns are beloved worldwide and are known under various names. One of the most well-known names for these delightful buns is Vatrushka. Vatrushka is enjoyed throughout Russia and other Eastern European countries. Today, you can find variations of these Cream Cheese Buns/Vatrushka in bakeries and cafes across the globe, each offering its unique twist on this classic delight.

Making these buns is easy and fun. First, you shape the dough into buns and  let them rise until they are light and airy. Then you need to create a well in the center of each and divide the cream cheese filling evenly. Then, you sprinkle the blueberries over the top. Finally, you bake them until they are golden.

The result is a warm, fragrant bun with a deliciously sweet and creamy center. These Blueberry Cream Cheese Buns are perfect for breakfast, a snack, or even dessert. They pair wonderfully with a cup of coffee or tea, making them a great choice for a cozy morning or a special afternoon treat.

How to make poppy seed babka

The recipe for this poppy seed babka is easy and with great results each time. Begin by preparing the dough and let it rest until doubled in size. Continue with preparing the poppy seed meringue filling and then start to assemble the babka. Let it rest again in the pan, brush with beaten egg and bake until golden brown. Optional, brush the babka with sugar syrup.

In a medium bowl, combine yeast, 1/2 tsp (3g) sugar, and 1/4 cup (60ml) lukewarm milk. Let it rest for 5-10 minutes to activate the yeast.

In a large bowl, whisk together the flour, sugar, and salt. Add the remaining milk, activated yeast mixture, egg yolks, vanilla extract, sour cream, and melted butter. Knead the dough until it pulls away from the sides of the bowl, either by hand or using a hand mixer or stand mixer.

Shape the dough into a ball, transfer it to an oiled bowl, and cover it with plastic wrap. Let it rest for about 1 hour at room temperature until doubled in size.

How to prepare the poppy seed meringue filling

For this recipe it is essential to use ground poppy seeds. If you can not find ground poppy seeds in stores you may need to grind your poppy seeds before going further with the recipe.

Whip the egg whites with a pinch of salt until foamy. Gradually add sugar and continue mixing until stiff peaks form. Add the ground poppy seeds and vanilla extract, and mix gently to combine. Set aside until ready to use.

How to assemble the babka

Roll the dough on a floured surface into a rectangle of about 18×10 inches (45x25cm).

Spread the poppy seed mixture evenly over the dough, leaving about a 1/2-inch (1cm) border around the edges.

Roll up the dough and cut the log in half lengthwise using a sharp knife. Braid the two pieces together, keeping the open layers exposed so the cut ends remain on top.

Transfer the poppy seed babka to a 9×5-inch (23x13cm) loaf pan lined with parchment paper. Cover with a kitchen towel and let it rest for 40-45 minutes at room temperature.

How to bake the poppy seed babka

While the babka is resting, preheat the oven to 350F (180C). Brush the bread with beaten egg and then reduce the oven temperature to 320F (160C).

Transfer the babka to the oven and bake for about 50-55 minutes, covering with aluminum foil after about 30 minutes if it browns too fast. Remove from the oven and let it rest in the pan for 10 minutes.

Meanwhile, prepare the sugar syrup. In a small saucepan, add water and sugar and boil for 2-3 minutes. Brush the babka while still warm with the sugar syrup.

Let the poppy seed babka cool completely before cutting it into slices.

Instructions

Prepare the dough.

  • In a medium bowl add yeast, 1/2 tsp (3g) sugar and 1/4 cup (60ml) lukewarm milk. Let it rest for 5-10 minutes to activate the yeast.

  • In a large bowl whisk together the flour, sugar and salt. Add the remaining milk, activated yeast, egg yolks, vanilla extract, sour cream and melted butter. Start kneading it until it pulls away from the sides of the bowl. You can knead the dough by hand or use a hand mixer or stand mixer.

  • Give the dough the shape of a ball. Transfer the dough into an oiled bowl and cover it with plastic wrap.
  • Let it rest for about 1 hour at room temperature (warm space) until doubled in size.

Prepare the poppy seed meringue filling.

  • Add the egg whites to a mixing bowl with a pinch of salt.

  • Whip until foamy. Gradually add sugar and continue mixing until stiff peaks form.

  • Add the ground poppy seeds and vanilla extract.

  • Mix gently to combine. Set aside until ready to use.

Assemble the babka.

  • On a floured surface, using a rolling pin, roll the dough to a rectangle of about 18×10 inches (45x25cm).

  • Leave about a 1/2-inch (1cm) border around the edges.
  • Roll up the dough.

  • Cut the log in half lengthwise using a sharp knife.

  • Start braiding the two pieces, trying to keep the open layers exposed so the cut ends remain on top.

  • Transfer the poppy seed babka to a 9×5-inch (23x13cm) loaf pan lined with parchment paper.
  • Cover with a kitchen towel and let it rest for 40-45 minutes at room temperature.

How to bake the babka.

  • Preheat the oven to 350F (180C).
  • Brush the bread with beaten egg.

  • Reduce oven temperature to 320F (160C).
  • Transfer babka to the oven and bake for about 50-55 minutes. Check with a skewer if the babka is baked through.

  • During baking, cover with aluminum foil after the first 30 minutes if browns too fast.

Prepare the sugar syrup.

  • In a saucepan add the water and sugar and boil for 2-3 minutes.
  • Brush the babka while still warm with the sugar syrup.

Each spoonful is a blend of savory flavors, enhanced by hints of herbs and spices. We love to use fresh lovage for this soup for its incredible flavor, although fresh parsley or celery leaves can serve as suitable alternatives. 

What truly sets our meatball soup apart is its creamy richness, achieved by adding sour cream mixed with egg yolk just before finishing the soup, making every bite extra satisfying. Served hot with crusty bread, it’s a meal that fills you up and feels like a warm hug.

Whether it’s a cozy night in or a quick lunch, our meatball soup is a tasty choice that everyone will love. So, grab a bowl and enjoy the comforting taste of homemade goodness.

How to make meatball soup

Begin by heating oil in a large stockpot over medium-high heat. Add the onion and cook for about 5 minutes until it becomes softened. Stir in the carrots and cook for an additional 5 minutes. Then, add the celery root, garlic, and red pepper, and cook for another minute.

Pour in the vegetable stock or water, adding chili pepper if desired, along with salt and pepper. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Allow the vegetables to cook for roughly 20 minutes until they reach a tender consistency.

While the soup is simmering, prepare the meatballs. In a medium bowl, combine the ground meat, semolina flour, egg, uncooked rice, salt, pepper, and chopped fresh parsley. Shape the mixture into 1-inch (2.5 cm) balls using a cookie scoop and wet hands, then place them on a plate.

Carefully transfer the meatballs to the simmering soup along with the potatoes. Allow the soup to return to a boil, then reduce the heat and simmer for an additional 15-20 minutes until the potatoes are tender and the meatballs are fully cooked.

In a separate medium bowl, mix together the sour cream, egg yolk, and minced garlic. Add 2 ladles of hot soup to the mixture, stirring well, then return it to the pot. Let it boil for 1 minute before finishing with fresh herbs such as lovage or parsley, as well as salt and pepper to taste.

Remove the soup from heat and serve it hot alongside crusty bread.

  • 1 small celery root, about 9 oz (250g) , diced
  • 1 small red chili pepper , diced, optional
  • 2 quarts (2 liters) vegetable stock or water
  • 2 medium potatoes, about 9 oz (250g) , cut into small cubes
  • 1/2 cup fresh lovage or parsley , chopped
  • salt and freshly ground pepper

For the meatballs

  • 1 pound (450g) ground meat (chicken, turkey, pork or beef)
  • 1 egg
  • 1 tbsp (15g) semolina flour
  • 1/4 cup (50g) long-grain rice , uncooked, rinsed and drained

For the sour cream mixture

What is orzo

Orzo is a type of pasta that is shaped like small rice grains. Despite its rice-like appearance, orzo is made from wheat semolina or white flour, similar to traditional pasta. It is commonly used in Mediterranean and Middle Eastern cuisines and can be used in a variety of dishes, from soups and salads to main courses.

How to cook orzo

Cooking orzo is simple and similar to cooking other types of pasta. Boil a pot of salted water, toss in the orzo, and stir to avoid sticking. Let it cook for around 8-10 minutes until it’s tender. Taste to check if it’s done, then drain the orzo in a colander. If you want it to cool quickly or plan to use it in a salad, give it a rinse under cold water. Your orzo is ready to shine in various dishes, hot or cold, your choice.

If you want to use toasted orzo in your recipes, first heat a bit of olive oil in a pan on medium-high heat. Add the orzo. Toast it for about 5-7 minutes, stirring constantly, until it turns golden brown. This step enhances the nutty flavor of the orzo. From here add the water or vegetable stock and continue cooking until tender.

How to make this Toasted Orzo with Chicken

Begin by cutting the chicken into long strips. Season both sides with salt, freshly ground black pepper, garlic powder, and oregano. Set aside.

Next, toast the orzo by heating olive oil in a large pan over medium-high heat. Add the orzo pasta, stirring constantly, and toast for about 5-7 minutes until it turns golden brown. Transfer the toasted orzo to a bowl and set aside.

In the same skillet, add 1 tablespoon of olive oil. Place the seasoned chicken in the pan and cook for 4-6 minutes on each side until it achieves a golden brown color. Ensure the chicken is cooked through, then transfer it to a plate.

Add chopped onion to the pan and cook for 5 minutes until it softens. Add garlic and cook for an additional 1 minute until fragrant. Toss in red pepper and cook for an extra minute.

Stir in tomato puree, dry oregano, basil and chili flakes if used, cooking for 2 more minutes while stirring constantly. Add the toasted orzo and pour in vegetable or chicken stock. Season with salt and pepper, and bring the mixture to a boil.

Reduce the heat to low and cook uncovered for approximately 15 minutes, allowing the orzo to become tender and the liquid to be almost absorbed. Arrange the cooked chicken on top of the orzo and cook for an additional 2-3 minutes to warm through.

Garnish with fresh parsley and lemon slices, then savor this delightful dish alongside a fresh salad.
