Sorry for the late reply. Ricotta is the best to use here but you can also try with some fresh farmers cheese.

It sounds like you didn’t mix it enough, so the air bubbles didn’t make it through all the batter, resulting in the air bubbles helping it rise above and the heavier batter sinking to create a rubbery, bubble-less bottom layer.

This is the best Bundt cake I have cooked so far. It smells like autumn. And I don’t even like sweet:)
Just one comment-the two layers (cake and the cheese) got separated, there was a hall between them. Anyways, it was still phenomenal!
