How to make Chicken Apple Skillet

To start, cut your chicken breast into even ¾ inch or 2 cm strips, ensuring uniform size so they cook evenly. 

Next, season the chicken generously with salt and pepper on both sides and sprinkle with dried thyme or rosemary.

Heat some olive oil in a large skillet over medium-high heat, ensuring the pan is hot before adding the chicken. Place the seasoned chicken strips in the skillet, making sure not to overcrowd the pan, so the chicken sears properly. Cook the chicken for 4 to 6 minutes on each side, allowing it to develop a golden brown crust while locking in the juices. You’ll know the chicken is ready to flip when it easily releases from the pan. Once done, transfer the chicken to a plate.

How to prepare the apples and the sauce

In the same skillet, add your apple slices, making sure they’re spread out in an even layer to ensure proper caramelization. Cook the apples for about 3 to 5 minutes on each side, turning them carefully once they soften and begin to brown.

I’ve used Gala apples for their natural sweetness and firm texture, but Honeycrisp apples or Granny Smith apples will be as good. Feel free to choose the variety that best suits your taste.

Next, stir in finely minced garlic and pour in your chicken or vegetable stock to deglaze the pan, scraping up any flavorful bits that have stuck to the bottom. Add honey, butter and apple cider vinegar. Let the mixture come to a gentle simmer, allowing all the flavors to meld together. As it cooks, the sauce will reduce slightly, filling the kitchen with a delightful sweet and savory aroma.

Once the sauce is ready, return the chicken to the skillet, making sure each piece is tossed and coated in the flavorful mixture. Allow the chicken to warm through and absorb some of the sauce, creating a perfect balance of savory, sweet, and tangy flavors.

For a final touch, garnish with fresh rosemary or thyme. Serve your chicken apple skillet alongside creamy mashed potatoes, fluffy rice, or crusty bread to soak up every last bit of that delicious sauce.

Ingredients

  • 1 ¼ pound (600g) boneless skinless chicken breasts
  • salt and freshly ground black pepper
  • dried thyme ,or rosemary
  • 2 tbsp olive oil
  • 2 medium apples, Honeycrisp or Gala Apples, (about 10oz -300g) , cored and sliced
  • 2 cloves garlic , minced
  • 3 tbsp  (45g) honey
  • 1/2 cup (120ml) chicken or vegetable stock
  • 2 tbsp  (30g) butter
  • fresh thyme or rosemary , for garnishing

Instructions

  • Cut the chicken breast into ¾ inch (2cm) long strips. Season the chicken breasts with salt, pepper, and a pinch of dried thyme and rosemary.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Add the chicken to the pan and cook for about 4-6 minutes. Flip the chicken and cook for another 4-6 minutes until golden brown. Check if the chicken is cooked through.
  • Transfer the chicken to a plate until you prepare the garlic honey sauce.
  • Add the apple slices into the pan. If necessary add another tablespoon of olive oil. Cook the apples for about 3-5 minutes per side until soft.
  • Add garlic, chicken or vegetable stock, honey, butter and apple cider vinegar.
  • Cook for about 1 minute until simmers, butter is melted and garlic is fragrant.
  • Transfer the chicken back into the skillet, and toss to coat with the garlic honey sauce.
  • Remove from heat, sprinkle fresh rosemary or thyme.
  • Serve with mashed potatoes, rice, or crusty bread.

The dough is made from just a few basic ingredients: flour, water, yeast, salt, and olive oil. Instead of kneading, the dough undergoes a slow fermentation process, which allows the gluten to develop naturally over time. This method will result in a soft, airy, and chewy texture, with a slightly crispy crust.

I topped this focaccia with olive oil, cherry tomatoes, red onion, fresh rosemary and flaky sea salt. Feel free to experiment with other toppings like olives, garlic, or different herbs to make it your own!

Bake until golden brown, and you’ll have a delicious, homemade focaccia that pairs perfectly with soups, salads, or as a base for sandwiches. It’s a fuss-free, crowd-pleasing bread, perfect for any occasion.

How to make no-knead focaccia

Begin by activating the yeast in a large bowl with 2 tablespoons of lukewarm water. After 5 minutes, mix in the flour, salt, 1 ⅔ cups (400 ml) of room-temperature water, and 2 tablespoons of olive oil. Gently stir until everything is well combined. The dough will be wet and sticky at this stage. Cover the bowl tightly with plastic wrap to prevent the dough from drying out, and let it rest for 30 minutes.

Perform three sets of stretch and folds at 30-minute intervals. Wet your hands, stretch the dough upward, fold it toward the center, and rotate the bowl 90 degrees. Repeat this process for all four sides.

If you’d like, you can also incorporate the coil fold technique. With wet hands, gently lift the dough from the center and let the ends fold under themselves as the dough coils. Turn the bowl 90 degrees and repeat. This technique adds structure without overhandling the dough.

After the third set, lightly oil the dough, cover, and refrigerate for 12 hours or up to 2 days.

How to bake the focaccia

When ready, grease a 9×13 inch (23-x33cm) pan with olive oil, transfer the dough into it, and let it relax for 5 minutes. Gently stretch the dough towards the edges of the pan. Cover and let it rise at room temperature for 2-3 hours until puffy.

Preheat the oven to 425°F (220°C). Drizzle olive oil over the dough, dimple the surface with your fingertips. The dimples will help trap the oil and any toppings you add.  Now, add your favorite toppings like cherry tomatoes, red onion, rosemary, and flaky sea salt. Bake for 25 minutes until golden and crispy. Once baked, allow the focaccia to cool in the pan for 5 minutes before carefully transferring it to a wire rack to cool completely.

Ingredients

  • 4 cups (500g) bread flour or all-purpose flour
  • 1 tsp (4g) active dry yeast
  • 2 tbsp (30ml) water to activate the yeast
  • 2 tsp (10g) salt
  • 2 tbsp  (30g) olive oil
  • 1 ⅔ cup (400ml) water

Instructions

Prepare the dough.

  • In a large bowl, add the active dry yeast and 2 tablespoons of lukewarm water. Let it rest for 5 minutes to activate the yeast.
  • Add the flour, salt, 1 ⅔ cups (400 ml) water, and 2 tablespoons of olive oil. Mix with a spatula until everything is well combined.
  • Cover the bowl with plastic wrap and let the dough rest for 30 minutes.
  • After 30 minutes, perform the first set of stretch and folds.
  • Wet your hands to prevent sticking. Grab one side of the dough, gently stretch it upward, then fold it over toward the center. Rotate the bowl 90 degrees and repeat the process on the next side. Continue this for all four sides of the dough. (you’ll make a total of 4 stretches and folds)
  • Let the dough rest for another 30 minutes.
  • Repeat the stretch and fold process two more times at 30-minute intervals, for a total of 3 sets.
  • Alternatively, after the first round of stretch and folds, you can use the coil fold technique: Wet your hands, gently lift the dough from the middle, and let the ends fold under themselves as the dough coils into the bowl. Turn the bowl 90 degrees and repeat the same motion. This technique adds structure to the dough without overhandling it.
  • After the final set of folds (either stretch and fold or coil fold), spray the dough lightly with oil to keep it from drying out.
  • Cover the bowl with plastic wrap and refrigerate for at least 12 hours up to 2 days.

How to bake the focaccia.

  • Grease a 9×13 inch (23x33cm) pan generously with olive oil to prevent sticking and add flavor.
  • Carefully turn the dough out into the prepared pan. Gently shape it into a rough rectangle without pressing too hard to preserve the dough’s airiness. Let it rest in the pan for 5 minutes, allowing it to relax.
  • After resting, use your oiled fingers to gently stretch the dough towards the edges of the pan. Work from the center outward, being careful not to deflate the dough. If the dough resists stretching, let it rest for a few more minutes and try again.
  • Once the dough is spread to the edges, cover the pan with a clean kitchen towel or plastic wrap. Let it rest at room temperature for 2 to 3 hours, allowing it to rise and fill the pan. The dough should become puffy and soft during this time.
  • Preheat the oven to 425°F (220°C).
  • Drizzle olive oil over the surface of the dough.
  • Using your fingertips, press into the dough to create dimples all over the surface.
  • Now, add your favorite toppings. In this case, top the dough with halved cherry tomatoes, slices of red onion, fresh rosemary sprigs, and a sprinkle of flaky sea salt.
  • Bake the focaccia for about 25 minutes until golden brown and crispy around the edges.
  • Optional: After baking, drizzle a little more olive oil over the focaccia for extra richness and shine.
  • Allow the focaccia to cool in the pan for 5 minutes before carefully transferring it to a wire rack to cool completely. This ensures the bottom stays crisp and doesn’t become soggy.

  • 2 garlic cloves , minced
  • 3 tbsp (45g) extra virgin olive oil
  • 1/3 cup (90g) tahini
  • 3-4 tbsp (60ml) water
  • juice of 1 lemon
  • 1/2 tsp (3g) salt
  • 1/2 tsp (2g) ground cumin

Instructions

Roast the cauliflower.

  • Preheat the oven to 400 F(200C). Line a baking sheet with parchment paper.
  • Wash and chop cauliflower into florets and place in one layer on the prepared baking sheet.
  • Drizzle with olive oil and sprinkle salt and pepper over the cauliflower.

Beyond taste and texture, some people prefer sourdough for its potential health benefits. Some individuals with gluten sensitivities find sourdough easier to digest due to the pre-digestion of gluten during fermentation.

How to make sourdough bread with flaxseeds

This recipe is for a single loaf of bread, but feel free to increase the quantities to make as many loaves as you’d like.

Begin by preparing the overnight starter. In the evening, mix equal amounts of sourdough starter with water and flour in a bowl. Cover it and let it sit overnight.

Next, get the overnight flaxseed ready. Put flaxseeds in a bowl, pour water over them, cover, and let them soak overnight.

In the morning, prepare the final dough. Mix the overnight starter with water and flaxseed soaker in a large bowl. Then add bread flour and rye flour. Let it rest for 30 minutes.

Add salt and knead the dough by hand or mixer for 5-8 minutes. Place the dough in an oiled bowl, cover it, and let it ferment for 2 hours, stretching and folding it every 30 minutes.

After the last fold, transfer the dough to a greased container and let it rise until it increases by 50%.

On a floured surface, shape the dough into a ball, let it rest for 15 minutes, then shape it into either a round or oval loaf. Meanwhile, prepare a pan or proofing basket. Reshape the dough into a loaf and put the dough in, seam-side-up. Cover it, and refrigerate overnight.

How to bake the bread

The next day, heat up the oven to 470°F (240°C) with a baking stone, Dutch oven, or baking sheet inside. If you’re using a baking stone or sheet, put a pot of water in there too to make steam.

Put the risen loaf onto parchment paper, make some cuts on top with a lame cutter, and carefully move them into the hot oven. Bake them for 20 minutes with steam, then take out the water pot or Dutch oven lid.

Lower the heat to 440°F (230°C) and bake for another 15-20 minutes without steam until the bread looks golden and crispy outside.

Let the bread cool down on a wire rack for at least 2 hours before slicing it up.

Ingredients

Overnight Starter

  • 1 oz (30g) 100% hydration sourdough starter
  • 2 tbsp (30g) water
  • 1/4 cup (30g) bread flour

Overnight Flaxseed Soaker

  • 1/4 cup (40g) flaxseeds
  • 1/2 cup (120ml) water

Final Dough

  • 3 ⅓ cups (420g) bread flour
  • 2/3 cup (80g) rye flour
  • 1 cup + 2 tbsp (270ml) water
  • 3 oz (90g) 100% hydration overnight sourdough starter

  • 2 tsp (10g) salt

Instructions

Prepare the overnight starter.

  • To make the overnight starter, in the evening, stir down the 100% hydration sourdough starter, and remove 1 oz (30g) in a bowl. First, add the water and stir well. Add flour and stir. Cover with plastic wrap, and let it rest at room temperature for 10-12 hrs (overnight).

Prepare the overnight flaxseed soaker.

  • Add flaxseeds to a bowl. Pour water over them. Cover with plastic wrap, and let it sit at room temperature.

Prepare the final dough.

  • In the morning, in a large bowl mix the overnight starter with water and flaxseed soaker until well combined.

  • Add the bread flour and rye flour and mix to combine. Let the dough rest (autolyze) for 30 minutes.
  • Add the salt and knead by hand or with a mixer for 5-8 minutes. Wipe the inside of the bowl with a little vegetable oil. Place the dough into the bowl so the dough can be stretched and folded without removing it from the bowl. Cover with plastic wrap.

Bulk Fermentation

  • Let the dough ferment at room temperature for 2 hours, stretching and folding on 4 sides, every 30 minutes, using wet hands. A total of 4 stretches and folds.
  • After the 4th stretch and fold transfer the dough to a straight-sided airtight container greased with olive oil.

  • Let it sit at room temperature until it increases in volume by 50%. This may take several hours depending on the starter and room temperature.

Shape the dough.

  • When ready, turn the dough out onto a floured surface. Shape it into the form of a ball, sprinkle it with flour, cover, and let rest for 15 minutes.

  • Meanwhile, prepare a loaf pan with a kitchen towel, sprinkle with flour, or use a banneton if you have one.
  • Reshape the piece of dough in the desired shape. Either boule (round) or batard (oval loaf shape).
  • Add the dough seam-side-up on the prepared pan or basket and cover it with the edges of the towel.

  • Cover the basket or pan with a plastic bag and refrigerate for 12-48 hours.

How to bake the bread.

  • The next morning or whenever ready to bake the bread, turn the oven to 470°F (240°C) with either a baking stone or a Dutch oven inside. In case you don't have any, simply use a baking sheet, and preheat for 45 minutes to 1 hour before baking (If using the baking stone or the baking sheet place a small pot with water at the base of the oven to create steam, the Dutch oven does not need it as the lid will create enough steam.)
  • Invert the proofed loaf onto a parchment paper.

  • Score the bread using a bread lame or sharp knife.

  • Carefully transfer it to the preheated Dutch oven, baking stone, or the back of the baking sheet.
  • Bake for 20 minutes with steam then remove the pot with water from the oven. When using a Dutch oven simply remove the lid.
  • Reduce oven temperature to 440°F (230°C) and bake for another 15- 20 minutes without steam.
  • Cool on a wire rack. Let them cool completely before cutting for at least 2 hrs.

If you want to use toasted orzo in your recipes, first heat a bit of olive oil in a pan on medium-high heat. Add the orzo. Toast it for about 5-7 minutes, stirring constantly, until it turns golden brown. This step enhances the nutty flavor of the orzo. From here add the water or vegetable stock and continue cooking until tender.

How to make this Toasted Orzo with Chicken

Begin by cutting the chicken into long strips. Season both sides with salt, freshly ground black pepper, garlic powder, and oregano. Set aside.

Next, toast the orzo by heating olive oil in a large pan over medium-high heat. Add the orzo pasta, stirring constantly, and toast for about 5-7 minutes until it turns golden brown. Transfer the toasted orzo to a bowl and set aside.

In the same skillet, add 1 tablespoon of olive oil. Place the seasoned chicken in the pan and cook for 4-6 minutes on each side until it achieves a golden brown color. Ensure the chicken is cooked through, then transfer it to a plate.

Add chopped onion to the pan and cook for 5 minutes until it softens. Add garlic and cook for an additional 1 minute until fragrant. Toss in red pepper and cook for an extra minute.

For the chicken

For the Orzo Pasta

  • 2 tbsp olive oil
  • 1 pound (500g) orzo pasta

Starting with the fresh salmon, we mix in some diced green onions, red peppers, and garlic for a satisfying crunch and a touch of warmth.

Fresh parsley and dill add a delightful, herby touch that complements the salmon beautifully. A squeeze of lemon and a dash of its zest provide a zesty kick, balancing out the richness of the salmon. The eggs ensure everything stays together, giving you that perfect bite every time. A light coat of breadcrumbs creates a golden, crispy crust, giving way to a tender, flavorful center.

These Salmon Patties are a simple yet delightful way to savor the goodness of fresh salmon, a true treat that everybody will love. For this recipe you can also consider using canned salmon.

We like to serve these patties with Tzatziki sauce or a dill sauce made with sour cream or Greek yogurt.

How to make salmon patties

Begin by handling fresh salmon fillets. Carefully remove the skin and cut the fish into manageable chunks.

Next, transfer the salmon pieces into the bowl of a food processor. Process them for a brief period, aiming for a ground consistency with still-visible small chunks.

Move the processed salmon into a generously sized mixing bowl. Continue by finely chopping green onions and red pepper. Add them to the salmon mixture. Include the remaining ingredients: minced garlic, fresh parsley, dill, zesty lemon juice and zest, Worcestershire sauce, breadcrumbs, and eggs. Using a spatula, gently combine all the ingredients.

In a nonstick skillet, heat about 1 tbsp olive oil over medium heat. 

Prepare a plate with a ⅓ cup of breadcrumbs. Now, take spoonfuls of the salmon mixture, flattening them with your hands, and coat them with breadcrumbs on both sides.

Cook each salmon patty for approximately 3 minutes or until the bottom turns golden and crispy. Flip and cook for an additional 3 minutes on the other side. Transfer the patties to paper towels to allow excess oil to drain.

Ingredients

  • 1 pound  (500g) boneless, salmon fillets
  • 1 small red pepper
  • 4 spring onions
  • 2 cloves garlic , minced
  • 2 tbsp fresh parsley , chopped

  • 1/3 cup (50g) breadcrumbs

  • lemon zest from a lemon

For cooking

  • 3 tbsp olive oil for frying
  • 1/3 cup (50g) breadcrumbs for coating the patties

Instructions

  • Take the salmon fillets, remove the skin and cut into chunks. Transfer the salmon pieces into the bowl of a food processor and process for a few seconds. The salmon should be ground but should still have small visible chunks.
  • Transfer the ground salmon to a large bowl.
  • Chop the green onion and red pepper and add to the ground salmon. Add the rest of the ingredients, minced garlic, fresh parsley and dill, lemon juice and zest, Worcestershire sauce, salt and pepper, the breadcrumbs and eggs.
  • Use a spatula to mix everything together.
  • Add ⅓ cup of breadcrumbs to a plate.

  • Cut the chicken breast into ¾ inch (2cm) long strips. Season the chicken on both sides with salt, freshly ground pepper and oregano.

Next, place the grated zucchini and carrots onto a kitchen towel or cheesecloth. Sprinkle some salt over them and allow them to sit for about 5 minutes.

After the wait, wrap the mixture in the towel and squeeze out as much liquid as you can. This step is crucial as it determines the crispiness of your fritters.

Transfer the squeezed zucchini and carrots into a mixing bowl. Add in Parmesan cheese, chopped green onions, minced garlic, fresh parsley, and dill. Also, include the eggs, flour, breadcrumbs, and a bit of salt and pepper. Mix everything thoroughly until it’s well combined.

How to cook the fritters

Heat up a nonstick skillet over medium heat. Pour in a generous amount of olive oil, enough to coat the bottom of the pan.

Using a spoon, carefully drop portions of the fritter batter into the skillet. With the back of the spoon or a spatula, gently flatten each mound. This helps them cook evenly.

Allow the fritters to cook for approximately 3 to 4 minutes on one side, or until they turn a beautiful golden hue and achieve a delightful crispiness.

  • 10 oz (300g) about 1 medium zucchini , grated
  • 7 oz (200g) about 2 medium carrots , grated
  • 1 tsp  (5g) salt
  • 1/4 cup (25g) Parmesan cheese , grated

The recipe is very easy to prepare and requires just 5 major ingredients: eggs, almond flour, cornstarch, sugar and apricots. To give the cake its rise, whipped egg whites replace baking powder. Whip them till they’re stiff and gently mix into the batter without deflating. Also, for this sponge cake, no butter or oil is used which makes the cake very light and low in calories

Whether you’re a fan of apricots or simply appreciate the nutty undertones of almonds, this cake delivers a symphony of flavors in every slice. It’s perfect for sharing with friends and family or as a special treat on any day. 

How to make Apricot Almond Cake

Preheat your oven to 350°F (180°C). Lightly grease an 8-inch (20cm) springform pan and line its bottom with parchment paper.

Begin by cutting the apricots into thick slices. Put the slices in a bowl, add a tablespoon of cornstarch, and toss them gently to ensure even coating. Set this aside.

Now, separate the egg whites from the yolks. In a bowl with the yolks, mix in half of the sugar (1/3 cup or 70g) and almond extract. Stir until the mixture becomes creamy and thick. Incorporate almond flour and 2 tablespoons of cornstarch into this mixture, combining everything smoothly.

Over the egg whites, sprinkle in a pinch of salt. Start whipping the whites until they become foamy. Gradually add the remaining 1/3 cup (70g) of sugar while continuing to whip. Keep beating until the whites form stiff peaks.

Gently fold the whipped egg whites into the yolk-almond mixture. Carefully pour this batter into the prepared pan and use a spatula to smoothen the top surface.

Arrange the previously prepared apricot slices atop the batter in the pan.

Bake the cake for approximately 35-40 minutes or until it turns a beautiful golden hue and a toothpick inserted into the center comes clean.

Start by preheating your oven to 325°F (160°C). Grease an 8-inch (20cm) pan with butter and line it with parchment paper.

Next, prepare the flourless chocolate cake with raspberries. Melt the chocolate and butter together using a bain-marie until they’re wonderfully smooth. Give it a moment to cool down a bit.

While that’s cooling, grab a mixer and beat the eggs, sugar, salt, and vanilla extract for 5-7 minutes until they’re thick and creamy. 

Once your eggs are ready, incorporate the melted chocolate into the mix. Stir it all up until it’s perfectly blended.

Sift in the cocoa powder and gently fold it in with a spatula. Now, pour the mixture into your prepared pan. Arrange the raspberries on top of your cake.

Pop the pan into the oven and bake for 25 minutes. After the first 15 minutes of baking, start beating the meringue.

  • Arrange the raspberries over the top of the cake.
  • Bake for 25 minutes.
  • After the first 15 minutes of baking, start preparing the meringue.

Prepare the meringue.

  • Mix the egg whites and salt until foamy. Gradually add sugar and continue mixing until soft peaks form. Mix in the vinegar or lemon juice and cocoa powder and continue mixing until stiff peaks form.
  • Remove the cake from the oven and spread the meringue over the cake.
  • Bake at 340F (170C) for another 20-25 minutes, until the meringue is puffy and golden.
  • Run a sharp knife completely around the inside edge of the pan and let cool completely. The meringue will deflate as it cools.
  • Let the cake cool at room temperature for about 1 hour before serving.
  • Dust with instant coffee powder before serving if desired. Enjoy!
