Instructions

  • Slice the fresh peaches into thin wedges.
  • In a medium bowl, whisk together the olive oil, balsamic vinegar, lemon juice, minced garlic, Dijon mustard, honey, oregano, salt and pepper.

How to make strawberry pasta salad

Begin with cooking the pasta according to package instructions until al dente. Next, drain and rinse under cold water to stop the cooking process. Allow it to cool completely. 

In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and Dijon mustard to make the dressing. Set aside until ready to use. 

In a large mixing bowl, combine the cooled pasta, quartered strawberries, crumbled feta cheese, red onion slices, chopped toasted walnuts, cherry tomatoes, cucumber, baby spinach and arugula leaves. Pour the dressing over the pasta salad and toss gently to coat everything evenly. Season with salt and pepper to taste. 

Serve immediately or refrigerate for 1-2 hours to allow the flavors to meld together before serving.

Ingredients

  • 9 oz (250g) pasta , rotini, fusilli, or penne
  • 7 oz (200g) fresh strawberries , cut into quarters

For the Dressing

  • Preheat a small skillet over medium-high heat. Add walnuts and toast stirring constantly.

How to make Chicken Caesar Pasta Salad

Start by preparing the croutons, then prepare the chicken, boil the pasta, cut the lettuce and then prepare the dressing. 

How to make the bread croutons

Dirst, mix oil with garlic in a bowl and set it aside for a few minutes to infuse.

Next, preheat the oven to 400°F (200°C). Cut the bread into bite-size cubes, approximately ¾-inch (2cm) pieces.

After that, sieve the infused oil into a large bowl, add salt and pepper to taste, and incorporate grated Parmesan cheese. Mix well to combine.

Then, place the cubed bread into the bowl and toss it to coat evenly.

Arrange the bread cubes on a baking sheet in a single layer and place them in the oven.

Bake for approximately 5 minutes, then flip and toss them with a spatula. Continue baking for another 5 minutes until the bread croutons turn golden brown.

How to prepare the chicken

Now, prepare the chicken by pounding the chicken breast to an even thickness of about ½-inch (1cm). Season the chicken with salt and pepper on both sides.

Heat a bit of oil in a skillet over medium-high heat.

Add the chicken to the pan and cook it for about 4-6 minutes. Flip the chicken and cook for an additional 4-6 minutes until it becomes golden brown. Ensure the chicken is cooked through by checking its internal temperature. It should be at least 165°F (74°C).

Afterward, set the cooked chicken aside to rest for approximately 5 minutes. Once rested, cut it into bite-sized pieces.

Prepare the pasta and the romaine lettuce 

Moving on to the pasta, cook it in salted water according to the package instructions. Drain the cooked pasta and rinse it under cold water.

To prepare the lettuce, cut the Romaine lettuce into bite-sized pieces. Wash and dry it before assembling the salad.

How to prepare the Caesar dressing

 In a medium bowl, place anchovy fillets, garlic, and a pinch of salt. Use two forks to turn the ingredients into a paste. Add mustard, Worcestershire sauce, and lemon juice to the bowl and stir to combine.

Then, incorporate the egg yolk using a whisk. Gradually add the olive oil while continuously whisking the mixture. The dressing will start to thicken.

Finally, add Parmesan cheese to the dressing and whisk to combine. Season with salt and pepper according to taste.

Assemble the Chicken Caesar Pasta Salad.

Place the lettuce, pasta, bread croutons, and chicken into a large bowl. Toss the ingredients with the dressing until they are well coated.

I love Waldorf Salad. It is one of the most comforting fall salads you can ever make. The Waldorf Salad is a fresh fall salad made with celery, apples, red grapes and walnuts, dressed up with mayonnaise and sour cream dressing, and served over a bed of fresh salad. It is very flavorful and makes a great side dish for lunch or dinner and a perfect choice for holiday tables.

This salad is known to have originated in the 19th century at the Waldorf Astoria Hotel in New York. The recipe was made with only apples, celery and mayonnaise by that time. Walnuts and grapes are later additions, bringing a lot of flavor and texture to the original.  I’ve wanted to share the recipe with you ever since I was first introduced to it, many years ago. I am glad I finally can come up with a straightforward recipe that you can easily reproduce at home.

How to make Waldorf Salad. 

For this recipe, I recommend using celery root, also known as celeriac. Celery root has a great earthy flavor and is perfect for salads and dips. Peel the celery root, cut it into smaller pieces and boil it for 3 minutes only, as we still want to keep its crispy texture. Once cooled, cut it into thin strips. 

Toast the walnuts in a pan stirring constantly and chop roughly if desired. Let them cool before adding them to the salad. 

Cut the grapes into haves or quarters, remove seeds if desired and add to the celery strips. You can always substitute the grapes with raisins if that is what suits you best.

Only now, core the apple and cut it into small pieces with the skin on. Add lemon juice the salad, to prevent apples from turning brown. Add parsley, dill, salt and pepper and mix to combine. 

Make a quick dressing with mayonnaise and sour cream, and mix it with the salad. Serve the Waldorf salad over a bed of fresh salad and enjoy one of the most flavorful salads ever.

  • 1 cup (150g) red grapes , halved or quartered
  • 1 large apple (9 oz – 250g) , cored and cut into small pieces

Homemade mayonnaise – makes ¼ cup (70g)

  • 1 egg yolk
  • 1/2 tsp (2,5g) mustard
  • 1/4 cup (56ml) vegetable oil

Instructions

Make the homemade mayonnaise.

  • Put the egg yolk and the mustard in a small bowl. Mix and gradually add oil while mixing until all oil is well incorporated. Refrigerate until ready to use.

Prepare the salad.

  • Peel the celery root and boil it for 3 minutes. Let it cool and cut into thin strips. Transfer the celery stick to a large salad bowl.
  • Toast the walnuts in a pan while stirring constantly. Let them cool.
  • Cut the grapes into halves or quarters and transfer them to the salad bowl.
  • Core the apple and cut it into small pieces. Transfer the apple to the salad bowl, add lemon juice and toss to combine.
  • Add toasted walnuts, salt, freshly ground black pepper, parsley and dill. Mix to combine.
  • Mix mayonnaise with sour cream and add to the salad bowl.
  • Mix gently to coat evenly.
  • Serve over a bed of fresh salad. Decorate with toasted walnuts and enjoy!

This Summer Corn Salad is a great summer dish made with fresh corn, fresh vegetables, Feta cheese, fresh herbs and a flavorful salad dressing. This salad is simply bursting with summer flavor and makes a perfect side dish for family or friend gatherings. 

This corn salad is very easy to prepare. For this recipe it is best to use fresh corn. I usually like to grill the corn but you can also use boiled or roasted fresh corn for this recipe. 

When corn is ready all you have to do next is to prepare the fresh vegetables and salad dressing. You will need some fresh tomatoes, cucumber, green chili pepper, red onion, avocado and your favorite fresh herbs, like parsley, basil or cilantro.

For the dressing you simply need to mix together some extra virgin olive oil, lemon juice, vinegar, garlic and spices. 

In this salad I always like to add some Feta cheese for extra flavor and texture. But feel free to use your favorite cheese for this recipe. 

Toss everything together and enjoy one of the best summer salads ever.

  • 3 tbsp fresh parsley , chopped
  • 3 tbsp fresh basil , chopped

Salad Dressing

Instructions

  • First you need to boil, roast or grill the corn.
  • For grilling on the stovetop, heat a large pan or grill pan over medium-high heat.
  • Add the fresh corn and use tongues to rotate the corn every few minutes.
  • Grill until browned all over.
  • Set aside to cool.
  • Meanwhile prepare the salad dressing.
  • In a small bowl whisk together the olive oil, lemon juice, vinegar, sugar, salt, garlic and freshly ground black pepper. Set aside until ready to use.
  • Cut the vegetables.
  • Cut the corn kernels from the cob and transfer to a large bowl.
  • Add tomatoes, cucumber, onion, avocado, green chili pepper, basil and parsley and Feta cheese. Add the dressing and toss well to coat.
  • Add more salt if needed and enjoy!

This Mediterranean Summer Pasta Salad is a really flavorful summer salad perfect for family or friend gatherings.  As everybody loves pasta, this fresh salad will definitely be a crowd pleaser.

You can serve this Pasta Salad as a main dish or alongside any meat. The salad is simply delicious and very easy to prepare. Once you prepare it you can serve it immediately or you can make it in advance to let the flavors blend even more. This Pasta Salad is also a great choice to bring to any barbecue gathering. 

How to make Mediterranean Summer Pasta Salad

For this salad you simply need some fresh vegetables like cucumbers, cherry tomatoes, red pepper, onion and avocado. Black olives or green olives bring a delightful flavor too, so don’t let them out if possible. For pasta salads I usually like to add some fresh greens like baby spinach but feel free to add any other mix of fresh greens you like best. The feta cheese is always a great addition to this salad but again, feel free to add your favorite cheese.

All these fresh vegetables and greens are tossed with al dente cooked pasta and a flavorful homemade lemony dressing. As for the pasta I like to use bow-tie pasta (farfalle) but penne or fusilli pasta will work as good. All of these types of pasta are catching the dressing really well, so use the ones you have around.

Ingredients

  • 1 pound (500g) bow-tie pasta (farfalle)
  • 3.5 oz (100g) baby spinach leaves , washed and dried
  • 10 oz (300g) cherry tomatoes , cut into halves or quarters
  • 7 oz (200g) cucumber , sliced in quarters
  • 2 medium red peppers , sliced
  • 1 ripe avocado
  • 1/2 red onion , cut into thin slices
  • 6 oz (170g) black olives , pitted, drained and sliced
  • 7 oz (200g) feta cheese , diced 
  • Salt and pepper to taste

Salad Dressing

Instructions

  • Cook the pasta to the al dente stage in salted water according to package instructions. Drain the pasta and rinse under cold water.
  • Prepare the Salad Dressing. In a medium bowl add the olive oil, lemon juice, red wine vinegar, mustard, sugar, garlic, herbs, salt and pepper and whisk well to combine. Set aside until ready to use.
  • Add the pasta into a large salad bowl. Add the spinach leaves, cucumber, red pepper, cherry tomatoes, black olives, avocado and red onion.
  • Add the feta cheese and the dressing and toss until well combined. Add more salt and pepper if needed.
  • Serve immediately and refrigerate the leftovers. Enjoy!

Broccoli Cauliflower Salad

This Broccoli and cauliflower salad is a perfect choice among your other Thanksgiving side dishes. It can be made well in advance, travels easy and if you end up with leftovers (which is unlikely) it can easily be stored for a later meal.

Ingredients

  • 1 medium head (300g) of broccoli
  • 1 small head (200g) of cauliflower
  • 1/2 of a red onion , finely chopped (approximately 1/4 cup)
  • 1/4 cup (40g) dried cranberries
  • 4-5 bacon slices , cooked and crumbled
  • 1/4 cup (60g) mayonnaise
  • 1/4 cup (60g) sour cream
  • 1 tbsp (15ml) apple cider vinegar
  • 1 tbsp (15g) Dijon mustard
  • 1 tbsp (15g) sugar
  • Salt and freshly ground black pepper
  • 1/4 cup (30g) sliced almonds

Instructions

  • To cook the bacon preheat the oven to 400F (200C). Line a baking sheet with parchment paper and place bacon strips on it. Bake until bacon is crispy for about 15-20 minutes. Transfer bacon on paper towels to remove the excess fat. Crumble it up in small pieces and reserve for later use.
  • Separate broccoli and cauliflower florets in bite size pieces, add to a large bowl and add red onion, dried cranberries, bacon crumbles and sliced almonds.
  • Season with salt and pepper.
  • Make the salad dressing. In a small pitcher combine mayonnaise, sour cream, vinegar, mustard , sugar,  salt and pepper. Taste and adjust based on desired acidity.
  • Toss broccoli with salad dressing.
  • Right before serving top with more bacon crumbles and almonds.
