How to make this easy potato corn chowder

To start, cook diced bacon in a large soup pot over medium-high heat until it’s browned and crispy. Once the bacon is crispy, transfer it to a bowl and set it aside. Leave the rendered fat in the pot for added flavor.

Next, add diced onion and celery to the pot, cooking until softened, which should take about five minutes. This builds a savory base for your chowder. Stir in minced garlic and cook for another minute until fragrant.

Now it’s time to add your broth—vegetable or chicken—along with diced potatoes, corn kernels, dried thyme, salt and pepper. If you’re using fresh corn, don’t forget to toss in the cobs for that extra burst of flavor! Cover the pot, bring it to a boil, and then reduce the heat to a gentle simmer. Let it cook for about 15 minutes until the potatoes are tender, checking occasionally to stir. If you want a creamier chowder, you can mash some of the potatoes against the side of the pot as they cook!

After 15 minutes, carefully remove the corn cobs. Now it’s time to add the cream. Gently heat the soup without bringing it to a boil, as boiling can cause the cream to separate. Give it a taste and adjust the seasoning with a pinch more salt or pepper if needed. Remember, the flavors will deepen as they meld together!

Instructions

What truly sets our meatball soup apart is its creamy richness, achieved by adding sour cream mixed with egg yolk just before finishing the soup, making every bite extra satisfying. Served hot with crusty bread, it’s a meal that fills you up and feels like a warm hug.

How to make meatball soup

Begin by heating oil in a large stockpot over medium-high heat. Add the onion and cook for about 5 minutes until it becomes softened. Stir in the carrots and cook for an additional 5 minutes. Then, add the celery root, garlic, and red pepper, and cook for another minute.

Pour in the vegetable stock or water, adding chili pepper if desired, along with salt and pepper. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Allow the vegetables to cook for roughly 20 minutes until they reach a tender consistency.

While the soup is simmering, prepare the meatballs. In a medium bowl, combine the ground meat, semolina flour, egg, uncooked rice, salt, pepper, and chopped fresh parsley. Shape the mixture into 1-inch (2.5 cm) balls using a cookie scoop and wet hands, then place them on a plate.

Carefully transfer the meatballs to the simmering soup along with the potatoes. Allow the soup to return to a boil, then reduce the heat and simmer for an additional 15-20 minutes until the potatoes are tender and the meatballs are fully cooked.

In a separate medium bowl, mix together the sour cream, egg yolk, and minced garlic. Add 2 ladles of hot soup to the mixture, stirring well, then return it to the pot. Let it boil for 1 minute before finishing with fresh herbs such as lovage or parsley, as well as salt and pepper to taste.

Remove the soup from heat and serve it hot alongside crusty bread.

Ingredients

  • 1 pound (450g) Italian Salsiccia sausage , mild or spicy, casings removed
  • 4 oz (125g) diced bacon
  • 1 medium onion , chopped
  • 6 garlic cloves , minced
  • 2 pounds (1kg) potatoes , peeled and cut into 1-inch (2.5cm) cubes
  • 1 red chili pepper , optional
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 6 ½ cups (1 ½ liter) vegetable stock
  • 1 tsp (5g) salt
  • 1/4 tsp (1g) black pepper
  • 1 cup (240g) cream
  • 3 cups (60g) fresh kale , chopped, hard stems removed

Instructions

  • In your soup pot cook the bacon for a few minutes.

  • Before it gets crispy and browned add the Italian sausage. Cook for about 10-15 minutes until both sausage and bacon are crispy and browned. Crumble the meat while cooking. Drain some of the excess oils if necessary, before going further.

  • Add the onion and garlic to the pot and cook for 5 minutes more, stirring from time to time.

  • Add the potatoes, red chili pepper, basil and oregano and give a quick stir.
  • Add the vegetable stock, salt and pepper and stir.

  • Bring to a boil then reduce heat to low. Cover and simmer for 10 minutes until the potatoes are tender.
  • Stir in the cream and kale. Simmer for another 3-5 minutes until kale is tender.

The addition of tender tortellini takes this soup to the next level, offering delightful pockets of pasta filled with savory goodness. Each bite unveils a delightful combination of textures, as the pasta absorbs the savory broth while maintaining its distinct chewiness. It’s comfort in a spoonful.

How to make Tortellini Soup

The recipe for this soup is easy. Simply gather all the ingredients and in about 30 minutes you can have an amazing lunch or dinner.

Start by heating olive oil in a big pot on medium heat. Toss in chopped onions and cook until they’re soft, about 5 minutes. Add Italian sausage and cook until it’s no longer pink, around 4-5 minutes. While it cooks, break the meat into small pieces for that hearty feel.

Next, add carrots, celery, and garlic. Let them cook for an extra 5 minutes, stirring every now and then. Sprinkle in thyme, basil, and oregano to amp up the flavors.

Pour in vegetable stock, crushed tomatoes, salt, and pepper. Give it a good mix, turn up the heat until it boils, then reduce to a gentle simmer. Cover and let it cook for 15-20 minutes until the veggies are tender.

Toss in the cheese-filled tortellini and a bit of cream. Let them cook for another 7-10 minutes until the tortellini are just right.

Before serving, throw in some fresh spinach, give it a final stir, and turn off the heat.

Serve it up hot, topped with shavings of Parmesan, a bit of fresh basil, and those tasty cheese garlic toasts.

For the toasts, just slice a baguette, put the pieces on a baking sheet, drizzle or spray with olive oil, cover with grated cheese, and sprinkle with garlic powder and dried oregano. Bake at 400°F (200°C) for 5-7 minutes until the cheese melts.

  • 2 tbsp olive oil
  • 1 pound (450g) Italian sausage , casings removed
  • 1 medium onion , chopped

  • 1 carrot , diced
  • 2 celery sticks , chopped
  • 2 cans (28oz – 800g) crushed tomatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp (5g) salt
  • 1/4 tsp (1g) black pepper
  • 4 cups  (1liter) vegetable stock
  • 9 oz (250g) tortellini , filled with cheese, ham or spinach (your choice)
  • 1 cup (240g) cream
  • 2 cups (40g) fresh baby spinach

For Garlic Cheese Toasts

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the onion and cook for about 5 minutes until softened.
  • Add the Italian sausage and cook until no longer pink, for about 4-5 minutes. Crumble the meat while cooking.
  • Add the carrot, celery and garlic and cook for 5 minutes more, stirring from time to time.
  • Stir in the thyme, basil and oregano.
  • Add the vegetable stock, crushed tomatoes, salt and pepper and stir. Bring to a boil then reduce heat to low. Cover and simmer for 15-20 minutes until the vegetables are tender.
  • Add the cheese tortellini and cream. Cook for 7-10 minutes more minutes or until the tortellini are tender.
  • Add the spinach, give them a stir and turn off the heat.
  • Serve immediately with Parmesan shavings, fresh basil and garlic cheese toasts.

How to prepare the garlic cheese toasts.

  • Cut the baguette into slices and place the slices on a parchment paper lined baking sheet.
  • Drizzle or spray each slice with olive oil. Spread grated cheese on top. Season with garlic powder and dried oregano. Sprinkle salt and pepper.
  • Bake at 400F (200C) oven for 5-7 minutes or until the cheese is melted.

Tips for Making in Advance:

  • Refrigeration: After preparing the soup base, let it cool to room temperature before refrigerating. Store in an airtight container for up to 24 hours. Add the tortellini, cream and spinach when ready to serve. 
  • Freezing: If you plan to keep it longer, consider freezing the soup without the tortellini, spinach and cream. Thaw in the refrigerator and add the tortellini, spinach and cream when ready to serve.

Though I am not the biggest fan of creamy soups this roasted tomato and red pepper soup conquered me and my family lately. It is a creamy comforting summer soup, full of flavor, served with cheese toasts that make it really irresistible.

How to make Roasted Tomato and Red Pepper Soup

Cut the tomatoes into quarters, the red pepper into chunky pieces, and the onion into wedges and transfer to a parchment paper-lined baking sheet. Add the garlic cloves with the skin on. Season with salt and pepper and drizzle with olive oil. Bake in a preheated 400F (200C) oven for about 40-45 minutes. Transfer the cooked vegetables with all the juice into the bowl of a blender. Squeeze in the garlic flesh and add fresh or dried basil and oregano. Blend until smooth. Pour the soup into a pot and add chicken or vegetable stock. Bring to a boil. Serve the soup warm, decorate with cream and basil leaves and serve with cheese toasts.

Roasting the vegetables enhances their flavor, bringing the best out of them. It is one of the best recipes you can try for tomato season to enjoy its sweet summery flavor.   • Preheat oven to 400F (200C). Line a baking sheet with parchment paper.
  • Cut the tomatoes into quarters, red pepper into chunky pieces, onion into wedges and transfer to the prepared baking sheet.
  • Add the garlic cloves leaving the skin on.
  • Season with salt and pepper and drizzle with olive oil.
  • Bake for about 40-45 minutes, remove from the oven and let cool slightly. Leave the oven on to prepare the cheese toasts.
  • Transfer the cooked vegetables with the juice into the bowl of a blender. Squeeze in the garlic flesh and add fresh or dried basil and oregano.
  • Blend until smooth. Pour the soup into a pot and add chicken stock. Bring to a boil.
  • Meanwhile prepare the cheese toasts. Cut the baguette into slices and place the slices on a parchment paper lined baking sheet. Drizzle or spray each slice with olive oil. Spread grated cheese on top. Season with garlic powder and dried oregano. Bake at 400F (200C) oven for 5-7 minutes or until the cheese is melted.
  • Serve the soup warm, decorate with cream and basil leaves and serve with cheese toasts. Enjoy!

It’s been a while ever since I’ve wanted to try a roasted carrot and ginger soup. I have it on my list for more than a year but all my sweet treats always went up in front. 🙂 When I received some carrots from my mother, from her organic garden I knew that the time has finally come for this carrot soup. A perfect comforting soup for these fall days.

I loved the idea of roasting the carrots and garlic first before making the soup. I was sure it would give a greater taste than to simply boiling them. It does take a bit more time this way, but it all worth it. When roasting carrots in the oven, carrots get a bit caramelized and all the carrot’s sweetness is enhanced. The ginger is also making such a good pairing with the carrots. One of the most important things is to use good quality vegetable stock, preferably homemade. Water can not be used instead, it won’t get as flavorful. It is definitely a hearty soup that will warm you up in a fall or winter day. It is a light soup that goes well for dinner and even as an appetizer.

I roasted some pumpkin and sun flower seeds and also some raw peanuts to go alongside. A bit of crunchy bites always goes so well with a creamy soup. Homemade croutons  are also a good option and of course.. a bit of sour cream, but this is optional if vegetarian of course.

It doesn’t take too much time to prepare this roasted carrot and ginger soup, but you can roast the carrots and garlic in advance, even a day before, refrigerate and use when needed. Give it a try my friends, you will love it too.

  • Preheat oven to 425F (220C). In a large bowl place carrots and 2 tbsp of olive oil.  Add salt and pepper and toss to combine.

  • Place the carrots in a baking sheet lined with parchment paper.  Slice the tips off garlic head. Place the garlic in aluminum foil, close and place in the tray.

  • Roast for about 30 minutes.
  • When carrots and garlic have 5 minutes remaining, heat 2 tbsp of olive oil in a large pot. Add onion, ginger and the rest of the spices. Cook for about 5 minutes until soft.

  • Squeeze the garlic into the pot and add the roasted carrots. Add the vegetable stock, cover and bring to a boil.

  • Reduce heat and simmer covered for 30 minutes.
  • Remove from heat and puree using  an immersion blender or a regular blender. Reheat if necessary, season if needed and serve with sour cream, bread croutons or toasted seeds. Refrigerate for up to 5 days.

Minestrone Soup is one of the best-known Italian soups. It is a thick soup made with beans, a lot of fresh vegetables, and pasta. Probably, it is one of the most flavorful soups. It is served with pasta and Parmesan which makes it just wonderful.

As the cold days are here it is the perfect time to enjoy a large bowl of warming, healthy, nutritious soup.

There are many variations for this soup, as there is no definite recipe for it. I based my recipe on a country-style version that uses cabbage, one of the classic ingredients for Minestrone. You may also include meat in this soup like pancetta or bacon, but this depends on your preference.

How to make Minestrone Soup

First, place the cannellini beans in a large bowl and cover with water and leave them to soak overnight. Drain the beans and then rinse under cold water. I like to use dry beans as they bring more flavor but if you are in a hurry you can use canned beans and add them at the end of cooking. In this way, you reduce the soup cooking time to half. 

In a stock, pot cook onion, bacon, and garlic and saute for about 5 minutes until soft. Add the carrots, celery, and salt and cook for another 5 minutes stirring from time to time. Add diced tomatoes, water and vegetable stock, white beans, and herbs, and bring to a boil. Reduce heat, cover the pot and simmer gently for about an hour or until beans are tender. 

Add cabbage, potatoes, and turnip, and cook for 15 minutes or until all vegetables are tender. Add the red kidney bean and season to taste. 

Serve the soup with Parmesan cheese, pasta, and crusty bread.

(You can also choose to cook the pasta directly on the pot of soup if you serve it immediatly, but if you plan to refrigerate the soup is better to keep the pasta outside so they want soak too much liquid.) Refrigerating soup improves the flavors.
  • Serve the soup sprinkled with Parmesan Cheese and garnish with fresh parsley along crusty or toasted bread.
