This potato corn chowder recipe is versatile, letting you adjust it to suit your tastes, whether you prefer a lighter broth or a thicker, creamier consistency. How to make this easy potato corn chowder

To start, cook diced bacon in a large soup pot over medium-high heat until it’s browned and crispy. Once the bacon is crispy, transfer it to a bowl and set it aside. Leave the rendered fat in the pot for added flavor.

Next, add diced onion and celery to the pot, cooking until softened, which should take about five minutes. This builds a savory base for your chowder. Stir in minced garlic and cook for another minute until fragrant.

Now it’s time to add your broth—vegetable or chicken—along with diced potatoes, corn kernels, dried thyme, salt and pepper. If you’re using fresh corn, don’t forget to toss in the cobs for that extra burst of flavor! Cover the pot, bring it to a boil, and then reduce the heat to a gentle simmer.   • 4 cups (1 liter) vegetable or chicken broth

Instructions

  • In a large soup pot, cook the diced bacon over medium-high heat until browned and crispy.

Place the seasoned chicken strips in the skillet, making sure not to overcrowd the pan, so the chicken sears properly. Cook the chicken for 4 to 6 minutes on each side, allowing it to develop a golden brown crust while locking in the juices. You’ll know the chicken is ready to flip when it easily releases from the pan. Once done, transfer the chicken to a plate.

How to prepare the apples and the sauce

In the same skillet, add your apple slices, making sure they’re spread out in an even layer to ensure proper caramelization. Cook the apples for about 3 to 5 minutes on each side, turning them carefully once they soften and begin to brown.

I’ve used Gala apples for their natural sweetness and firm texture, but Honeycrisp apples or Granny Smith apples will be as good. Feel free to choose the variety that best suits your taste.

Next, stir in finely minced garlic and pour in your chicken or vegetable stock to deglaze the pan, scraping up any flavorful bits that have stuck to the bottom. Add honey, butter and apple cider vinegar. Let the mixture come to a gentle simmer, allowing all the flavors to meld together. As it cooks, the sauce will reduce slightly, filling the kitchen with a delightful sweet and savory aroma.

Once the sauce is ready, return the chicken to the skillet, making sure each piece is tossed and coated in the flavorful mixture. Allow the chicken to warm through and absorb some of the sauce, creating a perfect balance of savory, sweet, and tangy flavors.

  • dried thyme ,or rosemary
  • 2 tbsp olive oil
  • 2 medium apples, Honeycrisp or Gala Apples, (about 10oz -300g) , cored and sliced
  • 2 cloves garlic , minced
  • 3 tbsp  (45g) honey
  • 1/2 cup (120ml) chicken or vegetable stock
  • 2 tbsp  (30g) butter
  • fresh thyme or rosemary , for garnishing

Instructions

  • Cut the chicken breast into ¾ inch (2cm) long strips. Season the chicken breasts with salt, pepper, and a pinch of dried thyme and rosemary.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Add the chicken to the pan and cook for about 4-6 minutes. Flip the chicken and cook for another 4-6 minutes until golden brown. Check if the chicken is cooked through.
  • Transfer the chicken to a plate until you prepare the garlic honey sauce.
  • Add the apple slices into the pan. If necessary add another tablespoon of olive oil. Cook the apples for about 3-5 minutes per side until soft.
  • Add garlic, chicken or vegetable stock, honey, butter and apple cider vinegar.
  • Cook for about 1 minute until simmers, butter is melted and garlic is fragrant.
  • Transfer the chicken back into the skillet, and toss to coat with the garlic honey sauce.
  • Remove from heat, sprinkle fresh rosemary or thyme.
  • Serve with mashed potatoes, rice, or crusty bread.

I love this Greek Salad, known as Horiatiki in Greece as it bursts with fresh flavors and vibrant colors. This salad, a staple of Mediterranean cuisine, highlights simplicity and quality ingredients. It’s a perfect appetizer or side dish, but it can also stand alone as a light, refreshing meal. This salad offers a delightful combination of textures and tastes, from the juicy tomatoes to the creamy feta. Every time we visit Greece, we enjoy serving this salad at their local tavernas near the sea.

Start with ripe tomatoes, sliced into juicy wedges. Combine them with crisp cucumber slices, green pepper slices and thinly sliced red onions that are offering a satisfying crunch. Add Kalamata olives to provide a briny contrast. Top with creamy block of feta cheese that is rich and slightly tangy. Sprinkle the salad with dried oregano for a touch of earthy aroma.

Drizzle extra virgin olive oil generously over the salad. Season lightly with sea salt and freshly ground black pepper, letting the natural flavors shine.

Greek salad not only delights with it refreshing flavor but also brings a piece of sunny Greece to your table. Enjoy it with crusty bread or alongside grilled meats for a complete Mediterranean experience.

How to make Greek salad

Begin by preparing the vegetables. Cut the tomatoes into wedges and the cucumber into thick moon slices. Thinly slice the red onion into rings and slice the green pepper. Add all the cut vegetables into a salad bowl along with the olives.

Season the salad with salt, pepper and a sprinkle of oregano. Drizzle extra virgin olive oil and red wine vinegar over the vegetables, then toss everything together until well coated.

Ingredients

  • 1 pound  (450g) tomatoes , about 3-4 tomatoes
  • 1 medium red onion (about 2.5 oz – 80g)
  • 7 oz (200g) cucumber
  • 4 oz (120g) green pepper , about 1 medium pepper
  • 1/3 cup (70g) black olives
  • 7 oz (200g) block feta cheese
  • 1 tbsp (15g) red wine vinegar
  • 1/4 cup (60g) extra virgin olive oil
  • 1 tsp dried oregano
  • salt and freshly ground black pepper

Instructions

  • Cut the tomatoes into wedges.
  • Cut the cucumber into thick moon slices.

How to make beef stew with caramelized onions

Begin with heating oil in a large pot or pan over medium-high heat. Brown the beef pieces on all sides, turning occasionally, for about 10 minutes. Transfer the beef to a plate.

If needed, add another tablespoon of oil to the pot and cook the chopped onion until softened for about 7-8 minutes, stirring constantly. Add minced garlic and cook for another minute until fragrant. Stir in red pepper.

Sprinkle paprika over the mixture and cook for a few seconds until fragrant. Return the beef to the pot.

Add vegetable stock, tomato puree, Worcestershire sauce, salt, pepper, thyme, and bay leaves. Bring to a boil, then reduce heat to low and simmer.

Cover and cook for 1 to 1 ½ hours, or until the beef is tender. Stir occasionally and add more stock if needed to prevent too much reduction.

  • 2 pounds (900g) beef chuck, brisket, or round , cut into 1 inch (3cm) cubes
  • 4 large onions about 1 ¼ pounds (600g) , diced
  • 5 garlic cloves , minced

  • cups (1 liter) vegetable stock
  • 1 can (14 oz -400g) tomato puree
  • 1 tbsp (15g) Worcestershire sauce

  • 1/4 tsp (1g) pepper
  • Fresh parsley , for garnishing

Instructions

  • Heat oil on a large pot or pan over medium-high heat.

  • Add another tablespoon of oil if needed and add the chopped onion. Cook onion, stirring constantly, until softened, for about 7-8 minutes.

Each spoonful is a blend of savory flavors, enhanced by hints of herbs and spices. We love to use fresh lovage for this soup for its incredible flavor, although fresh parsley or celery leaves can serve as suitable alternatives. 

What truly sets our meatball soup apart is its creamy richness, achieved by adding sour cream mixed with egg yolk just before finishing the soup, making every bite extra satisfying. Served hot with crusty bread, it’s a meal that fills you up and feels like a warm hug.

Whether it’s a cozy night in or a quick lunch, our meatball soup is a tasty choice that everyone will love. So, grab a bowl and enjoy the comforting taste of homemade goodness.

How to make meatball soup

Begin by heating oil in a large stockpot over medium-high heat. Add the onion and cook for about 5 minutes until it becomes softened. Stir in the carrots and cook for an additional 5 minutes. Then, add the celery root, garlic, and red pepper, and cook for another minute.

Pour in the vegetable stock or water, adding chili pepper if desired, along with salt and pepper. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Allow the vegetables to cook for roughly 20 minutes until they reach a tender consistency.

While the soup is simmering, prepare the meatballs. In a medium bowl, combine the ground meat, semolina flour, egg, uncooked rice, salt, pepper, and chopped fresh parsley. Shape the mixture into 1-inch (2.5 cm) balls using a cookie scoop and wet hands, then place them on a plate.

Carefully transfer the meatballs to the simmering soup along with the potatoes. Allow the soup to return to a boil, then reduce the heat and simmer for an additional 15-20 minutes until the potatoes are tender and the meatballs are fully cooked.

In a separate medium bowl, mix together the sour cream, egg yolk, and minced garlic. Add 2 ladles of hot soup to the mixture, stirring well, then return it to the pot. Let it boil for 1 minute before finishing with fresh herbs such as lovage or parsley, as well as salt and pepper to taste.

Remove the soup from heat and serve it hot alongside crusty bread.

Serve your Easy Cashew Chicken over a bed of rice or noodles for a satisfying meal that’s sure to please everyone at the table. With its easy steps and mouthwatering taste, this dish is perfect for busy weeknights or lazy weekends when you want something tasty without all the fuss.

How to make this easy cashew chicken

Cut the chicken breast into bite-sized pieces and season them with salt and pepper. Transfer the chicken to a bowl and add cornstarch, tossing to coat evenly.

In a small bowl, combine soy sauce, vegetable stock, sugar, garlic, brown sugar, hoisin sauce, and sesame oil. Mix well and set aside.

Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add half of the chicken pieces in a single layer and cook until lightly browned on one side, about 1-2 minutes.   • In a large skillet heat 1 tablespoon of oil over medium-high heat. Add half of the chicken pieces in a single layer. Cook until the chicken is lightly browned on one side, for about 1-2 minutes. Flip to the other side and cook for an additional 1-2 minutes.
  • Remove the chicken to a clean plate. Repeat with the remaining chicken.
  • Return the first batch of chicken to the skillet.
  • Add the green onion, the cashews, the soy sauce mixture and rice vinegar into the skillet.
  • Cook for another 2 minutes until the sauce thickens.

Add the tortilla strips and fry them in batches until golden, for about 2-3 minutes. Drain them on a paper towel-lined plate.

Now, let’s make the chicken tortilla soup. In your soup pot, heat the olive oil over medium heat. Saute the onions, garlic, and jalapeno for about 5 minutes until softened, stirring occasionally. Add the crushed tomatoes, vegetable stock, ground cumin, chili powder, and oregano, and give it a quick stir. Add the chicken breasts. Bring to a boil, then reduce heat to low. Simmer for about 20 minutes until the chicken is cooked through.

How to cook orzo

Cooking orzo is simple and similar to cooking other types of pasta. Boil a pot of salted water, toss in the orzo, and stir to avoid sticking. Let it cook for around 8-10 minutes until it’s tender. Taste to check if it’s done, then drain the orzo in a colander. If you want it to cool quickly or plan to use it in a salad, give it a rinse under cold water. Your orzo is ready to shine in various dishes, hot or cold, your choice.

If you want to use toasted orzo in your recipes, first heat a bit of olive oil in a pan on medium-high heat. Add the orzo. Toast it for about 5-7 minutes, stirring constantly, until it turns golden brown. This step enhances the nutty flavor of the orzo. From here add the water or vegetable stock and continue cooking until tender.

How to make this Toasted Orzo with Chicken

Begin by cutting the chicken into long strips. Season both sides with salt, freshly ground black pepper, garlic powder, and oregano. Set aside.

Next, toast the orzo by heating olive oil in a large pan over medium-high heat. Add the orzo pasta, stirring constantly, and toast for about 5-7 minutes until it turns golden brown. Transfer the toasted orzo to a bowl and set aside.

In the same skillet, add 1 tablespoon of olive oil. Place the seasoned chicken in the pan and cook for 4-6 minutes on each side until it achieves a golden brown color. Ensure the chicken is cooked through, then transfer it to a plate.

Add chopped onion to the pan and cook for 5 minutes until it softens. Add garlic and cook for an additional 1 minute until fragrant. Toss in red pepper and cook for an extra minute.

For the chicken

For the Orzo Pasta

  • 2 tbsp olive oil
  • 1 pound (500g) orzo pasta
  • 1 medium onion (about 6 oz – 180g)
  • 5 garlic cloves , minced
  • 1 red pepper (about 4 oz – 120g)
  • 1 cup (240g) tomato puree
  • 5 ½ cups (1,3 liter) vegetable stock

Instructions

  • Cut the chicken into long strips.

Next up, throw in the onion and garlic, allowing them to cook with the meats for an additional 5 minutes. Stir occasionally for a flavorful mix. Now, introduce the potatoes, red chili pepper, basil, and oregano, giving it all a quick stir.

Pour in the vegetable stock, adding salt and pepper to the mix. Stir it up and let it all come to a boil. Once bubbling, lower the heat, cover the pot, and let it simmer for 10 minutes until the potatoes reach that perfect tenderness.

  • 1 pound (450g) Italian Salsiccia sausage , mild or spicy, casings removed
  • 4 oz (125g) diced bacon
  • 1 medium onion , chopped
  • 6 garlic cloves , minced
  • 2 pounds (1kg) potatoes , peeled and cut into 1-inch (2.5cm) cubes
  • 1 red chili pepper , optional
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
