This Easy No-Knead Focaccia is a simple, yet flavorful bread that requires minimal effort and delivers excellent results. This recipe is perfect for beginners or anyone looking for a hands-off baking experience.

The dough is made from just a few basic ingredients: flour, water, yeast, salt, and olive oil. Instead of kneading, the dough undergoes a slow fermentation process, which allows the gluten to develop naturally over time. This method will result in a soft, airy, and chewy texture, with a slightly crispy crust.

I topped this focaccia with olive oil, cherry tomatoes, red onion, fresh rosemary and flaky sea salt. Feel free to experiment with other toppings like olives, garlic, or different herbs to make it your own!

Bake until golden brown, and you’ll have a delicious, homemade focaccia that pairs perfectly with soups, salads, or as a base for sandwiches. It’s a fuss-free, crowd-pleasing bread, perfect for any occasion.

How to make no-knead focaccia

Begin by activating the yeast in a large bowl with 2 tablespoons of lukewarm water. After 5 minutes, mix in the flour, salt, 1 ⅔ cups (400 ml) of room-temperature water, and 2 tablespoons of olive oil. Gently stir until everything is well combined. The dough will be wet and sticky at this stage. Cover the bowl tightly with plastic wrap to prevent the dough from drying out, and let it rest for 30 minutes.

Perform three sets of stretch and folds at 30-minute intervals. Wet your hands, stretch the dough upward, fold it toward the center, and rotate the bowl 90 degrees. Repeat this process for all four sides.

If you’d like, you can also incorporate the coil fold technique. With wet hands, gently lift the dough from the center and let the ends fold under themselves as the dough coils. Turn the bowl 90 degrees and repeat. This technique adds structure without overhandling the dough.

After the third set, lightly oil the dough, cover, and refrigerate for 12 hours or up to 2 days.

How to bake the focaccia

When ready, grease a 9×13 inch (23-x33cm) pan with olive oil, transfer the dough into it, and let it relax for 5 minutes. Gently stretch the dough towards the edges of the pan. Cover and let it rise at room temperature for 2-3 hours until puffy.

Preheat the oven to 425°F (220°C). Drizzle olive oil over the dough, dimple the surface with your fingertips. The dimples will help trap the oil and any toppings you add.  Now, add your favorite toppings like cherry tomatoes, red onion, rosemary, and flaky sea salt. Bake for 25 minutes until golden and crispy. Once baked, allow the focaccia to cool in the pan for 5 minutes before carefully transferring it to a wire rack to cool completely.

Hope you will try it out and enjoy your homemade focaccia! If you do, don’t forget to share the photos with me on Instagram. Would love to see how it turns out for you.

Prep Time 10 minutes
Cook Time 25 minutes
Resting Time 14 hours
Total Time 12 hours 35 minutes

Ingredients

  • 4 cups (500g) bread flour or all-purpose flour
  • 1 tsp (4g) active dry yeast
  • 2 tbsp (30ml) water to activate the yeast
  • 2 tsp (10g) salt
  • 2 tbsp  (30g) olive oil
  • 1 ⅔ cup (400ml) water

Instructions

Prepare the dough.

  • In a large bowl, add the active dry yeast and 2 tablespoons of lukewarm water. Let it rest for 5 minutes to activate the yeast.
  • Add the flour, salt, 1 ⅔ cups (400 ml) water, and 2 tablespoons of olive oil. Mix with a spatula until everything is well combined.
  • Cover the bowl with plastic wrap and let the dough rest for 30 minutes.
  • After 30 minutes, perform the first set of stretch and folds.
  • Wet your hands to prevent sticking. Grab one side of the dough, gently stretch it upward, then fold it over toward the center. Rotate the bowl 90 degrees and repeat the process on the next side. Continue this for all four sides of the dough. (you’ll make a total of 4 stretches and folds)
  • Let the dough rest for another 30 minutes.
  • Repeat the stretch and fold process two more times at 30-minute intervals, for a total of 3 sets.
  • Alternatively, after the first round of stretch and folds, you can use the coil fold technique: Wet your hands, gently lift the dough from the middle, and let the ends fold under themselves as the dough coils into the bowl. Turn the bowl 90 degrees and repeat the same motion. This technique adds structure to the dough without overhandling it.
  • After the final set of folds (either stretch and fold or coil fold), spray the dough lightly with oil to keep it from drying out.
  • Cover the bowl with plastic wrap and refrigerate for at least 12 hours up to 2 days.

How to bake the focaccia.

  • Grease a 9×13 inch (23x33cm) pan generously with olive oil to prevent sticking and add flavor.
  • Carefully turn the dough out into the prepared pan. Gently shape it into a rough rectangle without pressing too hard to preserve the dough’s airiness. Let it rest in the pan for 5 minutes, allowing it to relax.
  • After resting, use your oiled fingers to gently stretch the dough towards the edges of the pan. Work from the center outward, being careful not to deflate the dough. If the dough resists stretching, let it rest for a few more minutes and try again.
  • Once the dough is spread to the edges, cover the pan with a clean kitchen towel or plastic wrap. Let it rest at room temperature for 2 to 3 hours, allowing it to rise and fill the pan. The dough should become puffy and soft during this time.
  • Preheat the oven to 425°F (220°C).
  • Drizzle olive oil over the surface of the dough.
  • Using your fingertips, press into the dough to create dimples all over the surface.
  • Now, add your favorite toppings. In this case, top the dough with halved cherry tomatoes, slices of red onion, fresh rosemary sprigs, and a sprinkle of flaky sea salt.
  • Bake the focaccia for about 25 minutes until golden brown and crispy around the edges.
  • Optional: After baking, drizzle a little more olive oil over the focaccia for extra richness and shine.
  • Allow the focaccia to cool in the pan for 5 minutes before carefully transferring it to a wire rack to cool completely. This ensures the bottom stays crisp and doesn’t become soggy.

This Easy Sandwich Bread is a beginner-friendly recipe perfect for those seeking homemade, fresh bread without the hassle of complicated steps. This bread, known for its soft and tender crumb, is ideal for creating a variety of sandwiches.

With a simple ingredient list, flour, yeast, water, sugar, salt, milk and butter, this bread comes together quickly, making it a staple for busy households.

The process begins with mixing and kneading the dough, which can be done by hand or with a stand mixer. After allowing the dough to rise until it doubles in size, it’s shaped and placed into a loaf pan for a second rise. Baking yields a golden-brown crust with a delightful, slightly chewy texture.

The aroma of freshly baked bread fills the kitchen, inviting everyone to enjoy a slice, whether toasted or as is.

This Easy Sandwich Bread is not only delicious but also highly customizable. You can experiment with a mix of flours to create different textures and flavors. Add-ins like seeds, herbs, or cheese can enhance its flavor profile, making each loaf unique.

How to make easy sandwich bread

Begin with activating the yeast in a large bowl by combining it with a bit of sugar and water. Let it rest for 5 minutes until the yeast is bubbly. Next, add flour, salt, milk, and butter, and knead the mixture for about 5-10 minutes until the dough is smooth and pulls away from the sides of the bowl. Transfer the dough to an oiled bowl, cover it with plastic wrap, and let it rise at room temperature for about an hour until it doubles in size.

Spray a 9×5 inch (23×13 cm) loaf pan with oil and set it aside. On a lightly oiled surface, press the dough into a rectangle with one side the width of the pan, about 9 inches (23 cm). Roll the dough into a log and place it seam-side down into the prepared loaf pan. Cover the loaf with a kitchen towel and let it rise in the pan for another 45-50 minutes at room temperature.

Meanwhile, preheat the oven to 375°F (190°C). Brush the risen loaf with olive oil and bake for 25-30 minutes until golden brown on top. Let the bread cool in the pan for 5 minutes before transferring it to a cooling rack to cool completely.

This delightful Poppy Seed Babka is a beloved pastry enjoyed in various countries around the world. It features a fluffy dough filled with a generous amount of poppy seed meringue filling. It is a perfect addition to your holiday table or for pairing with your morning cup of coffee or afternoon tea.

Our Poppy Seed Babka starts with soft dough that’s carefully mixed and rolled out. Then, we generously spread a tasty filling of ground poppy seeds, meringue and sugar. After rolling it all up, we bake it until it turns a golden brown color and smells amazing.

When you take a bite of our Poppy Seed Babka, you’ll experience the softness of the dough and the satisfying flavor and texture of the poppy seeds. It’s a delicious treat that’s sure to please any time of the day!

How to make poppy seed babka

The recipe for this poppy seed babka is easy and with great results each time. Begin by preparing the dough and let it rest until doubled in size. Continue with preparing the poppy seed meringue filling and then start to assemble the babka. Let it rest again in the pan, brush with beaten egg and bake until golden brown. Optional, brush the babka with sugar syrup.

How to prepare the dough

In a medium bowl, combine yeast, 1/2 tsp (3g) sugar, and 1/4 cup (60ml) lukewarm milk. Let it rest for 5-10 minutes to activate the yeast.

In a large bowl, whisk together the flour, sugar, and salt. Add the remaining milk, activated yeast mixture, egg yolks, vanilla extract, sour cream, and melted butter. Knead the dough until it pulls away from the sides of the bowl, either by hand or using a hand mixer or stand mixer.

Shape the dough into a ball, transfer it to an oiled bowl, and cover it with plastic wrap. Let it rest for about 1 hour at room temperature until doubled in size.

How to prepare the poppy seed meringue filling

For this recipe it is essential to use ground poppy seeds. If you can not find ground poppy seeds in stores you may need to grind your poppy seeds before going further with the recipe.

Whip the egg whites with a pinch of salt until foamy. Gradually add sugar and continue mixing until stiff peaks form. Add the ground poppy seeds and vanilla extract, and mix gently to combine. Set aside until ready to use.

How to assemble the babka

Roll the dough on a floured surface into a rectangle of about 18×10 inches (45x25cm).

Spread the poppy seed mixture evenly over the dough, leaving about a 1/2-inch (1cm) border around the edges.

Roll up the dough and cut the log in half lengthwise using a sharp knife. Braid the two pieces together, keeping the open layers exposed so the cut ends remain on top.

Transfer the poppy seed babka to a 9×5-inch (23x13cm) loaf pan lined with parchment paper. Cover with a kitchen towel and let it rest for 40-45 minutes at room temperature.

Poppy Seed Babka

How to bake the poppy seed babka

While the babka is resting, preheat the oven to 350F (180C). Brush the bread with beaten egg and then reduce the oven temperature to 320F (160C).

Transfer the babka to the oven and bake for about 50-55 minutes, covering with aluminum foil after about 30 minutes if it browns too fast. Remove from the oven and let it rest in the pan for 10 minutes.

Meanwhile, prepare the sugar syrup. In a small saucepan, add water and sugar and boil for 2-3 minutes. Brush the babka while still warm with the sugar syrup.

Let the poppy seed babka cool completely before cutting it into slices.

Treat your loved ones to the simple pleasure of our Poppy Seed Babka, a delightful pastry that’s guaranteed to bring joy with every slice.

This easy recipe for Sourdough Bread with Flaxseeds offers a wholesome twist on a classic favorite. This crusty bread, infused with flaxseeds is soft, chewy, and airy inside making it simply irresistible. Perfect for sandwiches, toast, or simply enjoyed on its own, this sourdough bread with flaxseeds is a nutritious and delicious addition to any table.

First, flaxseeds are soaked overnight, allowing them to plump up and infuse their nutty flavor into the dough. This process also enhances their nutritional value, adding a dose of fiber, omega-3 fatty acids, and antioxidants.

After the dough is kneaded it’s time to let it rise. During this rising process, the yeast works its magic, creating those coveted air pockets within the dough. Once risen, the dough is carefully shaped and baked until it reaches a golden perfection.

Each bite of this sourdough bread with flaxseeds offers a symphony of flavors and textures, the earthy crunch of flaxseeds, the tangy notes of fermentation, and the comforting warmth of freshly baked bread.

Why making sourdough bread instead of yeast bread

Choosing sourdough bread over yeast bread offers several benefits. Firstly, sourdough fermentation provides unique flavors and textures. The wild yeast and lactobacilli present in sourdough starter create a tangy taste that distinguishes it from regular yeast bread. This fermentation process also breaks down gluten, making sourdough easier to digest for some people.

Moreover, sourdough bread tends to have a longer shelf life due to its acidic environment, which inhibits the growth of mold and extends freshness. Additionally, sourdough bread features a chewier texture and a more complex flavor profile compared to yeast bread.

Beyond taste and texture, some people prefer sourdough for its potential health benefits. Some individuals with gluten sensitivities find sourdough easier to digest due to the pre-digestion of gluten during fermentation.

How to make sourdough bread with flaxseeds

This recipe is for a single loaf of bread, but feel free to increase the quantities to make as many loaves as you’d like.

Begin by preparing the overnight starter. In the evening, mix equal amounts of sourdough starter with water and flour in a bowl. Cover it and let it sit overnight.

Next, get the overnight flaxseed ready. Put flaxseeds in a bowl, pour water over them, cover, and let them soak overnight.

In the morning, prepare the final dough. Mix the overnight starter with water and flaxseed soaker in a large bowl. Then add bread flour and rye flour. Let it rest for 30 minutes.

Add salt and knead the dough by hand or mixer for 5-8 minutes. Place the dough in an oiled bowl, cover it, and let it ferment for 2 hours, stretching and folding it every 30 minutes.

After the last fold, transfer the dough to a greased container and let it rise until it increases by 50%.

On a floured surface, shape the dough into a ball, let it rest for 15 minutes, then shape it into either a round or oval loaf. Meanwhile, prepare a pan or proofing basket. Reshape the dough into a loaf and put the dough in, seam-side-up. Cover it, and refrigerate overnight.

How to bake the bread

The next day, heat up the oven to 470°F (240°C) with a baking stone, Dutch oven, or baking sheet inside. If you’re using a baking stone or sheet, put a pot of water in there too to make steam.

Put the risen loaf onto parchment paper, make some cuts on top with a lame cutter, and carefully move them into the hot oven. Bake them for 20 minutes with steam, then take out the water pot or Dutch oven lid.

Lower the heat to 440°F (230°C) and bake for another 15-20 minutes without steam until the bread looks golden and crispy outside.

Let the bread cool down on a wire rack for at least 2 hours before slicing it up.

Hope you will try the recipe and enjoy the amazing flavors of this sourdough bread with flaxseeds. If you do, make sure to share the photos with me on Instagram. I love seeing how it turns out for you.

These delightful Greek Yogurt Bagels are a fuss-free treat that delights with each bite. This quick and easy recipe requires just a handful of pantry staples: Greek yogurt, flour, salt, and baking powder. No yeast needed, no waiting around for dough to rise—just pure, instant satisfaction.

To whip up these delectable delights, start by combining Greek yogurt, flour, salt, and baking powder in a mixing bowl. Knead the mixture until a smooth, elastic dough forms. Then, divide the dough into equal portions and shape them into classic bagel rounds.

Transfer the bagels onto a baking sheet, brush with beaten egg and sprinkle with your favorite toppings—whether it’s sesame seeds, poppy seeds, or a sprinkle of sea salt—and bake until golden brown and irresistibly fragrant.

In just a few simple steps, you’ll have a batch of homemade Yogurt Bagels ready to enjoy. Perfect for a quick breakfast, a satisfying snack, or any time you crave a taste of homemade bread.

How to make Greek Yogurt Bagels

Begin by preheating your oven to 375°F (190°C) and lining a baking sheet with parchment paper for easy cleanup.

In a large bowl, combine the flour with baking powder and salt, stirring until well mixed. Add the Greek yogurt to the dry ingredients and mix until fully combined. Then, knead the dough for a few minutes until it becomes smooth.

Divide the dough into 8 equal pieces. Roll each piece into a thick rope, about 8-9 inches (20-22cm) long, and press the ends together to seal them, forming a circular shape resembling a bagel.

Carefully transfer each shaped bagel to the prepared baking sheet. Brush the tops of the bagels with beaten egg, which will give them a shiny finish as they bake.

Now, it’s time to add your desired toppings! Whether you prefer sesame seeds, poppy seeds, a sprinkle of sea salt, or a bagel seasoning, generously sprinkle your chosen seasonings over the bagels.

Place the baking sheet in the preheated oven and bake the bagels for 25 minutes, or until they are beautifully golden brown and slightly crispy on the outside.

Once baked to perfection, remove the bagels from the oven and allow them to cool slightly before serving. Enjoy these homemade delights as a delicious breakfast or snack!

Hope you’ll try them out and enjoy! Don’t forget to tag me in your Instagram posts or stories, so I can see your amazing results.

This Cinnamon Wool Roll Bread is a delightful treat perfect for holidays or for whenever craving something sweet. It combines the comforting flavors of cinnamon with the soft, fluffy texture of freshly baked sweet bread.

What sets this Cinnamon Wool Roll Bread apart is the addition of tangzhong and its unique presentation. Tangzhong is an easy technique used for achieving softer and fluffier bread.

Despite its elegant appearance once baked, making this bread is quite simple. It involves preparing a yeast dough and filling it with a mixture of cinnamon, sugar, and butter. Roll it up and bake it in a round pan until golden brown.

You can always experiment with different fillings, including savory variations, to customize it to your taste preferences.

When served each slice reveals beautiful swirls of cinnamon sugar buttery mixture. Whether enjoyed on its own or paired with a hot cup of coffee, this bread is sure to delight anyone craving a cozy and indulgent treat.

Cinnamon Wool Roll Bread - easy recipe

What is Tangzhong

Tangzhong is a useful technique for achieving a softer, fluffier, and more flavorful yeast bread. It’s particularly popular in Asian-style bread baking but has gained popularity worldwide for its beneficial effects on bread texture and shelf life. It involves making a water roux by cooking a portion of the flour and milk or water from the recipe into a paste, which is then added to the rest of the ingredients.

How to make wool roll bread

To begin, let’s prepare the tangzhong. In a small saucepan, combine the flour and milk, and place it over medium-low heat. Stir continuously until the mixture thickens. Once thickened, allow it to cool slightly.

While the tangzhong cools, let’s activate the yeast. In a medium bowl, mix together the yeast, 1 teaspoon (5g) of sugar, and 2/3 cup of lukewarm milk. Allow this mixture to rest for 5-10 minutes to activate the yeast.

How to prepare the yeast dough

In a large bowl, whisk together the flour, sugar, and salt. To this dry mixture, add the activated yeast, tangzhong, eggs, vanilla extract, and melted butter. Begin kneading the dough until it becomes smooth and slightly pulls away from the sides of the bowl. This can be done by hand or with the assistance of a hand mixer or stand mixer.

Transfer the kneaded dough into an oiled bowl and cover it with plastic wrap. Let the dough rest for about 1 hour at room temperature, or in a warm space, until it doubles in size.

Next, prepare the butter cinnamon mixture by combining the butter with cinnamon and sugar in a small bowl. Set this mixture aside until ready to use.

How to shape the wool roll bread

Grease and line a 10-inch (25cm) springform pan with parchment paper. Divide the dough into 6 equal pieces. Shape each piece into a ball.

Roll out each ball of dough lengthwise into a rectangle until it reaches approximately 12 inches (30cm) in length. Spread 1/6 of the butter-cinnamon mixture over the top half of the rectangle. Then, cut the bottom half into thin strips.

Fold the long edges of the rectangle and roll the dough into a log. Place the log, seam-side down, into the bottom of the prepared pan. Repeat this process with the remaining dough pieces.

Cover the pan and let the dough rise for 45 minutes. Meanwhile, preheat the oven to 350F (180C).

Before baking, brush the surface of the bread with beaten egg. Then, bake the wool roll bread for 25-30 minutes, or until it turns golden brown.

Allow the bread to cool slightly before serving.  If you try it out, make sure to share the photos with me on Instagram. Would love to see how it turns out for you.

  • 1/2 cup (120ml) milk

For the Dough

  • 3 ¾ cups (470g) all-purpose flour
  • 2 ¼ tsp (7g) active dry yeast (or 25 g fresh yeast)
  • 2/3 cup (180ml) lukewarm milk
  • 1/4 cup (50g) sugar
  • 1 tsp (5g) vanilla extract
  • 1/2 tsp (3g) salt
  • 2 medium eggs
  • 4 tbsp (56g) unsalted butter , melted

Cinnamon Filling

  • 5 tbsp (70g) butter , at room temperature
  • 2 tbsp (13g) ground cinnamon
  • 1/2 cup (100g) sugar

For Brushing

Instructions

Prepare the tangzhong.

  • In a small saucepan add the flour and milk and place over medium-low heat. Cook stirring continuously until thickens. Let it cool slightly.

Prepare the dough.

  • In a medium bowl add yeast, 1 tsp (5g) sugar and 2/3 cup lukewarm milk. Let it rest for 5-10 minutes to activate the yeast.
  • In a large bowl whisk together the flour, sugar and salt. Add the activated yeast, tangzhong, eggs, vanilla extract and melted butter. Start kneading it until smooth and it slightly pulls away from the sides of the bowl. You can knead the dough by hand or use a hand mixer or stand mixer.
  • Transfer the dough into an oiled bowl and cover with plastic wrap.
  • Let the dough rest for about 1 hour at room temperature (warm space) until doubled in size.

Prepare the butter cinnamon mixture.

  • In a small bowl combine butter with cinnamon and sugar. Set aside until ready to use.
  • Grease and line a 10-inch (25cm) springform pan with parchment paper.

How to shape the wool roll bread.

  • Divide the dough into 6 equal pieces (about 170g each). Shape each into a ball.
  • Roll each piece of dough lengthwise into a rectangle until about 12 inches (30cm) long.
  • Spread ⅙ of butter cinnamon mixture over the top half of the rectangle.
  • Cut the bottom half into thin strips.
  • Fold the long edges of the rectangle and roll the dough into a log.
  • Place the log, seam-side down, into the bottom of the pan.
  • Repeat with the remaining dough.
  • Cover and let rise for 45 minutes.
  • Meanwhile, preheat the oven to 350F (180C).
  • Brush the bread with beaten egg.
  • Bake the wool roll bread for 25-30 minutes until golden brown.
  • Let it cool slightly before serving.
