This Raspberry Peach Yogurt Mousse Cake is a delightful and refreshing dessert perfect for summer celebrations. It is an elegant treat that captures the essence of the season’s finest fruits. It harmoniously blends the flavors of ripe peaches and tangy raspberries with a creamy yogurt mousse.

This dessert starts with a light, spongy vanilla base that is generously filled with juicy peach slices and fresh raspberries, making every bite bursting with fresh fruit flavor. A thin, layer of homemade peach sauce is spread over the cake.

The cake is then beautifully topped with a creamy layer of peach yogurt mousse. Fresh raspberries are carefully folded into the mousse, adding a pop of vibrant color and a burst of tartness. The cake is then decorated with more fresh raspberries and peach slices adding a burst of color and a hint of the fresh fruit flavors that permeate the cake.

The result is a dessert that is both light and indulgent, with a perfect balance of sweet, tart, and creamy flavors.

How to make raspberry peach yogurt mousse cake

Begin by preparing the raspberry peach sponge cake.  While the cake is baking continue with preparing the peach sauce. Let them both cool completely and prepare the raspberry peach yogurt mousse. Assemble the cake and let it set for 4-6 hours in refrigerator. Decorate as desired and enjoy!

How to prepare the raspberry peach sponge cake

Preheat the oven to 340°F (170°C), grease an 8-inch (20 cm) pan, and line the bottom with parchment paper. Separate the egg whites from the yolks. In a medium bowl, whisk the yolks with 1/4 cup (50g) sugar and vanilla extract until creamy and pale yellow. Gradually mix in the oil and water. Incorporate the flour and baking powder into the yolk mixture and set aside.

In a large bowl, beat the egg whites with salt until foamy. Gradually add the remaining 1/4 cup sugar (50g) and continue mixing until soft peaks form. Gently fold a spoonful of whipped whites into the yolk mixture, then fold the yolk mixture back into the remaining whipped whites.

In a separate bowl, toss the chopped peaches and raspberries with 2 tablespoons of flour, then gently fold them into the batter. Pour the batter into the prepared pan and bake for 35-40 minutes, until a toothpick inserted into the center comes out clean. Allow the cake to cool for 10 minutes before removing it from the pan to cool completely on a rack.

How to prepare the peach sauce

Meanwhile, prepare the peach sauce by placing chopped peaches, sugar, and lemon juice in a small saucepan over medium heat. Bring to a boil and cook for about 15 minutes, until the peaches are tender and the sauce thickens. Set aside to cool, reserving 3 tablespoons (45g) for spreading on the sponge cake.

How to prepare the peach yogurt mousse.

Dissolve the gelatin in cold water and let it swell for 5-10 minutes. In a large bowl, mix the yogurt with powdered sugar and the remaining peach sauce. Dissolve the gelatin over low heat and stir it into the peach yogurt mixture. In another bowl, whip the chilled cream until stiff peaks form and gently fold it into the peach yogurt mixture. Finally, fold in the fresh raspberries.

How to assemble the peach yogurt mousse cake

To assemble the cake, invert the sponge cake onto a serving platter and spread the reserved peach sauce evenly over the top. Place a cake ring around the cake and line it with an acetate sheet. Pour the peach raspberry yogurt mousse over the cake and smooth the top. Refrigerate for at least 4-6 hours or overnight.

Before serving, decorate the cake with fresh raspberries and peach slices, then dust with powdered sugar.

These refreshing Lemon Basil Yogurt Popsicles are a healthy treat perfect for hot summer days. Made with ripe bananas, creamy Greek yogurt, and a touch of honey, these popsicles offers a guilt-free pleasure without compromising on flavor.

The zest of fresh lemons adds a bright, zesty citrus flavor, balanced by the aromatic hint of fresh basil. It is a unique flavor combination that stands out from traditional popsicles.

Unlike conventional ice creams, our Basil Lemon Yogurt Popsicles are made with nutritious ingredients. Bananas provide a smooth, velvety texture and natural sweetness, while Greek yogurt adds rich creaminess, probiotics, and protein. A drizzle of honey enhances the overall sweetness, perfectly complementing the tart lemon and fragrant basil.

Perfect for summer refreshment these Basil Lemon Yogurt Popsicles are a delightful way to enjoy a treat that is both delicious and nourishing.

Craving a delectable homemade bread but short on time? Look no further than these easy and quick Yogurt Flatbreads, where the magic of yogurt and cheese come together to create a mouthwatering treat. In just a few simple steps, you’ll create a batch of delectable flatbreads that are perfect as a side dish or as an appetizer.

The secret to the simplicity of these flatbreads lies in the absence of yeast, eliminating the need for lengthy proofing and rising times. Instead, we rely on the dynamic duo of yogurt and cheese to create a fluffy and flavorful base. The yogurt adds a delightful tanginess while keeping the dough moist, and the cheese bring a rich and savory note that will leave you wanting more.

How to make yogurt flatbreads

To whip up these tasty flatbreads, begin by combining flour, baking powder, and a pinch of salt in a mixing bowl. Then, incorporate your yogurt and grated cheese, whether it be cheddar, mozzarella, or your favorite cheese variety. Mix until a soft, pliable dough forms.

Once the dough is ready, divide it into 12 equal pieces and shape each piece into a ball. Preheat a pan over medium-high heat, ensuring it reaches the desired temperature. No oil or butter is necessary; the hot pan will work its magic on the flatbreads.

On a floured surface, roll each ball of dough into a circle approximately ¼ inch (6mm) thick. Place the flattened dough onto the hot pan and let it cook for about a minute.

As the flatbreads cook, marvel at the tantalizing aroma that fills your kitchen. The heat causes the dough to puff up and develop golden brown spots. The cheese melts and melds with the other ingredients, infusing each bite with a delightful cheesiness.

Carefully flip the flatbread and continue cooking until the bottom achieves a golden brown color, with an uneven distribution of spots adding to its rustic appeal. Repeat this process with the remaining pieces of dough until all the flatbreads are cooked to perfection.

Yogurt Flatbreads brushed with melted butter parsley mixture

Prepare the butter parsley mixture

To elevate the flavor profile, prepare a delightful butter parsley mixture. Melt butter in a small saucepan and add minced garlic, fresh parsley, and a pinch of salt. Let the mixture cook for a minute, allowing the flavors to meld together beautifully.

Once cooked, brush each flatbread generously with the aromatic butter parsley mixture. The combination of the warm, cheesy flatbreads with the flavorful butter infusion is heavenly.

How to enjoy yogurt flatbreads

These cheesy yogurt flatbreads are perfect companions to your favorite dishes or can be enjoyed as a delicious appetizer. They make a fantastic accompaniment to soups and stews, a scrumptious base for pizzas, or a delightful vehicle for dips and spreads. Their versatility knows no bounds. I always like to make these flatbreads whenever I make Chicken Tikka Masala for my family. These flatbreads are similar with Naan but much easier to prepare.

With their effortless preparation and irresistible taste, these Easy and Quick No-Yeast Flatbreads are a game-changer for busy individuals who refuse to compromise on flavor. So why settle for store-bought when you can enjoy the satisfaction of freshly made bread in a fraction of the time? Treat yourself to these delightful flatbreads and experience the joy of homemade goodness, made simple and delicious. If you do, make sure to share the photos with me on Instagram. Enjoy!

Greek Tzatziki Sauce is a classic and refreshing dip made with yogurt, cucumbers, garlic, and extra virgin olive oil. It is a staple in Greek cuisine and is typically served as a starter or side dish. The sauce has a smooth and creamy texture, with a tangy and slightly sour taste that is perfectly balanced by the coolness of the cucumber.

Tzatziki is a favorite for many people who visit Greece. It is often served as an appetizer, accompanied by fresh bread or pita, and sometimes even as a condiment with grilled meats. This versatile sauce is so beloved because it is light and refreshing. It is perfect for hot summer days when a heavy meal is not as appealing.

What makes Greek cuisine so special is its emphasis on fresh, simple ingredients. Tzatziki is no exception. The cucumber is finely grated and mixed with Greek yogurt, while the garlic is minced and added for a punch of flavor. Finally, fresh herbs such as dill, mint, or parsley can be added to complete the dish. After travelling in Greece for so many times and as a Mediterranean cuisine lover, it’s no surprise that I love Tzatziki so much.

How to make Greek Tzatziki Sauce

First, prepare the cucumber for the tzatziki sauce. Choose a seedless cucumber, such as an English cucumber. If you must use one with seeds, remove them to ensure the sauce’s desired consistency. Grate the cucumber using the larger holes of a grater. Then extract as much liquid as possible by squeezing it with your hands or a clean dishtowel. Place the drained cucumber in a medium bowl. Add the remaining ingredients, including garlic, strained Greek yogurt, red wine vinegar, and extra virgin olive oil. Mix thoroughly and season with salt and pepper. Serve the sauce immediately with fresh crusty bread, pita bread, or breadsticks. Store any leftover tzatziki in an airtight container in the fridge for up to three days.

Greek Tzatziki sauce is a delicious and refreshing dip that is a staple in Greek cuisine. Its simple yet flavorful ingredients make it a favorite for many, including those who love Mediterranean cuisine. Whether you’re enjoying it as a starter, side dish, or condiment, Tzatziki is a must-try dish for anyone. Don’t forget to tag me on Instagram if you try it out. Enjoy!

This Earl Grey and Dried Plum Chocolate Tart is a decadent dessert that combines the flavors of rich chocolate, fragrant Earl Grey tea, and sweet dried plums in a buttery pastry crust. If you are a fan of Earl Grey tea, this tart is for you.

It’s surprisingly easy to make as only the tart crust requires baking. This tart has a generous amount of soaked plums, a spicy chocolate ganache, and an infused Earl Grey cream filling. The result is a luxurious and sophisticated dessert that is perfect for impressing guests or indulging in a special treat.

How to make this Earl Grey and Dried Plum Chocolate Tart

I really recommend making the infused dried plums and tart pastry a day or two before, the longer they sit in the fridge, the better they will taste.

Prepare the tart pastry dough

For the pastry dough beat up the butter and sugar until light and creamy. Add in the egg and egg yolk, one at a time. Then add all the dry ingredients and mix until all comes together. Wrap it in cling film and refrigerate it for at least 2 hours. After you take your tart pastry out of the fridge, give it a knead to warm it a little bit. Roll the pastry between the sheets of parchment paper because this is an extra buttery dough and very easily sticks to the work surface. Roll the dough until ¼ inch (6 mm) thick. Press the dough onto the bottom and edges of a 7-inch (18cm) tart pan. Put it in the fridge for 15 minutes, then cover it with parchment paper and baking beans and blind bake at 350F (180C) for 20 minutes. Let it cool completely.

Prepare the infused Earl Grey dried plums

For the infused dried plums make a really strong Earl Grey tea, then pour it over the dried plums and nutmeg powder. Let it cool at room temperature, then put it in the refrigerator for at least 2 hours. Depending on how intense you want the flavour to be, the dried plums can be left to infuse overnight in the fridge.

Prepare the cinnamon milk chocolate ganache

For the chocolate ganache, you need to warm the whipping cream along with the cinnamon, let it infuse for 5 minutes, then pour over the milk chocolate and butter. Stir well until it becomes shiny. Cover it with cling film and refrigerate for at least 2 hours. After is all set, lightly beat it with a hand mixer on low speed. The ganache will harden quickly so make sure to stop beating immediately once it reached a pipeable consistency.

Prepare the Earl Grey Greek yogurt filling

The Earl Grey filling is best to make right before the assembly. Soak the gelatin in cold water. Heat the whipping cream with the tea, sugar, and vanilla. After the sugar is completely melted, add in the gelatin and the greek yogurt and stir well. Fold in the remaining lightly whipped cream. It will have a runny consistency.

Assemble the Earl Grey and Dried Plum Chocolate Tart

Use a spatula to spread evenly three-quarters of the whipped ganache over the bottom of the tart. Take the soaked plums and place them all over the ganache. You should remain with a few of them, and use them for decoration later on. Gently, pour the Earl Grey filling in a uniform layer. Place the tart in the fridge to set before serving. For decoration, use the leftover ganache, the soaked plums, and sprinkles.

Hope you will try this flavorful Earl Grey and Dried Plum Chocolate Tart. If you do don’t forget to tag me on Instagram or Facebook. Would love to see how it turned out for you. Enjoy!

  • 1 tsp (5ml) vanilla extract or 1 vanilla pod
  • 1/4 cup (60g) Greek yogurt
  • 3 tbsp (45ml) whipping cream

Instructions

Prepare the Earl Grey dried plums.

  • You can make this 1-2 days ahead. In a bowl, pour the boiling water over the tea bags and nutmeg. Cover the bowl with a plate and allow to infuse for 10 minutes.
  • Strain the tea and add the dried plums, let them sit until the tea is cold, then place it in the fridge for 2 hours or overnight.
  • After they are well soaked and infused, remove them from the liquid and place them on paper towels.

Prepare the tart crust.

  • You can make this a day ahead and keep it in the fridge.
  • In the bowl of a stand mixer fitted with a paddle, beat butter on medium speed until creamy.
  • Add the sugar, all at once and beat on medium speed until creamy and combined.
  • Scrape down the sides of the bowl and add the egg and egg yolk, one at the time, mix well after each one.
  • Add the flour and salt and mix on medium speed until the dough comes together.
  • Put it in a plastic film and refrigerate for at least 2 hours or overnight.

Milk Chocolate Whipped Ganache.

  • Pour over the milk chocolate and stir until combined.
  • While the ganache is still hot, add in the butter and stir to combine. Cover with cling film.

  • After the ganache is set, whisk it carefully with a hand mixer on low speed until it reaches a pipeable consistency.

Earl Grey Greek Yogurt Filling.

  • Hydrate the gelatin in cold water. Let it soak for 5 minutes.
  • In a saucepan, put the first 2 tablespoons (30g) whipping cream, the sugar, the earl grey tea, and vanilla. Bring to a simmer.
  • Remove from the stove. Add the bloomed gelatin and stir until completely dissolved.
  • Let it cool down a little bit, it should reach 104-122 F (40-50 Celsius).
  • Fold in the Greek yogurt.
  • Lightly beat the remaining 3 tablespoons (45g) of whipping cream. Fold it into the yogurt mix.
  • Use immediately.

Assemble the tart.

  • Using a spatula, spread evenly 3 quarters of the whipped ganache over the bottom of the tart.
  • Take the soaked plums and place them all over the ganache. You should remain with a few of them, and use them for decoration later on.
  • Pour the Earl Grey Greek yogurt filling in a uniform layer, carefully, because it will be very runny, and place the tart in the fridge to set before serving, for at least 2 hours.
  • For decoration, use the leftover ganache, the soaked plums, and sprinkles. Enjoy!

Yogurt Berry Mousse Cake - Berry Summer Cake

How to make no-bake berry lemon yogurt mousse cake

This no-bake yogurt mousse cake is quick and very easy to prepare and it looks quite impressive. I simply love using yogurt in desserts lately, as it makes them lighter, healthier and definitely a great way to cut a few calories for each slice.

How to prepare the berry sauce

To start, make the berry sauce first, allowing it time to cool before moving on to the berry mousse. In a small saucepan, combine mixed berries, sugar, and lemon juice. Heat over medium-high, stirring constantly, until it boils. Let it simmer for 10-15 minutes until it thickens. Remove from heat, strain to remove seeds, and set aside. Dissolve 2 ¼ tsp (7g) gelatin in cold water and let it sit for 5 to 10 minutes. Add the gelatin to the warm berry sauce. Keep about 1/3 cup (80g) of the sauce aside to cool.

How to prepare the crust

Use an acetate sheet to line the sides of an 8 or 9-inch (20-23 cm) springform pan. Place parchment paper on the bottom. In a food processor, crush digestive biscuits or graham crackers into crumbs. Mix in melted butter and lemon zest until evenly moist. Press this mixture into the pan’s bottom using a spoon, then refrigerate.

How to prepare the lemon yogurt mousse

For the lemon yogurt mousse, dissolve gelatin in cold water, letting it swell for 5 to 10 minutes. Meanwhile, combine yogurt, powdered sugar, and lemon zest in a bowl. Dissolve the gelatin over low heat and pour into the yogurt mixture. Fold in chilled whipped cream until combined. Pour this lemon yogurt mousse over the crust. Spoon the reserved berry sauce over it and freeze for 15 minutes.

How to prepare the berry yogurt mousse

For the berry yogurt mousse, mix the remaining berry sauce with yogurt. Whip chilled cream in another bowl until soft peaks form. Add the berry-yogurt mixture to the whipped cream. Pour this berry mousse over the lemon layer and smooth the top. Refrigerate the cake for 4-6 hours to set.

When ready, decorate the cake with fresh mixed berries, slices of lemon peel, and a dusting of powdered sugar. Then, enjoy your delicious creation! Hope you will try this out and if you do don’t forget to share the photos with me on Instagram. Enjoy!

I discovered these Eggless Yogurt Brownies recently, and I was pleasantly surprised by their texture and taste. The fact that they are made without butter and eggs makes them a healthier option, which is always a plus! However, what really impressed me was the fudgy and rich chocolate flavor of these brownies.

While the recipe is great as it is, there are many ways to make these brownies even healthier. For example, you can substitute refined sugar with coconut sugar or brown sugar, which are better alternatives. Additionally, you can use almond or oat flour instead of all-purpose flour. This will make these brownies even healthier and more nutritious.

To make this eggless brownies, begin by preheating your oven to 350 F (180C). Grease an 8-inch (20cm) square pan and line it with parchment paper. In a bain-marie, melt 3 oz (90g) semisweet chocolate and set it aside to cool slightly. Next, add sugar, vanilla extract, and instant coffee to the melted chocolate. Mix in Greek yogurt until well combined. Then incorporate cocoa powder, baking powder, and flour, and mix until just combined. Fold in the remaining 3 oz (90g) semisweet chocolate chips or chunks. Spread the thick batter into the prepared pan. Sprinkle mini semisweet chocolate chips or chunks over the top. Bake the brownies for 20-23 minutes, being careful not to overbake. Once done, let the brownies cool completely before serving.

I believe that these eggless yogurt brownies are perfect for whenever you are craving something sweet and chocolatey but want a healthier option. They are lower in calories and still rich in chocolate, which is the best of both worlds! That being said, while I do enjoy these healthier brownies, the classic version made with eggs and butter still holds a special place in my heart.

If you’re looking for a healthier alternative to traditional brownies that are still full of chocolatey goodness, I highly recommend trying this eggless yogurt brownie recipe. Eggless Yogurt Brownies

I have recently discovered these yogurt brownies and I was quite impressed by their texture even though they are made without butter and eggs. They are definitely healthier and you can make them even healthier by adding coconut sugar or even brown sugar instead of refined sugar and adding almond or oat flour instead of all-purpose flour.

Some time ago, I received this recipe for doughnuts from a dear friend, and only now have I had the chance to try it out. I love it, and I’m sorry I didn’t try it sooner. My little girls enjoy these No Yeast Yogurt Doughnuts so much. These fluffy little balls of fried dough, served slightly warm and dusted with powdered sugar can make a great treat during the day or even for breakfast, alongside a good coffee or tea.

This recipe is so easy that you need less than 30 minutes to have them ready to serve. As they are made with no yeast, you don’t have to wait for the dough to rise, and there is no need to roll the dough and cut. It is very easy, you just need to mix the ingredients for the dough and it’s ready to be fried.

You can either drop teaspoons of dough in the hot oil or use a piping bag to get similar little balls of doughnuts. They can also be a perfect dish for whenever you have unexpected guests and wish to give them a warm welcome. Hope you will try these No Yeast Yogurt Doughnuts and enjoy!

How to make easy no-yeast yogurt doughnuts

Begin with whisking together flour, sugar, salt, and baking powder in a large bowl. Add beaten eggs, vanilla extract, and Greek yogurt, mixing until combined.

In a medium skillet or pot, heat oil over medium heat. Drop teaspoons of dough into the oil or use a piping bag to squeeze out 1-inch (2.5 cm) pieces of dough and cut with scissors for each doughnut.

Allow the doughnuts to fry until they fluff up and turn golden brown on all sides, turning them around if needed with a spatula.

Once cooked, transfer them to a paper towel-lined plate to absorb excess oil. Dust with powdered sugar before serving and enjoy!

Hope you’ll try them out. Don’t forget to tag me in your Instagram posts or stories, so I can see your amazing results.
