To prepare these delicious cheese, flaky bagels, start by activating the yeast. In a large bowl, combine yeast, sugar, and slightly warm water. Let the mixture rest for 5-10 minutes until the yeast becomes frothy.

Next, add flour, salt, milk, egg, and melted butter to the yeast mixture. Stir until combined and knead the dough until it becomes soft and pulls away from the sides of the bowl. Transfer the dough to an oiled bowl, cover it with plastic wrap, and let it rise in a warm area for about 1 hour or until doubled in size.

Once the dough has risen, punch it down and transfer it to an oiled surface. Using a rolling pin, roll the dough into a 16 x 12-inch (40 x 30 cm) rectangle. Spread 2 tablespoons (30g) of softened butter over two-thirds of the rolled dough and sprinkle ½ cup (50 g) of cheddar cheese over the same two-thirds.

Fold the dough like a letter into thirds, starting with the unbuttered side. Rotate the dough 90° and roll it out again into a 16 x 12-inch (40 x 30 cm) rectangle. Spread another 2 tablespoons (30g) of softened butter over two-thirds of the rectangle and sprinkle the remaining ½ cup (50 g) of cheddar cheese over it. Fold the dough again like a letter into thirds.

Cut the folded dough into 8 equal pieces. Twist each piece and bring the ends together, pinching them to form a bagel. Place the twisted bagels on a baking sheet lined with parchment paper. Cover with a kitchen towel and let them rise for another 20-30 minutes.

Meanwhile, preheat your oven to 400°F (200°C). Once the bagels have risen, brush them with beaten egg and sprinkle sesame seeds on top.

Bake the bagels in the preheated oven for 15-18 minutes or until they are puffed and golden brown. Let them cool slightly before serving.

  • 3 ½ cups (440g) all-purpose flour
  • 2 ¼ tsp (7g) active dry yeast , or 25g fresh yeast
  • 1 tsp (5g) salt
  • 1 tbsp (15g) sugar
  • 1/3 cup (80ml) water , warm
  • 3/4 cup (180ml) milk , warm
  • 1 egg
  • 1/4 cup (60g) butter , melted

For filling

  • 1/4 cup (60g) butter , softened, divided
  • 1 cup (100g) cheddar cheese , grated, divided

For topping

  • 1 egg , beaten, for brushing

Instructions

Prepare the dough.

  • In a large bowl add yeast, sugar and warm water. Let it rest for 5-10 minutes to activate the yeast.

What is Tangzhong

Tangzhong is a useful technique for achieving a softer, fluffier, and more flavorful yeast bread. It’s particularly popular in Asian-style bread baking but has gained popularity worldwide for its beneficial effects on bread texture and shelf life. It involves making a water roux by cooking a portion of the flour and milk or water from the recipe into a paste, which is then added to the rest of the ingredients.

How to make wool roll bread

To begin, let’s prepare the tangzhong. In a small saucepan, combine the flour and milk, and place it over medium-low heat. Stir continuously until the mixture thickens. Once thickened, allow it to cool slightly.

While the tangzhong cools, let’s activate the yeast. In a medium bowl, mix together the yeast, 1 teaspoon (5g) of sugar, and 2/3 cup of lukewarm milk. Allow this mixture to rest for 5-10 minutes to activate the yeast.

How to prepare the yeast dough

In a large bowl, whisk together the flour, sugar, and salt. To this dry mixture, add the activated yeast, tangzhong, eggs, vanilla extract, and melted butter. Begin kneading the dough until it becomes smooth and slightly pulls away from the sides of the bowl. This can be done by hand or with the assistance of a hand mixer or stand mixer.

Transfer the kneaded dough into an oiled bowl and cover it with plastic wrap. Let the dough rest for about 1 hour at room temperature, or in a warm space, until it doubles in size.

Next, prepare the butter cinnamon mixture by combining the butter with cinnamon and sugar in a small bowl. Set this mixture aside until ready to use.

How to shape the wool roll bread

Grease and line a 10-inch (25cm) springform pan with parchment paper. Divide the dough into 6 equal pieces. Shape each piece into a ball.

Roll out each ball of dough lengthwise into a rectangle until it reaches approximately 12 inches (30cm) in length. Spread 1/6 of the butter-cinnamon mixture over the top half of the rectangle. Then, cut the bottom half into thin strips.

Fold the long edges of the rectangle and roll the dough into a log. Place the log, seam-side down, into the bottom of the prepared pan. Repeat this process with the remaining dough pieces.

Cover the pan and let the dough rise for 45 minutes. Meanwhile, preheat the oven to 350F (180C).

Before baking, brush the surface of the bread with beaten egg. Then, bake the wool roll bread for 25-30 minutes, or until it turns golden brown.

How to make Lemon Custard Rose Sweet Rolls

First, prepare the lemon custard filling so it has time to cool before assembling the buns. To make the lemon custard, you have to mix the egg yolk with sugar, salt, flour, and cornstarch. Bring the milk to a simmer and gradually pour over the egg yolk mixture. 

Return to heat and cook the custard until thickens. Add vanilla extract and lemon zest of two lemons and mix to combine. Cover with plastic wrap and let cool to room temperature. 

Now you can prepare the dough. For this dissolve yeast with milk and a teaspoon of sugar and let it rest for 5 minutes to activate. You can use either the active dry yeast or fresh yeast.

Add the remaining milk, dissolved yeast, beaten egg, vanilla extract, and melted butter.  Start kneading until smooth, for about 5-10 minutes. You can knead by hand or use a hand or stand mixer. Let the dough rise for about 1 hour until doubled in size. 

On a floured surface turn the dough out and divide it into 12 equal pieces. Shape each piece into a ball. Roll each piece of dough until about 4 ½ inches (11-12 cm) in diameter. Fill each with lemon custard and shape it into a rose, creating a beautiful and delicate floral pattern. The rolls are baked until golden brown, creating a slightly crispy exterior that gives way to a soft, pillowy interior.

Remove the rose rolls from the oven and brush with sugar syrup.

  • 1 cup (240ml) lukewarm milk
  • 1 egg , beaten
  • 1 tsp (5g) vanilla extract
  • 1/4 cup (56g) butter , melted

Lemon Custard

  • 1 cup (240ml) milk
  • 1/4 cup (50g) sugar
  • 2 tbsp (16g) cornstarch
  • 1 tsp (5g) flour
  • 1 egg yolk
  • 1/4 tsp (1g) salt
  • 1 tsp (5g) vanilla extract
  • lemon zest from 2 lemons

Sugar Syrup

  • 1/4 cup (50g) sugar
  • 3 tbsp (50ml) water

Instructions

Prepare the vanilla pastry cream.

  • Place milk in a medium saucepan and bring to a simmer.
  • Meanwhile, whisk the egg yolk with sugar and salt until well combined. Add flour and cornstarch and mix to combine.
  • Gradually add milk to the egg mixture and return to heat. Cook, stirring constantly until it boils and thickens.
  • Remove from heat and add vanilla extract and lemon zest.
  • Pour the cream into a clean bowl, cover it with plastic wrap, pressing it directly onto the surface of the pastry cream to prevent forming skin on the surface. Let cool to room temperature.

Meanwhile, prepare the sugar syrup.

  • Place sugar and water into a small saucepan and bring to a boil.
  • Remove from heat and let cool slightly.
  • Remove the rolls from the oven and brush each with sugar syrup. Enjoy!

This easy Cranberry Orange Babka is a flavorful sweet bread perfect for the cranberry and holiday seasons. The babka is beautifully braided and has an impressive look. With its soft crumb and flavorful cranberry orange filling this bread makes a great treat for breakfast or as a snack during the day. 

How to make Cranberry Orange Babka. 

For this easy recipe of babka, first, you have to prepare the dough. Knead all the ingredients together, and let it rise at room temperature or in a warm place for about one hour until doubles in size. 

Meanwhile, prepare the cranberry orange filling. This is easy and quick and takes no more than 10 minutes. I like to sieve the cranberry sauce to create a smooth filling but you can also consider blending it or leaving it as it is.  

Cranberry Orange Babka - Sweet Braided Bread

On a floured surface, roll the dough into a rectangle. Evenly spread the cranberry orange filling, leaving about 1-inch (2.5cm) border around the edges. Roll the dough and cut the log in half lengthwise using a sharp knife.

Carefully, braid the two pieces, and transfer the braided bread into a parchment paper-lined loaf pan. Cover with a kitchen towel, let it rest, and rise at room temperature for 20-30 minutes more. During this time, preheat the oven. 

Bake for about 45 minutes until cooked through. I recommend covering the babka with aluminum foil after the first 15-20 minutes of baking.

Babka Dough

  • 2 ⅔ cups (330g) all-purpose flour
  • 1/4 cup (50g) sugar
  • 1/2 tsp (2g) salt
  • tsp (4g) active dry yeast
  • 2/3 cup (160ml) lukewarm milk
  • 1 tsp (5g) vanilla extract
  • 3 tbsp (40g) melted butter
  • Zest of an orange
  • 1 egg , beaten

Cranberry Sauce

  • 10 oz (300g) fresh or frozen cranberries
  • 1/2 cup (100g) sugar
  • 2 tbsp (30ml) orange juice
  • zest of an orange

For Brushing

Instructions

Prepare the dough.

  • In a medium bowl add yeast, 1 tsp (5g) sugar and ⅓ cup (80ml) lukewarm milk. Let it rest for 5-10 minutes to activate the yeast.
  • In a large bowl whisk together the flour, sugar and salt. Add the remaining milk, activated yeast, egg, vanilla extract, orange zest and melted butter. Start kneading it until it pulls away from the sides of the bowl. You can knead the dough by hand or use a hand mixer or stand mixer.
  • Give the dough the shape of a ball. Transfer the dough into an oiled bowl and cover it with plastic wrap. Let it rest for about 1 hour at room temperature (warm space) until doubled in size.

Meanwhile, prepare the cranberry sauce.

  • Place cranberries, sugar and orange juice into a saucepan and bring to a boil while stirring constantly. Simmer for about 5-10 minutes or until thickens.
  • Remove from heat and sieve. Add orange zest, stir to combine and set aside to cool until ready to use.

Assemble the babka.

  • On a floured surface, using a rolling pin, roll the dough to a rectangle of about 18×10 inches (45x25cm).
  • Spread cranberry sauce evenly, leaving about a 1/2-inch (1cm) border around the edges. Roll up the dough and cut the log in half lengthwise using a sharp knife.
  • Start braiding the two pieces, trying to keep the open layers exposed so the cut ends remain on top.
  • Transfer the cranberry orange babka to a 9×5-inch (23x13cm) loaf pan lined with parchment paper.
  • Let it rest for 20-30 minutes to room temperature.

How to bake the babka.

  • Meanwhile, preheat the oven to 350F (180C).
  • Brush the bread with beaten egg.
  • Reduce oven temperature to 320F (160C).
  • Bake for about 45-50 minutes.
  • Cover with aluminum foil after about 15-20 minutes if browns too fast.
  • Let the cranberry orange babka cool completely before cutting it into slices.

You simply grab a piece of bread, spread some warm cheese dip on top of it, and enjoy one of the most comforting dishes ever. 

How to make Skillet Sweet Potato Bread with Pecan Cranberry Cheese Dip

For this recipe, first, you have to make sure you have prepared the mashed sweet potatoes in advance. You can boil, steam, microwave, or roast a small sweet potato, let it cool and mash it with a fork. You can also consider leaving the sweet potato out and substituting it with more milk or pumpkin puree. 

Prepare the dough and let it rise for at least one hour until doubled in size. On a floured surface, divide the dough into 16 pieces and shape each into a ball. Place a greased bowl into the center of a greased skillet and arrange the balls around it. Cover and let rest for another 30 minutes until you prepare the walnut cranberry cheese dip. 

If you are in a hurry, you can also consider using pre-made store-bought dough, but making it from scratch always brings the best results.

Toast the pecans in a skillet or in the oven and chop them into small pieces. Mix the cream cheese with honey and cinnamon and stir in the mozzarella and cheddar cheese. Add the toasted pecans and cranberries and mix to combine.

Sweet Potato Bread Dough

  • 3 cups (375g) all-purpose flour
  • 1 tsp (5g) salt
  • 1/2 tsp 1/2 tsp (2g) cinnamon
  • 2 tsp (6g) active dry yeast (or 20g fresh yeast)
  • 2/3 cup (160ml) warm milk
  • 1 tsp (5g) sugar
  • 2 tbsp (30g) butter, melted
  • 1/2 cup (120g) mashed sweet potatoes

For brushing

Pecan Cranberry Cheese Dip

  • 8 oz (230g) cream cheese , room temperature
  • 1 cup (100g) mozzarella cheese , grated
  • 1/2 cup (50g) Cheddar cheese , grated
  • 3/4 cup (75g) pecans or walnuts , toasted and chopped
  • 3/4 cup (90g) dried cranberries
  • 2 tbsp (30g) honey
  • 1/4 tsp (1g) cinnamon
Makes: 9inch round

Instructions

Prepare the sweet potato bread dough.

  • In a small bowl, add active dried yeast, sugar and ⅓ cup (80ml) milk, and let it rest for 5 minutes, to activate the yeast. In a large bowl mix flour with salt and cinnamon. Add dissolved yeast, butter, mashed sweet potato and remaining ⅓ cup (80ml) warm milk. Mix everything together then knead until smooth and pulls away from the sides of the bowl.
  • Place the dough in an oiled bowl, cover it with plastic wrap and let it sit for about 1 hour at room temperature, to let the dough rise until doubled in size.
  • On a floured surface, turn the dough, knead for a few seconds and divide it into 16 pieces. Form into balls.
  • Grease a 9-inch (23 cm) cast iron skillet with butter and the outer side of a 5-inch (13cm) diameter bowl. Place the bowl in the center of the skillet and arrange the dough balls around the bowl.
  • Cover the skillet with plastic wrap or a kitchen towel and let rise for another 30 minutes.
  • Meanwhile, preheat the oven to 350F (180C).

Prepare the pecan cranberry cheese dip.

  • In a bowl add cream cheese and mix until smooth. Add the rest of the ingredients: grated mozzarella chese, grated cheddar cheese, chopped toasted pecans or walnuts, cranberries, cinnamon and honey. Mix until combined.
  • Remove the bowl from the center of the skillet and add the pecan cranberry dip into the center of the skillet.
  • Brush the dough balls with the beaten egg.
  • Bake for about 20-25 minutes until the cheese is melted and the bread is golden brown.
  • Let it cool slightly for 5 – 10 minutes before serving.

How to make chocolate brioches. 

The recipe for these chocolate brioches is very easy. It requires only a few ingredients you usually have in your pantry. First, prepare the dough. Dissolve yeast in milk and let it rest for a few minutes to activate. 

In a large bowl combine flour with sugar and salt. Add milk, dissolved yeast, beaten egg and vanilla extract and start kneading the dough, for about 5 minutes, until smooth and slightly pulls away from the sides of the bowl. 

Add butter and continue kneading until well incorporated. Let the dough rise in a warm place for at least 1 hour or until doubled in size. 

Only now, after the first rising time, incorporate the chocolate chips. On a floured surface divide the dough into 12 equal pieces and shape into balls. Transfer to a greased muffin pan and let them rise again for 15-20 minutes. Brush with beaten egg, sprinkle the top with sugar and bake until golden brown. 

Let them cool slightly and enjoy while still a bit warm. These brioches are delightful.

  • In a medium bowl add yeast, 1 tsp (5g) sugar and 1/4 cup (60ml) lukewarm milk. Let it rest for 5 minutes to activate the yeast.
  • In a large bowl whisk together the flour, sugar and salt. Add the remaining milk, dissolved yeast, beaten egg and vanilla extract. Start kneading until smooth, for about 5 minutes.
  • Add softened butter, incorporate it into the dough and continue kneading until well incorporated, smooth and pulls away from the sides of the bowl.
  • Transfer the dough into an oiled bowl and cover with plastic wrap.
  • Let the dough rest for about 1 hour at room temperature (warm space) until doubled in size.

Prepare the chocolate brioches.

  • Add chocolate chips to the dough and gently incorporate them into the dough.
  • On a floured surface turn the dough out and divide into 12 equal pieces. Roll each piece into balls.
  • Transfer the dough pieces into a 12-cup greased muffin pan. Cover with a kitchen towel and let the brioches rest for 15-20 minutes.
  • Meanwhile preheat the oven to 350°F (180°C).
  • Brush each brioche with beaten egg and sprinkle sugar on top.
  • Bake for about 20 minutes until golden brown.
  • Let cool slightly and enjoy!

I have always enjoyed this Chocolate Swirl Milk Bread and it always brings back childhood memories. I am so excited to finally be able to share the recipe with you. This Chocolate Swirl Milk Bread has a soft crumb and is a perfect treat alongside milk or tea, for breakfast or simply as a snack during the day. Vanilla and chocolate have always made a great combination, a classic one that will always be on trend. 

This bread consists of vanilla and chocolate sweet milk bread doughs, rolled together and baked until it is well risen and beautifully golden.

How to make the chocolate swirl bread.

The recipe for this sweet bread is really easy and quick to prepare. First you need to prepare the whole dough, divide it in two and add cocoa powder in half of the dough. 

Let both pieces of dough rise until doubled in size and roll each separately onto an oiled surface. Add the chocolate dough over the vanilla dough and continue rolling slightly. Start rolling up the dough almost to the end. Cut about 10 strips. Twist some of them to alternate colors. Continue rolling and place the bread into a greased loaf pan. 

For a more chocolaty bread, before rolling, you can spread nutella over the chocolate dough or add chocolate chips or even chocolate ganache. 

Before baking, brush the top with beaten egg and place in the oven. If browns too fast, cover with aluminum foil after about 15 minutes of baking. It is essential to let the bread cool completely before slicing.

  • 2/3 cup (160ml) lukewarm milk
  • 1/4 cup (50g) sugar
  • 1 ¼ tsp (4g) active dry yeast (15 g fresh yeast)
  • 3 tbsp (40g) butter , melted
  • 1 egg , beaten
  • 1 tsp (5g) vanilla extract

For chocolate dough

  • 2 tbsp (16g) cocoa powder
  • 1 tbsp (15ml) milk

Prepare the dough.

  • In a medium bowl add yeast, 1 tsp (5g) sugar and ⅓ cup lukewarm milk. Let it rest for 5-10 minutes to activate the yeast.
  • In a large bowl whisk together the flour, sugar and salt. Add the remaining milk, activated yeast, beaten egg, vanilla extract and melted butter. Start kneading it until it pulls away from the sides of the bowl. You can knead the dough by hand or use a hand mixer or stand mixer.
  • Divide the dough in two equal pieces. Give the vanilla dough the shape of a ball. Transfer the dough into an oiled bowl and cover with plastic wrap.
  • Add cocoa powder and milk to the other half of the dough. Continue kneading until the dough is mixed well. Transfer the chocolate dough into an oiled bowl and cover with plastic wrap.
  • Let the dough rest for about 1 hour at room temperature (warm space) until doubled in size.

Roll the bread.

  • On an oiled surface roll the vanilla dough into about a 8×12 inch (20x30cm) rectangle.
  • Repeat with the chocolate dough.
  • Place chocolate dough over the vanilla dough. Continue rolling to about a 8x 20 inch (20x50cm) rectangle.
  • Start rolling up the dough almost to the end.
  • Cut about 10 strips. Twist some of them to alternate colors.
  • Continue rolling.
  • Transfer the roll to a 8½ x 4½-inch (1 liter capacity) loaf pan lined with parchment paper.
  • Let it rest for 30 minutes to room temperature.

How to bake the bread.

  • Meanwhile, preheat the oven to 350F (180C).
  • Brush the bread with beaten egg.
  • Reduce oven temperature to 320F (160C).
  • Bake for about 40 minutes.
  • Cover with aluminum foil after about 15 minutes if browns too fast.
  • Let the chocolate swirl milk bread cool completely before cutting it into slices.

I am so glad to share with you this beautiful Christmas Wreath that is a great appetizer idea you can prepare for Christmas this year. It looks quite impressive and appetizing and even though it might look difficult to prepare it is quite easy and forgiving.

This wreath consists of a simple yeasted dough, filled especially for Christmas with a green, white and red filling. Therefore, I chose a spinach pesto, cheddar cheese and red pepper for the filling but feel free to use whatever fresh herbs you like best for the pesto, like basil or parsley, different types of cheese and for a more spiced appetizer sprinkle with red chili pepper flakes.

I am so excited about how this wreath turned out. It has a soft flavorful crumb and a crispy exterior. I have made it several times already and everybody loved it. If you have a sweet tooth, you can also consider making this wreath with a sweet filling, like this Cinnamon Braided Bread which is absolutely delightful.

For the dough

  • cups (280g) all-purpose flour
  • 3/4 tsp (4g) salt
  • 3/4 cup (180ml) lukewarm milk divided
  • 2 tsp (6g) active dry yeast
  • 1 tsp (5g) sugar
  • 2 tbsp (30g) butter melted
  • 1 egg yolk

Spinach Pesto

  • 1.5 oz (40g) fresh spinach leaves (basil or parsley are good too)
  • 1 garlic clove minced
  • 2 tbsp (20g) walnuts
  • 1 tbsp (15ml) lemon juice
  • 1/4 cup (20g) Parmesan cheese grated
  • Pinch of salt
  • 2 tbsp (30g) olive oil

For the filling

  • 1 cup (100g) cheddar cheese grated
  • 1 red pepper finely chopped

For brushing

Instructions

  • In a large bowl whisk together the flour and salt. Add the remaining milk, activated yeast, egg yolk and melted butter.  Start kneading it until it pulls away from the sides of the bowl. Give the dough the shape of a ball. Transfer the dough into an oiled bowl and cover with plastic wrap. Let it rest for about 1 hour at room temperature (warm space) until doubled in size.
  • While the dough rises, prepare the spinach peste.
  • Place the spinach leaves, walnuts, minced garlic, lemon juice, Parmesan cheese, salt and olive oil into the bowl of a food processor. Process until well combined and smooth.
  • Preheat the oven to 400F (200 C). Line a baking sheet with parchment paper.
  • On a floured surface, using a rolling pin, roll the dough to a rectangle of about 18×12 inches (45x30cm).
  • Spread spinach pesto evenly, leaving about a 1/2-inch (1cm) border around the edges. Sprinkle the grated cheese and red pepper over the pesto. Roll up the dough and using a sharp knife, cut the log in half lengthwise.
  • Start braiding the two pieces, trying to keep the open layers exposed so the cut ends remain on top. Pinch the ends together and form a wreath.
  • Transfer it to the prepared baking sheet. Brush the wreath with egg white. Bake for 20-25 minutes until golden.
