The recipe for this mousse cake is not complicated at all, each step of the recipe is easy and quick to prepare. Start with the coffee walnut sponge cake, continue with the walnut caramel filling and the coffee mousse and in the end prepare the chocolate ganache.

How to prepare the coffee walnut sponge cake 

Start by preheating the oven to 320F (160C) and greasing an 8-inch (20cm) springform pan with parchment paper. In a big bowl, mix eggs, sugar, salt, instant coffee, and vanilla extract until the mixture becomes thick, foamy, and light in color, usually for about 5 minutes. 

Gently fold in flour and ground toasted walnuts, then bake for 15-20 minutes until a toothpick comes out clean from the center. Let it cool completely.

How to prepare the walnut caramel layer

For the walnut caramel layer, heat sugar and water in a saucepan until it becomes a light caramel color. Add cream (it might bubble a bit), butter, walnuts, and salt. Stir constantly for about 1 minute. Spread this walnut caramel filling over the walnut sponge cake, leaving a ½ inch (1cm) border, and refrigerate while you make the coffee mousse.

How to prepare the coffee cream cheese mousse

Start by dissolving gelatin in cold water and let it swell for 5-10 minutes. Meanwhile, mix cream cheese, powdered sugar, vanilla extract, and instant coffee until smooth. Dissolve the swollen gelatin over low heat and pour it into the cream cheese mixture. Add chilled cream and whip until soft peaks form. Pour the coffee mousse over the cake, smooth the top, cover, and refrigerate for 4-6 hours or overnight.

How to prepare the chocolate ganache topping

Make the chocolate ganache by melting chocolate and cream over low heat. Spread it evenly over the cake, then refrigerate for another 30 minutes. 

Decorate with coffee whipped cream, chocolate shards, chopped walnuts, and a dusting of instant coffee.

Coffee Walnut Sponge Cake

  • 2 eggs
  • 1/3 cup (70g) sugar
  • 1/4 tsp (1g) salt
  • 1 tsp (2g) instant coffee
  • 1 tsp (5g) vanilla extract
  • 2/3 cup (70g) roasted walnuts , ground
  • 1/4 cup (30g) all-purpose flour

Walnut Caramel Filling

  • 1/2 cup (100g) sugar
  • 1 tbsp (15ml) water
  • 3 tbsp (45g) whipping cream
  • 2/3 cup (70g) walnuts , toasted, cut into smaller pieces
  • 1 tbsp 15g) butter
  • 1/2 tsp (3g) salt

Coffee Cream Cheese Mousse

  • 9 oz (250g) cream cheese
  • 1/2 cup (60g) powdered sugar
  • 2 tsp (4g) instant coffee
  • 1/2 tsp (3g) vanilla extract
  • 1 ¼ cup (300ml) whipping cream
  • 1/2 tbsp (5g) gelatin powder
  • 2 tbsp (30ml) water

Chocolate Ganache

  • 3.5 oz (100g) semisweet chocolate
  • 3.5 oz (100g) whipping cream

For Decoration

  • coffee whipped cream
  • chocolate shards
  • toasted walnuts, chopped
  • instant coffee for dusting

Instructions

How to toast walnuts.

  • Preheat the oven to 300°F (150°C).
  • Place the walnuts into a parchment paper-lined baking sheet and let them toast for 15 minutes.
  • When cool, ground or cut the walnuts into smaller pieces, as needed.

Prepare the walnut sponge cake.

  • Preheat the oven to 320°F (160°C). Grease and line with parchment paper an 8-inch (20cm) springform pan.
  • In a large bowl mix eggs with sugar, salt, instant coffee and vanilla extract until thick, foamy and light-colored, for about 5 minutes.
  • Gently fold in the flour and ground toasted walnuts.

  • Add the butter, walnuts and salt and let cook for about 1 minute stirring constantly with a wooden spoon or spatula.
  • Spread the walnut caramel filling over the walnut sponge cake, leaving an ½ inch (1cm) border and refrigerate until you prepare the coffee mousse.

Prepare the coffee cream cheese mousse.

  • Dissolve gelatin in cold water and let it swell for about 5 minutes.
  • In a large bowl mix cream cheese with powdered sugar, vanilla extract and instant coffee until smooth.
  • Place the gelatin over low heat just until the gelatin dissolves and pour it over the cream cheese mixture and mix to combine.
  • Add chilled cream and whip until soft peaks form.
  • Pour the coffee mousse over the cake.
  • Cover and refrigerate for 4-6 hours or overnight.

Prepare the chocolate ganache.

  • Place chocolate and cream in a heatproof bowl and place over a pan with simmering water. Melt over low heat.
  • Spread it evenly over the cake.
  • Refrigerate for another 30 minutes before serving.
  • Decorate the cake with coffee whipped cream, chocolate shards, chopped walnuts and a dust of instant coffee. Enjoy!

Makes about 8 servings

  • 1/4 cup (70g) apricot jam
  • 1/3 cup (60g) dried cranberries/raisins
  • 1/4 cup (25g) toasted pecans or walnuts or almonds , chopped
  • 1 sheet (9 oz - 275g) puff pastry , thawed
  • 2 (4 oz-125g) Brie cheese rounds
  • 1 egg , beaten

Instructions

  • Heat the oven to 425°F (220°C). 
  • In a small bowl combine apricot jam with toasted nuts and cranberries.
  • Unfold the pastry sheet and divide in two. Cut off the corners of each piece.
  • Spoon the apricot jam mixture in the center of each piece of dough. Top with the 2 pieces of Brie cheese. 
  • Brush the edge of the dough with beaten egg.  Fold the pastry up over the cheese to cover. 
  • Place seam-side down onto a parchment paper lined baking sheet.  Use the leftover pastry scraps to cut shapes to decorate.  Brush with the egg mixture.
  • Bake for 20-25 minutes or until the pastry is golden brown. Let stand for 5 minutes.  Serve with crackers or toasted bread.

Summer calls for no-bake recipes as much as possible and as I was craving some chocolate dessert lately,  I found some recipes for healthy no-bake brownies on Pinterest. The one that caught my attention was this easy recipe from Chocolate Covered Katie that looks awesome, and is refined sugar-free as well.

I decided to give it a try, didn’t change the recipe too much, just added a bit more cocoa powder, some coconut oil instead of water, and some cocoa nibs for extra texture and I must say the recipe is far better than expected.

These gluten-free brownies are not only healthy but turned fudgy, gooey, chocolaty, and nutty, hard not to fall in love with them from the first bite. Depending on the ingredients you use you can make them raw-vegan also.

As one of the main ingredients is cocoa powder is really important to use good quality cocoa with a great chocolate flavor to enjoy this recipe to its best.

  • 1/2 tsp (2.5g) vanilla extract

Instructions

  • Place the walnuts, dates, walnuts, cocoa powder, vanilla extract, coconut oil and salt into the bowl of a food processor.  Process until completely combined and the mixture holds together.
  • Slightly grease a 8×8 inch (20x20cm) square pan and line with parchment paper, in such a way that some edges are longer to make it easy to lift it up once it's set.
  • Spread the mixture into the prepared baking pan and press with the back of a wet spoon to create a smooth surface.
  • Prepare the frosting. In a small bowl combine the cocoa with honey (agave/maple syrup), coconut oil and vanilla extract.
  • Spread evenly over the mixture in the pan.
  • Refrigerate for 2 hours to set. Keep leftovers refrigerated.

Do you need a quick and delicious idea for breakfast? This German pancake best known as Dutch Baby, enriched with pumpkin puree and seasonal flavors is perfect for this time of the year.

All you need is an iron cast skillet. Make it hot before adding the batter to ensure it gets crispy at the edges but still soft on the inside.

This is an easy recipe, takes only a few minutes to prepare and you have a delicious breakfast that you can serve with toasted walnuts, pecans, honey, maple syrup, or whipped cream.

For a classic Dutch Baby Pancake just remove the pumpkin puree and spices from the ingredients list. The classic version will be more puffed than the pumpkin one. Serve with fresh berries and maple syrup.

How to make Pumpkin Dutch Baby Pancake

To prepare this delicious pumpkin skillet pancake, start by preheating your oven to 425°F (220°C) and placing a 12-inch cast iron skillet into the oven to heat up.

While the skillet is heating, gather your ingredients. Place the milk, pumpkin puree, flour, eggs, vanilla extract, spices, and salt into the bowl of a blender. Blend until the mixture is smooth and well combined.

Once the oven has reached the desired temperature, carefully remove the hot skillet. Add butter to the skillet and return it to the oven for about 1 minute, or until the butter has fully melted and is sizzling.

Carefully pour the prepared batter into the hot skillet. Return the skillet to the oven and ?bake for 17-20 minutes, or until the pancake is puffed up and golden brown.

  • 1 tsp (5g) vanilla extract
  • 1/4 tsp (1g) salt
  • 1/2 tsp (2g) cinnamon
  • 1/4 tsp (1g) ginger powder
  • 1/8 tsp clove powder
  • 1/4 teaspoon (1g) nutmeg
  • 2 tbsp (30g) butter
  • 1/3 cup (35g) walnuts , toasted
  • 2 tbsp (16g) powdered sugar , for serving
  • Maple syrup , for serving

Instructions

  • Preheat oven to 425F (220C) and place a 12-inch (30cm) iron cast skillet into the oven.
  • Place milk, pumpkin puree, flour, eggs, vanilla extract, spices, and salt in the bowl of the blender. Mix until everything is well combined.
  • Remove the skillet from the oven. Add butter and return to oven for 1 minute, until butter is completely melted.
  • Pour batter into the hot skillet. Bake for 17-20 minutes until golden brown.
  • Remove from the oven, and dust with powdered sugar and toasted walnuts. Serve warm with maple syrup or honey.

My idea was to reduce the amount of sugar and replace it with jam and also bring a plus of flavor. I was afraid that they won’t bake right but the result as a matter of look and taste is a delicious success. Here is a delightful recipe for Apricot Jam and Walnut Cookies.

If you want a quick recipe of delicious cookies, these might be the answer. I love adding almond extract, it makes such a good combination along walnuts and apricot jam. You can also add some chocolate chips, raisins or cranberries, whatever you feel like. Hope you will give these Apricot Jam and Walnut Cookies a try, they are definitely worth it.

How to make apricot jam and walnut cookies

To start, preheat your oven to 350 degrees F (180 degrees C). Add parchment paper on 2 baking sheets.

In a big bowl, mix together butter and sugar until they’re all combined nicely. Then, crack in an egg and give it a good beat.

Add some apricot jam, almond extract, and vanilla extract to the mix. Stir it all in really well. Now, let’s combine the dry ingredients – flour and baking powder – and add them into the buttery mixture.

Don’t forget the walnuts! Fold in the chopped walnuts to add a lovely nutty crunch.

Now, it’s time to shape the dough into cookies. You can use a tablespoon or an ice cream scoop for this. Take small scoops of dough and place them on the baking sheets, leaving some space in between. Give each cookie a little extra goodness by topping them with some more chopped walnuts.

This is an easy recipe for a delicious Apple Cake that goes well as breakfast or as dessert. In our family, we love everything that involves apples. Either for breakfast, or in a salad or dessert they always bring a bit of freshness and flavor.

The combination of cinnamon, apples, and nuts is always a winner.

How to make this easy apple and walnut cake

To prepare this delicious apple and walnut cake, begin by preheating your oven to 350°F (180°C). Butter a 10-inch (26 cm) springform pan with a removable base to ensure the cake does not stick.

Separate the egg yolks from the whites into different bowls. In a medium bowl, mix the egg yolks with 1/3 cup of sugar until the mixture becomes thick, creamy, and pale yellow. Add the butter and continue mixing, then add the cold water, vanilla extract, cinnamon, and lemon zest, blending well to combine.

In a separate bowl, whip the egg whites with a mixer until they become foamy. Gradually add the remaining 1/3 cup of sugar while continuously whipping until the egg whites hold very stiff peaks.

Carefully fold the stiff egg whites into the yolk mixture. Once combined, gently fold in the flour and baking powder, ensuring the batter remains light and airy.

How to prepare the apples

Peel the apples and sprinkle them with fresh lemon juice to prevent browning. Cut two of the apples into small pieces and set aside. Slice the remaining apple into thin slices for the top of the cake.

Incorporate the small apple pieces into the batter, mixing gently. Pour the batter into the prepared springform pan, spreading it out evenly. Arrange the thin apple slices on top of the batter in a decorative pattern, and then sprinkle with the chopped walnuts.

Bake the cake in the preheated oven for about 40 to 50 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, remove the cake from the oven and let it cool in the pan for a few minutes. Transfer the cake to a wire rack to cool completely.

These Walnut Cabbage Rolls are a rich, delicious dish, perfect for cold autumn or winter days. Cabbage rolls are typically made with ground meat, but they are equally amazing with walnuts as a meatless alternative, perfect for those looking to reduce their meat intake.

In my family, cabbage rolls are a staple at holiday tables and most family gatherings. They can be prepared in advance and they freeze well, making them a convenient and delicious option for any occasion.

How to make walnut cabbage rolls

To prepare these delicious stuffed cabbage rolls, start by removing the core from the cabbages. Gently separate the leaves that can be removed and place them into boiling salted water. Cover the pot and cook until the leaves are tender. Drain them well. Add the remaining cabbage to the boiling water and cook until tender.

Separate the leaves and remove the thick veins for easier rolling. Set the leaves aside. Chop any leftover cabbage and set it aside as well.

In a frying pan, heat oil over medium-high heat. Add the onion and cook for about 5 minutes until soft. Add the carrot and red pepper and sauté for a few more minutes. Stir in the paprika and remove the pan from heat. Mix in the rice, ground walnuts, fresh dill, salt and pepper. Once the mixture has cooled, stir in the egg.

Place half of the chopped cabbage into a pot and layer fresh chopped dill and thyme leaves on top.

How to shape the cabbage rolls

Begin making the rolls by placing 1/2 to 1 tablespoon of the mixture in the center of each cabbage leaf. Fold in the sides and, starting at an unfolded edge, roll up the leaf to completely enclose the filling. Place the rolls over the cabbage in the pot and continue with the remaining mixture. Put the remaining chopped cabbage on top of the rolls.

Mix the pureed tomatoes with water and pour the mixture over the surface of the rolls. Place slices of tomato on top. Cover the pot and cook over medium-low heat until the rolls start to boil. Then, reduce the heat to a simmer and cook for about 1 hour.

Serve the warm cabbage rolls with a dollop of sour cream on top.

  • 2 small cabbages

  • 2 onions , diced

To make this delicious pumpkin walnut Bundt cake, start by greasing and flouring a Bundt pan, then set it aside. Preheat your oven to 350°F (180°C).

In a large bowl, whisk together 3 eggs and sugar until well blended. Add the pumpkin puree and oil, mixing well to combine. Gradually stir in the cocoa powder, flour, baking powder, and spices until the batter is smooth. Finally, add the chopped walnuts and give it a good stir to distribute them evenly.

  • Melt the butter in a nonstick pan over medium heat; add sugar, stirring until melted. 
  • Stir in carrots, orange peel, salt, pepper and water. Cover and cook for about 10 minutes at medium low heat stirring occasionally until carrots are crisp-tender. Remove the lid and continue cooking until the liquid has evaporated. 
  • Remove the pan from heat, stir in chopped fresh parsley and toasted walnuts and serve warm along meat.
