This Tortellini Soup is a warm and comforting soup that combines the rich flavors of Italian sausage, tender tortellini, vibrant spinach, and succulent tomatoes. This hearty soup is a celebration of Italian cuisine, blending robust ingredients to create a symphony of taste and texture.

The star of this dish is the perfectly seasoned Italian sausage. As it cooks, it fills the broth with a rich taste. Tomatoes join the party, bringing sweetness that balances out the savory sausage. Whether chopped or pureed, they create a tasty base that complements the heartiness of the sausage. 

The addition of tender tortellini takes this soup to the next level, offering delightful pockets of pasta filled with savory goodness. Each bite unveils a delightful combination of textures, as the pasta absorbs the savory broth while maintaining its distinct chewiness. It’s comfort in a spoonful.

The fresh spinach adds a pop of color and earthy goodness. It’s not just about flavor; it’s about making the soup wholesome and hearty.

How to make Tortellini Soup

The recipe for this soup is easy. Simply gather all the ingredients and in about 30 minutes you can have an amazing lunch or dinner.

Start by heating olive oil in a big pot on medium heat. Toss in chopped onions and cook until they’re soft, about 5 minutes. Add Italian sausage and cook until it’s no longer pink, around 4-5 minutes. While it cooks, break the meat into small pieces for that hearty feel.

Next, add carrots, celery, and garlic. Let them cook for an extra 5 minutes, stirring every now and then. Sprinkle in thyme, basil, and oregano to amp up the flavors.

Pour in vegetable stock, crushed tomatoes, salt, and pepper. Give it a good mix, turn up the heat until it boils, then reduce to a gentle simmer. Cover and let it cook for 15-20 minutes until the veggies are tender.

Toss in the cheese-filled tortellini and a bit of cream. Let them cook for another 7-10 minutes until the tortellini are just right.

Before serving, throw in some fresh spinach, give it a final stir, and turn off the heat.

Serve it up hot, topped with shavings of Parmesan, a bit of fresh basil, and those tasty cheese garlic toasts.

For the toasts, just slice a baguette, put the pieces on a baking sheet, drizzle or spray with olive oil, cover with grated cheese, and sprinkle with garlic powder and dried oregano. Bake at 400°F (200°C) for 5-7 minutes until the cheese melts.

Tortellini Soup with Italian Sausage and Spinach

Ingredients

  • 2 tbsp olive oil
  • 1 pound (450g) Italian sausage , casings removed
  • 1 medium onion , chopped
  • 6 garlic cloves , minced
  • 1 carrot , diced
  • 2 celery sticks , chopped
  • 2 cans (28oz – 800g) crushed tomatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp (5g) salt
  • 1/4 tsp (1g) black pepper
  • 4 cups  (1liter) vegetable stock
  • 9 oz (250g) tortellini , filled with cheese, ham or spinach (your choice)
  • 1 cup (240g) cream
  • 2 cups (40g) fresh baby spinach

For Garlic Cheese Toasts

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the onion and cook for about 5 minutes until softened.
  • Add the Italian sausage and cook until no longer pink, for about 4-5 minutes. Crumble the meat while cooking.
  • Add the carrot, celery and garlic and cook for 5 minutes more, stirring from time to time.
  • Stir in the thyme, basil and oregano.
  • Add the vegetable stock, crushed tomatoes, salt and pepper and stir. Bring to a boil then reduce heat to low. Cover and simmer for 15-20 minutes until the vegetables are tender.
  • Add the cheese tortellini and cream. Cook for 7-10 minutes more minutes or until the tortellini are tender.
  • Add the spinach, give them a stir and turn off the heat.
  • Serve immediately with Parmesan shavings, fresh basil and garlic cheese toasts.

How to prepare the garlic cheese toasts.

  • Cut the baguette into slices and place the slices on a parchment paper lined baking sheet.
  • Drizzle or spray each slice with olive oil. Spread grated cheese on top. Season with garlic powder and dried oregano. Sprinkle salt and pepper.
  • Bake at 400F (200C) oven for 5-7 minutes or until the cheese is melted.

Tips for Making in Advance:

  • Refrigeration: After preparing the soup base, let it cool to room temperature before refrigerating. Store in an airtight container for up to 24 hours. Add the tortellini, cream and spinach when ready to serve. 
  • Freezing: If you plan to keep it longer, consider freezing the soup without the tortellini, spinach and cream. Thaw in the refrigerator and add the tortellini, spinach and cream when ready to serve.

This Greek Baked Feta with Tomatoes is a spicy mouthwatering Mediterranean dish that captures the essence of Greek cuisine. This easy recipe is a delightful combination of spicy peppers, rich ripe tomatoes, and creamy feta cheese. It is often enjoyed as a main course accompanied by crusty bread, or it can be served as an appetizer or side dish

During our time in Greece, we had the delightful opportunity to enjoy this dish at numerous tavernas, where it is called Bouyiourdi. It offers a burst of flavors and makes a comforting experience.

At the heart of this dish is the Feta cheese, a traditional Greek cheese made from sheep’s milk. Known for its rich and tangy flavor, Feta is the perfect complement to the sweet notes of the juicy ripe tomatoes and peppers. It is essential to use a good quality Feta cheese in brine that will make this dish a favorite among cheese lovers.

To prepare this amazing Greek baked dish, first slice the tomatoes into thick rounds and layer on the bottom of a baking dish. Cut the red pepper, green chili pepper and the onion into slices and arrange on top of the tomatoes. Cut the Feta cheese into thick slices and arrange over the layers of tomatoes and peppers. Top the Feta with the remaining tomato, pepper and onion slices. 

We like to add tasty herbs like oregano and thyme, giving the dish a lovely smell and earthy taste. A good drizzle of olive oil finishes the dish, giving it a delicious richness and making the taste even better.

Place the dish in the oven and bake to perfection. The heat of the oven melds the flavors together, resulting in a harmonious blend of tangy, sweet notes. The cheese becomes slightly golden creating a delightful contrast in textures.

How to make Greek baked Feta with tomatoes

Star by preheating the oven to 425°F (220°C). Take the ripe tomatoes and cut them into thick slices, then set them aside. Proceed to slice the red pepper, onion and green chili pepper, and set them aside as well. Take the feta cheese and cut it in half, then slice each half lengthwise.

Now, it’s time to layer the ingredients. Start by arranging the tomatoes, peppers, onions, and green chili slices. Enhance the flavors by seasoning with oregano, chili flakes, a moderate amount of salt, and freshly ground black pepper. Remember not to overdo the salt since Feta in brine is already quite salty. Drizzle a generous amount of olive oil over the layered ingredients.

Next, place the feta cheese slices on top of the arrangement. Add the remaining tomatoes, peppers, onions, and green chili to complete the layers. Once again, season with oregano, chili flakes, a touch of salt, and freshly ground black pepper. Give another good drizzle of olive oil for added moisture and flavor.

Transfer the dish to the preheated oven and bake for about 35-40 minutes, until the feta cheese becomes soft and the vegetables turn tender. Before serving, garnish with fresh thyme to enhance both the taste and visual appeal. This Summer Corn Salad is a great summer dish made with fresh corn, fresh vegetables, Feta cheese, fresh herbs and a flavorful salad dressing. This salad is simply bursting with summer flavor and makes a perfect side dish for family or friend gatherings. 

This corn salad is very easy to prepare. For this recipe it is best to use fresh corn. I usually like to grill the corn but you can also use boiled or roasted fresh corn for this recipe. 

When corn is ready all you have to do next is to prepare the fresh vegetables and salad dressing. You will need some fresh tomatoes, cucumber, green chili pepper, red onion, avocado and your favorite fresh herbs, like parsley, basil or cilantro.

For the dressing you simply need to mix together some extra virgin olive oil, lemon juice, vinegar, garlic and spices. 

In this salad I always like to add some Feta cheese for extra flavor and texture. But feel free to use your favorite cheese for this recipe. 

Toss everything together and enjoy one of the best summer salads ever.

Ingredients

  • 4 Ears Fresh Corn (about 9 oz – 250g each) , roasted, grilled or boiled
  • 6 oz (170g) cherry or grape tomatoes
  • 3.5 oz (100g) 1 small cucumber , sliced into quarters
  • 2 oz (60g) 1 small red onion , finely chopped
  • 1 green chili pepper , thinly sliced
  • 1 medium ripe avocado
  • 4 oz (120g) Feta cheese , crumbled
  • 3 tbsp fresh parsley , chopped
  • 3 tbsp fresh basil , chopped

Salad Dressing

Instructions

  • First you need to boil, roast or grill the corn.
  • For grilling on the stovetop, heat a large pan or grill pan over medium-high heat.
  • Add the fresh corn and use tongues to rotate the corn every few minutes.
  • Grill until browned all over.
  • Set aside to cool.
  • Meanwhile prepare the salad dressing.
  • In a small bowl whisk together the olive oil, lemon juice, vinegar, sugar, salt, garlic and freshly ground black pepper. Set aside until ready to use.
  • Cut the vegetables.
  • Cut the corn kernels from the cob and transfer to a large bowl.
  • Add tomatoes, cucumber, onion, avocado, green chili pepper, basil and parsley and Feta cheese. Add the dressing and toss well to coat.
  • Add more salt if needed and enjoy!

These Baked Stuffed Tomatoes with Bulgur and Feta are a great summer side dish perfect for tomato season. It is really delicious and looks very appetizing. You can serve this dish any time of the day, for either brunch, lunch or dinner or simply as an appetizer. 

These Stuffed Tomatoes have a bulgur, feta, fresh herbs and olives filling and are baked until slightly golden. It is best to serve them hot, right after taking them out of the oven. Everybody will enjoy the dish which is simply delightful and bursting with summer flavor.  

For this recipe it is essential to use round ripe tomatoes with pretty firm walls. When you cut the tomatoes in half they have to be able to stand perfectly on a baking tray. Then you have to scoop the flesh out and discard the seeds and juices. Chop the remaining flesh and use in the filling with the rest of ingredients. 

For the filling, you can feel free to adjust the recipe to suit your own tastes. You can use rice or quinoa instead of bulgur, different types of cheese or different herbs. 

You can also prepare this dish in advance within a few hours. After filling the tomatoes, refrigerate and bake just before serving.

  • Preheat the oven to 400F (200C).
  • Place the bulgur into a medium bowl and pour boiling water over it.
  • Let it soak for 10-15 minutes. It will be tender but will still keep a bit of crunch.
  • Meanwhile, cut each tomato in half. Use a spoon to scoop out the flesh. Discard the seeds and juices, chop the flesh and transfer to a medium bowl.
  • Add soaked bulgur, feta cheese, green onion, garlic, black olives, fresh basil and mint, salt and freshly ground black pepper.
  • Stir to combine.
  • Fill the tomato halves with the bulgur mixture.
  • Drizzle the stuffed tomatoes with olive oil.
  • Bake for 20-25 minutes or until slightly golden.
  • Sprinkle with fresh basil and serve hot. Enjoy!

This Mediterranean Summer Pasta Salad is a really flavorful summer salad perfect for family or friend gatherings.  As everybody loves pasta, this fresh salad will definitely be a crowd pleaser.

You can serve this Pasta Salad as a main dish or alongside any meat. The salad is simply delicious and very easy to prepare. Once you prepare it you can serve it immediately or you can make it in advance to let the flavors blend even more. This Pasta Salad is also a great choice to bring to any barbecue gathering. 

How to make Mediterranean Summer Pasta Salad

For this salad you simply need some fresh vegetables like cucumbers, cherry tomatoes, red pepper, onion and avocado. Black olives or green olives bring a delightful flavor too, so don’t let them out if possible. For pasta salads I usually like to add some fresh greens like baby spinach but feel free to add any other mix of fresh greens you like best. The feta cheese is always a great addition to this salad but again, feel free to add your favorite cheese.

All these fresh vegetables and greens are tossed with al dente cooked pasta and a flavorful homemade lemony dressing. As for the pasta I like to use bow-tie pasta (farfalle) but penne or fusilli pasta will work as good. All of these types of pasta are catching the dressing really well, so use the ones you have around.

Ingredients

  • 1 pound (500g) bow-tie pasta (farfalle)
  • 3.5 oz (100g) baby spinach leaves , washed and dried
  • 10 oz (300g) cherry tomatoes , cut into halves or quarters
  • 7 oz (200g) cucumber , sliced in quarters
  • 2 medium red peppers , sliced
  • 1 ripe avocado
  • 1/2 red onion , cut into thin slices
  • 6 oz (170g) black olives , pitted, drained and sliced
  • 7 oz (200g) feta cheese , diced 
  • Salt and pepper to taste

Salad Dressing

Instructions

  • Cook the pasta to the al dente stage in salted water according to package instructions. Drain the pasta and rinse under cold water.
  • Prepare the Salad Dressing. In a medium bowl add the olive oil, lemon juice, red wine vinegar, mustard, sugar, garlic, herbs, salt and pepper and whisk well to combine. Set aside until ready to use.
  • Add the pasta into a large salad bowl. Add the spinach leaves, cucumber, red pepper, cherry tomatoes, black olives, avocado and red onion.
  • Add the feta cheese and the dressing and toss until well combined. Add more salt and pepper if needed.
  • Serve immediately and refrigerate the leftovers. Enjoy!

Some time ago, I stumbled upon an interesting recipe that caught my attention – the Spaghetti Pie. I was intrigued by the idea of transforming the classic spaghetti dish into a pie form, so I decided to give it a shot. And I must say, I am extremely pleased with the results! This pie turns out to be a real crowd-pleaser, and it tastes amazing.

If you’re looking for a comforting and delicious meal that everyone will love, the Spaghetti Pie is a perfect choice. The recipe is simple, yet impressive, making it a great dish to serve to your family and friends. Plus, it’s easily adaptable to different serving sizes and can be a great option for feeding a crowd.

For my Spaghetti Pie recipe, I chose to use a tomato and meat sauce filling, which is a favorite in my family. The crust is made of spaghetti, followed by a layer of creamy ricotta cheese, the savory tomato, and meat sauce, and topped with a generous amount of mozzarella and Parmesan cheese. After baking the result is a mouthwatering, golden-brown pie that’s simply irresistible.

How to make Spaghetti Pie

Preheat your oven to 400°F (200°C), and lightly grease an 8-inch (20cm) springform pan, while also wrapping it with a layer of aluminum foil. 

Prepare the meat tomato sauce by heating oil over medium heat in a large skillet and add onions. Once soft, add garlic, and then ground beef and ground pork. Cook until the meat is no longer pink, and then add tomato sauce, salt, pepper, oregano, fresh basil, and sugar. Simmer for about 15 minutes and then set aside to cool.

Prepare the spaghetti crust by first cooking the spaghetti in salted water for 3-4 minutes less than the package instructions indicate. In a medium bowl, whisk together eggs, melted butter, and Parmesan cheese. Add the spaghetti and toss to coat. Press the spaghetti mixture onto the bottom and up the sides of the prepared pan to create a crust.

In a small bowl prepare the ricotta cheese mixture by mixing the ricotta cheese with fresh basil and spread it on top of the spaghetti mixture.

Pour the meat tomato sauce on top, followed by a sprinkling of mozzarella cheese and Parmesan cheese. Bake the pie for 25-30 minutes or until the cheese is golden brown. Once out of the oven, garnish with fresh basil.

In my opinion, this Spaghetti Pie recipe is one of the best pasta dishes you can ever prepare. It’s rich, flavorful, and comforting – the perfect combination for a hearty meal. I highly recommend giving it a try and enjoying it with your loved ones. Trust me, they’ll be asking for seconds!

Spaghetti Crust

  • 7 oz (200g) spaghetti
  • 1 tbsp (15g) butter
  • 2 eggs
  • 1/4 cup (25g) Parmesan cheese

Cheese Layer

  • 1 cup (240g) ricotta cheese
  • 1 tbsp fresh basil , chopped

Meat Tomato Sauce

For topping

  • 1 cup (100g) mozzarella cheese
  • 2 tbsp (20g) Parmesan cheese
  • fresh basil , for decorating

Instructions

  • Preheat the oven to 400°F (200°C).Lightly grease an 8 inch (20cm) springform pan. Wrap the pan with a layer of aluminum foil. Set aside.

Prepare the meat tomato sauce.

  • In a large skillet, heat oil over medium heat. Add onion and saute for 5 minutes until soft.
  • Add garlic and cook for one more minute, until fragrant.
  • Add ground beef and ground pork, breaki up the meat with a wooden or silicone spoon, and cook until no longer pink, for about 5-6 minutes.Pour in tomato sauce and add salt, pepper, oregano, fresh basil and sugar. 
  • Bring to a simmer and cook for about 15 minutes or until the sauce is reduced and thickened. Set aside to cool slightly.                 

Prepare the spaghetti crust.

  • Cook the spaghetti in salted water with 3-4 minutes less than package instructions, in my case for 5 minutes.
  • Meanwhile in a medium bowl, whisk eggs, melted butter and Parmesan cheese until well combined. Add spaghetti and toss to coat. Press spaghetti mixture onto bottom and up sides of the prepared pan to form a crust.

Assemble the spaghetti pie.

  • In a small bowl mix ricotta cheese with fresh basil and spread on top of the spaghetti mixture.
  • Top with meat tomato sauce.
  • Sprinkle it with mozzarella cheese and Parmesan cheese.
  • Bake for 25-30 minutes or until the cheese has the desired golden brown look.
  • Decorate with fresh basil and enjoy!

  • 20 jumbo pasta shells (about 7oz - 200g)

Three Cheese Filling

  • 15 oz (430g) ricotta cheese
  • 2 cups (200g) shredded mozzarella cheese , divided

  • 2 tbsp fresh basil finely chopped (or 2 tsp dried)

Marinara Sauce

  • 21 oz (600g) tomato puree
  • 1 tbsp (14g) olive oil
  • 1 clove garlic , minced
  • 1 tsp (5g) sugar
  • 2 tbsp fresh basil and oregano
  • 1 tsp (5g) salt
  • freshly ground black pepper

For topping

  • 1/2 cup (30g) breadcrumbs
  • 1 tbsp (14g) butter , melted

Instructions

  • Prepare marinara sauce. In a medium skillet, heat olive-oil over medium-low heat. Add garlic and cook for a few seconds until fragrant. Add tomato puree, sugar, basil, oregano, salt and pepper.
  • Bring to a simmer and cook for about 10-15 minutes, until slightly reduced and thickened.
  • When done, remove from heat and let cool slightly.
  • Preheat the oven to 350 F (180C). Grease a 8 X 12 inch (20x30cm) baking dish with olive oil or melted butter ( 9×13 inch dish works as well).
  • While you prepare the marinara sauce, cook the pasta in salted water with 3-4 minutes less than package instructions, in my case for 11 minutes.
  • In a medium bowl mix together ricotta cheese with 1 cup mozzarella cheese, parmesan cheese, fresh basil and oregano, beaten egg, salt, garlic powder and black pepper.
  • Using a spoon or simply a piping bag fill each shell with the ricotta mixture.
  • Spread half of the marinara sauce in the bottom of the pan.
  • Arrange the filled shells over the sauce.
  • Top the shells with remaining marinara sauce and sprinkle with remaining 1 cup mozzarella cheese.
  • In a small bowl mix the breadcrumbs with melted butter.
  • Spread breadcrumbs over the top.
  • Cover the baking dish with aluminum foil and  bake for 20 minutes.
  • Uncover the pan and bake for 15 minutes more.  If necessary, broil for a few minutes until the cheese has the desired golden brown look.
  • Decorate with fresh basil and enjoy!

  • 1 ½ tsp (7g) salt
  • 1 cup (240g) cream

For serving

Instructions

Prepare chicken marinade.

  • Place chicken pieces in a large bowl. Add lemon juice and salt and stir to combine. Add yogurt, garlic, ginger ,all the remaining spices and oil and stir to combine.  Marinate for at least 2 hours or overnight in the refrigerator.
  • Preheat grill to 425F (220C). Arrange the chicken pieces onto a rack that is placed over a parchment paper lined baking sheet. Grill for 10-15 minutes until chicken starts to blacken in spots.
  • Remove the chicken from the oven and set aside until ready to add it in the sauce.

Prepare the sauce.

  • Heat oil over medium high heat in a large skillet. Add chopped onion and cook for about 5-7 minutes until softened.
  • Add garlic and ginger and cook for about 1 minute more until fragrant. Add garam masala, ground cumin, turmeric and coriander and cook a few seconds more until fragrant, while stirring continuously.
  • Add tomato puree, chili powder, paprika and salt. Stir to combine. Add water and bring to a boil.
  • Reduce heat to low and simmer for about 15 -20 minutes.
  • Stir in cream, add grilled chicken and cook for 5-8 minutes more to allow chicken to cook through.
  • Remove from heat, garnish with fresh cilantro and serve over basmati rice and/or Naan. Enjoy!

Ingredients

  • 2 tbsp (30 ml) olive oil
  • 1 onion , finely chopped
  • 1 large carrot , finely chopped
  • 2 celery sticks , finely chopped
  • 2 cloves garlic , minced
  • 3.5 oz (100g) pancetta , diced
  • 1/2 pound (250g) ground beef
  • 1/2 pound (250g) ground pork
  • 14 oz (400g) tomato puree
  • 1 cup (240ml) milk

  • 1 tsp (1g) oregano
  • 3/4 cup (200 ml) white wine

Instructions

  • In a large pan heat oil over medium high heat. Cook the onion, garlic, carrot and celery over medium heat for about 5 minutes until softened, stirring constantly.

  • Add ground meat and continue cooking until it changes its color. Break up any lumps of meat.
  • Add wine and cook for 2 -3 minutes to reduce.

To prepare this delightful dish start by preparing the Marinara sauce, continue with the baked meatballs, cook the pasta and then you can assemble the dish.

How to prepare the Marinara Sauce.

 Start by heating oil in a large skillet over medium heat. Add the onion and sauté for approximately 3 minutes until it becomes translucent and slightly golden. Next, add the garlic and cook for an additional minute, allowing its aroma to infuse the dish. Stir in the tomato paste, cooking for another minute to deepen the flavors.

Now, it’s time to incorporate the diced tomatoes, water, oregano, basil, salt, pepper, and a touch of sugar to balance the acidity. Bring the sauce to a gentle boil, then reduce the heat to low, cover the skillet, and let it simmer for approximately 45 minutes to 1 hour. During this time, the sauce will slightly reduce and thicken, intensifying its rich flavors. While the marinara sauce simmers, let’s prepare the meatballs.

How to prepare the meatballs.

Preheat the oven to 400ºF (200C) and generously grease a baking sheet with oil to prevent sticking. In a large bowl, combine the ground beef with all the other ingredients: onion, garlic, breadcrumbs, egg, Worcestershire sauce, Parmesan cheese, fresh parsley, salt, and pepper. Gently mix the ingredients until they are well combined, taking care not to overwork the mixture, as it could result in tougher meatballs.

Meatballs

  • 16 oz (450g) dried spaghetti

Instructions

Prepare the Marinara Sauce.

  • In a large skillet heat oil over medium heat. Add onion and saute for 3 minutes.
  • Add garlic and cook one more minute. Stir in tomato paste and cook for another minute.
  • Add diced tomatoes, water, oregano, basil, salt, pepper and sugar.

Meanwhile prepare the meatballs.
