The addition of tender tortellini takes this soup to the next level, offering delightful pockets of pasta filled with savory goodness. Each bite unveils a delightful combination of textures, as the pasta absorbs the savory broth while maintaining its distinct chewiness. It’s comfort in a spoonful.

The fresh spinach adds a pop of color and earthy goodness. It’s not just about flavor; it’s about making the soup wholesome and hearty.

How to make Tortellini Soup

The recipe for this soup is easy. Simply gather all the ingredients and in about 30 minutes you can have an amazing lunch or dinner.

Start by heating olive oil in a big pot on medium heat. Toss in chopped onions and cook until they’re soft, about 5 minutes. Add Italian sausage and cook until it’s no longer pink, around 4-5 minutes. While it cooks, break the meat into small pieces for that hearty feel.

Next, add carrots, celery, and garlic. Let them cook for an extra 5 minutes, stirring every now and then. Sprinkle in thyme, basil, and oregano to amp up the flavors.

Pour in vegetable stock, crushed tomatoes, salt, and pepper. Give it a good mix, turn up the heat until it boils, then reduce to a gentle simmer. Cover and let it cook for 15-20 minutes until the veggies are tender.

Toss in the cheese-filled tortellini and a bit of cream. Let them cook for another 7-10 minutes until the tortellini are just right.

Before serving, throw in some fresh spinach, give it a final stir, and turn off the heat.

Serve it up hot, topped with shavings of Parmesan, a bit of fresh basil, and those tasty cheese garlic toasts.

For the toasts, just slice a baguette, put the pieces on a baking sheet, drizzle or spray with olive oil, cover with grated cheese, and sprinkle with garlic powder and dried oregano. Bake at 400°F (200°C) for 5-7 minutes until the cheese melts.

Tortellini Soup with Italian Sausage and Spinach

This Tortellini Soup is a warm and comforting soup that combines the rich flavors of Italian sausage, tender tortellini, vibrant spinach, and succulent tomatoes.

Ingredients

  • 2 tbsp olive oil
  • 1 pound (450g) Italian sausage , casings removed
  • 1 medium onion , chopped
  • 6 garlic cloves , minced
  • 1 carrot , diced
  • 2 celery sticks , chopped
  • 2 cans (28oz – 800g) crushed tomatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp (5g) salt
  • 1/4 tsp (1g) black pepper
  • 4 cups  (1liter) vegetable stock
  • 9 oz (250g) tortellini , filled with cheese, ham or spinach (your choice)
  • 1 cup (240g) cream
  • 2 cups (40g) fresh baby spinach

For Garlic Cheese Toasts

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the onion and cook for about 5 minutes until softened.
  • Add the Italian sausage and cook until no longer pink, for about 4-5 minutes. Crumble the meat while cooking.
  • Add the carrot, celery and garlic and cook for 5 minutes more, stirring from time to time.
  • Stir in the thyme, basil and oregano.
  • Add the vegetable stock, crushed tomatoes, salt and pepper and stir. Bring to a boil then reduce heat to low. Cover and simmer for 15-20 minutes until the vegetables are tender.
  • Add the cheese tortellini and cream. Cook for 7-10 minutes more minutes or until the tortellini are tender.
  • Add the spinach, give them a stir and turn off the heat.
  • Serve immediately with Parmesan shavings, fresh basil and garlic cheese toasts.

How to prepare the garlic cheese toasts.

  • Cut the baguette into slices and place the slices on a parchment paper lined baking sheet.
  • Drizzle or spray each slice with olive oil. Spread grated cheese on top. Season with garlic powder and dried oregano. Sprinkle salt and pepper.
  • Bake at 400F (200C) oven for 5-7 minutes or until the cheese is melted.

Tips for Making in Advance:

  • Refrigeration: After preparing the soup base, let it cool to room temperature before refrigerating. Store in an airtight container for up to 24 hours. Add the tortellini, cream and spinach when ready to serve. 
  • Freezing: If you plan to keep it longer, consider freezing the soup without the tortellini, spinach and cream. Thaw in the refrigerator and add the tortellini, spinach and cream when ready to serve.

This Mediterranean Summer Pasta Salad is a really flavorful summer salad perfect for family or friend gatherings.  As everybody loves pasta, this fresh salad will definitely be a crowd pleaser.

You can serve this Pasta Salad as a main dish or alongside any meat. The salad is simply delicious and very easy to prepare. Once you prepare it you can serve it immediately or you can make it in advance to let the flavors blend even more. This Pasta Salad is also a great choice to bring to any barbecue gathering. 

How to make Mediterranean Summer Pasta Salad

For this salad you simply need some fresh vegetables like cucumbers, cherry tomatoes, red pepper, onion and avocado. Black olives or green olives bring a delightful flavor too, so don’t let them out if possible. For pasta salads I usually like to add some fresh greens like baby spinach but feel free to add any other mix of fresh greens you like best. The feta cheese is always a great addition to this salad but again, feel free to add your favorite cheese.

All these fresh vegetables and greens are tossed with al dente cooked pasta and a flavorful homemade lemony dressing. As for the pasta I like to use bow-tie pasta (farfalle) but penne or fusilli pasta will work as good. All of these types of pasta are catching the dressing really well, so use the ones you have around.

  • 1 pound (500g) bow-tie pasta (farfalle)
  • 3.5 oz (100g) baby spinach leaves , washed and dried
  • 10 oz (300g) cherry tomatoes , cut into halves or quarters

  • 1 ripe avocado

Salad Dressing

Instructions

  • Cook the pasta to the al dente stage in salted water according to package instructions. Drain the pasta and rinse under cold water.
  • Prepare the Salad Dressing. In a medium bowl add the olive oil, lemon juice, red wine vinegar, mustard, sugar, garlic, herbs, salt and pepper and whisk well to combine. Set aside until ready to use.
  • Add the pasta into a large salad bowl. Add the spinach leaves, cucumber, red pepper, cherry tomatoes, black olives, avocado and red onion.
  • Add the feta cheese and the dressing and toss until well combined. Add more salt and pepper if needed.
  • Serve immediately and refrigerate the leftovers. Enjoy!

This Spinach Bacon Crustless Quiche is really flavorful and very comforting. It is a perfect dish alongside some crusty bread and a fresh salad. 

How to make Spinach Bacon Crustless Quiche

This crustless quiche recipe is very easy and quick to prepare and is made with basic ingredients you usually have in house. For this recipe, you simply have to cook some bacon slices until crisp. In that bacon grease, you will then sauté some onion and a bit of spinach. Then you quickly mix some eggs with cream and milk and stir in the bacon and onion spinach mixture. Pour the egg mixture into a pan or cast iron skillet and bake until beautifully golden. You don’t even have to use many dishes to make this recipe. It is very easy.

  • Reserve about 2 tablespoons of bacon grease and add onion. Cook the onion for about 5 minutes until softened.
  • Add the spinach and let them wilt. Remove from heat and let cool slightly.
  • In a large bowl add eggs, salt, pepper and a pinch of nutmeg. Whisk to combine.
  • Add cream and milk and whisk to combine.
  • Add cheese, onion and spinach mixture. Add the crumbled bacon and stir to combine.
  • Pour the mixture into the greased cast iron pan.
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool for 10 minutes before serving.
  • Serve alongside a fresh salad and some crusty bread. Enjoy!

I am so glad to share with you this beautiful Christmas Wreath that is a great appetizer idea you can prepare for Christmas this year. It looks quite impressive and appetizing and even though it might look difficult to prepare it is quite easy and forgiving.

This wreath consists of a simple yeasted dough, filled especially for Christmas with a green, white and red filling. Therefore, I chose a spinach pesto, cheddar cheese and red pepper for the filling but feel free to use whatever fresh herbs you like best for the pesto, like basil or parsley, different types of cheese and for a more spiced appetizer sprinkle with red chili pepper flakes.

I am so excited about how this wreath turned out. It has a soft flavorful crumb and a crispy exterior. I have made it several times already and everybody loved it. If you have a sweet tooth, you can also consider making this wreath with a sweet filling, like this Cinnamon Braided Bread which is absolutely delightful.

Ingredients

Makes about 10 servings

For the dough

  • cups (280g) all-purpose flour
  • 3/4 tsp (4g) salt
  • 3/4 cup (180ml) lukewarm milk divided
  • 2 tsp (6g) active dry yeast
  • 1 tsp (5g) sugar
  • 2 tbsp (30g) butter melted
  • 1 egg yolk

Spinach Pesto

  • 1.5 oz (40g) fresh spinach leaves (basil or parsley are good too)
  • 1 garlic clove minced
  • 2 tbsp (20g) walnuts
  • 1 tbsp (15ml) lemon juice
  • 1/4 cup (20g) Parmesan cheese grated
  • Pinch of salt
  • 2 tbsp (30g) olive oil

For the filling

  • 1 cup (100g) cheddar cheese grated
  • 1 red pepper finely chopped

For brushing

Instructions

  • In a medium bowl add yeast, 1 tsp (5g) sugar and 1/4 cup (60ml) lukewarm milk. Let it rest for 5-10 minutes to activate the yeast.
  • In a large bowl whisk together the flour and salt. Add the remaining milk, activated yeast, egg yolk and melted butter.  Start kneading it until it pulls away from the sides of the bowl. Give the dough the shape of a ball. Transfer the dough into an oiled bowl and cover with plastic wrap. Let it rest for about 1 hour at room temperature (warm space) until doubled in size.
  • While the dough rises, prepare the spinach peste.
  • Place the spinach leaves, walnuts, minced garlic, lemon juice, Parmesan cheese, salt and olive oil into the bowl of a food processor. Process until well combined and smooth.
  • Preheat the oven to 400F (200 C). Line a baking sheet with parchment paper.
  • On a floured surface, using a rolling pin, roll the dough to a rectangle of about 18×12 inches (45x30cm).
  • Spread spinach pesto evenly, leaving about a 1/2-inch (1cm) border around the edges. Sprinkle the grated cheese and red pepper over the pesto. Roll up the dough and using a sharp knife, cut the log in half lengthwise.
  • Start braiding the two pieces, trying to keep the open layers exposed so the cut ends remain on top. Pinch the ends together and form a wreath.
  • Transfer it to the prepared baking sheet. Brush the wreath with egg white. Bake for 20-25 minutes until golden.

Ingredients

Cranberry Spinach Stuffing

  • 3 cups (150g) bread , cut into small cubes
  • 2 tbsp (30g) butter
  • 1 small onion (90g) , finely chopped
  • 1 celery stalk (60g) , finely chopped
  • 2 cloves garlic (5g) , minced
  • 2 oz (60g) baby spinach
  • 1 tbsp fresh parsley , chopped
  • 1 tbsp fresh thyme
  • 1 tbsp fresh sage , chopped
  • 1 small egg , beaten
  • 1/2 cup (120ml) chicken stock
  • Salt and freshly ground pepper , to taste
  • 1 oz (30g) dried cranberries

For topping

For the gravy

  • pan drippings
  • 1 cup (240ml) chicken stock
  • 1 tbsp (10g) flour

Instructions

Prepare the cranberry and spinach stuffing

  • Preheat the oven to 350°F (180°C). Place the bread cubes on a baking sheet and dry in the oven for 10 minutes ( make sure they do not brown).
  • Increase the oven temperature to 375°F (190°C).
  • In a large skillet on medium high heat, melt 2 tablespoons of butter and add  onions and celery. Cook for about 6 minutes, until softened.  Add garlic and cook for another minute.  Season with salt and pepper.
  • Add parsley, sage, thyme and spinach leaves and let them wilt. Remove from heat and let cool slightly.
  • In a large bowl mix bread cubes with dried cranberries and celery onion and spinach mix. Add the beaten egg and stock and mix until evenly moistened.
  • Set aside until ready to use.

Prepare the turkey roulade

  • Place the turkey breast on a plastic cutting board and make a few cuts to open (butterfly) it. 
  • Cover the breast with plastic wrap and pound it to about ½ inch (1cm) thickness.
  • Remove plastic and season with salt and freshly ground black pepper.
  • Spread the bread stuffing leaving a ¾ inch (2cm) border all around.
  • Roll breast into a log.
  • Use kitchen twine to tie in about 1 inch (3cm) intervals.
  • Brush the roll with olive oil.
  • Season with salt, freshly ground black pepper and red chili flakes and herb mix.
  • Transfer to a parchment paper line baking sheet. 
  • Roast uncovered for about 45 minutes to 1 hour until a thermometer inserted in the thickest part reaches 160°F (71°C).
  • Cover and let it rest for 10 minutes before serving.

Meanwhile, prepare the gravy.

  • In a medium saucepan add the pan drippings and place over medium heat. Add the flour and stir to combine. Add the stock, stir and let it cook until thickened and smooth.
  • Cut off the twine and slice. Serve with gravy and cranberry sauce.

  • Let the bread cubes uncovered to dry out completely overnight or dry them in the oven at 350F (180C) for 10-15 min ( make sure they do not brown).
  • In a large skillet on medium high heat, melt 4 tablespoons of butter  and add  onions and celery. Cook for about 6 minutes, add garlic and cook for another minute. Season with salt and pepper.
  • Pour white wine and let it cook until evaporated, about 3 minutes. Add spinach leaves and let them wilt.
  • In a separate skillet cook the mushrooms in 2 tablespoons of butter until beautifully browned. Season with salt and pepper.
  • Preheat the oven to 375 F (190C). Brush a 2 1/2-quart (2,5 liters) baking dish with butter.
  • In a large bowl mix bread cubes with celery onion and spinach mix , add shiitake mushrooms and chopped herbs.
  • Mix 3 eggs with chicken stock and slowly pour over bread until stuffing feels moist but not soggy.
  • Transfer the stuffing to the baking dish cover loosely with foil and bake for 20 minutes. Uncover and bake for an additional 20 minutes until browned on top and fully cooked on the inside.

How to make Skillet Bread Four Cheese Spinach Dip

If making the dough from scratch start my making the dough and then prepare the spinach filling.

How to prepare the bread dough

To prepare the bread dough for the Skillet Bread Four Cheese Spinach Dip, start by stirring the yeast with sugar until it liquifies. Dissolve the yeast mixture in about ¼ cup (60 ml) of warm water. In a large bowl, combine flour and salt. Add the dissolved yeast, oil, and ¾ cup of warm water to the bowl. Mix everything together until well combined, and then knead the dough until it becomes smooth and pulls away from the sides of the bowl.

Next, place the dough in an oiled bowl, cover it with plastic wrap, and let it sit at room temperature for approximately 1 hour. This will allow the dough to rise until it has doubled in size.

Once the dough has risen, transfer it onto a floured surface. Knead the dough for a few seconds, and then divide it into 16 pieces. Shape each piece into a ball.

Grease a 9-inch (23 cm) cast iron skillet with butter, and also grease the outer side of a 5-inch (13 cm) diameter bowl. Place the greased bowl in the center of the skillet and arrange the dough balls along the outer edge of the skillet.

Brush the dough balls with melted butter, cover the skillet with plastic wrap, and let it rise for an additional 30 minutes.

Meanwhile, preheat the oven to 350F (180C) and prepare the spinach filling.

How to prepare the spinach filling

In a bowl, combine cream cheese and mix until smooth. Add the chopped spinach, Mozzarella cheese, Cheddar cheese, Parmesan cheese, green onion, garlic, red pepper flakes (if desired), salt, and pepper. Mix everything together until well combined.

Remove the bowl from the center of the skillet and fill the center of the skillet with the prepared spinach dip.

Brush the dough balls with melted butter and sprinkle Parmesan cheese on top.

Bake the skillet bread in the preheated oven for about 30 minutes, or until the cheese is melted and the bread is golden brown.

How to prepare stuffed chicken breasts

Start by preheating your oven to 350°F (180°C).

Now, grab those chicken breasts and make them nice and flat. Use a meat mallet to gently pound them until they’re about ¼ to ½ inch (0.6-1 cm) thick.

In a small bowl, mix together some creamy cream cheese, garlic powder, chives, salt, and pepper.

Two of my best friends organized a surprise baby shower for me at the beginning of this year. The table was filled with delicious appetizers they had prepared, and among them were some Spinach and Mushroom Pinwheels that captured my attention. Since then, I’ve wanted to make them myself and share the recipe with you.

The only change I made was preparing the pastry dough from scratch.

These appetizing Spinach and Mushroom Pinwheels are perfect as an appetizer for any occasion. I love that they can be made a day in advance and warmed slightly before serving—they remain just as delicious.

How to make spinach and mushroom pinwheels

Begin with preparing the pastry dough. For this, dissolve the fresh yeast in the milk. In a medium-sized bowl, mix the butter with the flour and salt until well combined. Add the eggs and the milk with dissolved yeast, mixing until the ingredients are well blended. Knead the dough until smooth, cover it with plastic wrap, and refrigerate for about 1 hour to let the yeast develop.

Meanwhile, prepare the spinach filling. Bring a saucepan of water to a bubbling boil. Add the fresh spinach and cook for 3 minutes, then drain immediately and set aside to cool. Once cool enough, chop the spinach into smaller pieces.

In a large flat-bottomed frying pan, heat oil over medium-high heat. Sauté the onion and garlic for about 5 minutes until soft. Add the mushrooms and chopped spinach and cook until any liquid has evaporated. Season with salt and pepper, then remove from heat and allow the mixture to cool.

How to shape the pinwheels

After the dough has rested, cut it into 3 equal pieces. Sprinkle flour on your working surface. Using a rolling pin, roll out each piece into a rectangle approximately 12 inches (30 cm) long and 10 inches (25 cm) high.

Spread 1/3 of the spinach filling evenly over each rectangle of dough. Roll each piece into a log and then cut into 1-inch slices. Arrange the slices on a baking tray lined with parchment paper. Brush the tops with beaten egg yolk.

Bake in the preheated oven at 180°C (350°F) for about 25-30 minutes or until the rolls are nicely browned.

How to make spinach and mushroom quiche

Begin by preparing the crust for this savory spinach quiche. Mix flour with salt in a bowl. Incorporate butter using your hands or a pastry processor until crumbs form. Add the egg and blend until the dough becomes homogeneous. Knead the dough into a ball, wrap it in plastic, and refrigerate for at least 30 minutes.

While the dough chills, prepare the spinach filling. Heat oil in a large flat-bottomed frying pan over medium-high heat. Sauté onion for about 5 minutes until soft. Add mushrooms and spinach, cooking until any liquid evaporates. Season with salt and pepper, then remove from heat and allow to cool.

Preheat the oven to 220°C (425°F). Roll out the chilled dough and fit it into a 10-inch (25cm) tart pan. Prick the crust with a fork and bake for 15 minutes until lightly golden. Remove from the oven and let it cool slightly. Reduce the oven temperature to 190°C (375°F).

Spinach and Mushroom Quiche

Ingredients

Crust

  • 2 cups (250g) flour
  • 1 stick (110 g) cold butter , cut in tiny cubes
  • 1 egg beaten
  • 1/4 tsp (1g) salt

Filling

  • 1 pound (500g) fresh spinach
  • 2 medium mushrooms , chopped
  • 1 onion , chopped
  • 2 tbsp (30g) olive oil
  • 4 eggs
  • 3/4 cup (180g) sour cream
  • salt and pepper to taste
  • 1 cup (100g) cheese , grated

Instructions

Prepare the crust.

  • Mix flour with salt. Incorporate butter to the flour, using your hands or using a pastry processor, until crumbs are formed. Add the egg and incorporate until the dough is homogeneous. Knead the dough and form a ball from it. Wrap it with plastic and refrigerate for at least 30 minutes.

Prepare the spinach filling.

  • In a large flat-bottomed frying pan heat oil over medium-high heat. Cook onion,for about 5 minutes until soft. Add the mushrooms and spinach and cook until any liquid has evaporated. Add salt and pepper and remove from the heat and allow to cool.
  • Preheat the oven to 425F (220C). Roll out the dough and fit the crust into a 10-inch (25cm) tart pan. Punch it with a fork and bake it for 15 minutes. Remove and let it cool. Turn the oven to 375F (190C).
  • In a bowl beat eggs with sour cream, salt pepper and cheese.  Layer the spinach over the crust and pour the egg mixture on top.
  • Bake for 35-40 minutes, and serve warm or cold. The rest of the quiche can keep up t0 3 days if refrigerated.
