This decadent Pecan Pie Cheesecake is a divine fusion of two classic desserts,  the rich, velvety goodness of traditional cheesecake with the comforting, nutty charm of pecan pie. It is ideal dessert for autumn and a great addition to your Thanksgiving feast.

It consists of a buttery cookie and toasted pecan crust with a luscious layer of creamy cheesecake. The cheesecake is topped generously with a pecan pie topping that has a rich, gooey caramel-like consistency.

The toasted pecans in the topping bring a satisfying crunch, creating a contrast to the smooth and creamy texture of the cheesecake beneath. This combination of velvety cheesecake, sweet caramel, and crunchy pecans makes each bite a flavorful and satisfying experience.

How to make Pecan Pie Cheesecake

Begin with preheating the oven to 300°F (150°C) to toast the pecans. Put the pecans for the crust and topping on a baking sheet. Let them toast for 15 minutes, then take them out and let them cool.

How to prepare the crust. 

Preheat the oven to 350°F (180°C) and line an 8-inch (20cm) springform pan with parchment paper. Take the graham crackers or digestive biscuits, put them in a food processor, and crush them until crumbs form. 

Add sugar, ground toasted pecans, cinnamon, and melted butter. Mix until it’s all evenly moistened. Press this mixture into the bottom of the pan with a spoon. Bake for 10-13 minutes and set it aside to cool completely. 

Lower the oven temperature to 300°F (150°C).

How to prepare the cream cheese filling.  

 In a big bowl, make the cream cheese smooth. Add brown sugar, salt, ground cinnamon, and cornstarch. Mix it all up. Add eggs one at a time, making sure each one gets mixed in. Add vanilla extract and sour cream. Mix until it’s well combined. Be careful not to overmix to keep as little air as possible.

 Pour this creamy mixture over the crust. Bake for 45 minutes. Turn off the heat and leave it for another hour in the oven. Take it out, run a sharp knife around the inside edge of the pan, and let it cool completely at room temperature. Cover it up and put it in the fridge overnight.

How to prepare the Pecan Pie Topping. 

In a saucepan, put butter, brown sugar, whipping cream, and salt. Heat it over medium heat, stir until the butter melts, and the sugar dissolves. Bring it to a boil, then reduce the heat and simmer for 1–2 minutes.

 Add the toasted pecans and take it off the heat. Let it cool a bit. It will thicken as it cools. Top the cheesecake with this delightful pecan pie filling. Now, it’s time to enjoy!

Ingredients

For the Crust

  • 7 oz (200g) digestive biscuits or graham crackers
  • 2 tbsp (30g) sugar
  • 1/4 tsp (1g) ground cinnamon
  • 1/4 cup ground toasted pecans
  • 1/4 cup (60g) unsalted butter , melted

For the Cream Cheese Filling

  • 25 oz (700g) cream cheese , room temperature
  • 1/2 cup (100g) brown sugar
  • 1/2 tsp (2g) ground cinnamon
  • 1 tbsp (8g) cornstarch
  • 1/2 tsp (2g) salt
  • 3 large eggs , room temperature
  • 1 tsp (5g) vanilla extract
  • 3/4 cup (180g) sour cream

Pecan Pie Topping

  • 1/4 cup (60g) unsalted butter
  • 1/2 cup (100g) dark brown sugar
  • 1/3 cup (80g) whipping cream
  • 1/2 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) salt
  • 1 ½ cups (150g) toasted pecan halves
  • 1 tsp (5g) vanilla extract

Instructions

  • First, toast the pecans. Preheat the oven to 300°F (150°C).
  • Place the pecans for both the crust and topping on a baking sheet and let them toast for 15 minutes in the oven.
  • Remove and let them cool.

Prepare the crust.

  • Bake for 10-13 minutes. Set aside to cool completely.

Prepare the cream cheese filling.

  • Reduce oven temperature to 300°F (150°C).
  • In a large bowl mix the cream cheese until smooth. Add brown sugar, salt, ground cinnamon and cornstarch and mix until combined.
  • Add eggs one at a time until each egg is incorporated. Add vanilla extract and sour cream. Mix until well combined. Try to not overmix the batter to incorporate as little air as possible.
  • Pour the cream cheese mixture over the prepared crust.
  • Bake at 300°F (150°C) for 45 minutes. Turn off the heat and leave it for another hour in the oven.
  • Remove and run a sharp knife around the inside edge of the pan. Let it cool completely at room temperature. Cover and refrigerate overnight.

Prepare the pecan pie topping.

  • In a medium saucepan add the butter, brown sugar, whipping cream and salt and place over medium heat.
  • Stir until butter has melted and sugar is dissolved.
  • Bring the mixture to a boil, reduce the heat and simmer for 1–2 minutes.
  • Add the toasted pecans and remove from heat.
  • Let it cool slightly.
  • Top the cheesecake with the pecan pie filling. Enjoy!

How to make Apple Pecan Caramel Mousse Cake

The recipe for this incredible dessert is quick and each step is easy to prepare. Begin by preparing a delicious apple cake, then continue with an apple, pecan caramel crunchy layer and finish with a salted caramel mousse.

How to make the apple cake

Start by preheating your oven to 350°F (180°C). Grease an 8-inch (20cm) pan with butter and line it with parchment paper for easy removal.

In a medium-sized bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Set this mixture aside for later.

In a larger bowl, add an egg, brown sugar, vanilla extract, and vegetable oil. Use  whisk or a hand mixer to mix them together until they are well combined. 

Gradually add the flour mixture to the wet ingredients. Toss in diced apples and stir until everything is thoroughly mixed.

Pour the batter into the prepared pan and smooth it out evenly.

Bake the cake in the preheated oven for 13-15 minutes. To check if it’s done, insert a toothpick into the cake – it should come out clean. Allow the cake to cool completely before inverting  it to a serving plate.

Prepare the caramel pecan apple crunchy layer

 Lower the oven temperature to 300°F (150°C). Spread pecans on a parchment paper-lined baking sheet and toast them in the oven for 15 minutes. Once cooled, chop the pecans into smaller pieces. Peel, core and cut an apple into small pieces. 

In a medium heavy-bottomed saucepan over medium-high heat, combine sugar and water. Allow it to cook without stirring until the sugar melts and turns into a rich caramel color. Add cream – it will bubble a bit. Toss in the apple pieces, butter, pecans, and salt. Stir constantly for about 2 minutes.

Spread this pecan apple caramel filling over the apple sponge cake, leaving a ½ inch (1cm) border and refrigerate while you move on to the next step.

Prepare the caramel mousse

Start by making the salted caramel sauce. Combine sugar and water in a medium heavy-bottomed saucepan over medium-high heat. Cook without stirring until the sugar transforms into a caramel color.

Pour in cream – it will bubble slightly. Cook for about 1 minute, stirring constantly until smooth. Remove from heat and add vanilla extract, butter and salt. Stir until it’s smooth and then transfer it into a bowl to cool.

Dissolve gelatin in cold water and let it swell for 5 to 10 minutes. Gently heat the gelatin until it dissolves and then mix it into the caramel sauce.

Whip the remaining 1 1/2 cups (360g) of whipping cream until soft peaks form. Add the caramel mixture and mix until well combined.

Assemble the cake

Place a cake ring around the cake and line it with an acetate sheet.

Pour the caramel mousse on top of the cake. Use an offset spatula to smooth out the top.

Cover the cake and refrigerate it for 4-6 hours or overnight to allow it to set.

Finally, decorate the cake with cinnamon whipped cream, blueberries, caramel pecan shards, and a sprinkle of cinnamon powder.

Ingredients

Apple Cake

  • 1 egg
  • 1/3 cup (70g) brown sugar
  • 3 tbsp cup (42g) vegetable oil
  • 1 tsp (5g) vanilla extract
  • 1/2 cup (60g) all-purpose flour

Pecan Apple Caramel Filling

  • 1/2 cup (100g) sugar
  • 1 tbsp (15ml) water
  • 2 tbsp (30g) whipping cream
  • 2/3 cup (70g) pecans , toasted, cut into smaller pieces
  • 1 tbsp (15g) butter
  • 1 medium apple (about 4 oz -110g) , peeled, diced
  • 1/2 tsp (3g) salt

For the Caramel Mousse

For Salted Caramel Sauce

  • 1/3 cup (70g) sugar
  • 1 tbsp (15ml) water
  • tbsp (20g) butter , at room temperature
  • 1/3 cup (80g) whipping cream
  • 1/4 tsp (1g) salt
  • 1/2 tsp (3g) vanilla extract

For Caramel Mousse

  • 2 tsp (7g) gelatin powder
  • 3 tbsp (45ml) cold water
  • cup (360g) whipping cream (35% fat) , chilled

For Decoration

  • cinnamon whipped cream
  • caramel pecan shards
  • blueberries
  • cinnamon powder, for dusting

Caramel Shards, for decoration, optional

  • 1/3 cup (35g) walnuts/pecans , toasted and chopped
  • 1/3 cup (70g) sugar
  • 1 tbsp (15ml) water

Instructions

Prepare the apple cake.

  • Preheat the oven to 350°F (180°C). Grease with butter an 8-inch (20cm) pan and line with parchment paper.
  • In a medium bowl, stir together flour, baking powder, baking soda, cinnamon and salt. Set aside.
  • In a large bowl add the egg, brown sugar, vanilla extract and vegetable oil. Mix until well combined.
  • Incorporate the flour mixture. Add diced apple and mix to combine.
  • Pour batter into the prepared pan.
  • Bake for 13-15 minutes, until a toothpick inserted into the cake comes out clean. Let cool completely and transfer to a serving plate.

Prepare the caramel apple pecan crunchy layer.

  • Low the oven temperature to 300°F (150°C).
  • Place the pecans into a parchment paper-lined baking sheet and let them toast for 15 minutes. When cool, cut the pecans into smaller pieces.
  • Peel, core and cut an apple into small pieces.
  • Place the sugar and water in a medium heavy-bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a dark caramel color.
  • Add the cream. It will bubble a little bit.
  • Add the apple, butter, pecans and salt and let cook for about 2 minutes stirring constantly with a wooden spoon or spatula.
  • Spread the pecan apple caramel filling over the apple sponge cake and refrigerate until you prepare the caramel mousse.

Prepare the salted caramel sauce for the mousse.

  • Place the sugar and water in a medium heavy-bottomed saucepan over medium-high heat, and cook without stirring until the sugar dissolves and gets a caramel color.
  • Add the cream. It will bubble a little bit.
  • Cook for about 1 minute constantly stirring with a wooden spoon until smooth.
  • Remove from heat and add vanilla extract, butter and salt. Stir well until smooth. Pour into a bowl and set aside to cool.

Prepare the caramel mousse.

  • Dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Place the gelatin over low heat just until the gelatin dissolves and pour it over the caramel sauce.
  • Whip the remaining 1 1/2 cup (360g) whipping cream until soft peaks form. Add caramel mixture and mix until well combined.

Assemble the cake.

  • Place a cake ring around the cake and line with an acetate sheet.
  • Pour the mousse on sides and top. Smooth the top using an offset spatula.
  • Cover and refrigerate for 4-6 hours or overnight.
  • Decorate the cake with cinnamon whipped cream, blueberries, caramel pecan shards, and dust with cinnamon powder.

Prepare the caramel pecan shards, optional.

  • Spread chopped walnuts/pecans on a parchment paper-lined baking sheet. Place water and sugar into a small saucepan and cook over medium heat until sugar dissolves and gets a caramel-dark color.
  • Pour the caramel over the chopped nuts and let it set.
  • Break caramel into shards and decorate the cake.

This Pecan Caramel Mousse Cake is an elegant delightful cake that is perfect for fall days and especially for Thanksgiving table. The cake consists of two layers of vanilla sponge cake with caramel pecan topping and with a smooth custard salted caramel mousse filling. The combination of textures and flavors is simply amazing and irresistible. 

How to make the Pecan Caramel Mousse Cake. 

Each step of making the cake is easy to prepare and the best part is that it needs no decoration. The caramelized pecans on top are decorative enough and look very tempting as well.

For making the cake, I was inspired by the amazing look of the Norwegian Verdens Beste Cake I’ve made a few times ago. I have changed the recipe though, to obtain a caramel custard filling and the caramelized pecan sponge cake layers. 

First, you have to prepare the caramel pastry cream. It needs to cool down before going further with the caramel filling. For this, you have to caramelize sugar and dissolve it in hot milk. Mix it with the egg and sugar mixture. Cook until thickens and set aside to cool. 

While the caramel pastry cream cools down, prepare the caramelized pecan sponge cake layers. For this prepare the caramel sauce and divide it into the prepared greased pans. Top with toasted chopped pecans. Prepare the vanilla cake batter and gently divide it into the pans over the pecan caramel layer. Bake until golden brown and let cool completely. 

Now it’s time to finish the caramel mousse filling by adding gelatin to the caramel pastry cream. Fold whipped cream into the caramel pastry cream and now you can assemble the cake. 

For assembling the cake invert one cake layer onto a serving platter, so the caramelized pecans are facing up. Place a cake ring around the cake and line it with acetate sheet. Add the caramel mousse filling, smooth the top and add the second cake layer with the caramelized pecans facing up. Let it set for several hours or even better overnight. 

Cut into slices and enjoy one of the best fall desserts ever.

Pecan Vanilla Sponge Cake Layers

For Caramelized Pecans

  • 1/2 cup (100g) light brown sugar
  • 5 tbsp (70g) butter
  • 1/4 tsp (1g) salt
  • 3 tbsp (40ml) whipping cream
  • 1 cup (100g) pecans/walnuts , toasted and chopped

For the Sponge Cake Batter

  • 3 eggs
  • 1/3 cup (70g) sugar
  • 1 tsp (5g) vanilla extract
  • 1/4 tsp (1g) salt
  • 1/2 cup (65g) all-purpose flour

Caramel Pastry Cream

  • 2 cups (480ml) milk
  • 2 eggs
  • 1 tbsp (15g) sugar
  • 1/2 tsp (3g) salt
  • 1 tbsp (10g) flour
  • 1/4 cup (30g) cornstarch
  • 1/2 cup (100g) sugar
  • 1 tbsp (15ml) water
  • 1 tsp (5g) vanilla extract

For the Caramel Mousse

  • 1⅓ cup (320g) whipping cream
  • tsp (8g) gelatin powder
  • 3 tbsp (45ml) cold water

Instructions

Prepare the caramel pastry cream.

  • Place milk in a medium saucepan and bring to a simmer.
  • Meanwhile, whisk the eggs with 1 tablespoon of sugar and salt until well combined. Add flour and cornstarch and mix to combine.
  • Place ½ cup (100g) sugar and 1 tablespoon of water in a medium heavy-bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a caramel color.
  • Reduce the heat to low and gradually add the hot milk to the caramel. Keep over medium-low heat until the caramel is dissolved.
  • Gradually add the caramel milk to the egg mixture and return to heat. Cook, stirring constantly until it boils and thickens.
  • Remove from heat and add vanilla extract.
  • Pour the cream into a clean bowl and cover it with plastic wrap, pressing it directly onto the pastry cream's surface to prevent skin from forming. Let cool to room temperature.

Prepare the pecan sponge cake layers.

  • Preheat the oven to 350°F (180°C), grease the bottom and sides of two 8-inch (20cm) pans and line them with parchment paper.
  • Prepare the walnut crunch. In a small saucepan add sugar, salt, whipping cream and butter. Cook over medium-low heat until sugar dissolves.
  • Divide the mixture evenly in two pans. Sprinkle the chopped toasted pecans/walnuts on top. Set aside until the cake batter is prepared.
  • Prepare the cake batter. In a large bowl add 3 whole eggs, sugar salt and vanilla. Mix to combine. Mix for about 10 minutes until thick and tripled in volume.
  • Gradually fold in sifted flour. Divide the batter evenly into the prepared pans and bake for about 10 minutes until golden and a toothpick inserted into the center of the cake comes out clean.
  • Let cool completely.

Prepare the caramel filling.

  • Dissolve gelatin in cold water and let it soak for 5-10 minutes. Dissolve gelatin over low heat, pour over the caramel pastry cream and mix to combine.
  • In a medium bowl mix whipping cream until stiff peaks form. Gently incorporate it into the pastry cream mixture.

Assemble the cake.

  • Turn one cake onto a serving platter with the caramelized pecans facing up. Place a cake ring around the cake and line it with an acetate sheet.
  • Pour the caramel filling over the cake and smooth the top. Add the second layer of cake with the caramelized pecans facing up.
  • Cover and refrigerate for 4-6 hours or even overnight. Enjoy!

For this recipe, first, you have to make sure you have prepared the mashed sweet potatoes in advance. You can boil, steam, microwave, or roast a small sweet potato, let it cool and mash it with a fork. You can also consider leaving the sweet potato out and substituting it with more milk or pumpkin puree. 

Prepare the dough and let it rise for at least one hour until doubled in size. On a floured surface, divide the dough into 16 pieces and shape each into a ball. Place a greased bowl into the center of a greased skillet and arrange the balls around it. Cover and let rest for another 30 minutes until you prepare the walnut cranberry cheese dip. 

If you are in a hurry, you can also consider using pre-made store-bought dough, but making it from scratch always brings the best results.

Toast the pecans in a skillet or in the oven and chop them into small pieces. Mix the cream cheese with honey and cinnamon and stir in the mozzarella and cheddar cheese. Add the toasted pecans and cranberries and mix to combine.

Sweet Potato Bread Dough

  • 3 cups (375g) all-purpose flour
  • 1 tsp (5g) salt
  • 1/2 tsp 1/2 tsp (2g) cinnamon
  • 2 tsp (6g) active dry yeast (or 20g fresh yeast)
  • 2/3 cup (160ml) warm milk
  • 1 tsp (5g) sugar
  • 2 tbsp (30g) butter, melted
  • 1/2 cup (120g) mashed sweet potatoes

For brushing

Pecan Cranberry Cheese Dip

  • 8 oz (230g) cream cheese , room temperature
  • 1 cup (100g) mozzarella cheese , grated
  • 1/2 cup (50g) Cheddar cheese , grated
  • 3/4 cup (75g) pecans or walnuts , toasted and chopped
  • 3/4 cup (90g) dried cranberries
  • 2 tbsp (30g) honey
  • 1/4 tsp (1g) cinnamon
Makes: 9inch round

Instructions

Prepare the sweet potato bread dough.

  • In a small bowl, add active dried yeast, sugar and ⅓ cup (80ml) milk, and let it rest for 5 minutes, to activate the yeast. In a large bowl mix flour with salt and cinnamon. Add dissolved yeast, butter, mashed sweet potato and remaining ⅓ cup (80ml) warm milk. Mix everything together then knead until smooth and pulls away from the sides of the bowl.
  • Place the dough in an oiled bowl, cover it with plastic wrap and let it sit for about 1 hour at room temperature, to let the dough rise until doubled in size.
  • On a floured surface, turn the dough, knead for a few seconds and divide it into 16 pieces. Form into balls.
  • Grease a 9-inch (23 cm) cast iron skillet with butter and the outer side of a 5-inch (13cm) diameter bowl. Place the bowl in the center of the skillet and arrange the dough balls around the bowl.
  • Cover the skillet with plastic wrap or a kitchen towel and let rise for another 30 minutes.
  • Meanwhile, preheat the oven to 350F (180C).

Prepare the pecan cranberry cheese dip.

  • In a bowl add cream cheese and mix until smooth. Add the rest of the ingredients: grated mozzarella chese, grated cheddar cheese, chopped toasted pecans or walnuts, cranberries, cinnamon and honey. Mix until combined.
  • Remove the bowl from the center of the skillet and add the pecan cranberry dip into the center of the skillet.
  • Brush the dough balls with the beaten egg.
  • Bake for about 20-25 minutes until the cheese is melted and the bread is golden brown.
  • Let it cool slightly for 5 – 10 minutes before serving.

This Pecan Upside Down Cake is an easy and delightful fall dessert, perfect for Thanksgiving dinner table. The cake consists of a soft cake at the bottom topped with a crunchy layer of caramelized pecans. Serve this cake with vanilla ice cream for an unforgettable and decadent experience. 

How to make Pecan Upside Down Cake. 

The recipe for this cake is very quick, takes no more than 15 minutes to prepare. First, you need to prepare the caramel pecan topping. For this, melt butter with brown sugar, honey, salt and cinnamon and stir in pecans. You can chop the pecans if desired, I preferred to let them as they were.

Pour the pecan mixture onto the bottom of a greased pan and set aside to prepare the cake batter.

For the cake batter, I chose an easy recipe I usually use for upside-down cakes. The cake has sour cream and oil for extra moisture but you can also use yogurt or buttermilk for the sour cream and replace oil with butter for a more buttery flavor. I also added some ground pecans to the cake for more flavor and texture and to make it even nuttier. 

The cake is baked until cooked through and the pecans get caramelized and toasted. Let the cake cool in the pan for a few minutes before inverting it onto a serving plate. Serve as is or with a good dollop of ice cream on top. It is simply amazing.

Instructions

  • Preheat the oven to 350F (180C). Grease an 8-inch (20cm) round pan with butter and line it with parchment paper.

Prepare the pecan topping.

  • Place the butter, brown sugar, honey, salt and cinnamon into a small saucepan over medium heat. Stir and cook until the butter is completely melted. Add the pecans and stir them in.
  • Pour the pecan mixture into the prepared pan.

Prepare cake batter.

  • Mix eggs with sugar, salt, and vanilla extract in a large bowl until thick and creamy. Add vegetable oil and sour cream and mix to combine. With the mixer on low, incorporate flour, ground pecans and baking powder. Don’t overmix.
  • Gently pour the batter over the pecan mixture.
  • Bake for 35-40 minutes until a toothpick inserted into the center of the cake comes out clean. Cover the cake with aluminum foil if browns too fast and continue baking.
  • Let it cool in the pan for 5-10 minutes.
  • Invert the cake onto a serving platter.
  • Serve with vanilla ice cream. Enjoy!

This No-Bake Chocolate Pecan Pie with Meringue Topping is one of the most delicious no-bake desserts you can ever prepare. Crispy buttery cookie crust filled with an amazing toasted pecan caramel filling, topped with chocolate ganache, and a generous amount of smooth, silky meringue topping.

I simply fell in love with this dessert, it is so, so good, not to mention that it is a perfect dessert for upcoming holidays, when you run out of time or your oven is booked with other delicious recipes.

The recipe is quite easy and quick to prepare, each step doesn’t require too much time and can be assembled quickly.

How to make this no-bake chocolate pecan pie with meringue topping

Start by preparing the crust. In a food processor, blend the biscuits or graham crackers until crumbs form. Add melted butter and cinnamon, and process until thoroughly combined. Press the mixture into the bottom and edges of the pan using the back of a spoon and your fingers where necessary. Refrigerate while you prepare the filling.

How to prepare the pecan caramel filling.

For the pecan caramel filling, toast the pecans in a pan, stirring constantly. Once cool, chop the pecans into smaller pieces. In a small bowl, mix the egg yolks with sugar until creamy and light yellow.

In a saucepan, combine sugar and water over medium-low heat until the sugar dissolves and turns into a light caramel color. Add butter, stirring until melted, then add pecans and salt. Quickly mix in the yolks and vanilla extract until the mixture thickens, about 1 minute. Be careful not to overcook. Spread the pecan caramel filling over the crust and refrigerate while you prepare the chocolate ganache.

How to prepare the chocolate ganache

To prepare the chocolate ganache, place chocolate and cream in a heatproof bowl over a pan of simmering water. Melt over low heat, then spread evenly over the pie. Refrigerate for at least 30 minutes before preparing the meringue topping.

How to prepare the meringue topping for the no-bake chocolate pecan pie

For the meringue topping, place egg whites, sugar, cream of tartar, and salt in a heatproof bowl over simmering water (bain-marie). Whisk constantly for about 5 minutes or until it reaches 160°F (71°C), or until glossy stiff peaks form. Remove from heat and beat on high speed for 5-7 minutes until stiff peaks form. Incorporate vanilla extract while mixing. Spread the meringue over the tart and use a spoon to create some meringue peaks. Optionally, toast the meringue with a brulee torch.

Serve and refrigerate any leftovers.

Pecan Caramel Filling

  • 1 cup (100g) pecans , toasted

Chocolate Ganache

  • 3.5 oz (100g) whipping cream
  • 3.5 oz (100g) semisweet chocolate , cut in small pieces

Meringue Topping

  • 3 egg whites , at room temperature
  • 2/3 cup (135g) granulated sugar
  • 1/4 tsp (1g) cream of tartar
  • 1/4 tsp (1g) salt
  • 1 tsp (5g) vanilla extract

Instructions

  • Grease with butter a 8 inch (20cm) pie or tart pan.

Prepare the crust.

  • Place the biscuits/graham crackers into the bowl of a food processor. Blend until crumbs form. Add melted butter and cinnamon and process until completely combined.
  • Press the mixture with the back of the spoon and your fingers where necessary,  into the bottom and edges of the pan. Refrigerate until you prepare the filling.

Prepare the pecan caramel filling.

  • Toast the pecans in a pan stirring constantly. When cool, cut the pecans into smaller pieces.

  • Place the 1/2 cup (100g) sugar with water into a saucepan. Place over medium-low heat until sugar dissolves and gets a light caramel color.
  • Add butter, stir until melted and then add pecans and salt. Add mixed yolks and vanilla extract and continue mixing just until it thickens, up to 1 minute. Don’t overcook.
  • Spread the pecan caramel filling over the crust and refrigerate until you prepare the chocolate ganache.

Prepare the chocolate ganache.

  • Place chocolate and cream in a heatproof bowl and place over a pan with simmering water. Melt over low heat.
  • Spread it evenly over the pie. 
  • Refrigerate for at least 30 minutes before preparing the meringue topping.

Prepare the meringue topping.

  • Place the whites, sugar, cream of tartar and salt in a heat-proof bowl. Place over a pan with simmering water (bain-marie).
  • Whisk constantly, for about 5 minutes, or if you have a thermometer until it reaches 160F (71C).
  • Remove from heat and start mixing on high speed for about 5-7 minutes, until glossy stiff peaks form. Incorporate vanilla extract while mixing.
  • Spread meringue over tart. Use a spoon to create some meringue picks. Toast the meringue with a brulee torch if desired.
  • Serve and keep the leftovers refrigerated. Enjoy!

  • 1 ½ cups (360g) whipping cream (35% fat) , chilled

White Chocolate Decoration

  • 1 oz (30g) rice noodles
  • 2.5 oz (75g) white chocolate

Instructions

Prepare cake layers.

  • Preheat the oven to 350F (180C). Grease and line with parchment paper three 8 inch (20 cm) round cake pans.
  • In a medium bowl sift together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.
  • In a large bowl add eggs with both sugar and mix for a few minutes until creamy and lighter in color. Add oil and mix until well combined. Gradually mix in flour mixture. Using a spatula incorporate the mashed bananas, crushed pineapple and toasted walnuts/pecans.
  • Pour the batter evenly into the prepared pans.
  • Bake for about 25-30 minutes until a toothpick inserted into the center comes out clean.
  • Let pans cool on a cooling rack for 10 minutes.
  • Remove the cakes from the pan and let them cool completely.

Prepare white chocolate cream cheese frosting.

  • Place white chocolate and ¼ cup cream into a heatproof bowl and place over a pan with simmering water. Melt over low heat. Let cool to room temperature.
  • In a large bowl mix cream cheese until smooth. Add powdered sugar and vanilla extract and mix to combine. Mix in melted chocolate and set aside.
  • In another bowl mix whipping cream until stiff peaks form. Gently fold the whipped cream into the white chocolate and cream cheese mixture.

Assemble the cake.

  • Cut the top of the cakes to create flat surfaces.  Add a bit of frosting onto a serving platter and place one layer of cake on it. Spread up to a third of the frosting. Add the second layer of cake and spread up to a third of the frosting. 
  • Add the last layer of cake and cover the top and sides with a thin coat for crumb coating. Refrigerate for 15 minutes.  Cover the top and sides with remaining frosting. Refrigerate for at least 30 minutes.

Meanwhile prepare white chocolate decoration.

  • Place white chocolate into a heatproof bowl and melt over bain-marie. Add noodles and coat with melted chocolate.
  • Arrange the coated noodles  into a small bowl that was greased with oil and lined with plastic wrap. Add  a smaller bowl wrapped in plastic wrap on top. Refrigerate for at least 20 minutes to set.
  • Place the chocolate decoration on top of the cake, fill with chopped nuts and sprinkles. Decorate the bottom of the cake with chopped nuts if desired. Enjoy!

This Chocolate Pecan Pie is a perfect dessert for fall days and holiday season, when the air is crisp and warm treats are all the more satisfying. There’s nothing quite like the rich, indulgent taste of chocolate paired with the buttery crunch of pecans, and this Chocolate Pecan Pie recipe delivers just that.

What makes this particular pie so special is that it uses dark brown sugar instead of corn syrup, which gives it an extra layer of flavor with its molasses and caramel notes. How to make Chocolate Pecan Pie

Chocolate Pecan Pie starts with making the crust by whisking together flour, sugar, and salt in a medium bowl. Shape the dough into a disk, wrap it with plastic wrap, and refrigerate for at least an hour.

Grease an 8-9 inch (20-23 cm) pie pan and roll the dough on a floured surface until it’s about 12 inches (30cm) in diameter. Line the pan with the rolled dough, press the edges, trim the excess dough, and refrigerate for 30 minutes.

Prick the crust with a fork, line it with parchment paper, and fill with pie weights or beans. Bake for 20 minutes at 350F (180C). Remove the parchment paper and weights, and bake for 10 more minutes. Cool it slightly on a cooling rack.

To prepare the filling, mix eggs with both sugars and salt until smooth and well combined. Add melted butter, milk, and vanilla extract. In the end, incorporate flour and fold in 1 cup (100g) pecans and chocolate chips. Slowly pour the filling into the prepared crust, and decorate the top with the remaining cup of pecan halves.

Cover the pan with aluminum foil and bake the pie for 45 minutes. Remove the aluminum foil and continue baking for 10-15 minutes until the center jiggles slightly. Cool it completely before serving. Serve it at room temperature with fresh whipped cream. The pie can be stored covered for up to 3-5 days on the countertop. Instructions

  • Preheat oven to 350ºF (180ºC) and line two baking sheets with parchment paper.
  • Take about a spoon of dough, flatten, add a piece of chocolate in the center, wrap the dough around it and roll into a ball.
  • Place dough balls into the prepared baking sheets.
  • Bake for about 12-13 minutes, until slightly browned. Make sure you do not overbake otherwise the cookies could crack.
  • Let cool on baking sheet for 5-10 minutes.
  • Place 1/2 cup powdered sugar into a bowl. While still a bit warm roll the balls in powdered sugar.
  • Let them cool completely and roll in powdered sugar again if necessary.
