These Pumpkin Cream Cheese Crumble Muffins are a tasty delight that’s sure to impress. They are soft with a creamy surprise inside, thanks to a yummy cream cheese filling. The pumpkin flavor adds a cozy touch and intense color, making each bite feel like a warm hug. On top of these little treats sits a crumbly topping that adds a sweet crunch. It’s the perfect balance of soft and crunchy, making these muffins a treat perfect for any occasion. 

Made with simple steps and everyday ingredients, these muffins are very easy and quick to prepare. For these muffins, I like to bake the pumpkin and prepare the puree in advance. This makes the whole process much easier.

Whether it’s for breakfast or an afternoon snack, these Pumpkin Cream Cheese Muffins with crumble topping will bring joy to everyone who tries them.

How to make pumpkin cream cheese crumble muffins

Begin with preheating your oven to 375F (190C) and lining a 12-cavity muffin pan with paper liners. In a bowl, mix flour with salt, cinnamon, ginger, nutmeg, cloves, baking powder, and baking soda. Set this mix aside.

In a large bowl, whisk 2 eggs with sugar until well blended. Add oil and mix to combine. Add pumpkin and vanilla extract, mixing well. Stir in the flour mixture until combined; avoid overmixing and set it aside.

Now, let’s prepare the cream cheese filling. Mix cream cheese with sugar, egg yolk, and vanilla extract. Spoon a generous amount of the pumpkin mixture into the muffin cups. Divide the cream cheese mixture evenly and top it with the remaining pumpkin batter.

Moving on to the crumb topping, in a medium bowl, combine sugar with flour, cinnamon, and melted butter. Divide the crumbs on top of each muffin.

Bake for about 20-25 minutes until golden brown and a toothpick inserted into the center comes out clean. Once done, cool the muffins on a wire rack.

Ingredients

Pumpkin Cake Batter

  • 2 eggs
  • 2/3 cup (135g) light brown sugar
  • 1/3 cup (75g) vegetable oil
  • 1 ½ cup (360g) pumpkin puree
  • 1 tsp (5g) vanilla extract
  • 1 ⅔ cup (200g) all-purpose flour
  • 1/2 tsp (3g) salt
  • 2 tsp (6g) baking powder
  • 1/2 tsp (3g) baking soda
  • 1 tsp (3g) cinnamon
  • 1/4 tsp (1g) ginger
  • 1/4 tsp (1g) nutmeg
  • Pinch of cloves

Cream Cheese Filling

  • 6 oz (180g) cream cheese
  • 1 egg yolk
  • 2 tbsp (30g) sugar
  • 1/2 tsp (3g) vanilla extract

Crumble Topping

  • 1/4 cup (30g) all-purpose flour
  • 2 tbsp (30g) sugar
  • 1/4 tsp (1g) cinnamon
  • 2 tbsp (30g) butter , melted

Instructions

  • Preheat the oven to 375F (190C). Line a 12-cavity muffin pan with paper liners.

Prepare the pumpkin batter.

  • In a bowl mix the flour with salt, cinnamon, ginger, nutmeg, cloves, baking powder and baking soda. Set aside.
  • In a large bowl, whisk the 2 eggs with sugar until well blended. Add oil and mix to combine. Add pumpkin puree and vanilla extract and mix well. (For pumpkin puree see the notes below)
  • Stir in the flour mixture until combined. Don’t overmix. Set aside.

Prepare the cream cheese filling.

  • In a medium bowl add the cream cheese and mix until smooth.
  • Add sugar, egg yolk and vanilla extract and mix to combine.

Prepare the crumble topping.

  • In a medium bowl combine sugar with flour and cinnamon.
  • Add the melted butter and mix to combine.

Assemble the muffins.

  • Spoon a large spoon of pumpkin mixture into the muffin cups.
  • Divide the cream cheese mixture evenly.
  • Top with the remaining pumpkin batter.
  • Divide the crumbs on top of each muffin.
  • Bake for about 20-25 minutes until golden brown and a toothpick inserted into the center comes out clean.
  • Cool muffins on a wire rack. Enjoy!

Notes

For pumpkin puree, I always like to use fresh roasted pumpkin. I never use canned pumpkin. I usually roast a whole pumpkin in advance and save some for later. Cut the pumpkin into thick slices and place on a parchment paper-lined baking sheet. Bake at 350F (180C) for about 45 minutes to 1 hour or until tender. Let it cool down. Scoop out the pulp and puree in a food processor until smooth. Refrigerate the puree or freeze it for later use.

This amazing Pumpkin Chocolate Marble Cake is a comforting and flavorful cake perfect for fall season. The cake is baked in a loaf pan, with a beautiful chocolate marbled effect. If you love pumpkin season you must try this pumpkin marble cake, it is delightful. 

How to make pumpkin chocolate marble cake. 

The recipe for this cake is easy, needs only a few basic ingredients and is ready in no minute. For the pumpkin puree you can boil, roast or steam the pumpkin slices, let it cool and puree. I always like to make sure I have pumpkin puree made in advance, and refrigerate or freeze until ready to use. 

For the cake, first, you have to prepare the pumpkin batter. Reserve about two cups of batter and mix it with a cocoa and milk mixture. 

Add the pumpkin batter into the prepared loaf pan. Top with the chocolate batter and swirl with a knife or skewer. 

Bake for about one hour until a toothpick inserted into the center comes out clean. Let it cool completely before serving. Enjoy it alongside a good cup of coffee or milk.

For the pumpkin batter

  • cup  (310g) all-purpose flour
  • 2 ½ tsp (10g) baking powder
  • 1 tsp (6g) baking soda
  • 1/2 tsp (2g) salt
  • 2 tsp (6g) cinnamon
  • 1/2 tsp (2g) ginger
  • 1/2 tsp (2g) nutmeg
  • 1/4 tsp (1g) cloves
  • 3 eggs
  • cup (250g) sugar
  • 6 tbsp (80g) vegetable oil
  • 1/2 cup (120g) buttermilk
  • 1 tsp (5g) vanilla extract
  • 1 cup (250g) pumpkin puree

For Chocolate Batter

  • 1/3 cup (40g) cocoa powder
  • 1/4 cup (60ml) milk
Makes: 9 x 5inch rectangle

Instructions

  • Preheat the oven to 350F (180C). Grease a 9 x 5-inch (23×13 cm) loaf pan and line it with parchment paper.
  • In a medium bowl combine flour, salt, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves.
  • In a large bowl, mix the eggs with sugar, until creamy and thick. Add vegetable oil and vanilla extract and mix to combine.
  • Add buttermilk and pumpkin puree and mix until well incorporated.
  • With the mixer on low, gradually incorporate the flour mixture until all is well incorporated.
  • Reserve about 2 cups (500g) of pumpkin batter. Set aside.
  • In a small bowl mix cocoa powder with milk. Add to the reserved 2 cups of pumpkin batter. Mix to incorporate.
  • Pour the pumpkin batter into the prepared pan. Add the chocolate batter on top. Use a knife or skewer to create swirls.
  • Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. If browns too fast, you can cover it with aluminum foil and continue baking.
  • Let bread cool in the pan for 10 minutes and then transfer to a wire rack to cool completely.
  • Enjoy as is or alongside a cup of coffee or milk.

These Pumpkin Walnut Chocolate Chip Cookies are one of the best cookies you can prepare during the fall season. They are soft, and chewy and packed with a lot of flavor and spices. The toasted nuts and chocolate bring a nice texture and flavor too. 

How to make Pumpkin Walnut Chocolate Chip Cookies. 

These pumpkin cookies are easy to prepare. Just make sure you have all the ingredients on hand. For pumpkin recipes, I usually like to make the pumpkin puree in advance, freeze it in small batches and have it ready for whenever I want to use it. 

Toast the walnuts or pecans and cut into smaller pieces and set aside until ready to use. Whisk together the dry ingredients and set aside. 

Mix butter with both sugars until creamy. Mix in the egg and pumpkin puree. Gradually incorporate the flour mixture. Add toasted nuts and chocolate chips if used and refrigerate the dough for at least two hours. 

Use an ice cream scoop to take equal portions of dough and place on baking sheets. Bake for 8-10 minutes until slightly golden around the edges. Make sure you don’t overbake the cookies. They will harden as they cool.

Instructions

  • Whisk together the flour, baking soda, cornstarch, and salt in a medium-sized bowl. Whisk in the pumpkin spices, cinnamon, nutmeg, ginger and cloves. Set aside.
  • Mix the butter with both sugars in a large bowl until creamy, light and fluffy.
  • Add egg and mix to combine. Add pumpkin puree and mix to incorporate.
  • Incorporate dry ingredients into the butter mixture and stir until the dough comes together.
  • Add the toasted walnuts and semisweet chocolate chips. Cover and refrigerate the dough for at least 2 hours.
  • Preheat the oven to 350F (180C). Line two large baking sheets with parchment paper.
  • Use an ice cream scoop to take equal portions of dough and place them on the prepared baking sheet. Flatten slightly. Repeat with remaining dough, keeping 2 inches (5cm) space between cookies.
  • Bake for 8-10 minutes or until slightly golden around the edges. Cool on baking sheets for 5-10 minutes.
  • While still warm, add chocolate chips and toasted walnuts on top of the cookies.
  • Remove to a cooling rack to cool completely.

These pumpkin cream cheese brownies are one of the best pumpkin desserts you can prepare during the fall season. They are moist and fudgy, rich and chocolatey and bursting with flavor. If you love chocolate and pumpkin desserts then these brownies are the right recipe for you. 

These pumpkin brownies consist of a dense chocolate brownie layer at the bottom with a generous pumpkin cream cheese layer on top that beautifully swirls into the brownie layer. It looks so impressive and is simply irresistible.

How to make pumpkin cream cheese brownies. 

The recipe for these brownies is really easy and quick. First, prepare the brownie batter. For this make sure you use good-quality semisweet chocolate and cocoa powder. Their flavor is really important to get the best results. 

Reserve about half of cup of brownie batter and pour the rest into the prepared pan. 

Fall Pumpkin brownies

Now it’s time to prepare the pumpkin cream cheese layer. Mix the cream cheese with sugar and egg. Incorporate the pumpkin puree and spices. Spoon the pumpkin cream cheese mixture on top of the brownie layer. Spoon the remaining brownie batter. Use a knife or skewer to create swirls. 

Bake for about 30 minutes or until a toothpick inserted into the center comes with few moist crumbs attached. Let the brownies cool completely before serving. 

For the pumpkin desserts, I like to prepare my pumpkin puree. I usually roast it in the oven but you can also consider steaming or boiling it. I like to do this in advance, let it cool and puree it and then freeze it in small batches until needed.

  • 2 large eggs
  • 1 tsp (5g) vanilla extract
  • 1 tbsp (8g) cocoa powder
  • 1/2 tsp (2g) salt
  • 1/2 cup (60g) all-purpose flour

Cream Cheese Pumpkin Layer

  • 8 oz (230g) cream cheese , room temperature
  • 2/3 cup (160g) pumpkin puree
  • 1/4 cup (50g) sugar
  • 1 egg
  • 1/2 tsp (2g) cinnamon
  • 1/4 tsp (1g) ginger
  • 1/4 tsp (1g) nutmeg
  • 1/4 tsp (1g) cloves
Makes: 8 x 8inch rectangle

Instructions

  • Preheat the oven to 350F (180C). Butter the sides and bottom of a 8-inch (20cm) springform pan and line the bottom with parchment paper.
  • Place 2 oz (60g) semisweet chocolate and butter in a medium bowl and melt over a bain-marie, occasionally stirring, until smooth. Stir in the sugar, then remove the bowl from the pan. Cool slightly.
  • Incorporate the eggs one at a time into the mixture and whisk until well combined. Stir in the vanilla extract and salt. Then add the cocoa powder and flour and stir well.
  • Fold in the remaining 2 oz (60g) chocolate chips or pieces.
  • Reserve about ½ cup (120g) of batter for later and pour the rest in the prepared pan.

Prepare cream cheese pumpkin layer.

  • Add cream cheese into a medium bowl and stir until smooth. Add sugar and egg and mix to combine.
  • Add pumpkin puree and mix to combine. Add cinnamon, ginger, nutmeg and cloves and mix to combine.
  • Add spoons of cream cheese mixture on top of the brownie batter. Add teaspoons of reserved brownie on top. Use a skewer to create swirls.
  • Bake for about 30-35 minutes until a toothpick inserted into the center comes out with a few moist crumbs sticking to it.
  • Remove the brownie from the oven and cool completely before serving.
  • Keep the leftovers at room temperature for no more than 2 days and refrigerated for up to 4-5 days. Enjoy!

The recipe is straightforward and requires just a few simple ingredients, like flour, pumpkin puree, yeast, and sugar. Once you’ve mixed the dough, you can let it rise, shape the bagels, and then bake them in the oven.

How to make Twisted Pumpkin Bagels

Knead the dough until it is soft and pulls away from the sides of the bowl, then transfer it to an oiled bowl and let it rise for an hour.

After the dough has risen, punch it down and transfer it to an oiled surface. Roll the dough out into a rectangle, and then spread softened butter over two-thirds of it. Fold the dough into thirds, starting with the unbuttered side, and then repeat the process after rotating the dough at 90 degrees. Cut the dough into eight pieces, twist each piece, and bring the ends together, then place them on a baking sheet lined with parchment paper. Let the bagels rise for another 20-30 minutes, then brush them with beaten egg and sprinkle sesame or poppy seeds on top. Bake at 400F (200C) for 15-18 minutes, until they are puffed and golden brown. The result is a delicious, flaky bagel with a rich pumpkin flavor that’s perfect for fall.

Ingredients

  • 3 ½ cups (440g) all-purpose flour
  • 2 ¼ tsp (7g) active dry yeast (or 25 g fresh yeast)
  • 1 tsp (5g) salt
  • 1 tbsp (15g) sugar

Instructions

Prepare the dough.

  • In a medium bowl add yeast, sugar and warm milk. Let it rest for 5-10 minutes to activate the yeast.
  • In a large bowl combine flour with salt. Add water, egg, pumpkin pureem dissolved yeast and melted butter. Stir to combine and knead until the dough is soft and pulls away from the sides of the bowl.
  • Transfer the dough to an oiled bowl and cover with plastic wrap and let it rise for about 1 hour in a warm area, until doubled in size.

Shape the twisted bagels.

  • Punch dough down and transfer to an oiled surface. Using a rolling pin, roll the dough into a 16 x12 inches (40x30cm) rectangle.
  • With the back of a spoon or a spatula, spread 2 tablespoons (30g) softened butter over two thirds of the rolled dough. Fold dough like a letter into thirds, starting with the unbuttered side of the rectangle. Rotate the dough 90° and repeat rolling the dough into a 16 x12 inches (40x30cm) rectangle.
  • Again, spread 2 tablespoons (30g) softened butter over two thirds of the rectangle. Fold dough like a letter into thirds, starting with the unbuttered side of the rectangle.
  • Cut the dough into 8 equal pieces. Twist each piece and bring the ends together, pinch the ends and place on a parchment paper baking sheet.
  • Cover with a kitchen towel and let rise for 20-30 minutes.
  • Meanwhile, preheat the oven to 400F (200C).
  • Brush the buns with beaten egg and sprinkle sesame or poppy seeds on top.
  • Bake for 15-18 minutes or until puffed and golden brown.

Look no further, as I’m excited to introduce you to an amazing idea – a quick and easy Spiderweb Cake that combines chocolate and pumpkin flavors. This Halloween Chocolate Pumpkin Cake is a delightful combination of flavors that scream fall. 

The moist chocolate pumpkin cake is perfectly spiced with cinnamon, ginger, nutmeg, and cloves and topped with a decadent chocolate ganache that brings out the richness of the cake. The cake is then finished off with a spooky white chocolate spiderweb making it the perfect centerpiece for any Halloween party.

The recipe for this cake is incredibly easy to follow. It takes no more than 15 minutes to prepare the cake batter, and after baking and cooling, all you need to do is cover it with the chocolate ganache and decorate it with the spiderweb. The end result is a stunning cake that looks as good as it tastes.

How to make this Spiderweb Cake

To start, first, prepare the chocolate pumpkin cake. Preheat the oven to 350F (180C) and grease an 8-inch (20cm) pan and line it with parchment paper. In a medium bowl, whisk together flour, cocoa powder, baking soda, salt, and spices. In a separate large bowl, mix together the egg with brown sugar,  granulated sugar and vanilla extract until creamy. Add vegetable oil, and pumpkin puree and mix until combined. Slowly incorporate the flour mixture into the pumpkin mixture and fold in chocolate chips or chunks. Pour the batter into the prepared pan and bake for 25-30 minutes. Once cooled, remove the cake from the pan and prepare the chocolate glaze by melting the chocolate and cream together. Pour the glaze over the cake and use an offset spatula to remove the drips.

To make the spider web, melt white chocolate and pipe a spiral on top of the cake, then drag a toothpick or skewer outwards to form the web. Add two small eyes on a mini Oreo cookie using the remaining ganache to create the spider’s legs. The cake can be refrigerated for 30 minutes before serving.

Ingredients

  • 1 cup (125g) all-purpose flour
  • 1/3 cup (40g) unsweetened cocoa powder
  • 3/4 tsp (4g) baking soda
  • 1/2 tsp (2g) salt
  • 1/2 tsp (1g) cinnamon
  • 1/4 tsp (1g) ginger
  • 1/4 tsp (1g) nutmeg
  • 1/8 tsp cloves
  • 1 egg
  • 1/3 cup (70g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 tsp (5g) vanilla extract
  • 1/4 cup (60g) vegetable or canola oil
  • 1 ¼ cup (300g) pumpkin puree
  • 1/2 cup (80g) roughly chopped semisweet chocolate

Chocolate Glaze

  • 4 oz (120g) semi-sweet chocolate
  • 5 oz (140g) whipping cream

For decoration

  • 1.5 oz (45g) white chocolate
  • Oreo crumbs
  • A mini oreo , for the spider

Instructions

Prepare the chocolate pumpkin cake.

  • Preheat the oven to 350F (180C). Grease a 8 inch (20cm) pan and line with parchment paper.
  • In a medium bowl whisk the flour, with cocoa powder, baking soda, salt and spices.
  • In a large bowl add the egg with brown sugar,granulated sugar and vanilla extract and mix until creamy. Add vegetable oil and mix to combine. Add pumpkin puree and continue mixing until well combined.
  • With the mixer on low incorporate the flour mixture into the pumpkin mixture. Don’t overmix.
  • Fold in the chocolate chips/chunks.
  • Pour the batter into the prepared pan.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool completely.

Prepare the chocolate glaze.

  • Place chocolate and cream in a heatproof bowl and place over a pan with simmering water. Melt over low heat.
  • Remove the cake from the pan and place it over a rack or  over a bowl placed over a parchment paper lined baking sheet to collect the excess. Pour the glaze on top and edges of the cake. Use an offset spatula to remove the drips.
  • Transfer the cake to a serving platter.

Prepare the white chocolate spider web.

  • Melt the white chocolate over low heat. Transfer into a piping bag fitted with a very small plain tip like (no. 2 nozzle) or simply cut a small corner of a bag and pipe a spiral on top of the cake.
  • Drag a toothpick or skewer outwards to form the spider web.
  • If desired, pipe two small eyes on a mini oreo cookie, use remaining ganache to create its legs.
  • Refrigerate for 30 minutes if desired and enjoy!

I am so glad to be able to share this amazing dessert, Chocolate Pumpkin Mousse Cake, an elegant dessert with an irresistible flavor combination perfect for upcoming holidays. If you love pumpkin you should try this recipe, as it is one of the best pumpkin desserts ever. I love pumpkin, and I have used it in many recipes here on my blog and channel, but this dessert might be my new favorite of all pumpkin desserts.

This cake has a moist chocolate cake at the bottom, followed by a spiced and creamy pumpkin mousse, a chocolate mousse on top, finished with a shiny layer of dark chocolate ganache, decorated with beautiful physalis and cinnamon sticks to create a perfect fall dessert.

The recipe is quite easy and quick to prepare. You can easily make this a no-bake dessert if you substitute the chocolate cake at the bottom with an Oreo crust or your favorite cookie crust.

How to make chocolate pumpkin mousse cake

First, start by preparing the chocolate cake. Preheat your oven to 350°F (180°C) and grease and line an 8-inch (20cm) springform pan with parchment paper.

In a bowl, whisk together eggs and sugar until well combined. Then add oil and vanilla extract.

Sift in flour, salt, cocoa powder, and baking powder, and whisk until fully mixed. Pour the batter into the prepared pan.

Bake for 10-12 minutes until a toothpick inserted into the center comes out clean or with a few moist crumbs attached. Let it cool completely.

How to prepare the pumpkin mousse

Soak gelatin powder in cold water for 5-10 minutes. In a large bowl, mix Mascarpone with pumpkin puree, powdered sugar, vanilla extract, salt, cinnamon, nutmeg, ginger, and cloves.

Dissolve the soaked gelatin over low heat and pour it over the pumpkin mixture. In another bowl, whip chilled cream until stiff peaks form, then gently fold it into the pumpkin mixture.

Start assembling the cake by placing the cooled chocolate cake on a serving platter and surround it with a ring lined with an acetate sheet. Pour the pumpkin mousse over the cake and smooth the top. Refrigerate for about 30 minutes while you prepare the chocolate mousse.

How to make chocolate mousse

For the chocolate mousse, melt semisweet chocolate with 2/3 cup (160g) whipping cream in a heatproof bowl over simmering water. Dissolve gelatin in cold water, then dissolve it over low heat and mix it into the melted chocolate.

Whip the remaining 1 cup (240g) chilled whipping cream until soft peaks form. Add the melted chocolate mixture and mix until well combined. Pour the chocolate mousse over the pumpkin mousse and smooth the top.

Cover and refrigerate for at least 4-6 hours or overnight.

To prepare the chocolate ganache, melt chocolate and cream in a heatproof bowl over simmering water. Spread it evenly over the cake and refrigerate for another 30 minutes before serving.

Optionally, decorate with physalis, whipped ganache, and cinnamon sticks before serving.

Ingredients

Chocolate Cake

  • 1 large egg
  • 1/3 cup (70g) sugar
  • 1/3 cup (70g) vegetable oil
  • 1 tsp (5g) vanilla extract
  • 1/4 tsp (1g) salt

  • 1/3 cup (40g) all-purpose flour

Pumpkin Mousse

  • 4 oz (120g) mascarpone cheese
  • 1 cup (240g) pumpkin puree
  • 1/2 cup (60g) powdered sugar
  • 1 tsp (5g) vanilla extract
  • 1/4 tsp (1g) salt
  • 1 tsp (3g) cinnamon
  • 1/2 tsp (2g) ginger
  • 1/4 tsp (1g) nutmeg
  • 1/8 tsp cloves
  • 2 ¼ tsp (7g) gelatin powder
  • 3 tbsp (45g) cold water
  • 1 cup (240g) whipping cream (35% fat) , chilled

Chocolate Mousse

  • 7 oz (200g) semi-sweet chocolate
  • 2/3 cup (160g) whipping cream
  • 1 tsp (3g) gelatin powder
  • 1 tbsp (15ml) cold water
  • 1 cup (240g) whipping cream (35% fat) , chilled

Chocolate Ganache

  • 3.5 oz (100g) semisweet chocolate
  • 3.5 oz (100g) whipping cream

For decoration, optional

  • physalis
  • cinnamon sticks
  • whipped ganache

Instructions

First prepare the chocolate cake.

  • Meanwhile dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Dissolve gelatin over low heat, pour over the melted chocolate and stir to combine. 
  • Whip the remaining 1 cup (240g) chilled whipping cream until soft peaks form. Add melted chocolate mixture and mix until well combined.
  • Pour the chocolate mousse over the pumpkin mousse. Smooth the top.
  • Cover and refrigerate for at least 4-6 hours or better overnight.

Prepare the chocolate ganache.

  • Place chocolate and cream in a heatproof bowl and place over a pan with simmering water. Melt over low heat.
  • Spread it evenly over the cake.
  • Refrigerate for another 30 minutes before serving.

How to make Caramel Pecan Pumpkin Roll

First, let’s start by preparing the salted caramel sauce. In a medium saucepan over medium-high heat, combine the sugar and water. Allow it to cook without stirring until the sugar dissolves and develops a caramel color.

Once the sugar has caramelized, remove the pan from the heat and carefully add the cream. Be prepared for some bubbling.

Continue to cook the mixture for about a minute, stirring constantly with a wooden spoon until it becomes smooth. Remove from heat and add the vanilla extract, butter, and salt, stirring until everything is well combined. Transfer the caramel sauce into a bowl and set it aside to cool while we prepare the cake.

Preheat your oven to 300°F (150°C). Spread the pecans evenly on a baking tray and toast them for about 15 minutes. Once cooled, chop them into small pieces and set them aside.

How to preparing the pumpkin cake.

Preheat your oven to 350°F (180°C) and prepare a 12×16-inch (30×40 cm) baking tray by greasing it with butter and lining it with parchment paper.

In a large bowl, beat the eggs and sugar together for about 5-7 minutes until they become light yellow, thick, and foamy. Add the vanilla extract and mix it in.

Next, add the pumpkin puree and lemon juice to the mixture and stir until well combined.

In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Gently fold this flour mixture into the egg and pumpkin mixture until fully incorporated.

Pour the batter into the prepared baking tray and spread it out evenly. Bake in the preheated oven for 13-15 minutes, until the cake is cooked through.

Once baked, remove the cake from the oven and let it cool in the pan for 5 minutes. Dust the top of the cake with powdered sugar, then carefully flip it onto a parchment paper or a kitchen towel dusted with powdered sugar.

Roll the cake up and allow it to cool completely.

How to prepare the caramel cream cheese filling.

In a bowl, mix together the cream cheese (or Mascarpone Cheese) with powdered sugar, caramel sauce, cinnamon, and vanilla extract until smooth.

In another bowl, whip the cream until stiff peaks form, then gently fold it into the caramel mixture.

Unroll the cooled cake and spread the filling evenly over it. Sprinkle the chopped pecans over the filling.

Carefully roll the cake back up and refrigerate it for at least 2 hours before serving.

Before serving, dust the cake with more powdered sugar. If desired, decorate the top by piping whipped cream and adding physalis and cinnamon sticks.

Serve the cake with drizzles of the remaining caramel sauce and enjoy this delightful treat!

Ingredients

Salted Caramel Sauce

  • 1/2 cup (100g) sugar
  • 2 tbsp (30ml) water
  • 1/4 cup (60ml) whipping cream

Pecans for filling

  • 1 cup (100g) pecans , toasted

Caramel Frosting

  • 8 oz (230g) Cream cheese or Mascarpone cheese , room temperature
  • 1/4 cup (60g) salted caramel sauce
  • 1/4 cup (30g) powdered sugar
  • 1/2 tsp (2g) cinnamon
  • 1 tsp (5g) vanilla extract
  • 1 cup (240g) whipping cream , chilled

For dusting

For decorating, optional

Instructions

Prepare the salted caramel sauce.
