How to make this easy potato corn chowder

To start, cook diced bacon in a large soup pot over medium-high heat until it’s browned and crispy. Once the bacon is crispy, transfer it to a bowl and set it aside. Leave the rendered fat in the pot for added flavor.

Next, add diced onion and celery to the pot, cooking until softened, which should take about five minutes. This builds a savory base for your chowder. Stir in minced garlic and cook for another minute until fragrant.

Now it’s time to add your broth—vegetable or chicken—along with diced potatoes, corn kernels, dried thyme, salt and pepper. If you’re using fresh corn, don’t forget to toss in the cobs for that extra burst of flavor! Cover the pot, bring it to a boil, and then reduce the heat to a gentle simmer. Let it cook for about 15 minutes until the potatoes are tender, checking occasionally to stir. If you want a creamier chowder, you can mash some of the potatoes against the side of the pot as they cook!

What truly sets our meatball soup apart is its creamy richness, achieved by adding sour cream mixed with egg yolk just before finishing the soup, making every bite extra satisfying. Served hot with crusty bread, it’s a meal that fills you up and feels like a warm hug.

How to make meatball soup

Begin by heating oil in a large stockpot over medium-high heat. Add the onion and cook for about 5 minutes until it becomes softened. Stir in the carrots and cook for an additional 5 minutes. Then, add the celery root, garlic, and red pepper, and cook for another minute.

Pour in the vegetable stock or water, adding chili pepper if desired, along with salt and pepper. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Allow the vegetables to cook for roughly 20 minutes until they reach a tender consistency.

While the soup is simmering, prepare the meatballs. In a medium bowl, combine the ground meat, semolina flour, egg, uncooked rice, salt, pepper, and chopped fresh parsley. Shape the mixture into 1-inch (2.5 cm) balls using a cookie scoop and wet hands, then place them on a plate.

Carefully transfer the meatballs to the simmering soup along with the potatoes. Allow the soup to return to a boil, then reduce the heat and simmer for an additional 15-20 minutes until the potatoes are tender and the meatballs are fully cooked.

In a separate medium bowl, mix together the sour cream, egg yolk, and minced garlic. Add 2 ladles of hot soup to the mixture, stirring well, then return it to the pot. Let it boil for 1 minute before finishing with fresh herbs such as lovage or parsley, as well as salt and pepper to taste.

Remove the soup from heat and serve it hot alongside crusty bread.

For the meatballs

  • 1 pound (450g) ground meat (chicken, turkey, pork or beef)

These homemade Sweet Potato Gnocchi are a cozy twist on a classic favorite. Made from fresh, vibrant sweet potatoes, they offer a comforting and flavorful dining experience. Perfectly paired with a garlic butter sage sauce and Parmesan they make an unforgettable meal.

We start with fresh sweet potatoes, chosen for their natural sweetness and deep flavor. They’re mashed and mixed with egg and just enough flour to create a dough that’s soft and easy to shape. 

After being cut into small pieces, our gnocchi take a quick dip in simmering water, turning into delicate clouds of goodness. But we don’t stop there. We give them a nice, crispy outside by cooking them in a hot pan with a little olive oil. This gives them a satisfying crunch that perfectly complements their soft insides.

The finishing touch is a blend of flavors. Butter, garlic and sage come together, creating a lovely, fragrant sauce that wraps around each gnocchi. These ingredients work together, making the sweet potato’s natural sweetness even better and filling the dish with a comforting warmth.

A sprinkle of freshly grated Parmesan cheese adds a savory touch that balances out the sweet potatoes. The result is a plate that looks and tastes amazing.

How to make sweet potato gnocchi

First, heat up your oven to 375°F (190°C). Give your potatoes a good wash and poke them a few times with a fork all around. Then, place them on a baking sheet lined with parchment paper.

Let them bake for 45-60 minutes until a knife easily slides through. Once they’re done, allow them to cool a bit. Afterward, peel and mash them up well, using either a potato masher or a grater.

In a big bowl, mix together the mashed potatoes, egg, and flour until they stick together. Then, knead it all until you have a smooth, slightly sticky dough. Dust your hands and work surface with flour, and cut a piece of dough. Roll it into a rope about 3/4-inch (2cm ) thick, and cut it into 1/2-inch (1cm) pieces. Shape each gnocchi with a fork and place them on a parchment paper-lined baking sheet dusted with a little flour.

Give them a 15-20 minute rest before boiling. Bring a large pot of water to a boil, then lower the heat to a gentle simmer. Add the gnocchi in batches. When they float up to the surface, let them sit for another minute, then scoop them out with a slotted spoon and transfer to a large dish.

How to make Garlic Butter Sage Fried Gnocchi

For a mouthwatering garlic butter sage fried version, heat up 2 tablespoons of olive oil in a big frying pan. Toss in your boiled gnocchi (about 1 pound or 500g) and season with salt and pepper. Cook them up for around 5-6 minutes until they turn a beautiful golden brown. Transfer them in a bowl.

In the same pan, add the butter and let it melt over medium heat. Toss in the fresh sage leaves and let them cook for about 2 minutes. Add the garlic and cook for another minute. Pop the fried gnocchi back in the pan and give it a good mix. Sprinkle in some Parmesan cheese, a bit more salt and pepper, and stir it all together.

Ingredients

For Homemade Gnocchi – makes 2 pounds (1kg) gnocchi

  • 2 pounds  (1kg) sweet potatoes
  • 1 egg
  • 2 cups (250g) all-purpose flour , use up to 2 1/2 cups (310g) flour if the dough is too sticky

For Garlic Butter Sage Fried Gnocchi – for 1 pound (500g) gnocchi – for 3-4 servings

  • 1 pound (500g) boiled gnocchi
  • 2 tbsp  tbsp (30g) olive oil
  • 4 tbsp (56g) unsalted butter
  • salt
  • freshly ground black pepper
  • 3 cloves garlic , minced
  • 4 fresh sage leaves , or more if desired
  • 1/2 cup (50g) Parmesan cheese , grated

Instructions

Prepare the sweet potato gnocchi.

  • Preheat the oven to 375°F (190°C).
  • Wash the potatoes and prick them with a fork several times on all sides. Place on a parchment paper baking sheet.
  • Bake for 45-60 minutes, or until tender when pierced with a knife.
  • You can also consider microwaving or boiling the sweet potatoes.
  • Let cool slightly.
  • Peel them and mash them well, using a potato masher or even a grater.
  • In a large bowl mix the mashed potatoes with egg and flour until they bind together. Knead until a smooth, sticky dough is formed.
  • Dust the hands and working surface with flour and cut a piece of dough.
  • Roll into a rope of 3/4-inch (2cm) thickness. Cut the rope into 1/2-inch (1cm) pieces. Shape each gnocchi with a fork.
  • Transfer the gnocchi onto a floured parchment paper-lined baking sheet.
  • Continue with the rest of the dough.
  • Let the rest for 15-20 minutes before boiling them.
  • Bring a large pot of water to boil then reduce the heat to a low simmer. Add the gnocchi into the hot water and cook in batches. Let the gnocchi boil until they rise to the surface of the water. Let them boil on the surface another minute and they are done. Remove the gnocchi with a perforated spoon and transfer them to a large dish.

How to prepare the garlic butter sage fried gnocchi. (1 pound-500g gnocchi)

  • Heat 2 tablespoons of olive oil in a large frying pan.
  • Add 1 pound (500g) boiled gnocchi into the pan. Season with salt and pepper. Cook for about 5-6 minutes until golden brown.
  • Transfer the gnocchi to a bowl.
  • In the same pan add the butter and let it melt over medium heat. Add the fresh sage leaves and let them cook for about 2 minutes.
  • Add the garlic and cook for 1 minute more.
  • Add the fried gnocchi back to the pan and give them a stir.
  • Add the Parmesan cheese, more salt and pepper and stir to combine.
  • Top the dish with Parmesan shavings and fresh sage leaves. Enjoy!

Notes

If you want to freeze gnocchi you must freeze them uncooked. Put the gnocchi in one layer on a baking tray and place in the freezer. Freeze for about 2-3 hrs. Remove and put the gnocchi in freezer bags. Store in the freezer until ready to cook. Frozen gnocchi must be cooked directly in hot boiling water.

This Potato Crust Quiche is a healthy, delicious, and comforting dish that combines the creamy texture of quiche with the savory flavor of potato crust. How to make potato crust quiche

First, you have to prepare the potato crust. Grate the potatoes and rinse well under cold water. Use a kitchen towel to squeeze as much liquid as possible. Transfer the potatoes to a large bowl and mix with salt, pepper, garlic powder, and olive oil. 

Spread the potatoes over the base and sides of a greased pie pan and press slightly. Bake at 400F (200C) for 30 minutes until slightly golden. While the crust is baking, cook the bacon in a medium frying pan until crisp and drain on paper towels. Grate the cheese and set aside until ready to use. Reduce the oven temperature to 350F (180C).

Now you can prepare the filling by whisking together the eggs with cream, salt, pepper, nutmeg and chopped green onions. 

At this point, you can easily customize this potato crust quiche to suit different dietary needs and preferences. Besides being gluten-free, you can adapt it to make it vegetarian or vegan too, by using dairy-free cheese and leaving out the bacon. This Meat and Potato Skillet recipe is a hearty and flavorful one-pan dish that will please the whole family. It is easy to make, budget-friendly and can be ready in 30 minutes which makes it perfect for busy weeknight dinners or weekend lunch. 

How to make Meat and Potato Skillet

The dish begins by cooking the potatoes into the skillet. I like to use a combination of regular potatoes and sweet potatoes. Feel free to use only one type of potatoes if that is what you have on hand. Cook the potato cubes until tender and transfer to a medium bowl. It is best to use a non-stick skillet if possible.

 Now it’s time for browning the ground pork and beef in the skillet, adding in diced onions and garlic for added flavor. To add complexity to the dish, add a mixture of seasonings such as smoked paprika, cumin, chili powder and thyme. At this point I like to add tomato paste which brings an amazing flavor to the whole dish. Stir it in and add the cooked potatoes back into the skillet.  Top with grated cheese and broil for 3 -4 minutes or until cheese is melted.  You can garnish the dish with fresh herbs and crispy bacon.

The sweetness of the sweet potatoes pairs perfectly with the savory beef and pork mixture, and the potatoes add a nice texture to the dish.

Serve this dish with fresh salad and crusty bread for a filling and satisfying meal. It’s a great way to incorporate some vegetables in your diet. 

You can always adjust this recipe by adding your own favorite vegetables such as bell peppers, mushrooms, or even zucchini, and also you can switch up the meat and make it with turkey or chicken.

Prepare the potatoes.

  • In a 9-10 inch (23-25) frying pan, heat the oil over medium heat. Place the potato cubes into the skillet, and cook for 2-3 minutes, stirring constantly. Add some salt, pepper and water.
  • Cover and simmer until the water is evaporated. Remove the lid and continue cooking while stirring constantly, until the potatoes are tender. Transfer the potatoes to a medium bowl.

Prepare the meat filling.

  • In the same skillet, add about 1 tbsp of oil, add the onion and cook for 5 minutes until softened. Add garlic and cook for 1 minute more.
  • Add the ground meat, and cook for about 10-12 minutes or until the meat is cooked through. Crumble the meat while cooking.
  • Add paprika, cumin, chili powder, thyme, salt and pepper. Stir to combine. Add tomato paste and stir again to combine.
  • Transfer the potatoes back into the skillet, and stir to combine with the cooked meat.
  • Spread the grated cheese on top. Transfer to oven and broil for 3-4 minutes until cheese is melted.
  • Garnish with fresh herbs and enjoy!

I like to use starchy potatoes for whenever I make mashed potatoes, like Russets or Yukon Golds, which bring the best results. 

Place the peeled and quartered potatoes in a pot and cover with cold water. Add salt and bring to a boil. At this point you can add some garlic cloves for extra flavor. That is totally optional.  Reduce the heat to low and continue cooking until the potatoes are perfectly tender. 

A very important step when making this recipe is to drain very well the potatoes, return them to the hot pot on low heat, and shake them around for a couple of minutes to remove the excess moisture. 

Always heat the milk with cream and butter before adding to the mashed potatoes for the best results. Add the milk mixture gradually, until it reaches to the desired consistency. Season well with more salt if needed and with freshly ground black pepper.

Ingredients

Makes about 4 servings

  • 2 pounds (1kg)  baking potatoes , peeled and quartered
  • 1/2 cup (120ml) milk
  • 1/2 cup cream
  • 1/4 cup (56g) butter
  • salt to taste

Instructions

  • Bring potatoes to a boil in a large pot with water that has been generously salted. Reduce heat to medium and continue cooking until the potatoes are perfectly tender.

This Sheet Pan BBQ Chicken and Roasted Veggies is a great idea for an easy one-pan quick dinner. This flavorful chicken is coated in honey, chili, and BBQ sauce and baked until tender alongside some perfectly roasted mixed potatoes and broccoli.

This sweet chili glaze is amazing. I love to use it over chicken as in this BBQ Chicken Wings recipe.

For this sheet pan, I use both regular and sweet potatoes.  They are bursting with flavor due to the  Parmesan cheese, breadcrumbs, garlic, and herbs coating. The breadcrumbs make the potatoes crispier and I usually like to add a bit of breadcrumb to my potato recipes.

I have used broccoli this time for my BBQ Chicken Sheet Pan but feel free to use any other veggies that suit your tastes better. Brussels Sprouts, cauliflower, green beans, or asparagus are great choices for sheet pans.

This meal is quick and effortless to prepare, making it a great weeknight dinner option. Serve with a side of rice or crusty bread for a complete and satisfying meal.

Ingredients

For the chicken

BBQ Honey Sauce

  • 1/4 cup (60g) barbecue sauce
  • 2 tbsp (45g) honey
  • 1 tbsp (15g) hot chili sauce (sriracha)

For the Potatoes

  • 1 pound (450g) sweet potatoes
  • 1 pound (450g) potatoes
  • 2 tbsp olive oil
  • 1/2 tsp (1g) garlic powder
  • 1 ½ tbsp (12g) breadcrumbs
  • 1/4 cup (25g) Parmesan Cheese
  • salt
  • freshly ground black pepper
  • mixed dried herbs , oregano, basil, thyme

For the Broccoli

Instructions

  • Preheat the oven to 400F (200C). Line a large baking sheet with parchment paper and set aside.
  • Place the barbecue sauce with honey and hot chili sauce into a small saucepan. Simmer over low heat for 1-2 minutes. Remove from heat and set aside.
  • Cut potatoes into about 1 inch (2.5 cm) chunks. Add potatoes and sweet potatoes to a large bowl. Add olive oil, salt, pepper, herbs, garlic powder, breadcrumbs and Parmesan cheese over the potatoes. Toss to coat.
  • Arrange the tossed potatoes on the baking sheet on one side.
  • Cut broccoli into florets and place into a large bowl. Drizzle with a bit of olive oil, season with salt and pepper and toss to coat.
  • Place the chicken and broccoli on the baking sheet. Season chicken breast with salt, pepper and smoked paprika if used.
  • Brush the chicken with honey BBQ sauce.
  • Bake for 25-30 minutes until veggies are tender and chicken is cooked through.
  • If broccoli cooks too fast, cover it with aluminum foil after the first 15 minutes.
  • Broil for a few minutes before removing the baking sheet from the oven.
  • Once it has finished baking remove the pan from the oven and add a bit more honey BBQ sauce to the chicken if desired.

Whole Roasted Chicken

Ingredients

Makes about 6 servings

  • 4 pounds (1.9kg) whole chicken
  • 2 tsp (10g) salt
  • 1/2 tsp (2g) sweet or smoked paprika
  • 1/2 tsp (1g) freshly ground black pepper
  • 1 ½ tsp (5g) garlic powder
  • 2 tsp mixed dried herbs (oregano , thyme
  • 2 ½ tbsp (35g) olive oil

For stuffing

For Roasted Vegetables

  • 2 pounds (900g) red potatoes , cut into wedges
  • 1 pound (450g) sweet potato , cut into wedges
  • 1 fennel bulb , sliced 1/2 inch (1cm) thick
  • 1/2 tsp (3g) salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp (2g) caraway powder
  • 1 ½ tbsp (20g) olive oil

For roasting

  • 1 cup (240ml) hot water

Instructions

  • Pat dry the chicken using paper towels and let it get to room temperature for at least 30 minutes.
  • Preheat the oven to 350F (180C), with fan on.
  • In a bowl combine all spices, salt, pepper, paprika, garlic powder and dried herbs with the olive oil.
  • Season the cavity with salt and pepper.
  • Coat the chicken with olive oil mixture, on all sides. If not already tied up, tie the legs with a cooking string.  Set aside at room temperature until you prepare the vegetables for roasting.
  • Cut red potatoes and sweet potatoes into wedges, the fennel bulb into thick slices and place in a baking sheet. Sprinkle with salt, pepper, caraway powder, drizzle with olive oil and toss to coat.
  • Place the oven rack on top of the vegetables and place the chicken on the center of the rack with breast side up.
  • Stuff the chicken with 1 lemon cut into quarters and with two fresh rosemary sprigs and fresh thyme.
  • Pour 1 cup (240ml) hot water into the baking dish and place in the preheated oven.
  • Roast for about 20 minutes per pound (45 minutes per kg), in my case for 80 minutes. Baste the chicken with the dripping sauce, every 30 minutes.
  • If water evaporated too early, add another up ½ cup hot water into the pan.
  • Check the internal temperature until it reaches 165°F (75°C).
  • Place the chicken onto a serving platter, arrange the vegetables around it and let it sit for 15-20 minutes before carving.
  • Keep the remaining sauce to serve alongside.
  • Decorate the platter with fresh rosemary, fresh thyme and lemon wedges. Enjoy!
