  • 2 tbsp (30g) raw sugar
  • 1 tbsp (8g) cocoa powder

Instructions

  • In a cappuccino mug (7 fl.oz. (200ml) capacity) add flour, raw sugar, cocoa powder, baking powder and salt. Mix to combine.
  • Add milk, vegetable oil, peanut butter and vanilla extract and mix until combined. Don’t overmix.
  • Add 1 tsp of peanut butter into the center.
  • Sprinkle some mini chocolate chips/rocks on top.

I am pretty excited about how this cake turned out and the amazing flavor combination it’s bursting with. Ingredients

Chocolate Peanut Sponge Cake

  • 2 eggs separated
  • 1/4 tsp (1g) salt
  • 1/3 cup (70g) sugar
  • 2/3 cup (70g) ground toasted unsalted peanuts
  • 1/4 cup (30g) unsweetened cocoa powder

Caramel Peanut Layer

  • 1 cup (200g) sugar
  • 3 tbsp (45ml) water
  • 3.5 oz (100g) whipping cream
  • 4 tbsp (60g) unsalted butter
  • 1 tsp (5g) salt
  • 1 tsp (5g) vanilla extract
  • 1/2 tbsp (5g) gelatin powder
  • 2 tbsp (30ml) water for dissolving the gelatin
  • 1 cup (100g) unsalted peanuts toasted

Peanut Butter Cream Cheese Mousse

  • 1 ¼ cup (300g) cream cheese
  • 1/2 cup (120g) creamy peanut butter room temperature
  • 1/2 cup (60g) powdered sugar
  • 1 tsp (5g) vanilla extract
  • 2 ½ tsp (7g) gelatin powder
  • 3 tbsp (45ml) water
  • 1 ¼ cup (300g) whipping cream (35% fat) chilled

Chocolate Glaze

  • 6 oz (180g) semisweet chocolate
  • 3/4 cup (180g) whipping cream
  • 2 ½ tbsp (37ml) milk
  • 2 ½ tbsp (37g) unsalted butter at room temperature

For decorating

  • 3 tbsp (45g) creamy peanut butter
  • chopped peanuts
  • peanut halves

Instructions

Prepare chocolate peanut sponge cake.

  • Preheat oven to 325F (160C). Grease with butter a 8 inch (20cm) pan and line with parchment paper.
  • Separate whites from yolks. Add salt over the whites and start whipping until foamy.
  • Gradually add sugar and continue whipping until soft peaks form.
  • Gently fold in beaten egg yolks, ground peanuts and cocoa powder.
  • Pour the batter into the prepared pan and bake for 17-20 minutes until a toothpick inserted into the center comes out clean. Don’t overbake.
  • Cool completely.

Prepare the salted caramel peanut layer.

  • Place the sugar and water in a medium heavy bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a dark caramel color.
  • Remove the pan from the heat and add the cream. It will bubble a little bit.
  • Cook for about 1 minute stirring constantly with a wooden spoon or spatula until smooth.
  • Remove from heat and add vanilla extract, salt and butter. Stir well until smooth. Transfer into a bowl and set aside.
  • Dissolve gelatin in 2 tablespoons of water and let it swell for 5-10 minutes.
  • Add the bloomed gelatin to the warm caramel and stir until completely dissolved. Let cool.
  • Stir the toasted peanuts into the caramel.
  • Line a 7 inch (18 cm) round pan or ring with plastic wrap.
  • Pour the caramel mixture into the pan and freeze for 2-4 hours or even overnight.

Prepare the peanut butter cream cheese mousse.

  • Dissolve gelatin in cold water and let it swell for about 5 to 10 minutes.
  • In a large bowl mix cream cheese until smooth. Add powdered sugar, vanilla and peanut butter and mix to combine. Place the gelatin over low heat just until the gelatin dissolves and pour it over the cream cheese mixture and mix to combine.
  • In another bowl mix cream until soft peaks form. Gently fold the cream into the cream cheese and peanut butter mixture.

Assemble the cake.

  • Remove the caramel from the freezer. Invert the sponge cake on top of the caramel. Flip and make sure to leave a border of ½ inch (1cm) from the caramel to the edge of the cake.
  • Place a cake ring around the cake and line with an acetate sheet.
  • Pipe the mousse on sides and top. Smooth the top using an offset spatula.
  • Cover and refrigerate for 4-6 hour or overnight.

Prepare the chocolate glaze.

  • Place the chocolate into a heatproof bowl and melt over bain-marie.
  • In a small saucepan add cream and milk and bring to a simmer.
  • Gradually incorporate into melted chocolate.
  • Add butter and stir until melted.
  • Take the cake out of the refrigerator, remove the ring and acetate sheet and place the cake over a rack or simply on a bowl or pan that is placed on a plastic wrap lined baking sheet to collect the excess.
  • Pour the glaze on top and edges of the cake. Use an offset spatula to remove the drips and decorate the bottom of the cake with chopped peanuts. 
  • Transfer the cake to a serving platter and refrigerate for 20 minutes to set the glaze.
  • Melt peanut butter over very low heat and transfer to a piping bag fitted with a no.2 plain nozzle.
  • Pipe a few lines on top of the cake and decorate with peanut halves.
  • Slice and enjoy!

  • Pour the cream mixture over the chocolate and let sit for 1 minute. Stir until chocolate is melted and smooth.
  • Pour the mixture into 4 or 5  – 4 oz (120ml) capacity bowls or ramekins.
  • Refrigerate to set for at least 2 hours or better overnight.
  • Before serving, prepare peanut butter whipped cream. Whip chilled cream until it starts to thicken. Add peanut butter and powdered sugar and continue mixing until stiff.
  • Add a spoonful of whipped cream on top of chocolate and decorate with crushed chocolate coated peanuts. Enjoy!

Cookie cups are an incredible idea for making single-serving desserts for any occasion. They look and taste absolutely amazing not to mention they are quite easy to prepare. These Chocolate Peanut Butter Cookie Cups are simply irresistible, consisting of a chocolate chewy soft cookie crust filled with a smooth and creamy peanut butter filling that is simply heavenly.

You can always use various fillings, your favorite frostings,  fruits, ganache, and ice cream, the variations are endless and create amazing desserts each time.

How to make chocolate peanut butter cookie cups

Begin by preheating your oven to 350°F (180°C) and greasing a standard muffin tin with butter.

In a bowl, whisk together the flour, cocoa powder, instant coffee, salt, and baking soda. Set this mixture aside until ready to use.

In another bowl, mix the butter with both sugars until creamy. Add the egg and vanilla extract, and mix until well incorporated. Gradually incorporate the flour mixture and chocolate chips into the butter mixture.

Using an ice cream scoop, divide the cookie dough evenly between the 12 muffin cups. Bake for 12-13 minutes. While the cookie cups are still warm, use a small jar to press down the center of each cookie to create a well.

Allow the cookie cups to cool in the muffin tins for about 10 minutes, then transfer them to a cooling rack to cool completely.

Next, prepare the filling. In a large bowl, mix the cream cheese until smooth. Add the powdered sugar and peanut butter, and mix until well combined.

In a separate bowl, whip the cream until stiff peaks form. Gradually incorporate the whipped cream into the cream cheese mixture.

Transfer the peanut butter filling into a piping bag fitted with a 1M star tip, and pipe the filling into the chocolate cookie cups.

Refrigerate the filled cookie cups for at least 1 hour before serving. Optionally, decorate with grated chocolate before serving, if desired.

  • 1/3 cup (40g) powdered sugar

Instructions

  • Preheat oven to 350F (180C). Grease with butter a standard muffin tin.

These Crispy Peanut Butter Marshmallow Brownies are simply wonderful decadent treats perfect for any occasion. Fudgy brownies are topped with a thick layer of gooey marshmallows and a crispy chocolate peanut butter rice layer. They have a great texture and flavor that is hard to resist. If you are a marshmallow lover you really need to try these out and make sure to make a double batch as they don’t last long.

The recipe for these Peanut Butter Marshmallow Brownies is not difficult, takes little time to prepare and will be a guaranteed success.

How to make Crispy Peanut Butter Marshmallow Brownies

Begin by preheating your oven to 350°F (180°C). Butter the sides and bottom of an 8×8 inch (20 X 20 cm) pan, then line the bottom and sides with parchment paper for easy removal of the brownies later.

In a medium bowl, melt the chocolate and butter together over a bain-marie (double boiler), stirring occasionally, until smooth and well combined. Remove the bowl from the heat, but keep it over the water to stay warm. Stir in the instant coffee, followed by the sugar, until fully incorporated. Then, remove the bowl from the pan and allow it to cool slightly.

Once the mixture has cooled slightly, incorporate the egg and whisk until well combined. Stir in the vanilla extract, then add the flour, salt, and cocoa powder, stirring until the batter is smooth and uniform.

Pour the batter into the prepared pan and spread it evenly. Bake the brownies in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs sticking to it.

Once the brownies are done, top them with the marshmallows and return them to the oven for another 3 minutes, or until the marshmallows are puffed and slightly golden. If needed, gently press down on the marshmallows to ensure they spread evenly over the brownies. Allow the brownies to cool completely in the pan.

How to prepare the chocolate rice topping.

While the brownies are cooling, prepare the chocolate rice topping. In a medium bowl, melt the chocolate and peanut butter together over a bain-marie, stirring occasionally, until smooth and well combined. Stir in the rice cereals until evenly coated with the chocolate mixture.

Once the brownies have cooled, spread the chocolate rice topping over the top of the brownies in an even layer. Refrigerate the brownies for at least 2 hours before serving to allow them to set.

Once chilled, cut the brownies into squares and serve. Enjoy these delicious and indulgent chocolate marshmallow brownies!

Instructions

Prepare the brownies.

As school and kindergarten have started I am trying to make as many healthy energy bars that the kids can have in the morning or on the go. These Healthy No-Bake Chocolate Peanut Butter Oat Bars are one of the best I’ve made, packed with flavor and healthy ingredients, no cholesterol, and no refined sugar, but still chocolaty, rich, a bit fudgy, and with an amazing texture.

No doubt kids will love them and ask for more without you feeling guilty for giving them unhealthy snacks.

The recipe is easy and takes no more than 10 minutes to put these together and it’s a no-bake recipe which is so great. You need a food processor for this if you want to have a pretty smooth base, without feeling the oats.

I’m thrilled with these Healthy No-Bake Chocolate Peanut Butter Oat Bars. They’ve become a staple for me, ensuring I always have a nutritious energy boost on hand for school snacks.

How to make no-bake chocolate peanut butter oat bars

Start by lightly greasing an 8-inch (20cm) square pan and line it with parchment paper, leaving some overhang on the edges for easy removal once it’s set.

How to make oat peanut butter base

In the bowl of a food processor, combine the oats, almonds, raisins, and salt. Process until fully combined.

In a small saucepan over low heat, melt the peanut butter, honey (or maple syrup), and coconut oil. Remove from heat and stir in the vanilla extract.

Pour the melted mixture over the oats mixture into the food processor. Process until everything is well combined and the mixture holds together.

Transfer the mixture to the prepared baking pan and press it down firmly with the back of a wet spoon to create a smooth surface.

How to make chocolate glaze.

Mix the cocoa powder, honey (or maple syrup), coconut oil, and vanilla extract in a small bowl until smooth.

Spread the chocolate glaze evenly over the mixture in the pan.

Refrigerate the pan for at least 2 hours to allow the bars to set. Keep any leftovers refrigerated.

Prepare the oat peanut butter base.

  • Place the oats, almonds, raisins, and salt into the bowl of a food processor.  Process until completely combined.
  • Add peanut butter, honey (maple syrup) and coconut oil in a small saucepan and melt over low heat. Remove from heat and add vanilla extract.
  • Add the mixture over the oats mixture and process until completely combined and the mixture holds together.

  • 2 tbsp (30g) unsalted butter

Garnish

Instructions

  • Place the oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and process until evenly moistened.
  • Press the mixture into the bottom of a greased 9 inch (23 cm) pan using the back of a spoon. 
  • Prepare the peanut butter ice cream. In a large bowl whip cream until stiff peaks form. Mix in the  sweetened condensed milk and peanut butter until well combined.
  • Pour the peanut butter mixture over the oreo crust and spread evenly using an offset spatula. Freeze until you prepare the chocolate ice cream.
  • Prepare the chocolate ice cream. In a large bowl whip cream until stiff peaks form. Mix in the  sweetened condensed milk and cocoa powder until well combined.
  • Remove the pan from freezer and pour the chocolate mixture over the peanut butter mixture and spread evenly using an offset spatula.
  • Cover and freeze for about 6 hours or overnight until firm.
  • Before serving prepare the hot chocolate fudge sauce. In a saucepan over medium-high heat, bring the cream, sugar, cocoa powder, salt and half of the chocolate to a boil. Reduce the heat to medium-low, and cook for 5 minutes, stirring occasionally.
  • Remove from the heat and stir in the the butter, the remaining chocolate, and the vanilla extract, stirring until smooth.
  • Remove ice cream cake from freezer and top with the hot chocolate fudge sauce.
  • Decorate with chopped roasted peanuts, cut and serve. Freeze the leftovers.20 min.

I’ve wanted to make thumbprint cookies for quite some time and I am finally sharing with you my favorite ones, Peanut Butter Chocolate Thumbprint Cookies. The peanut butter and chocolate flavor combination is simply divine. The peanut butter is not overwhelming but it does bring its unique taste to these delicious cookies. They can be quite addictive so make sure to share them with your loved ones if you don’t want to end up eating them all by yourself. 🙂

The recipe is very easy to prepare and it’s perfect for holidays. Feel free to swap out creamy peanut butter for crunchy, or semisweet chocolate for milk chocolate—use whatever suits your taste preferences best. With these Peanut Butter Chocolate Thumbprint Cookies, it’s almost impossible not to fall in love at first bite. Plus, the convenience of being able to make them ahead of time and freeze them until needed makes them even more irresistible.

How to make peanut butter chocolate thumbprint cookies

Begin by whisking together the flour, baking soda, and salt in a bowl. Set this mixture aside for later use.

In another bowl, combine the peanut butter, butter, granulated sugar, and dark brown sugar. Use an electric mixer or a wooden spoon to blend the ingredients until they form a creamy mixture.

Incorporate the vanilla extract into the creamy mixture, followed by adding the eggs one at a time. Gradually add the flour mixture to this wet mixture, stirring until just combined. If the batter is too soft to roll into balls, refrigerate it for about 30-60 minutes.

Preheat your oven to 350°F (180°C) and line two baking sheets with parchment paper.

How to shape thumbprint cookies

Using an ice cream scoop, take equal portions of dough and form them into balls. Roll each ball in sugar and place them on the prepared baking sheets.

Using your thumb, make an indentation in the center of each cookie.

Bake the cookies for 10-12 minutes or until they turn slightly golden. Once baked, transfer the cookies to cooling racks and allow them to cool completely. If necessary, press again on the center of each cookie while they are still warm.

Prepare the chocolate ganache filling

While the cookies cool, heat the cream in a small saucepan until it begins to boil at the edges. Remove it from the heat and pour it over the chopped chocolate. Let it sit for one minute, then stir until smooth. Allow it to cool for 5 minutes before using it to fill the cookies.

Fill each cookie with chocolate ganache and allow it to set before serving. These cookies can also be frozen for up to 2 weeks.

Ingredients

  • 1 ½ cups (190g) all purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1/2 stick (60g) unsalted butter , room temperature
  • 1 cup (240g) smooth peanut butter
  • 1/2 cup (100g) packed dark-brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 eggs
  • 1 tsp (5g) vanilla extract

For rolling the cookies

  • 1/2 cup (100g) granulated sugar

Chocolate Ganache

  • 4 oz (120g) semisweet chocolate
  • 1/2 cup (120g) whipping cream

Instructions

  • In a bowl whisk together the flour, baking soda and salt. Set aside.
  • In another bowl add the peanut butter, butter, granulated sugar and dark brown sugar. Using an electric mixer or a wooden spoon , mix well until creamy.
  • Incorporate vanilla extract and eggs one at a time. Gradually add flour mixture, and mix until just combined.If the batter is too soft to roll into balls, refrigerate for about 30-60 minutes
  • Preheat oven to 350 F (180C). Line 2 baking sheets with parchment paper.

As summer comes I started to enjoy no bake desserts more and more. These no-bake chocolate peanut butter bars are so easy to prepare and are totally addictive. I knew I am going to like their taste, but didn’t expect to love them so much. They also have this beautiful marbled effect on top, that hardly someone could say it takes no more than 20 minutes to prepare.

I’ve seen more similar recipes for chocolate peanut butter bars and was surprised to see that all have extra sugar, some even to 1 cup.

I added no extra sugar on these and they were sweet enough and hold their shape really well. The biscuits or graham crackers are already sweet and there is no need for extra sugar from my point of view.

You can never go wrong when pairing chocolate with peanut butter. Even if you don’t like peanut butter you are going to love these No-Bake Chocolate Peanut Bars. The flavors combine so well, a bit of sweet, salty, chocolaty, nutty flavor, mmmm…totally amazing.

You can hardly stop to one bar, therefore I suggest to freeze some bars from the beginning if you want to have for later, either wise you risk to eat them all in one day 🙂 Enjoy my friends.

Ingredients

Base

  • 7 oz (200g) digestive biscuits (graham crackers)
  • 1/3 cup (70g) unsalted butter , melted
  • 1/2 cup (120g) crunchy or creamy peanut butter

Chocolate Layer

  • 7 oz (200g) bittersweet chocolate (55%-70% cocoa)
  • 1/4 cup (60g) creamy peanut butter , divided

Instructions

  • Place the biscuits (or graham crackers if used) into the bowl of a food processor and blend until crumbs form. Add peanut butter and melted butter and process until completely combined and the mixture holds together.
  • Slightly grease a 8×8 inch (20x20cm) square pan and line with parchment paper, in such a way that some edges are longer to make it easy to lift it up once it's set.
  • Spread the peanut butter mixture into the prepared baking pan and press with the back of the spoon to create a smooth surface.
  • Melt chocolate and 2 tbsp (30g) of creamy peanut butter over bain marie, over low heat. Stir until smooth. Meanwhile place the other 2 tbsp (30g) of peanut butter into a small sauce pan over low heat and stir until melted and smooth. Spread the chocolate over peanut butter layer. Add teaspoons of melted peanut butter on top and with a knife create swirls on the surface.
  • Refrigerate for 2 hours to set. Let it sit 10 minutes at room temperature before cutting. Bars can be frozen well. Enjoy!
