This Toasted Orzo with Chicken is a mouthwatering dish you can easily prepare for lunch or dinner. It brings together the nutty goodness of toasted orzo pasta with perfectly seasoned, tender chicken pieces, making a dish that’s both comforting and full of flavor.

First, we toast the orzo to perfection, giving it a delightful crunch that goes well with the tender chicken. Then, wee cook the chicken until it’s juicy and tasty. The orzo is then simmered together with a blend of aromatic herbs and vegetables, adding a burst of savory goodness.

Whether it’s a cozy dinner or a special gathering, our Toasted Orzo with Chicken is a simple yet elevated meal that everybody will love.

What is orzo

Orzo is a type of pasta that is shaped like small rice grains. Despite its rice-like appearance, orzo is made from wheat semolina or white flour, similar to traditional pasta. It is commonly used in Mediterranean and Middle Eastern cuisines and can be used in a variety of dishes, from soups and salads to main courses.

How to cook orzo

Cooking orzo is simple and similar to cooking other types of pasta. Boil a pot of salted water, toss in the orzo, and stir to avoid sticking. Let it cook for around 8-10 minutes until it’s tender. Taste to check if it’s done, then drain the orzo in a colander. If you want it to cool quickly or plan to use it in a salad, give it a rinse under cold water. Your orzo is ready to shine in various dishes, hot or cold, your choice.

If you want to use toasted orzo in your recipes, first heat a bit of olive oil in a pan on medium-high heat. Add the orzo. Toast it for about 5-7 minutes, stirring constantly, until it turns golden brown. This step enhances the nutty flavor of the orzo. From here add the water or vegetable stock and continue cooking until tender.

How to make this Toasted Orzo with Chicken

Begin by cutting the chicken into long strips. Season both sides with salt, freshly ground black pepper, garlic powder, and oregano. Set aside.

Next, toast the orzo by heating olive oil in a large pan over medium-high heat. Add the orzo pasta, stirring constantly, and toast for about 5-7 minutes until it turns golden brown. Transfer the toasted orzo to a bowl and set aside.

In the same skillet, add 1 tablespoon of olive oil. Place the seasoned chicken in the pan and cook for 4-6 minutes on each side until it achieves a golden brown color. Ensure the chicken is cooked through, then transfer it to a plate.

Add chopped onion to the pan and cook for 5 minutes until it softens. Add garlic and cook for an additional 1 minute until fragrant. Toss in red pepper and cook for an extra minute.

Stir in tomato puree, dry oregano, basil and chili flakes if used, cooking for 2 more minutes while stirring constantly. Add the toasted orzo and pour in vegetable or chicken stock. Season with salt and pepper, and bring the mixture to a boil.

Reduce the heat to low and cook uncovered for approximately 15 minutes, allowing the orzo to become tender and the liquid to be almost absorbed. Arrange the cooked chicken on top of the orzo and cook for an additional 2-3 minutes to warm through.

Garnish with fresh parsley and lemon slices, then savor this delightful dish alongside a fresh salad.

Hope you will try this easy and flavorful dish. If you do, don’t forget to tag me on Instagram. I would love to see how it turns out for you. Enjoy!

This Tortellini Soup is a warm and comforting soup that combines the rich flavors of Italian sausage, tender tortellini, vibrant spinach, and succulent tomatoes. This hearty soup is a celebration of Italian cuisine, blending robust ingredients to create a symphony of taste and texture.

The star of this dish is the perfectly seasoned Italian sausage. As it cooks, it fills the broth with a rich taste. Tomatoes join the party, bringing sweetness that balances out the savory sausage. Whether chopped or pureed, they create a tasty base that complements the heartiness of the sausage.

The addition of tender tortellini takes this soup to the next level, offering delightful pockets of pasta filled with savory goodness. Each bite unveils a delightful combination of textures, as the pasta absorbs the savory broth while maintaining its distinct chewiness. It’s comfort in a spoonful.

The fresh spinach adds a pop of color and earthy goodness. It’s not just about flavor; it’s about making the soup wholesome and hearty.

Top it with a sprinkle of Parmesan and cheese toast, and there you have it – Tortellini Soup, a simple yet amazing dish, perfect for a cozy night in or sharing with friends

How to make Tortellini Soup

The recipe for this soup is easy. Simply gather all the ingredients and in about 30 minutes you can have an amazing lunch or dinner.

Start by heating olive oil in a big pot on medium heat. Toss in chopped onions and cook until they’re soft, about 5 minutes. Add Italian sausage and cook until it’s no longer pink, around 4-5 minutes. While it cooks, break the meat into small pieces for that hearty feel.

Next, add carrots, celery, and garlic. Let them cook for an extra 5 minutes, stirring every now and then. Sprinkle in thyme, basil, and oregano to amp up the flavors.

Pour in vegetable stock, crushed tomatoes, salt, and pepper. Give it a good mix, turn up the heat until it boils, then reduce to a gentle simmer. Cover and let it cook for 15-20 minutes until the veggies are tender.

Toss in the cheese-filled tortellini and a bit of cream. Let them cook for another 7-10 minutes until the tortellini are just right.

Before serving, throw in some fresh spinach, give it a final stir, and turn off the heat.

Serve it up hot, topped with shavings of Parmesan, a bit of fresh basil, and those tasty cheese garlic toasts.

For the toasts, just slice a baguette, put the pieces on a baking sheet, drizzle or spray with olive oil, cover with grated cheese, and sprinkle with garlic powder and dried oregano. Bake at 400°F (200°C) for 5-7 minutes until the cheese melts.

Hope you will try and enjoy the warm soup. Everybody will be delighted for sure. If you do, share the photos with me on Instagram, would love to see how it turns out for you.

This delicious dish combines a creamy Alfredo sauce made from butter, cream, and Parmesan cheese with perfectly cooked fettuccine pasta. The chicken adds a tasty meaty flavor that goes really well with the creamy sauce.

What’s great about this version is the fettuccine pasta, which soaks up the sauce really well. The fettuccine’s texture offers a slight chewiness, providing a delightful contrast to the smoothness of the sauce and chicken. So, every bite you take is full of flavor!

How to make Chicken Alfredo Pasta

Start by preparing the pasta. Cook it in salted water following the package instructions until it’s al-dente. Once ready, drain the pasta, but remember to save a cup of pasta water for later use.

Next, it’s time to prepare the chicken. Take the chicken breast and pound it to an even thickness of about ½-inch (1cm). Season both sides of the chicken with garlic powder, salt, and pepper. Heat a little oil in a skillet over medium-high heat, and add the seasoned chicken. Cook it for around 4-6 minutes on each side until it turns a golden brown and check if it’s thoroughly cooked. Let it rest for about 5 minutes  while you prepare the sauce.

Now, prepare the Alfredo sauce. In the same skillet, melt two tablespoons of butter over medium heat and add the garlic. After a few seconds, while scraping the skillet’s bottom, pour in the cream and add dried basil and oregano. Allow the mixture to simmer for approximately 2 minutes. Remove the skillet from the heat and add grated Parmesan cheese, salt, and pepper. Stir until the cheese is completely melted.

Add the cooked fettuccine pasta directly into the sauce and toss it all together to coat the noodles evenly. If needed, add the reserved pasta water gradually until you achieve your desired consistency for the sauce.

To finish off, cut the cooked chicken into slices and arrange them beautifully on top of the pasta. Sprinkle some more grated Parmesan and add fresh parsley for an extra burst of flavor and color.

Now, the moment you’ve been waiting for – enjoy your Chicken Alfredo Pasta immediately! Savor the creamy goodness and the delightful combination of flavors.

This Chicken Caesar Pasta Salad is a delectable fusion of classic Caesar salad and savory chicken pasta, creating a mouthwatering dish that tantalizes both pasta and salad lovers. It combines the rich flavors of chicken, al dente pasta, crisp lettuce, golden bread croutons and a creamy Caesar dressing, resulting in a symphony of tastes and textures that is both satisfying and refreshing.

The fusilli pasta provides a delightful chewiness and serves as the hearty foundation of the dish. The pasta acts as the perfect canvas to absorb the flavors of the other ingredients, creating a harmonious blend.

The bread croutons are toasted to perfection, resulting in a satisfying crunch that complements the other ingredients.

The crisp romaine lettuce add a nice crunch to the dish. The salad is then generously dressed with a creamy Caesar dressing, which complements the ingredients with its rich and tangy flavor.

As you take a bite, the combination of the creamy dressing, tender chicken, al dente pasta, and crisp vegetables, along with the satisfying crunch of the croutons, creates a truly delightful dining experience.

How to make Chicken Caesar Pasta Salad

Start by preparing the croutons, then prepare the chicken, boil the pasta, cut the lettuce and then prepare the dressing.

How to make the bread croutons

Dirst, mix oil with garlic in a bowl and set it aside for a few minutes to infuse.

Next, preheat the oven to 400°F (200°C). Cut the bread into bite-size cubes, approximately ¾-inch (2cm) pieces.

After that, sieve the infused oil into a large bowl, add salt and pepper to taste, and incorporate grated Parmesan cheese. Mix well to combine.

Then, place the cubed bread into the bowl and toss it to coat evenly.

Arrange the bread cubes on a baking sheet in a single layer and place them in the oven.

Bake for approximately 5 minutes, then flip and toss them with a spatula. Continue baking for another 5 minutes until the bread croutons turn golden brown.

How to prepare the chicken

Now, prepare the chicken by pounding the chicken breast to an even thickness of about ½-inch (1cm). Season the chicken with salt and pepper on both sides.

Heat a bit of oil in a skillet over medium-high heat.

Add the chicken to the pan and cook it for about 4-6 minutes. Flip the chicken and cook for an additional 4-6 minutes until it becomes golden brown. Ensure the chicken is cooked through by checking its internal temperature. It should be at least 165°F (74°C).

Afterward, set the cooked chicken aside to rest for approximately 5 minutes. Once rested, cut it into bite-sized pieces.

Prepare the pasta and the romaine lettuce

Moving on to the pasta, cook it in salted water according to the package instructions. Drain the cooked pasta and rinse it under cold water.

To prepare the lettuce, cut the Romaine lettuce into bite-sized pieces. Wash and dry it before assembling the salad.

How to prepare the Caesar dressing

In a medium bowl, place anchovy fillets, garlic, and a pinch of salt. Use two forks to turn the ingredients into a paste. Add mustard, Worcestershire sauce, and lemon juice to the bowl and stir to combine.

Then, incorporate the egg yolk using a whisk. Gradually add the olive oil while continuously whisking the mixture. The dressing will start to thicken.

Finally, add Parmesan cheese to the dressing and whisk to combine. Season with salt and pepper according to taste.

Assemble the Chicken Caesar Pasta Salad.

Place the lettuce, pasta, bread croutons, and chicken into a large bowl. Toss the ingredients with the dressing until they are well coated.

Finish off the salad by topping it with Parmesan shavings.

Whether enjoyed as a light lunch, a main course, or a side dish, the Chicken Pasta Caesar Salad is a versatile and satisfying meal that is sure to please.

Experience the rich and comforting tastes of Greece with our authentic Greek Pastitsio. It features tantalizing layers of pasta, savory meat sauce, and luscious bechamel sauce. Baked to golden perfection, this traditional dish is a true taste of Greece.

At the heart of this dish lies tender pasta, cooked to perfection, providing a delightful base for the layers of savory goodness that follow.

The star of the show is a hearty meat sauce, typically made with ground beef, infused with cinnamon. This luscious sauce adds depth and richness to each bite.

A velvety béchamel sauce blankets the meat sauce, adding a creamy and indulgent touch. The béchamel is made from a roux of olive oil and flour, combined with warm milk and eggs, resulting in a silky smooth texture and a heavenly golden crust when baked to perfection.

Pastitsio can be customized to suit various dietary preferences and tastes. Vegetarians can enjoy a delectable vegetarian version by substituting the meat with sautéed vegetables, while those with gluten sensitivities can opt for gluten-free pasta without compromising on taste.

After visiting Greece several times, it is an absolute pleasure to make and enjoy this dish, Greek Pastitsio, right at home. With every bite, I am reminded of the warm hospitality and rich culinary heritage of Greece. It’s a culinary masterpiece that brings a taste of Greece into my kitchen, allowing me to relive those cherished moments and share them with loved ones.

Serving Pastitsio is a joyous occasion in Greek households. As the golden-brown dish comes out from the oven it fills the air with its tantalizing aroma. Each slice is a work of art, revealing layers of pasta, meat sauce, and béchamel with an amazing blend of flavors.

How to make Greek Pastitsio

To prepare the meat sauce, heat oil in a large pan over medium-high heat. Sauté the chopped onion for 5 minutes until it softens. Add the garlic and cook for an additional minute until it becomes fragrant. Stir in the tomato paste and sauté for 1-2 minutes more. Next, add the ground meat and cook it until it changes color, breaking it up with a spoon. Incorporate the tomato puree, cinnamon, sugar, salt, black pepper, and bay leaves. Simmer the sauce over medium-low heat for 20-25 minutes until the meat is cooked and the sauce is reduced. Remove the pan from the heat, discard the bay leaves, and set the sauce aside.

For the pastitsio pasta, cook the pasta in salted water according to the package instructions until it reaches the al dente stage. Drain the pasta and brush a 10×14 inch (25x35cm) pan with 2 tablespoons of olive oil. Add the drained pasta, Greek Kefalotyri or Parmesan cheese, and fresh parsley. Toss to coat the pasta and set it aside. Meanwhile, preheat the oven to 350F (180C).

To prepare the bechamel sauce, heat olive oil in a medium heavy saucepan over medium-low heat. Add the flour and stir until smooth and bubbling, approximately 1 minute. Gradually stir in the milk until the mixture becomes smooth. While stirring continuously, gradually pour in the beaten eggs. Add salt, pepper, and nutmeg. Cook the sauce while stirring constantly until it boils and begins to thicken.

How to assemble the pastitsio

To assemble the pastitsio, spread the meat sauce evenly over the pasta layer in the prepared pan. Pour the bechamel sauce over the meat sauce, spreading it evenly. Sprinkle Greek Kefalotyri or Parmesan cheese on top. Bake the dish for 40-45 minutes or until it turns golden brown. Allow it to rest for at least 30 minutes before cutting and serving.

Whether you’re sharing it with loved ones at a family gathering or simply treating yourself to a taste of Greece, Greek Pastitsio is sure to transport you to the sun-kissed shores of the Mediterranean. So, grab a fork, savor each bite, and let the flavors of Greece dance on your palate. Hope you will try it out and enjoy it as much as we did. This Mediterranean Summer Pasta Salad is a really flavorful summer salad perfect for family or friend gatherings.  As everybody loves pasta, this fresh salad will definitely be a crowd pleaser.

You can serve this Pasta Salad as a main dish or alongside any meat. The salad is simply delicious and very easy to prepare. Once you prepare it you can serve it immediately or you can make it in advance to let the flavors blend even more. This Pasta Salad is also a great choice to bring to any barbecue gathering.

How to make Mediterranean Summer Pasta Salad

For this salad you simply need some fresh vegetables like cucumbers, cherry tomatoes, red pepper, onion and avocado. Black olives or green olives bring a delightful flavor too, so don’t let them out if possible. For pasta salads I usually like to add some fresh greens like baby spinach but feel free to add any other mix of fresh greens you like best. The feta cheese is always a great addition to this salad but again, feel free to add your favorite cheese.

All these fresh vegetables and greens are tossed with al dente cooked pasta and a flavorful homemade lemony dressing. As for the pasta I like to use bow-tie pasta (farfalle) but penne or fusilli pasta will work as good. All of these types of pasta are catching the dressing really well, so use the ones you have around.

If you haven’t tried a pasta salad so far you must definitely give this Mediterranean Summer Pasta Salad a try this summer. Tag me on Instagram if you try it out as I would love to see how it turned out for you. It is always appreciated every time I prepare it. Enjoy!

Some time ago, I stumbled upon an interesting recipe that caught my attention – the Spaghetti Pie. I was intrigued by the idea of transforming the classic spaghetti dish into a pie form, so I decided to give it a shot. And I must say, I am extremely pleased with the results! This pie turns out to be a real crowd-pleaser, and it tastes amazing.

If you’re looking for a comforting and delicious meal that everyone will love, the Spaghetti Pie is a perfect choice. The recipe is simple, yet impressive, making it a great dish to serve to your family and friends. Plus, it’s easily adaptable to different serving sizes and can be a great option for feeding a crowd.

For my Spaghetti Pie recipe, I chose to use a tomato and meat sauce filling, which is a favorite in my family. The crust is made of spaghetti, followed by a layer of creamy ricotta cheese, the savory tomato, and meat sauce, and topped with a generous amount of mozzarella and Parmesan cheese. After baking the result is a mouthwatering, golden-brown pie that’s simply irresistible.

How to make Spaghetti Pie

Preheat your oven to 400°F (200°C), and lightly grease an 8-inch (20cm) springform pan, while also wrapping it with a layer of aluminum foil.

Prepare the meat tomato sauce by heating oil over medium heat in a large skillet and add onions. Once soft, add garlic, and then ground beef and ground pork. Cook until the meat is no longer pink, and then add tomato sauce, salt, pepper, oregano, fresh basil, and sugar. Simmer for about 15 minutes and then set aside to cool.

Prepare the spaghetti crust by first cooking the spaghetti in salted water for 3-4 minutes less than the package instructions indicate. In a medium bowl, whisk together eggs, melted butter, and Parmesan cheese. Add the spaghetti and toss to coat. Press the spaghetti mixture onto the bottom and up the sides of the prepared pan to create a crust.

In a small bowl prepare the ricotta cheese mixture by mixing the ricotta cheese with fresh basil and spread it on top of the spaghetti mixture.

Pour the meat tomato sauce on top, followed by a sprinkling of mozzarella cheese and Parmesan cheese. Bake the pie for 25-30 minutes or until the cheese is golden brown. Once out of the oven, garnish with fresh basil.

In my opinion, this Spaghetti Pie recipe is one of the best pasta dishes you can ever prepare. It’s rich, flavorful, and comforting – the perfect combination for a hearty meal. I highly recommend giving it a try and enjoying it with your loved ones. Trust me, they’ll be asking for seconds!

Stuffed Shells are a delectable and satisfying Italian dish that has become popular around the world. They are easy to make and perfect for any mealtime, be it lunch or dinner. These easy three cheese stuffed shells are a great choice for entertaining guests, and they always make an impressive presentation. They are perfect for those days when you want to whip up a delicious and easy meal that everyone will love.

The key to making perfect stuffed shells is to use large shells that are carefully filled with a flavorful and rich filling. This filling is made up of three different types of cheese, which are combined with fresh herbs to create a wonderful flavor profile. The shells are then coated with a delicious marinara sauce, which is rich and tangy, and topped with a layer of cheese and breadcrumbs. The dish is then baked to perfection, resulting in a beautifully browned and crispy shell that is simply irresistible.

While the classic version of stuffed shells is made with a cheese filling, you can always experiment with different fillings to create a variety of delicious dishes. For instance, you can add meat, such as ground beef or Italian sausage, to the filling for a heartier meal. You can also add different herbs, vegetables, or spices to create a unique flavor profile that suits your taste buds.

Stuffed Shells are best served alongside a fresh salad and some garlic bread, which complement the dish perfectly. The fresh salad provides a refreshing contrast to the richness of the shells, while the garlic bread adds a delightful crunch and flavor to the meal.

How to make three cheese stuffed shells

To make this dish, first, prepare the marinara sauce by heating olive oil in a skillet over medium-low heat. Add garlic and tomato puree, then add sugar, basil, oregano, salt, and pepper. Simmer for 10-15 minutes until slightly reduced and thickened, then let it cool.

Next, preheat the oven and grease a baking dish. Cook the pasta in salted water for 3-4 minutes less than the package instructions. Mix ricotta cheese with mozzarella, parmesan, herbs, egg, garlic powder, salt, and pepper. Fill each shell with the mixture and place them in the baking dish.

Spread the marinara sauce on the bottom of the dish, arrange the shells, and top with more sauce and mozzarella. Mix breadcrumbs with melted butter and sprinkle over the top. Bake covered for 20 minutes, then uncovered for 15 minutes until golden brown. Decorate with fresh basil and enjoy!
