This Pistachio Raspberry Lime Mousse Cake is a delicate and elegant cake perfect for Christmas or New Year’s Eve with a delightful flavor and texture. Having in mind the three Christmas colors, green, white, and red, I created this amazing dessert with this amazing flavor combination of roasted pistachios, lime, white chocolate, and fresh raspberries. The cake consists of a delightful pistachio sponge cake at the bottom, topped with a crispy crunch made with homemade pistachio paste, white chocolate, and paillette feuilletine, followed by a smooth and silky white chocolate and lime mousse and fresh raspberries.

Beautifully decorated in white, red, and green colors, this Pistachio Raspberry Lime Mousse Cake looks really impressive and very festive. The recipe is quite easy to prepare and will surely delight your family and friends.

Ingredients

Makes about 12 servings

Pistachio Sponge Cake

  • 2 eggs, separated
  • 1/3 cup (70g) sugar
  • 1/4 tsp (1g) salt
  • 2/3 cup (70g) roasted pistachios, ground
  • 2 tbsp (20g) all-purpose flour
  • 1 tsp (5g) pistachio extract

For Pistachio Paste

  • 1 cup (100g) pistachios, toasted
  • 1 tbsp (8g) powdered sugar
  • 1/4 tsp (1g) salt

For the crunch

  • 1 cup (80g) Paillete Feuilletine or corn flakes
  • 1.5 oz (45g) white chocolate, melted
  • 1/2 tsp (3g) pistachio extract

White Chocolate Lime Mousse

  • 8 oz (230g) white chocolate, cut in small pieces
  • 2/3 cup (160g) whipping cream
  • 2 tsp (8g) gelatin powder
  • 3 tbsp (45 ml) cold water
  • Zest of a lime
  • 1 ½ cup (360g) whipping cream (35% fat), chilled
  • 4 oz (120g) fresh raspberries

For decorating

Instructions

  • Preheat the oven to 300F (150C). Toast the 1 ⅔ cups (170g) raw pistachios for 10 minutes. Divide 2/3 cup (70g) for the sponge cake and 1 cup (100g) for the pistachio paste.
  • Prepare the pistachio sponge cake. Preheat the oven to 325F (160C). Grease with butter a 8 inch (20cm) pan and line with parchment paper.
  • Separate whites from yolks. Add salt over the whites and start whipping until foamy.
  • Gradually add sugar and continue whipping until soft peaks form.
  • Gently fold in beaten egg yolks, ground toasted pistachios and flour.
  • Pour the batter into the prepared pan and bake for 17-20 minutes until a toothpick inserted into the center comes out clean. Don’t overbake.
  • Cool completely.
  • Prepare the pistachio paste. Place the remaining toasted pistachios into the bowl of a food processor. Add powdered sugar and salt and process for about 5 minutes until it gets into a thick paste.
  • Transfer the paste into a medium bowl. Add melted chocolate and pistachio extract and mix to combine.  Add pailleté feuilletine and mix to combine.
  • Spread the pistachio crunch on top of the pistachio cake leaving a ½ inch (1cm) border.
  • Refrigerate until the mousse is prepared.
  • Prepare the white chocolate and lime mousse. In a heatproof bowl add the white chocolate and 2/3 cup  (160g) whipping cream. Place the bowl over a saucepan with simmering water, over low heat, until all the chocolate is melted.
  • Meanwhile dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Place the gelatin over low heat just until the gelatin dissolves and pour it over the melted chocolate mixture. Add lime zest, mix to combine and let the chocolate mixture cool completely at room temperature.
  • Whip the remaining 1 1/2 cup (360g) chilled whipping cream until soft peaks form. Add melted white chocolate mixture and mix until well combined.
  • Transfer the mousse into a piping bag fitted with ½ inch (1cm) plain tip.
  • Add a ring around the cake and line with an acetate sheet. Pipe a bit of mousse on the edges and on top of the crunch.
  • Arrange the fresh raspberries and cover with remaining mousse.
  • Refrigerate the cake for 4-6 hours or better overnight.
  • Decorate the cake with fresh rosemary, fresh raspberries, white chocolate truffles and dust with powdered sugar. Enjoy!

The filling of Key Lime Pie is undoubtedly the star of the show. It is a heavenly blend of sweet and tangy flavors, with a silky-smooth texture that melts in your mouth.

Not only is the taste of this dessert exceptional, but its preparation is also a breeze. The filling is easily prepared with sweetened condensed milk and other simple ingredients, requiring only a few minutes of baking time. Once the baking process is complete, it is crucial to let the pie chill for several hours to ensure that it sets correctly and delivers the perfect consistency.

How to make Key Lime Pie

The first step is to prepare the crust by blending biscuits/graham crackers in a food processor until crumbs form, stirring in sugar and melted butter, and then pressing the mixture onto the bottom and sides of an 8-9 inch pie pan. Bake the crust for 8-10 minutes and allow it to cool for about 15 minutes.

Next, prepare the filling by whisking egg yolks with lime zest until creamy and light yellow colored. Add condensed milk and lime juice and stir until well combined. Pour the mixture over the cooled crust and bake for 15 minutes. Allow to cool completely at room temperature and then refrigerate the pie for several hours or overnight.

Finally, before serving, prepare the whipped cream by whipping cream until soft peaks form, incorporate powdered sugar, and continue whipping until stiff peaks form. Place the whipped cream into a piping bag fitted with a 1M star tip and use it to decorate the pie. Sprinkle some lime zest on top if desired.

While many recipes call for whipping cream as a topping, the classic version of Key Lime Pie includes a meringue topping. Crust

  • 7 oz (200g) digestive biscuits or graham crackers
  • 2 tbsp (30g) sugar
  • 5 tbsp (70g) butter , melted

Filling

  • 4 egg yolks
  • 1 can (14 oz -397g) sweetened condensed milk
  • 1/2 cup (120ml) lime juice
  • 1 tbsp lime zest

Topping

  • 1 cup (240g) whipping cream
  • 1 tbsp (10g) powdered sugar

Instructions

Prepare the crust.

  • Preheat oven to 350F (180C). Place the biscuits/graham crackers into the bowl of a food processor. Blend until crumbs form. Transfer the crumbs into a bowl, stir in sugar and melted butter.
  • Press the mixture onto the bottom and sides of a 8-9 inch (20-23cm) pie pan.
  • Bake for 8-10 minutes and let to cool on a rack for about 15 minutes. 

Prepare the filling.

  • In a large bowl whisk egg yolks with lime zest until creamy and light yellow colored. Stir in condensed milk and lime juice until well combined.
  • Pour the mixture over the cooled crust and bake for 15 minutes.
  • Let pie cool completely at room temperature and then refrigerate for several hours or better overnight.
  • Before serving whip the cream until soft peaks form. Incorporate powder sugar and whip until stiff peaks form.
  • Place the whipped cream into a piping bag fitted with 1M (½ inch-1cm) star tip and decorate the pie. Sprinkle some lime zest on top if desired.
  • Keep leftover pie refrigerated.

How to make melon mojito

To whip up this refreshing melon mojito, start by cutting 4 melon slices into 1-inch pieces. Then, puree the melon in a food processor until it’s smooth, yielding about 1 cup of melon puree. Additionally, cut 1 slice into small pieces for serving purposes.

Next, in a bowl, combine lime juice and sugar, stirring until the sugar is fully dissolved. Add fresh mint leaves to the mixture and gently mash them with a muddler to release their aromatic oils.

In a pitcher, combine the melon puree with the lime-mint mixture and water, stirring until everything is well incorporated.

When you’re ready to serve, fill your glasses halfway with ice cubes. Add a handful of pomegranate seeds, along with the small pieces of melon and additional mint leaves for garnish. Finally, pour the melon lemonade mixture into each glass, and enjoy this delightful and refreshing melon mojito!

This Summer Ice Tea Cocktail is very easy to make and the result is amazing. It can be served without gin if you just want a cooling drink or serve it with gin to turn it into an exciting summertime tea cocktail.

First, you make the tea and refrigerate to chill overnight. Before serving add gin, and ice cubes in the serving glasses, pour the tea and garnish with mint, lemon or lime slices and serve.

Cold peppermint tea with gin turns out to be an amazing Summer Tea Cocktail that is very refreshing and perfect for hot summer evenings.

How to make Summer Ice Tea Cocktail

To make a refreshing iced tea, start by bringing a large saucepan of water to a boil. Once boiling, remove the saucepan from heat and add tea bags. Cover the saucepan and let the tea steep for 5 minutes to allow the flavors to fully infuse. After 5 minutes, remove the tea bags and stir in the sugar until it is completely dissolved.

Transfer the sweetened tea to the refrigerator to chill. For best results, let it chill overnight to ensure it is thoroughly cooled.

When you are ready to serve the iced tea, you can add a splash of gin for an extra twist if desired. Fill serving glasses with ice and pour the chilled tea over the ice. Garnish each glass with fresh mint leaves, and slices of lemon and lime for a burst of citrus flavor and a visually appealing touch.
