How to make lemon basil yogurt popsicles

Begin by placing a large banana in the bowl of a blender. Add lemon zest, lemon juice, Greek yogurt, honey, and fresh basil. Blend the mixture until it becomes a smooth puree.

Next, pour the puree into popsicle molds. Insert sticks into each mold, then place them in the freezer for 4-6 hours or until completely frozen.

To make the batter, start by whisking together flour, salt, and baking powder in a medium bowl. In another bowl, combine sugar and lemon zest, then mix in butter and vegetable oil until creamy. Add eggs one at a time, followed by vanilla extract. Gradually mix in the flour mixture, alternating with buttermilk, until smooth and well combined.

Once the batter is ready, pour it into the prepared Bundt pan, spreading it evenly. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. If the top begins to brown too quickly, you can loosely cover it with foil.

  • 3 cups  (375g) cake flour
  • 2 ½ tsp (10g) baking powder
  • 1 tsp (5g) salt
  • 1 ¼ cup (250g) sugar
  • lemon zest of 3 lemons
  • 1/2 cup (113g) butter , room temperature
  • 1/2 cup (110g) vegetable oil
  • 4 medium eggs
  • 2 tsp (10g) vanilla extract
  • 1 cup (240g) buttermilk

Lemon Glaze

  • 1/2 cup (120ml) lemon juice ,from about 4 lemons
  • 1/2 cup (100g) sugar

Instructions

Prepare the batter.

  • Preheat the oven to 350F (180C). Butter and dust with flour a 9 or 10 inch (23-25cm) Bundt pan.
  • In a medium bowl whisk flour with salt and baking powder. Set aside.
  • In another bowl mix sugar and lemon zest to release the oils and create a pale yellow mixture. Add butter and vegetable oil and mix until creamy. Incorporate eggs one at a time. Add vanilla extract and mix to combine.
  • With the mixer on low, gradually incorporate flour mixture alternating with the buttermilk, until all is well incorporated.
  • Pour the batter into the prepared pan.
  • Bake for about 45-50 minutes or until a toothpick inserted into the center comes out clean. If browns too fast, you can cover it with aluminum foil and continue baking.
  • Allow to cool slightly into the pan onto a rack for about 10 minutes.

Meanwhile, prepare the lemon glaze.

  • In a small saucepan add sugar and lemon juice. Heat over low-medium heat until sugar dissolves.
  • Use a skewer to poke the pound cake over the top and brush the lemon glaze over the warm pound cake.
  • Invert and poke the cake with a skewer and brush all over with the remaining lemon glaze.
  • Let it cool completely before serving.
  • Dust with powdered sugar and enjoy!

Ingredients

Lemon Poppy Seed Muffin Batter

  • 1 ¾ cups (220g) all-purpose flour
  • 2 tsp (8g) baking powder
  • 2 tbsp (20g) poppy seeds
  • 1/4 tsp (1g) salt
  • 2/3 cup (135g) sugar
  • Lemon zest from 2 lemons
  • 2 large eggs
  • 1/2 cup (110ml) vegetable oil
  • 1 tsp (5g) vanilla extract
  • 1 tbsp (15ml) lemon juice
  • 1/2 cup (120g) buttermilk

Crumb Topping

  • 3 tbsp (45g) sugar
  • 1/4 cup (30g) all-purpose flour
  • 2 tbsp (30g) butter , melted

Instructions

Prepare the lemon poppy seed muffin batter.

  • Preheat the oven to 375F (190C). Line a 12-cavity muffin pan with paper liners.
  • In a medium bowl whisk together flour with baking powder, poppy seeds and salt.
  • In a large bowl add sugar and lemon zest. Mix to release oils from the zest and the sugar becomes pale yellow.
  • Add eggs and mix to combine. Add lemon juice and vanilla extract and mix to combine. Gradually incorporate the oil.
  • Incorporate the flour mixture alternating with the buttermilk.
  • Don’t overmix the batter.
  • Divide the batter equally into muffin cups.

Prepare the crumb topping.

  • In a medium bowl combine sugar with flour and melted butter. Divide the crumbs on top of each muffin.
  • Bake for about 25 minutes until lightly golden and a toothpick inserted into the center comes out clean.
  • Cool muffins on a wire rack. Enjoy!

These Lemon Custard Rose Sweet Rolls are a mouthwatering pastry treat that combines the flavor of lemon with the sweet creaminess of custard, all wrapped up in a soft, fluffy, rose-shaped bun. These sweet rolls are perfect for breakfast, brunch, or any time you’re craving something sweet and indulgent.

How to make Lemon Custard Rose Sweet Rolls

First, prepare the lemon custard filling so it has time to cool before assembling the buns. To make the lemon custard, you have to mix the egg yolk with sugar, salt, flour, and cornstarch. Bring the milk to a simmer and gradually pour over the egg yolk mixture. 

Return to heat and cook the custard until thickens. Add vanilla extract and lemon zest of two lemons and mix to combine. Cover with plastic wrap and let cool to room temperature. 

Now you can prepare the dough. For this dissolve yeast with milk and a teaspoon of sugar and let it rest for 5 minutes to activate. You can use either the active dry yeast or fresh yeast.

Whisk together the flour, sugar, lemon zest, and salt in a large bowl. Add the remaining milk, dissolved yeast, beaten egg, vanilla extract, and melted butter.  Start kneading until smooth, for about 5-10 minutes. You can knead by hand or use a hand or stand mixer. Let the dough rise for about 1 hour until doubled in size. 

On a floured surface turn the dough out and divide it into 12 equal pieces. Shape each piece into a ball. Roll each piece of dough until about 4 ½ inches (11-12 cm) in diameter. Fill each with lemon custard and shape it into a rose, creating a beautiful and delicate floral pattern. The rolls are baked until golden brown, creating a slightly crispy exterior that gives way to a soft, pillowy interior.

Remove the rose rolls from the oven and brush with sugar syrup.

Ingredients

For the dough

  • 3 ¼ cups (400g) all-purpose flour
  • 1/3 cup (70g) sugar
  • 1/2 tsp (3g) salt
  • Lemon zest of a lemon
  • 1 ½ tsp (5g) active dry yeast (or 20g fresh yeast)
  • 1 cup (240ml) lukewarm milk
  • 1 egg , beaten
  • 1 tsp (5g) vanilla extract
  • 1/4 cup (56g) butter , melted

Lemon Custard

  • 1 cup (240ml) milk
  • 1/4 cup (50g) sugar
  • 2 tbsp (16g) cornstarch
  • 1 tsp (5g) flour
  • 1 egg yolk
  • 1/4 tsp (1g) salt
  • 1 tsp (5g) vanilla extract
  • lemon zest from 2 lemons

Sugar Syrup

  • 1/4 cup (50g) sugar
  • 3 tbsp (50ml) water

Instructions

Prepare the vanilla pastry cream.

  • Place milk in a medium saucepan and bring to a simmer.
  • Meanwhile, whisk the egg yolk with sugar and salt until well combined. Add flour and cornstarch and mix to combine.
  • Gradually add milk to the egg mixture and return to heat. Cook, stirring constantly until it boils and thickens.
  • Remove from heat and add vanilla extract and lemon zest.
  • Pour the cream into a clean bowl, cover it with plastic wrap, pressing it directly onto the surface of the pastry cream to prevent forming skin on the surface. Let cool to room temperature.

Prepare the dough.

  • In a medium bowl add yeast, 1 tsp (5g) sugar, and 1/4 cup (60ml) lukewarm milk. Let it rest for 5 minutes to activate the yeast.
  • In a large bowl whisk together the flour, sugar, lemon zest, and salt. Add the remaining milk, dissolved yeast, beaten egg, vanilla extract, and melted butter. Start kneading until smooth, for about 5-10 minutes. You can knead by hand or use a hand or stand mixer.
  • Transfer the dough to an oiled bowl and cover it with plastic wrap.
  • Let the dough rest for about 1 hour at room temperature (warm space) until doubled in size.

Prepare the rose sweet rolls.

  • On a floured surface turn the dough out and divide it into 12 equal pieces. Shape each piece into a ball.
  • Roll each piece of dough until about 4 ½ inches (11-12 cm) in diameter.

  • Make 4 cuts leaving the center as is.

  • Take the opposite section and cover the other side of the filling. Pinch to seal.

  • Cover with a kitchen towel and let them rest for 30-45 minutes at room temperature.
  • Meanwhile preheat the oven to 350F (180C).
  • Brush each roll with beaten egg.
  • Bake for 20-25 minutes until golden brown.

Meanwhile, prepare the sugar syrup.

  • Place sugar and water into a small saucepan and bring to a boil.
  • Remove from heat and let cool slightly.
  • Remove the rolls from the oven and brush each with sugar syrup. Enjoy!

How to make strawberry lemon bundt cake

The recipe for this bundt cake is easy and quick to prepare.  With just a few simple ingredients and some basic baking techniques you can prepare a beautiful cake that is sure to delight. 

First, make sure to grease well your bundt cake pan and dust it with flour, to make sure it comes out easily after baking.

Prepare the strawberry cake batter

Begin by whisking together the dry ingredients and use a blender to puree the fresh strawberries and set aside.

Continue by mixing the butter with sugar, oil lemon zest, and vanilla until smooth and creamy. Add the eggs one at a time and mix until well incorporated. Gradually add the flour mixture alternating with the buttermilk and strawberry puree. At this point, you can add the red coloring if you want your cake to have a stronger pink color. That is optional. 

In the end, toss the chopped strawberries with some flour and gently incorporate them into the strawberry batter. You can also choose to leave them out but I love how they add a fruity flavor and texture to every bite. 

Pour the batter into the prepared pan and bake until a toothpick inserted into the center comes out clean. It may take about 60-70 minutes. 

Once the cake is baked to perfection, invert and let it cool completely on a wire rack. 

Prepare the white chocolate and lemon ganache

Melt the white chocolate and cream over a bain-marie over low heat. It is essential to let it cool until thickens slightly.  If you will try to glaze the cake immediately it will pour off the cake. Glaze the bundt cake and decorate with fresh strawberry halves.

You can also consider using other glazes or leaving the glaze out and simply dust the cake with powdered sugar.

Ingredients

  • 9 oz (250g) fresh strawberries , puree
  • 1/2 cup (113g) unsalted butter , at room temperature
  • 1/2 cup (110g) vegetable oil
  • 1 ½ cup (300g) sugar
  • 4 eggs
  • 1 tsp (5g) vanilla extract
  • 1 tbsp lemon zest , zest of a lemon
  • 3 cups (375g) all-purpose flour
  • tsp (10g) baking powder
  • 1 tsp (5g) salt
  • 1 cup (240g) buttermilk
  • red food coloring , optional
  • 7 oz (200g) fresh strawberries , cut into smaller pieces
  • 1 tbsp (10g) flour to toss with the strawberries

White Chocolate Lemon Ganache

  • 5.5 oz (160g) white chocolate
  • 1/3 cup (80g) whipping cream
  • lemon zest of a lemon

For Decoration

  • fresh strawberry halves

Instructions

Prepare the strawberry cake batter.

  • Preheat the oven to 350F (180C). Butter and dust with flour a 10-inch (25cm) bundt pan.
  • In a large bowl whisk flour, salt and baking powder. Set aside.
  • Use a blender to puree the 9 oz (250g) fresh strawberries.
  • In another bowl mix butter with sugar and vegetable oil until creamy. Add vanilla extract and lemon zest and mix to combine.
  • Incorporate eggs one at a time. With the mixer on low, alternate adding gradually buttermilk, strawberry puree, and flour mixture until all is well incorporated. At this point add the red food coloring if used. Set aside.
  • In a medium bowl add the 7 oz (200g) chopped strawberries and add one tablespoon of flour. Toss to coat. Gently incorporate the strawberries into the strawberry batter.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for about 60-70 minutes or until a toothpick inserted into the center comes out clean.
  • Allow cooling slightly into the pan onto a rack for about 10-15 minutes. Invert and cool completely.

Prepare the white chocolate lemon ganache.

  • Place chocolate and cream in a heatproof bowl and place over a pan with simmering water. Melt over low heat.
  • Add lemon zest and mix to combine.
  • Let the ganache cool, to thicken slightly before glazing the cake.
  • Pour ganache over the strawberry bundt cake. Refrigerate to let it set slightly before serving.
  • Decorate with fresh strawberry halves. Enjoy!

How to prepare Strawberry Lemon Thumbprint Cookies

First, prepare the lemon cookie batter. For this, you start by mixing the egg with the sugar, until pale and creamy. Melt the two oils and add them to the egg mixture. Add in the lemon zest, vanilla, and food coloring if used. In the end, add all the dry ingredients and keep mixing until the dough forms a ball. Wrap it in cling film and refrigerate it for at least 2 hours or overnight.

For the strawberry jam, you can either use fresh or frozen strawberries. In a medium saucepan, bring to a boil the strawberries and sugar and let it boil for 5-8 minutes. Mix the cornstarch with the cold water and add it to the hot jam. At this point, you can add the Tonka powder if used. Keep stirring over low heat for one more minute. Let cool completely.

Lemon Thumbprint Cookies with homemade strawberry jam and lemon glaze

After the dough is chilled, use an ice cream scoop to take equal portions of dough, and roll into about 1-inch (2.5 cm) balls. Place them evenly spaced out onto a parchment paper lined baking sheet. Use your thumb or ½ tsp to make an indentation into the center of each cookie. Bake at 350F (180C) for about 10 minutes. While still warm to the touch, using a spoon, put the strawberry jam right into the middle of each cookie.

For the glaze, simply mix the sugar with lemon juice.

Fill the cookies with the strawberry jam and drizzle with the lemon sugar glaze.

Ingredients

Lemon Cookies

  • 1 egg
  • 1/2 cup (100g) sugar
  • 1 tbsp + 1 tsp (20ml) vegetable oil
  • 1 tbsp + 1 tsp (20ml) coconut oil , melted
  • 1 ½ cup (190g) all-purpose flour
  • 1 tsp (4g) baking powder
  • 1/4 tsp (1g) salt
  • lemon zest from 2 organic lemons
  • 1 tsp (5ml) vanilla extract
  • yellow food coloring , optional

Strawberry Jam

  • 5 oz (150g) strawberries , fresh or frozen
  • 1/4 cup (50g) sugar
  • 1/2 tsp (2g) tonka powder , optional
  • 1 tbsp (8g) cornstarch
  • 1 tsp (5ml) cold water

Lemon Sugar Glaze

  • 3 tbsp (24g) powdered sugar
  • 1 tsp (5ml) lemon juice

Instructions

Prepare the lemon cookie dough.

With strawberries in season I am glad to share with you this delightful and delicate dessert, Strawberry Lemon Layer Cake. The cake consists of four thin layers of vanilla lemon sponge cake filled with a generous amount of freshly made strawberry jam and with Mascarpone lemon frosting. The cake is so light and refreshing and is simply bursting with summer flavor. 

How to make Strawberry Lemon Layer Cake

First you need to prepare the strawberry jam so it has time to cool before filling the cake. You can even consider making it a day or two in advance. This will save some time for later. Then you can prepare the vanilla lemon sponge cake which is very easy to prepare. After preparing the batter you divide it evenly on two large baking sheets. This not only reduces the time of baking but also helps you in creating even layers.  Baking two sheets of thin cake layers eliminates the stress of cutting the cake layers as straight and even as possible. It also cools pretty fast. 

After you prepare the cake layers you simply need to whip up the Mascarpone lemon frosting. It is very quick to prepare but with an amazing flavor and very appreciated every time. 

For assembling, simply cut each sponge cake in half and start filling the cake layers with the strawberry jam and mascarpone frosting. Leave it to chill for at least 1 hour before serving. Cut the cake in 12 or 14 rectangular slices and decorate with whipped cream as desired.

Ingredients

Vanilla Lemon Sponge

  • 8 eggs , separated
  • 1 cup (200g) sugar , divided
  • 1 tsp (5g) vanilla extract
  • 1 cup (125g) all purpose flour
  • 1/2 tsp  (2g) baking powder
  • 1/2 tsp (2g) salt
  • Lemon zest of a lemon

Strawberry Jam

  • 1 pound  (450g) fresh or frozen strawberries
  • 1/3 cup (70g) sugar
  • 3 tbsp (45ml) fresh lemon juice

Mascarpone Lemon Frosting

  • 1 pound (500g) Mascarpone cheese , room temperature
  • 3/4 cup (90g) powdered sugar
  • 1 ⅔ cup (400g) whipping cream (35% fat) , chilled
  • 1 tsp (5g) vanilla extract
  • Lemon zest of a large lemon

For Decoration

Instructions

Prepare the strawberry jam.

  • The jam can also be made a day or two day in advance, to save time and refrigerate until ready to use. In a small saucepan put the strawberries, sugar and lemon juice. Bring to a simmer, stirring occasionally. Simmer until the mixture is thick, for about 15-20 minutes.  Remove from heat and let cool completely before using.

Prepare vanilla lemon sponge.

  • Preheat the oven to 350F (180C). Grease and line with parchment paper two 12×16 inch (30x40cm) baking sheets. Set aside.
  • Separate egg whites from yolks. Add ¾ cup (150g) sugar over the yolks and mix until creamy. Add vanilla and lemon zest and mix to combine.
  • Incorporate flour, baking powder and salt into the yolk mixture.
  • Whip whites until foamy. Gradually add ¼ cup (50g) sugar and continue whipping until stiff peaks form.
  • Gently and gradually fold the whites into the yolks mixture.
  • Divide batter evenly into the prepared baking sheets. Spread the batter evenly and bake for about 10-12 minutes until a toothpick inserted into the center comes out clean.
  • Sprinkle it with powdered sugar. This helps the sponge cake not stick. Flip the cake over the paper. Remove the parchment paper it was baked with. Let cool completely.

Prepare Mascarpone Lemon Frosting.

  • In a large bowl mix Mascarpone until smooth. Add powdered sugar, vanilla and lemon zest and mix until incorporated.
  • Add whipping cream and continue mixing until stiff peaks form.

Assembly.

  • Cut each sponge cake in half.
  • Place a bit of frosting onto a serving platter. Add the first layer of sponge cake. Spread evenly a layer of strawberry jam.
  • Gently spread ⅓ of the mascarpone frosting.
  • Repeat with the remaining sponge cake layers.
  • Refrigerate the cake for at least 1 hour or even overnight.
  • Trim the edges of the cake and cut into 12 rectangle slices.
  • Using a 6B tip pipe whipped cream on top of each slice. Decorate with fresh strawberry halves.
  • Enjoy!

They look simply amazing and totally irresistible. The recipe is really easy and quick, and doesn’t require yeast or eggs. 

As for the lemon flavor, it is the lemon zest that brings an amazing lemony and refreshing flavor to these rolls. There is lemon zest in the dough and in the cream cheese icing as well.

The rolls are filled not only with strawberry jam but with diced fresh strawberries too, that also bring a nice flavor and texture.

How to make No-Yeast Eggless Strawberry Rolls

For these rolls, you need to prepare a strawberry jam first. You can make it days in advance or simply use store-bought strawberry jam if you are in a hurry.  The next step is to cut the remaining strawberries into small pieces.

Now you can prepare the dough which takes no more than 10 minutes. In less than 15 minutes your rolls can be ready and ready to go into the oven. The dough is easy to work with, not too sticky, and easy to roll out.  

For the dough, whisk together the sugar with lemon zest to release oil. Add flour, baking powder, baking soda and salt. Add plain yogurt, melted butter and milk and mix to combine. Knead for a few minutes until the dough is smooth and pulls away from the sides of the bowl.

On a floured surface roll the dough into a 12×14 inch (30x35cm) rectangle. Spread strawberry jam leaving a 1 inch (2 cm) border. Spread the chopped strawberries.

Roll the dough and cut into 8 equal size rolls. Place the rolls on the prepared pan with distance between them. Bake the rolls for about 20-25 minutes until lightly browned.

In a medium bowl mix cream cheese with powdered sugar, lemon zest and vanilla and spread on top of the rolls.

  • 2 ½ cups (310g) all-purpose flour
  • 1 ½ tsp (6g) baking powder
  • 1/2 tsp (3g) baking soda

  • 3/4 cup (180g) plain yogurt

  • 10 oz (300g) fresh or frozen strawberries , cut into smaller pieces
  • 1/4 cup (50g) sugar
  • 2 tbsp (30ml) lemon juice
  • 4 oz (120g) fresh strawberries , cut into small pieces

Cream Cheese Lemon Icing

  • 7 oz (200g) cream cheese
  • 1/2 cup (60g) powdered sugar
  • 1 tsp (5g) vanilla extract
  • lemon zest of a lemon , about 1 tsp (5g)

Instructions
