These pastries are made with layers of soft dough shapedinto a fan shape, giving them their distinct “fantail” appearance. Inside, the dough is generously spread with vibrant, green pesto sauce, which provides an herby, garlicky base with a hint of nuttiness.

The pesto is complemented by cheese, like mozzarella or cheddar, which melts beautifully, giving the fantails a gooey, cheesy center. As they bake, the fantails develop a golden, crisp exterior while the pesto and cheese meld together into a deliciously aromatic filling. How to make Cheese and Pesto Fantails

Begin by adding yeast, sugar, and warm water to a large bowl. Let it rest for 5-10 minutes to activate the yeast. 

Next, add flour, salt, milk, egg, and melted butter to the bowl. Stir to combine and knead the dough for 5-8 minutes until it becomes soft and pulls away from the sides of the bowl. Transfer the dough to an oiled bowl, cover it with plastic wrap, and let it rise in a warm area for about 1 hour until doubled in size. This step is important for the fantails to become fluffy and light.

Grease a 12-cup muffin pan with a bit of oil. This will give your fantails a nice crisp edge and prevent them from sticking.

How to shape the fantails

Once the dough has doubled in size, punch it down to release the air. Divide it into two equal pieces on a floured surface.

Roll one half into a 12-inch (30cm) square. Now, spread half of your pesto evenly over the dough. For extra flavor, use homemade pesto made from fresh basil, garlic, pine nuts, Parmesan, and olive oil. Next, sprinkle half of your shredded cheese—mozzarella, cheddar, or even Gruyère work well—over the pesto. A pinch of salt and pepper at this stage enhances the flavors even more.

To shape the fantails, cut the dough into 6 even strips. Stack the strips on top of each other, then cut them into 6 equal pieces. Place them into the muffin cups. 

Repeat the same process with the second half of the dough, pesto, and cheese. Gently separate the layers of each piece, creating that signature fan shape.

Cover the pan with a kitchen towel and let them rise for about 15-20 minutes. Meanwhile, preheat your oven to 375°F (190°C).

Bake the fantails for 18-20 minutes until golden brown. After baking, let them cool in the pan for about 5 minutes before transferring them to a cooling rack. This helps them firm up and develop a perfect texture.

Now they’re ready to enjoy, crispy on the outside, soft and cheesy on the inside, with the bold flavor of pesto in every bite.

Spread another 2 tablespoons (30g) of softened butter over two-thirds of the rectangle and sprinkle the remaining ½ cup (50 g) of cheddar cheese over it. Fold the dough again like a letter into thirds.

Cut the folded dough into 8 equal pieces. Twist each piece and bring the ends together, pinching them to form a bagel. Place the twisted bagels on a baking sheet lined with parchment paper. Cover with a kitchen towel and let them rise for another 20-30 minutes.

Meanwhile, preheat your oven to 400°F (200°C). Once the bagels have risen, brush them with beaten egg and sprinkle sesame seeds on top.

Bake the bagels in the preheated oven for 15-18 minutes or until they are puffed and golden brown. Let them cool slightly before serving.

Cauliflower Gratin

This Cauliflower Gratin is a comforting, delightful dish that transforms humble cauliflower into a creamy and satisfying culinary experience. After baking the Cauliflower Gratin gets a golden-brown crust that makes a delectable contrast to the creamy interior.

Ingredients

  • 2 pounds (900g) cauliflower , 1 large head – cut into small florets
  • 3 tsp breadcrumbs , for coating the pan

For the sauce

  • 2 tbsp (30g) butter
  • 2 tbsp (20g) flour
  • 1 bay leaf
  • 2 cloves garlic
  • 1 ½ cup (360ml) milk
  • 1/4 tsp (1g) nutmeg
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) freshly ground black pepper
  • 1/4 cup (25g) Parmesan cheese

For assembling

  • 1 green onion , finely chopped
  • 1/2 cup (50g) Parmesan cheese , grated

For the breadcrumb topping

  • 1/3 cup (50g) breadcrumbs
  • 1 tbsp (15g) butter
  • 1/4 tsp (1g) salt
  • 1/4 tsp (1g) Black pepper
  • 1/4 tsp (1g) garlic powder

Instructions

  • Cut the cauliflower into small florets.
  • Place cauliflower florets in a steamer basket over simmering water. Cover, and steam the cauliflower for 3 to 4 minutes. Don't cook it more to become too soft. Keep it firm as it will cook more in the oven.
  • Remove cauliflower from heat and set aside.
  • Preheat the oven to 400 F (200C).

Prepare the sauce.

  • In a saucepan add the milk, garlic and bay leaf and bring to a simmer. Remove from heat and let infuse for about 5 minutes. Discard the bay leaf and garlic cloves.
  • Melt the butter in a small saucepan and stir in the flour. Cook for 1 minute then whisk in the milk. Stir it until it thickens. Season with nutmeg, salt and pepper and remove from heat.
  • Add ¼ cup Parmesan cheese and stir to combine.
  • Butter a 9-10 inch (23-25cm) baking dish and coat it with breadcrumbs.
  • Arrange the steamed cauliflower florets in one layer and sprinkle the green onion over the cauliflower.
  • Pour the sauce all over the cauliflower.
  • Sprinkle with cheese on top.

  • In a small bowl mix breadcrumbs with salt, pepper, garlic powder and melted butter.
  • Sprinkle the breadcrumbs over the cheese.
  • Bake for 25-30 minutes until golden brown.

  • Stir the cheese mixture until well combined.

  • In a medium non-stick pan heat vegetable oil over medium-high heat. Use enough oil to half cover the cheese balls.

  • Transfer to paper towels to drain the excess oil.

They offer a satisfying blend of flavors and textures, making them a go-to option for a quick and wholesome start to the day.

Whether you’re savoring them on the go or enjoying them with a cup of coffee at the table, these muffins will surely become a favorite part of your breakfast routine.

How to make tortilla egg muffins

First, preheat the oven to 350°F (180°C) and use butter to grease 12 muffin cups. Leave them aside for later use.

Next, cook the bacon on medium-high heat until it turns crisp. Then, move it onto a plate lined with a paper towel and let it cool for a bit.

In a medium-sized bowl, whisk together the eggs, salt, pepper, nutmeg, and cream. Keep it aside while you prepare the tortilla cups.

Cut the flour tortillas into 12 circles, each about 3.5-4 inches (9-10cm) wide. You can use a cookie cutter, bowl, or cup – whichever works best for you.

Line the muffin cups with these tortilla circles.

Now, distribute 3 tablespoons (15g) of Parmesan cheese, the bacon, green onion, and feta cheese evenly among the tortilla cups.

Pour the egg mixture into the cups, making sure to divide it equally.

Sprinkle the remaining Parmesan cheese and some black pepper on top.

Bake for approximately 15-20 minutes, or until the tortilla cups turn a golden brown and the egg mixture puffs up nicely.

Move them onto a cooling rack and add a finishing touch of freshly ground black pepper and green onion. Then, it’s time to savor your creation!

These mouthwatering Beef Quesadillas are a satisfying dish, perfect for a quick lunch or a hearty dinner. Tender beef, cooked with flavorful spices, fills each quesadilla. The warm crispy tortillas hold the beef and gooey cheese, creating a delightful combo of crunch and softness. 

For these quesadillas I have used 10-inch (25cm) flour tortillas but feel free to use any other size you like best or have on hand. Whenever possible, I like to use homemade tortillas which I highly recommend. They are easy to prepare and better than the store-bought ones.

Enjoy these quesadillas with homemade guacamole and sour cream,  or with fresh lettuce, juicy tomatoes or zesty salsa.

How to make Beef Quesadillas

Begin by heating a tablespoon of oil, then add and cook the onion until softened, which usually takes about 5 minutes. Afterward, incorporate the garlic and cook for an additional minute.

Next, add the ground meat, and cook it thoroughly for approximately 10-12 minutes, ensuring it’s completely done. As you cook, crumble the meat for an even texture.

Add the paprika, cumin, chili powder, thyme, salt, and pepper, and give it a good stir to blend the flavors. Integrate the tomato paste and stir again until well combined.

Once done, take it off the heat. Proceed to spread grated cheese on one side of the tortillas. Top it with the beef mixture, adding another layer of grated cheese for extra richness. Fold the tortillas in half.

For cooking, warm about a tablespoon of oil in a large non-stick pan. Cook two quesadillas at a time, allowing them to cook for roughly 2 minutes on each side. Look for a golden brown and crisp exterior, and ensure the cheese has melted.

Afterward, cut the quesadillas into wedges and serve alongside guacamole, sour cream, or salsa for an extra burst of flavor. Remember to store any leftovers in the refrigerator to save them for later.

  • 5 flour tortillas – 10-inch (25cm) each
  • 10 oz (300g) cheese (Mozzarella or Cheddar) , grated

For the Beef

  • 1 tbsp olive oil
  • 1 (5 oz- 150g) medium onion , diced
  • 3 cloves garlic
  • 1 pound (500g) lean ground beef
  • 1 tbsp (7g) smoked paprika
  • 1 tsp (3g) chili powder
  • 2 tsp (7g) ground cumin
  • 1 tbsp (3g) thyme
  • 1/3 cup (70g) tomato paste
  • 1 tsp (5g) salt
  • freshly ground black pepper

Instructions

Prepare the beef.

  • Heat 1 tablespoon of oil, add the onion and cook for 5 minutes until softened. Add garlic and cook for 1 minute more.

  • Add paprika, cumin, chili powder, thyme, salt and pepper. Stir to combine. Add tomato paste and stir again to combine.

  • Top with beef mixture and spread more grated cheese.
  • Fold the tortillas in half.
  • For cooking, heat about 1 tablespoon of oil in a large non-stick pan.
  • Cook two quesadillas at a time, for about 2 minutes on each side until golden brown and crisp, and cheese is melted.
  • Cut the quesadillas in wedges and enjoy alongside guacamole, sour cream or salsa.

Among my favorites is the delightful Spicy Greek Feta Dip, known as Tirokafteri or Htipiti. It is a creamy, spicy, feta cheese spread that perfectly complements nearly any dish. I find myself ordering it over and over again. This simple yet flavorful recipe combines feta cheese, roasted red peppers, and a touch of garlic to create a mouthwatering dip that’s perfect for any occasion. 

I’m excited to share with you this delightful recipe, as it’s not only simple to prepare but also incredibly rich and bursting with flavor. This recipe ensures a perfect blend of tanginess and creaminess, making it an ideal appetizer idea. Serve it with warm pita bread, toasted bread or crusty bread. You can also serve it with vegetable sticks if desired.

How to make spicy Greek feta dip – Tirokafteri

Start by roasting the red pepper in a pan on the stove until the skin blisters. Once done, remove it from heat, sprinkle with salt, cover, and let it cool. Next, peel the roasted pepper and remove the seeds. Cut into large pieces. 

Place the feta cheese in the bowl of a food processor. Add the roasted red pepper, minced garlic, red chili flakes, and lemon juice. Process until crumbles.

Now, add Greek yogurt and olive oil and continue processing until it turns into a thick, creamy paste.

Transfer the feta dip into a bowl. To add a finishing touch, decorate with feta crumbles, fresh parsley, chili flakes, and a drizzle of olive oil.

This delightful Spicy Greek Feta Dip pairs perfectly with toasted bread, crusty bread, warm pita bread or crispy vegetables like carrots and cucumbers.

Remember to refrigerate any leftovers for later.

  • 9 oz (250g) Feta cheese

Ingredients

  • 1  block feta, (5oz-150g) , cut into triangles
  • 1/3 cup  (40g) flour
  • 2 oz (60g) sesame seeds
  • 1 egg , beaten
  • 1/4 cup (60g) olive oil , for frying
  • honey , to drizzle on top

Instructions

  • Cut the feta block into two smaller pieces, rectangles or triangles.
  • Prepare three plates, one with flour, one with sesame seeds and one with the beaten egg.
  • Dredge the feta pieces into flour.
  • Dip into the beaten egg. Make sure to cover all sides.
  • Coat with sesame seeds.
  • Heat about ¼ cup (60g) olive oil in a frying pan.
  • Place the feta pieces into the pan and fry until golden brown.
  • Flip and fry the other side and edges.
  • Drain on paper towels to remove any excess oils.
  • Serve while still hot with a drizzle of honey.

Notes

If you don’t want to fry the feta cheese, you may also consider baking it. For this, preheat the oven to 400F (200C) and bake for 25-30 minutes until golden.
