This Caramel Panna Cotta is a sophisticated and delicate Italian dessert that combines the creamy elegance of panna cotta with the rich, deep flavor of caramel. It is a delectable finish to any meal, whether it’s a casual dinner or a special occasion. 

This eggless and gluten-free treat begins with a simple caramel made from sugar and water, which is carefully cooked until it reaches a golden amber hue. The caramel coats the bottom and sides of the ramekins, creating a beautiful, glossy layer that will crown the dessert when inverted.

The vanilla panna cotta mixture is poured over the set caramel in the ramekins. After chilling for several hours, the panna cotta firms up to a perfectly silky texture. 

When ready to serve, invert the ramekins onto plates, revealing the delightful caramel layer now sitting atop the panna cotta. This dessert is not only delicious but also looks beautiful, especially when garnished with fresh berries and sprigs of rosemary or mint. The freshness of the berries and herbs adds a vibrant contrast to the rich, creamy caramel panna cotta.

How to make Caramel Panna Cotta

Begin by preparing the caramel. Place the sugar and water in a saucepan over medium-high heat, and cook without stirring until the sugar dissolves and takes on a caramel color. Immediately divide the caramel among 4 ramekins, each with a capacity of 4-5 oz (120-150ml). Rotate the ramekins to coat the bottoms and sides with the caramel, then set them aside.

Next, prepare the panna cotta. Dissolve the gelatin in 2 tablespoons of cold water and let it swell for 5 to 10 minutes. In a medium saucepan, bring the cream, milk, sugar, salt, and vanilla to a simmer over medium-low heat, ensuring it does not boil. Once the sugar has dissolved, remove the mixture from the heat and let it cool for 5 minutes before adding the bloomed gelatin. Stir until the gelatin has completely dissolved.

Evenly divide the panna cotta mixture into the caramel-coated ramekins. Refrigerate for at least 4 hours or overnight to allow the panna cotta to set.

When ready to serve, dip each ramekin into a bowl of hot water for about 30 seconds to loosen the caramel. Run a sharp knife around the edges of the panna cotta, then invert each ramekin onto a plate. Garnish with fresh berries and sprigs of fresh rosemary or mint

For the caramel

  • 1/2 cup (100g) sugar
  • 2 tbsp (30ml) water

For the panna cotta

  • 7 fl oz (200ml) milk

Instructions

How to prepare the coffee walnut sponge cake 

Start by preheating the oven to 320F (160C) and greasing an 8-inch (20cm) springform pan with parchment paper. In a big bowl, mix eggs, sugar, salt, instant coffee, and vanilla extract until the mixture becomes thick, foamy, and light in color, usually for about 5 minutes. 

Gently fold in flour and ground toasted walnuts, then bake for 15-20 minutes until a toothpick comes out clean from the center. Let it cool completely.

How to prepare the walnut caramel layer

For the walnut caramel layer, heat sugar and water in a saucepan until it becomes a light caramel color. Add cream (it might bubble a bit), butter, walnuts, and salt. Stir constantly for about 1 minute. Spread this walnut caramel filling over the walnut sponge cake, leaving a ½ inch (1cm) border, and refrigerate while you make the coffee mousse.

How to prepare the coffee cream cheese mousse

Start by dissolving gelatin in cold water and let it swell for 5-10 minutes. Meanwhile, mix cream cheese, powdered sugar, vanilla extract, and instant coffee until smooth. Dissolve the swollen gelatin over low heat and pour it into the cream cheese mixture. Add chilled cream and whip until soft peaks form. Pour the coffee mousse over the cake, smooth the top, cover, and refrigerate for 4-6 hours or overnight.

How to prepare the chocolate ganache topping

Make the chocolate ganache by melting chocolate and cream over low heat. Spread it evenly over the cake, then refrigerate for another 30 minutes. 

Decorate with coffee whipped cream, chocolate shards, chopped walnuts, and a dusting of instant coffee.

Instructions

How to toast walnuts.

  • Preheat the oven to 300°F (150°C).
  • Place the walnuts into a parchment paper-lined baking sheet and let them toast for 15 minutes.
  • When cool, ground or cut the walnuts into smaller pieces, as needed.

Prepare the walnut sponge cake.

This Puff Pastry Caramel Slice is a true masterpiece, blending buttery pastry, rich caramel, and nutty crunch in every bite. 

How to make Puff Pastry Caramel Slice 

To make this dessert start by baking the puff pastry, then continue with the caramel pastry cream. When the pastry cream cools, continue with the caramel pastry cream filling and then assemble the cake. Next, you can prepare the candied pecans. It is totally optional but they bring an amazing texture and flavor. I highly recommend serving the cake with a drizzle of salted caramel sauce. While the cake sets you can prepare the salted caramel sauce.

How to prepare the puff pastry layers.

Preheat the oven to 400F (200C) and line a baking sheet with parchment paper. Roll out the puff pastry thinly and transfer it to the prepared baking sheet. Bake for approximately 15-18 minutes or until it turns a beautiful golden hue. Allow it to cool completely.

How to prepare the caramel pastry cream.

In a medium saucepan, warm the milk until it simmers. While the milk is heating, whisk together the egg yolks with 1 tablespoon of sugar and a pinch of salt until thoroughly blended. Add the flour and cornstarch and mix until smooth. Remove the milk from heat. 

In a separate saucepan, combine ½ cup (100g) sugar and 1 tablespoon of water. Heat it over medium-high heat until the sugar dissolves and transforms into a caramel color. Reduce the heat to low and gradually pour in the hot milk, stirring until the caramel is fully dissolved.

Slowly combine the caramel milk with the egg mixture, then return it to the heat. Cook, stirring constantly, until it boils and thickens. Remove from heat and stir in the vanilla extract. Transfer the cream to a clean bowl, covering it with plastic wrap pressed directly onto the surface to prevent a skin from forming. Let it cool to room temperature.

How to prepare the caramel filling.

Dissolve the gelatin in cold water and let it soak for 5-10 minutes. Melt the gelatin over low heat, then pour it over the caramel pastry cream, mixing until well combined. In a separate bowl, whip the cream until stiff peaks form. Gently fold it into the pastry cream mixture.

Assemble the cake.

Cut an 8-inch (20cm) square from the baked puff pastry. Place it on a serving platter and encircle it with a square cake ring, lining the inside with acetate sheets. Spread the caramel filling evenly over the puff pastry, then break the remaining pastry into crumbs and scatter them on top.

Refrigerate for at least 4-6 hours, or overnight, to set.

How to prepare the candied pecans.

To make the candied pecans, melt butter and sugar in a saucepan over medium heat. Add the pecans and stir until lightly browned and aromatic. Allow them to cool, then chop.

Just before serving, decorate the cake with the chopped candied pecans. Finish with a gentle dusting of powdered sugar. Cut into slices and serve with a drizzle of salted caramel sauce.

  • In a medium bowl mix whipping cream until stiff peaks form. Gently incorporate it into the pastry cream mixture.

Assemble the cake.

  • Cut an 8-inch (20cm) square from the baked puff pastry.
  • Place the puff pastry square on a serving platter.
  • Place a square cake ring around it and line it with acetate sheets.
  • Add the caramel filling and smooth the top.
  • Break the remaining puff pastry into crumbs. Spread them evenly on top of the caramel filling.
  • Refrigerate for at least 4-6 hours or overnight.

Prepare the candied pecans.

  • In a saucepan melt the butter and sugar over medium heat.
  • Add the pecans and stir until they are lightly browned and fragrant.
  • Set aside to cool and chop.
  • Before serving, top the cake with chopped candied pecans.
  • Dust with powdered sugar. Cut into slices and serve with salted caramel sauce. Enjoy.

This Mini Size Creme Caramel is a creamy dessert that’s both easy to make and wonderfully indulgent. Originating from France, it’s a timeless treat. It delights with its smooth, creamy texture and delicate caramel sauce. You can choose to bake it in a big dish for sharing or in smaller portions for a special touch, like I did here.

To create it mix eggs, milk, and sugar to make a smooth custard. For the caramel sauce just melt sugar with water until it turns golden brown, then divide it over the base of the molds. This adds a sweet, rich flavor to every bite. Pour the custard over the caramel and gently bake in a water bath. After baking, the custard sets into a silky texture. 

After chilling, the dessert gets turned upside down on a plate, revealing a glossy caramel top.  When you take a bite, you’ll notice the creamy custard melts in your mouth, while the caramel gives a nice contrast. 

Creme caramel is a special treat that feels both comforting and fancy, loved by people of all ages. Whether for a group or as individual treats, Creme Caramel brings simple elegance and rich flavors to any occasion. One of the best things is that it can be made in advance as it keeps well refrigerated for several days.

How to make mini size creme caramel 

Start by preheating the oven to 325°F (160°C). In a saucepan, combine sugar and water over medium-high heat, allowing the mixture to caramelize without stirring. Once the sugar achieves a rich caramel color, distribute it among five 8 oz (230ml) ramekins, ensuring an even coat along the bottoms and sides. Place the ramekins in a baking pan.

Meanwhile, warm the milk in the same saucepan, being careful not to bring it to a boil. In a separate bowl, whisk together eggs, sugar, and cornstarch. Gradually pour the warm milk into the egg mixture, incorporating vanilla extract for added flavor. Divide the custard evenly over the caramel into the ramekins.

Next, fill the bottom pan with hot water until it reaches halfway up the sides of the ramekins. Bake until the custard takes on a gentle golden hue, approximately 30-35 minutes. 

Once done, allow it to cool to room temperature bbefore covering and refrigerating for a minimum of several hours, or overnight. To serve, gently run a knife along the inner edges of the ramekins and invert onto a plate.

Now it’s time to savor these mini size creme caramel with their creamy custard, rich caramel, all in an individual portion.

Ingredients

For the Caramel Sauce

  • 1/2 cup +1 tbsp (120g) sugar
  • 2 tbsp (30ml) water

For the Custard

  • 3 eggs
  • 2 cups (500ml) milk
  • 1/4 cup (50g) sugar
  • 1 tbsp (10g) vanilla extract
  • 1/2 tsp (2g) cornstarch

Instructions

  • Preheat the oven to 325°F (160°C).
  • Place the sugar and water in a saucepan over medium-high heat, and cook without stirring until the sugar dissolves and gets a caramel color.
  • Immediately, divide the caramel into 5 ramekins, each ramekin with a capacity of 8 oz (230ml). Rotate the ramekins to coat the bottom and sides with the caramel.
  • Place the ramekins into a pan.
  • Pour the milk into the same saucepan you prepared the caramel.
  • Heat the milk but do not bring it to boil.
  • In a separate bowl beat the eggs with the sugar and cornstarch. Pour the milk over the egg mixture.
  • Add the vanilla extract and mix to combine.
  • Divide the custard between the ramekins.
  • Pour hot water into the bottom pan to come halfway up the sides of the ramekins.
  • Bake until slightly golden for about 30-35 minutes.
  • Cool completely. Then cover and refrigerate for at least a couple of hours or overnight.
  • Run a knife on the inside edge of the ramekin and invert onto a plate. Enjoy!

This cake is an irresistible dessert, a celebration of the richness of autumn, that brings joy to every bite. It is perfect for gatherings, celebrations or simply as a personal treat. Serve it with additional salted caramel sauce if desired.

How to make Apple Pecan Caramel Mousse Cake

The recipe for this incredible dessert is quick and each step is easy to prepare. Begin by preparing a delicious apple cake, then continue with an apple, pecan caramel crunchy layer and finish with a salted caramel mousse.

How to make the apple cake

Start by preheating your oven to 350°F (180°C). Grease an 8-inch (20cm) pan with butter and line it with parchment paper for easy removal.

In a medium-sized bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Set this mixture aside for later.

In a larger bowl, add an egg, brown sugar, vanilla extract, and vegetable oil. Use  whisk or a hand mixer to mix them together until they are well combined. 

Gradually add the flour mixture to the wet ingredients. Toss in diced apples and stir until everything is thoroughly mixed.

Pour the batter into the prepared pan and smooth it out evenly.

Bake the cake in the preheated oven for 13-15 minutes. To check if it’s done, insert a toothpick into the cake – it should come out clean. Allow the cake to cool completely before inverting  it to a serving plate.

Prepare the caramel pecan apple crunchy layer

 Lower the oven temperature to 300°F (150°C). Spread pecans on a parchment paper-lined baking sheet and toast them in the oven for 15 minutes. Once cooled, chop the pecans into smaller pieces. Peel, core and cut an apple into small pieces. 

In a medium heavy-bottomed saucepan over medium-high heat, combine sugar and water. Allow it to cook without stirring until the sugar melts and turns into a rich caramel color. Add cream – it will bubble a bit. Toss in the apple pieces, butter, pecans, and salt. Stir constantly for about 2 minutes.

Spread this pecan apple caramel filling over the apple sponge cake, leaving a ½ inch (1cm) border and refrigerate while you move on to the next step.

Prepare the caramel mousse

Start by making the salted caramel sauce. Combine sugar and water in a medium heavy-bottomed saucepan over medium-high heat. Cook without stirring until the sugar transforms into a caramel color.

Pour in cream – it will bubble slightly. Cook for about 1 minute, stirring constantly until smooth. Remove from heat and add vanilla extract, butter and salt. Stir until it’s smooth and then transfer it into a bowl to cool.

Dissolve gelatin in cold water and let it swell for 5 to 10 minutes. Gently heat the gelatin until it dissolves and then mix it into the caramel sauce.

Whip the remaining 1 1/2 cups (360g) of whipping cream until soft peaks form. Add the caramel mixture and mix until well combined.

Assemble the cake

Place a cake ring around the cake and line it with an acetate sheet.

Pour the caramel mousse on top of the cake. Use an offset spatula to smooth out the top.

Cover the cake and refrigerate it for 4-6 hours or overnight to allow it to set.

Finally, decorate the cake with cinnamon whipped cream, blueberries, caramel pecan shards, and a sprinkle of cinnamon powder.

Instructions

Prepare the apple cake.

  • Preheat the oven to 350°F (180°C). Grease with butter an 8-inch (20cm) pan and line with parchment paper.
  • In a medium bowl, stir together flour, baking powder, baking soda, cinnamon and salt. Set aside.
  • In a large bowl add the egg, brown sugar, vanilla extract and vegetable oil. Mix until well combined.
  • Incorporate the flour mixture. Add diced apple and mix to combine.
  • Pour batter into the prepared pan.
  • Bake for 13-15 minutes, until a toothpick inserted into the cake comes out clean. Let cool completely and transfer to a serving plate.

Prepare the caramel apple pecan crunchy layer.

  • Low the oven temperature to 300°F (150°C).
  • Place the pecans into a parchment paper-lined baking sheet and let them toast for 15 minutes. When cool, cut the pecans into smaller pieces.
  • Peel, core and cut an apple into small pieces.
  • Place the sugar and water in a medium heavy-bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a dark caramel color.
  • Add the cream. It will bubble a little bit.
  • Add the apple, butter, pecans and salt and let cook for about 2 minutes stirring constantly with a wooden spoon or spatula.
  • Spread the pecan apple caramel filling over the apple sponge cake and refrigerate until you prepare the caramel mousse.

Prepare the salted caramel sauce for the mousse.

  • Place the sugar and water in a medium heavy-bottomed saucepan over medium-high heat, and cook without stirring until the sugar dissolves and gets a caramel color.
  • Add the cream. It will bubble a little bit.
  • Cook for about 1 minute constantly stirring with a wooden spoon until smooth.
  • Remove from heat and add vanilla extract, butter and salt. Stir well until smooth. Pour into a bowl and set aside to cool.

Prepare the caramel mousse.

  • Dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Place the gelatin over low heat just until the gelatin dissolves and pour it over the caramel sauce.
  • Whip the remaining 1 1/2 cup (360g) whipping cream until soft peaks form. Add caramel mixture and mix until well combined.

Assemble the cake.

  • Place a cake ring around the cake and line with an acetate sheet.
  • Pour the mousse on sides and top. Smooth the top using an offset spatula.
  • Cover and refrigerate for 4-6 hours or overnight.
  • Decorate the cake with cinnamon whipped cream, blueberries, caramel pecan shards, and dust with cinnamon powder.

Prepare the caramel pecan shards, optional.

  • Spread chopped walnuts/pecans on a parchment paper-lined baking sheet. Place water and sugar into a small saucepan and cook over medium heat until sugar dissolves and gets a caramel-dark color.
  • Pour the caramel over the chopped nuts and let it set.
  • Break caramel into shards and decorate the cake.

Makes 1 cup (240g) Biscoff Spread

  • 5 oz (150g) Lotus Biscoff Cookies
  • 2 tbsp (30g) brown sugar  , optional
  • 3 tbsp  (40g) unsalted butter , melted
  • 1 tsp (5g) vanilla extract
  • 1/2 tsp (1g) cinnamon
  • 3 tbsp (45ml) milk

This Pecan Caramel Mousse Cake is an elegant delightful cake that is perfect for fall days and especially for Thanksgiving table. The cake consists of two layers of vanilla sponge cake with caramel pecan topping and with a smooth custard salted caramel mousse filling. The combination of textures and flavors is simply amazing and irresistible. 

How to make the Pecan Caramel Mousse Cake. 

Each step of making the cake is easy to prepare and the best part is that it needs no decoration. The caramelized pecans on top are decorative enough and look very tempting as well.

For making the cake, I was inspired by the amazing look of the Norwegian Verdens Beste Cake I’ve made a few times ago. I have changed the recipe though, to obtain a caramel custard filling and the caramelized pecan sponge cake layers. 

First, you have to prepare the caramel pastry cream. It needs to cool down before going further with the caramel filling. For this, you have to caramelize sugar and dissolve it in hot milk. Mix it with the egg and sugar mixture. Cook until thickens and set aside to cool. 

While the caramel pastry cream cools down, prepare the caramelized pecan sponge cake layers. For this prepare the caramel sauce and divide it into the prepared greased pans. Top with toasted chopped pecans. Prepare the vanilla cake batter and gently divide it into the pans over the pecan caramel layer. Bake until golden brown and let cool completely. 

Now it’s time to finish the caramel mousse filling by adding gelatin to the caramel pastry cream. Fold whipped cream into the caramel pastry cream and now you can assemble the cake. 

For assembling the cake invert one cake layer onto a serving platter, so the caramelized pecans are facing up. Place a cake ring around the cake and line it with acetate sheet. Add the caramel mousse filling, smooth the top and add the second cake layer with the caramelized pecans facing up. Let it set for several hours or even better overnight. 

Cut into slices and enjoy one of the best fall desserts ever.

Pecan Vanilla Sponge Cake Layers

For Caramelized Pecans

  • 1/2 cup (100g) light brown sugar
  • 5 tbsp (70g) butter
  • 1/4 tsp (1g) salt
  • 3 tbsp (40ml) whipping cream
  • 1 cup (100g) pecans/walnuts , toasted and chopped

For the Sponge Cake Batter

  • 3 eggs
  • 1/3 cup (70g) sugar
  • 1 tsp (5g) vanilla extract
  • 1/4 tsp (1g) salt
  • 1/2 cup (65g) all-purpose flour

Caramel Pastry Cream

  • 2 cups (480ml) milk
  • 2 eggs
  • 1 tbsp (15g) sugar
  • 1/2 tsp (3g) salt
  • 1 tbsp (10g) flour
  • 1/4 cup (30g) cornstarch
  • 1/2 cup (100g) sugar
  • 1 tbsp (15ml) water
  • 1 tsp (5g) vanilla extract

For the Caramel Mousse

  • 1⅓ cup (320g) whipping cream
  • tsp (8g) gelatin powder
  • 3 tbsp (45ml) cold water

Instructions

Prepare the caramel pastry cream.

  • Place milk in a medium saucepan and bring to a simmer.
  • Meanwhile, whisk the eggs with 1 tablespoon of sugar and salt until well combined. Add flour and cornstarch and mix to combine.
  • Place ½ cup (100g) sugar and 1 tablespoon of water in a medium heavy-bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a caramel color.
  • Reduce the heat to low and gradually add the hot milk to the caramel. Keep over medium-low heat until the caramel is dissolved.
  • Gradually add the caramel milk to the egg mixture and return to heat. Cook, stirring constantly until it boils and thickens.
  • Remove from heat and add vanilla extract.
  • Pour the cream into a clean bowl and cover it with plastic wrap, pressing it directly onto the pastry cream's surface to prevent skin from forming. Let cool to room temperature.

Prepare the pecan sponge cake layers.

  • Preheat the oven to 350°F (180°C), grease the bottom and sides of two 8-inch (20cm) pans and line them with parchment paper.
  • Prepare the walnut crunch. In a small saucepan add sugar, salt, whipping cream and butter. Cook over medium-low heat until sugar dissolves.
  • Divide the mixture evenly in two pans. Sprinkle the chopped toasted pecans/walnuts on top. Set aside until the cake batter is prepared.
  • Prepare the cake batter. In a large bowl add 3 whole eggs, sugar salt and vanilla. Mix to combine. Mix for about 10 minutes until thick and tripled in volume.
  • Gradually fold in sifted flour. Divide the batter evenly into the prepared pans and bake for about 10 minutes until golden and a toothpick inserted into the center of the cake comes out clean.
  • Let cool completely.

Prepare the caramel filling.

  • Dissolve gelatin in cold water and let it soak for 5-10 minutes. Dissolve gelatin over low heat, pour over the caramel pastry cream and mix to combine.
  • In a medium bowl mix whipping cream until stiff peaks form. Gently incorporate it into the pastry cream mixture.

Assemble the cake.

  • Turn one cake onto a serving platter with the caramelized pecans facing up. Place a cake ring around the cake and line it with an acetate sheet.
  • Pour the caramel filling over the cake and smooth the top. Add the second layer of cake with the caramelized pecans facing up.
  • Cover and refrigerate for 4-6 hours or even overnight. Enjoy!

This Chocolate Caramel Mousse Cake is an elegant and delicate dessert perfect for celebrating the fall season. Chocolate with salted caramel is a combination that is very appreciated worldwide. This mousse cake surely puts these two flavors in value in a very delightful way. 

The cake consists of two layers of moist cocoa brownie, two layers of mousse and a caramel topping. For the mousse layers, there is a milk chocolate mousse and a salted caramel one. I chose a salted caramel topping as it adds more caramel flavor to the cake. It also balances the combination of flavors in such a way that none of them is overpowering. 

How to make the chocolate caramel mousse cake. 

This recipe may seem to have a lot of steps, but each step is easy and quick to prepare. First, you have to prepare the cocoa brownie layers and let them cool completely. 

Once cooled, you can prepare the milk chocolate mousse. I use milk chocolate rather than semisweet chocolate for the mousse this time, to make the cake more balanced. But if you want a more intense chocolate flavor, feel free to use semisweet chocolate. 

Pour the milk chocolate mousse over the first brownie layer. Freeze for about 30 minutes or until the caramel mousse is prepared.

Next, you must prepare a salted caramel sauce for the caramel mousse. Add dissolved gelatin in the caramel sauce and combine the mixture with whipped cream. 

Cut the second layer of cake to be a bit smaller than the first one to create a beautiful presentation. You can also consider leaving it as is and simply placing it on top of the milk chocolate mousse. 

Spread the caramel mousse over the second layer of cake. Refrigerate for at least 4 hours or even overnight to set completely. 

Now it is time to prepare the salted caramel glaze on top. Pour it immediately over the cake and swirl to spread evenly on top of the cake. Refrigerate for at least 30 minutes to set.

Cocoa Brownie Layers

  • 7 oz (200g) whipping cream (35% fat) , chilled

Caramel Mousse

For Salted Caramel Sauce

  • 1/4 cup (50g) sugar
  • 1 tbsp (15ml) water
  • 1 tbsp (14g) butter , at room temperature
  • 1/4 cup (60g) whipping cream
  • 1/4 tsp (1g) salt

For Mousse

  • 1/2 tbsp (5g) gelatin powder
  • 2 tbsp (30ml) cold water
  • 1 ⅓ cup (320g) whipping cream

Caramel Glaze

  • 1/4 cup (50g) sugar
  • 1 tbsp (15ml) water
  • 3 tbsp (45g) whipping cream
  • 1 tbsp (14g) butter , at room temperature
  • 1/2 tsp (3g) vanilla extract
  • 1/4 tsp (1g) salt

For Decoration

  • chocolate ganache
  • mini chocolate rocks

Instructions

  • In a bowl whisk eggs with sugar and salt until well combined. Incorporate oil and vanilla extract.
  • Sift the flour and cocoa powder and whisk to fully incorporate.
  • Divide the batter into the prepared pans.
  • Bake for 10-12 minutes until a toothpick inserted into the center comes clean or with few moist crumbs attached.
  • Let cool completely.

Prepare milk chocolate mousse.

  • In a heatproof bowl add the milk chocolate and 5 oz (145g) whipping cream. Place the bowl over a saucepan with simmering water, over low heat, until all the chocolate is melted.
  • Meanwhile, dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Place the gelatin over low heat just until the gelatin dissolves and pour it over the melted chocolate mixture. Let the chocolate mixture cool completely at room temperature.
  • Whip the remaining 7 oz (200g) chilled whipping cream until soft peaks form. Add melted milk chocolate mixture and mix until well combined.

Start assembling the cake.

  • Place the first chocolate cake on a serving platter and place a cake ring around the cake lined with an acetate sheet.
  • Pour the chocolate mousse over the brownie and freeze for about 20-30 minutes to set slightly.

  • Prepare the salted caramel sauce. Place the sugar and water in a medium heavy-bottomed saucepan over medium-high heat, and cook without stirring until the sugar dissolves and gets a caramel color.
