Easy to prepare, these bars come together in a few simple steps. First, press the oat mixture into a baking dish to form the crust, followed by a generous layer of blueberry filling. Crumble the remaining oat mixture on top before baking to golden perfection.

These Blueberry Oat Crumble Bars are not only delicious but also nutritious, providing a good source of fiber and antioxidants from the oats and blueberries. They are perfect for any time of day and are sure to satisfy both kids and adults alike.

How to make Blueberry Oat Crumble Bars

Begin by preheating your oven to 350°F (180°C). Slightly grease a 9×13 inch (23×33 cm) pan and line it with parchment paper, ensuring that the edges extend beyond the sides of the pan to make it easier to lift the bars out.

In a bowl, combine the flour, oats, sugar, baking powder, and salt. Add the butter and vanilla extract, stirring until the mixture combines well and crumbly. Press ⅔ of this crumb mixture firmly into the bottom of the prepared pan to form the crust.

Next, place the blueberries into a separate bowl. Add the sugar, lemon juice, and cornstarch, then toss to coat the blueberries evenly. Spread the blueberry mixture over the crust in the pan.

Sprinkle the reserved ⅓ of the crumb mixture over the top of the blueberries.

Bake in the preheated oven for 40-50 minutes, or until the top is lightly browned.

Allow the bars to cool completely in the pan before cutting them into squares. Store any leftovers in an airtight container at room temperature or refrigerate for up to 4 days.

Ingredients

For the crust

  • 1 ½ cup (190g) all-purpose flour
  • 2 cups (200g) rolled oats
  • 3/4 cup (150g) sugar
  • 1 tsp (4g) baking powder
  • 1/2 tsp (2g) salt
  • 1 cup (226g) unsalted butter , room temperature
  • 2 tsp (10g) vanilla extract

Blueberry Filling

  • 20 oz (600g) fresh blueberries
  • 1/4 cup ¼ cup (50g) sugar
  • 2 tbsp (16g) cornstarch
  • juice from a lemon

Instructions

Prepare the crust.

  • Preheat oven to 350F (180C). Slightly grease a 9×13 inch (23x33cm) pan and line with parchment paper, in such a way that some edges are longer to make it easy to lift it up once it's set.
  • In a bowl, combine flour, oats, sugar, baking powder and salt. Add butter and vanilla and stir until combined and crumbly.
  • Press ⅔ of the crumb mixture into the bottom of the pan.

Prepare the blueberry filling.

  • Place the blueberries into a bowl. Add sugar, lemon juice and cornstarch and toss to coat. Spread the blueberries over the crust.
  • Sprinkle the reserved ⅓ crumb mixture over the blueberries.
  • Bake for 40- 50 minutes or until lightly browned.
  • Cool completely before cutting into bars.
  • Keep the leftovers in an airtight container at room temperature or refrigerate for up to 4 days.

These Cream Cheese Buns are beloved worldwide and are known under various names. One of the most well-known names for these delightful buns is Vatrushka. Vatrushka is enjoyed throughout Russia and other Eastern European countries. Today, you can find variations of these Cream Cheese Buns/Vatrushka in bakeries and cafes across the globe, each offering its unique twist on this classic delight.

Making these buns is easy and fun. First, you shape the dough into buns and  let them rise until they are light and airy. Then you need to create a well in the center of each and divide the cream cheese filling evenly. Then, you sprinkle the blueberries over the top. Finally, you bake them until they are golden.

The result is a warm, fragrant bun with a deliciously sweet and creamy center. These Blueberry Cream Cheese Buns are perfect for breakfast, a snack, or even dessert. They pair wonderfully with a cup of coffee or tea, making them a great choice for a cozy morning or a special afternoon treat. 

How to make the blueberry cream cheese buns

To create a batch of delightful cream cheese and blueberry buns, start by preparing the dough. In a large bowl, combine yeast with 1 teaspoon of sugar and 1/4 cup of lukewarm milk. Let this mixture rest for 5 minutes to activate the yeast.

Next, add the remaining ingredients to the bowl: flour, sugar, salt, the rest of the milk, an egg, vanilla extract, and softened butter. Knead the mixture for about 5 to 7 minutes until the dough is smooth and slightly pulls away from the sides of the bowl. Transfer the dough to an oiled bowl, cover it with plastic wrap, and let it rest in a warm space for about 1 hour until it has doubled in size.

Once the dough has risen, divide it into 12 equal pieces. Shape each piece into a bun and place them on a parchment paper-lined baking sheet. Cover the buns with a kitchen towel and let them rest for another 15 to 20 minutes. Meanwhile, preheat your oven to 350°F (180°C).

Prepare the cream cheese filling, by whisking together cream cheese, powdered sugar, an egg, and vanilla extract in a medium bowl until smooth. Transfer this mixture to a piping bag fitted with a plain tip.

How to shape the final buns

To shape the buns, press each one with a glass dipped in flour to create a well in the center. Fill the wells with the cream cheese mixture and top each bun with fresh blueberries. Brush the edges of the buns with beaten egg.

Bake the buns in the preheated oven for about 20 minutes or until they are nicely golden. Once baked, transfer the buns to a wire rack to cool slightly. For the finishing touch, dust the buns with powdered sugar before serving.

How to make chocolate blueberry mousse cake

Begin by preheating the oven to 350°F (180°C). Grease and line two 8-inch (20cm) springform pans with parchment paper.

How to prepare the cocoa brownie layers

In a bowl, whisk together the eggs, sugar, and salt until well combined. Incorporate the oil and vanilla extract. Sift the flour and cocoa powder, then whisk them into the egg mixture until fully incorporated. 

Divide the batter evenly between the prepared pans. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached. Allow the brownie layers to cool completely.

How to prepare the blueberry sauce

In a saucepan, combine fresh or frozen blueberries, sugar, and lemon juice. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for about 10-15 minutes, or until the mixture thickens. Strain the mixture through a sieve to achieve a smooth sauce. Let the blueberry sauce cool completely.

How to prepare the white chocolate mousse

Melt the white chocolate and 5 oz (145g) of whipping cream over a bain-marie. Allow the mixture to cool to room temperature. In a small bowl, let the gelatin powder soak in cold water for 5-10 minutes. Then, dissolve the gelatin over low heat and pour it into the chocolate mixture, stirring to combine. In another bowl, whip the chilled cream until soft peaks form. Gently fold the white chocolate mixture into the whipped cream until well combined.

Place the first brownie layer on a serving platter and secure a cake ring around it. Line the cake ring with an acetate sheet. Pour the white chocolate mousse over the brownie layer, spreading it evenly and smoothing the top. Freeze the assembled layer for 20-30 minutes to set.

Dissolve the gelatin in cold water and let it swell for about 5-10 minutes. Then, place the gelatin over low heat just until it dissolves, and mix it into the cooled blueberry sauce. In another bowl, whip the chilled cream until soft peaks form. Gently fold the blueberry mixture into the whipped cream until well combined.

Continue assembling the cake by cutting the second brownie layer with a 7-inch (18cm) cake ring. Place this layer on top of the white chocolate mousse layer. Pour the blueberry mousse over the second brownie layer, spreading it evenly and smoothing the top. Refrigerate the assembled cake for 4-6 hours to allow it to set.

Decorate the cake

To finish, prepare the whipped cream for decorating. Whip the cream with powdered sugar and vanilla extract until stiff peaks form. Transfer the whipped cream into a piping bag fitted with a 6B tip. Pipe the sweetened whipped cream onto the top of the cake in your desired design. Garnish with fresh blueberries and the cake is now ready to slice and enjoy.

  • 1/2 cup (62g) all-purpose flour

Blueberry Sauce

  • 10 oz (300g) fresh or frozen blueberries
  • 1/3 cup (70g) sugar
  • 2 tbsp (30ml) lemon juice

White Chocolate Mousse

  • 6 oz (180g) white chocolate
  • 5 oz (145g) whipping cream
  • 1/2 tbsp (5g) gelatin powder
  • 2 tbsp (30ml) cold water
  • 7 oz (200g) whipping cream (35% fat) , chilled

Blueberry Mousse

Instructions

This Ricotta Banana Blueberry Pie is a no-bake dessert perfect for summertime. Making it is super easy and it’s bursting with yummy flavors. It consists of a buttery biscuit crust topped with a sweet, caramelized banana layer, a creamy ricotta filling and a fresh blueberry sauce on top.

The pie looks amazing with its golden crust and colorful fillings. When you take a bite, you’ll taste the smooth ricotta cheese that’s a little tangy. The bananas are really sweet and mix perfectly with the ricotta. The blueberries add a burst of fresh and slightly sour flavor. The mix of flavors makes each bite super tasty and exciting.

How to prepare ricotta banana blueberry pie

At first you need to prepare the crust. Crush the biscuits using a food processor or take a zip lock bag and fill it with the biscuits, lock it, then use a rolling pin to crush all the biscuits.

Prepare the crust

In a large bowl mix together the crushed biscuits, the melted butter, brown sugar, salt and cinnamon, until all comes together. Press the mixture onto the bottom and edges of a 9 inch (23 cm) tart pan. Refrigerate the crust while you prepare the blueberry sauce and the caramelized bananas.

In a saucepan, boil together the blueberry (fresh or frozen), sugar and cornstarch, for 7-10 minutes. Set aside.

Slice the bananas and set aside. In a saucepan, melt the sugar until it turns golden brown, add in the butter, stir with a wooden spoon until it melts, then add in the banana slices. Keep cooking and stirring for 5-7 minutes, over medium heat, until they become soft and are completely caramelized. Set aside to cool.

Prepare the ricotta filling

In a large bowl, using a hand mixer, mix together the ricotta cheese, the cream cheese, powdered sugar and vanilla extract until stiff peaks form. Set aside.

Assemble the ricotta blueberry banana pie

Take the pie crust out of the fridge, place the caramelized bananas onto the bottom of the pie crust. Fill the pie crust with all of the ricotta filling. Top with the blueberry sauce. Refrigerate for at least an hour before serving.

Ingredients

Pie Crust

  • 10 oz (300g) digestive biscuits
  • 1/2 cup (110g) unsalted butter , melted
  • 1/4 cup (50g) brown sugar
  • 1 tsp (3g) cinnamon

Blueberry Sauce

  • 9 oz (250g) blueberries , fresh or frozen
  • 1/2 cup (100g) sugar
  • 1 tbsp (10g) cornstarch

Caramelized Bananas

  • 1/3 cup (70g) sugar
  • 2 bananas
  • 2 tbsp (30g) butter

Ricotta Filling

  • 9 oz (250g) ricotta cheese
  • 5 oz (150g) cream cheese
  • 1/2 cup (60g) powdered sugar
  • 1 tsp (5g) vanilla extract

Instructions

Prepare the pie crust.

  • Use a food processor or take a zip lock bag and fill it with the biscuits, use a rolling pin to crush all the biscuits.
  • In a large bowl mix together the crushed biscuits, the melted butter, brown sugar, salt and cinnamon, mix until all comes together.
  • Press the mixture onto the bottom and edges of a 9-inch (23 cm) tart pan.
  • Refrigerate the crust until you prepare the filling.

Prepare the blueberry sauce.

  • In a saucepan, boil together the blueberries, sugar and cornstarch, for 7-10 minutes.
  • Set aside to cool.

Prepare the caramelized bananas

  • Slice the bananas, set aside.
  • In a saucepan, melt the sugar until it turns golden brown.
  • Add in the butter, all at once, and stir with a wooden spoon until is completely melted.
  • Add in the banana slices.
  • Keep cooking and stirring for 5-7 minutes, over medium heat, until they are covered in caramel.
  • Set aside to cool.

Prepare the ricotta filling.

  • In a large bowl, using a hand mixer, mix together the ricotta cheese, cream cheese, powdered sugar and vanilla extract until stiff peaks form.
  • Set aside.

Assemble the pie.

  • Take the pie crust out of the fridge.
  • Place the caramelized bananas onto the bottom of the pie crust.
  • Fill the pie crust with all of the ricotta filling.
  • Top with the blueberry sauce.
  • Refrigerate for at least an hour before serving. Enjoy!

In a saucepan, combine fresh blueberries, sugar, lemon juice, and cornstarch. Stir the mixture and bring it to a boil. Allow it to simmer for approximately 5 minutes until the blueberries become soft and the sauce thickens. Once done, strain the sauce and set it aside to cool.

How to make the crust 

Preheat your oven to 350°F (180°C). Take an 8-inch (20cm) square springform pan and line it with parchment paper. In a food processor, crush graham crackers or digestive biscuits until they turn into fine crumbs.

Add melted butter and sugar to the crumbs and mix until they are evenly moistened. Press this crumbly mixture firmly onto the bottom of the prepared pan using the back of a spoon. Bake the crust in the preheated oven for 10-13 minutes until it turns golden. Once baked, set it aside to cool completely.

How to prepare the cream cheese filling 

In a large bowl, beat the cream cheese until it becomes smooth and creamy. Add sugar, a pinch of salt, and cornstarch to the cream cheese, mixing until everything is well combined. Crack an egg into the mixture and blend it thoroughly. Stir in the vanilla extract, lemon zest, and sour cream, ensuring a smooth and well-blended batter. Be cautious not to overmix the batter to avoid incorporating excess air.

How to assemble and bake the blueberry cheesecake bars 

Pour the prepared cream cheese filling over the cooled crust in the pan. Take the blueberry sauce you prepared earlier and gently spoon it on top of the cream cheese layer. Use a skewer to create beautiful swirls on the surface, combining the two layers to create an enticing marbled pattern.

Place the crackers or digestive biscuits into the bowl of a food processor and crush them until they turn into fine crumbs. Add sugar to the crumbs and pour in the melted butter. Mix everything together until the mixture is evenly moistened.

Take the mixture and press it firmly into the bottom of a 8-inch (20 cm) pan. Bake the crust at 350°F (180°C) for 10-13 minutes until the crust becomes lightly golden. Once baked, set the crust aside and allow it to cool completely.

Now, it’s time to reduce the oven temperature to 300°F (150°C) in preparation for baking the cheesecake.

Prepare the crisp topping and blueberry filling

For the crisp topping, combine oats, sugar, and all-purpose flour in a medium bowl, whisking until well combined. Incorporate melted butter into the mixture until it becomes crumbly. Set it aside for now.

Ingredients

Berry Sponge Cake

  • 2 eggs , separated
  • 1/2 cup (100g) sugar , divided
  • 1/2 tsp (3g) vanilla extract
  • 3 tbsp (45ml) vegetable oil
  • 3 tbsp (45ml) water
  • ¾ cup + 1tbsp (110g) all-purpose flour
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1g) salt
  • 9 oz (250g) mixed berries (strawberries, blueberries and raspberries)
  • 2 tbsp (20g) all-purpose flour , for tossing

Berry Sauce

  • 10 oz (300g) fresh or frozen mixed berries
  • 1/3 cup (70g) sugar
  • 1 tbsp (15ml) lemon juice

Berry Cream Cheese Mousse Cake

  • 1/2 tbsp (5g) gelatin powder
  • 2 tbsp (30ml) water
  • 9 oz (250g) cream cheese
  • 1/4 cup (30g) powdered sugar
  • 1 cup (240ml) whipping cream

For Decoration

Instructions

Prepare the berry sponge cake.

  • Preheat the oven to 340F (170C). Grease and line the bottom of an 8-inch (20 cm) pan with parchment paper.
  • Separate whites from yolks.
  • In a medium bowl mix yolks with 1/4 cup (50g) sugar and vanilla extract, until creamy and pale yellow colored.
  • Gradually mix in oil and then add the water.
  • Incorporate the baking powder and flour into the yolk mixture and set aside.
  • In a large bowl mix egg whites with salt until foamy. Gradually add the remaining 1/4 cup sugar (50g).
  • Continue mixing until soft peaks form.
  • Gently fold a spoon of whipped whites into the yolk mixture and then gently fold the yolk mixture into the whipped whites.
  • Place the mixed berries into a bowl and toss with 2 tablespoons of flour.
  • Gently fold the berries into the batter.
  • Pour the batter into the prepared pan.
  • Bake for 35-40 minutes, until a toothpick inserted into the center comes out clean.
  • Let it cool for about 10 minutes. Remove from the pan and cool completely on a rack.

Meanwhile, prepare the berry sauce.

  • Place chopped strawberries, raspberries and blueberries, sugar and lemon juice in a small saucepan and place over medium heat.
  • Bring to a boil and cook for about 10 minutes until thickens. Remove from heat and set aside to cool.
  • Reserve 4 tablespoons (60g) of berry sauce for assembling.

Prepare the berry cream cheese mousse.

  • Dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Dissolve over low heat and pour over the remaining berry sauce. Mix to combine.
  • In a large bowl mix cream cheese with powdered sugar. Add berry gelatin mixture and mix to combine.
  • In another bowl whip the chilled whipping cream until stiff peaks form. Gradually fold into cream cheese and berry mixture.

Assemble the cake.

  • Invert the cake onto a serving platter.
  • Spread the reserved 4 tablespoons of berry sauce evenly over the cake.
  • Place a cake ring around the cake. Line an acetate sheet around the cake and pour the berry cream cheese mousse over the cake. Smooth the top.
  • Refrigerate for at least 4-6 hours or overnight.
  • Decorate the cake with fresh raspberries, blueberries and strawberry halves. Dust with powdered sugar. Enjoy!

How to make poppy seed blueberry cake

The recipe for this cake is very easy and straightforward.

Start by making the poppy seed cake. In a bowl, mix together all the dry ingredients, and set aside. Separate the whites from yolks. In another bowl, using a hand mixer, beat the egg whites until stiff peaks form and set aside. Using a hand mixer, mix the sugar and the egg yolks until light and pale. Add in the water, one tablespoon at a time, and mix until incorporated. Add in the dry ingredients. Mix until incorporated. Using an off-set spatula, gently fold in the beaten egg whites into the cake batter. Line a 6-inch (15 cm) cake pan with parchment paper. Bake for about 30-40 minutes at 350F (180C), or until a toothpick inserted comes out clean. Allow to cool completely.

Make the lemon syrup by adding the water, sugar and lemon juice in a saucepan and let boil for 3 minutes.

Make the blueberry sauce. In a saucepan add the blueberries, sugar and cornstarch. Bring to a boil and let it simmer for 5 minutes. Allow to cool.

Make the vanilla cream cheese frosting by mixing the cream cheese with powdered sugar and vanilla extract, using a hand mixer, until stiff peaks form.

How to assemble the cake

After the cake is cooled, you can start assemble it. Take the poppy seed cake and cut three evenly horizontal layers. Place one layer of cake over a serving platter and put a 6 inch (15 cm) cake ring around it and an acetate sheet between the cake layer and the cake ring. This will help the cake to stay still.

Using a brush, gently apply 3-4 tablespoons of lemon syrup over the cake layer. With a spatula, spread evenly about 1 cup of vanilla cream cheese over the cake layer. Add 3-4 tablespoons of blueberry sauce over the cream cheese.

Add the second layer of cake and repeat the previous 3 steps. Finish with the third layer of cake and apply 3-4 tablespoons of lemon syrup. Spread the remaining vanilla cream cheese on top. Decorate with fresh blueberries, mint leaves and lemon zest.

  • Juice from one lemon

Blueberry Sauce

  • 5 oz (150g) blueberries . fresh or frozen
  • 4 tbsp (60g) sugar
  • 2 tsp (5g) cornstarch

Vanilla Cream Cheese Frosting

  • 1 pound (450g) cream cheese
  • 1/2 cup (60g) powdered sugar
  • 1 tsp (5g) vanilla extract
