  • 1/2 tsp (2g) salt
  • 7 oz (200g) ripe bananas , about 2 medium bananas
  • 2 large eggs
  • 1/4 cup (90g) honey
  • 1/3 cup (75ml) vegetable oil
  • 1 tsp (5g) vanilla extract
  • 1 cup (180g) semisweet chocolate chips

Instructions

Next, take ripe bananas and mash them in a medium bowl using a fork.In a separate medium-sized bowl, combine oat flour, almond flour, salt, baking powder, baking soda, and cinnamon. This mixture provides the bread with a hearty texture and a delightful blend of flavors.

Moving to a larger bowl, use a whisk or an electric hand mixer to cream together eggs, honey or maple syrup, butter, and oil. This creates a smooth, creamy base for your banana bread. Add yogurt and vanilla extract, making sure everything is well blended.

Now, gently mix in the mashed bananas. Gradually incorporate the flour mixture into the wet ingredients. Once the batter is well-mixed, carefully pour it into the prepared loaf pan.

This Ricotta Banana Blueberry Pie is a no-bake dessert perfect for summertime. Making it is super easy and it’s bursting with yummy flavors. It consists of a buttery biscuit crust topped with a sweet, caramelized banana layer, a creamy ricotta filling and a fresh blueberry sauce on top.

How to prepare ricotta banana blueberry pie

At first you need to prepare the crust. Crush the biscuits using a food processor or take a zip lock bag and fill it with the biscuits, lock it, then use a rolling pin to crush all the biscuits.

Prepare the crust

In a large bowl mix together the crushed biscuits, the melted butter, brown sugar, salt and cinnamon, until all comes together. Press the mixture onto the bottom and edges of a 9 inch (23 cm) tart pan. Refrigerate the crust while you prepare the blueberry sauce and the caramelized bananas.

Prepare the blueberry sauce and caramelized banana slices

In a saucepan, boil together the blueberry (fresh or frozen), sugar and cornstarch, for 7-10 minutes. Set aside.

Slice the bananas and set aside. In a saucepan, melt the sugar until it turns golden brown, add in the butter, stir with a wooden spoon until it melts, then add in the banana slices. Keep cooking and stirring for 5-7 minutes, over medium heat, until they become soft and are completely caramelized. Set aside to cool.

Prepare the ricotta filling

In a large bowl, using a hand mixer, mix together the ricotta cheese, the cream cheese, powdered sugar and vanilla extract until stiff peaks form. Set aside.

Assemble the ricotta blueberry banana pie

Take the pie crust out of the fridge, place the caramelized bananas onto the bottom of the pie crust. Fill the pie crust with all of the ricotta filling. Top with the blueberry sauce. Refrigerate for at least an hour before serving.

I don’t know how many of you are familiar with this German Mole Cake – Maulwurfkuchen. It is a very popular cake that many are preparing it using a store-bought Mole Cake Mix. This is a very easy cake that can be made from scratch, and that is what I am going to share with you. There are many recipes for this cake, I made my own recipe , a German Mocha Mole Cake, combining one of my favorite chocolate cake recipes with fresh bananas and mocha whipped cream.

In the classic mole cake there is no coffee but I have always loved how bananas, chocolate and coffee go together. Coffee always enhances the chocolate flavor in every dessert. The cake consists of a chocolate sponge cake, filled with fresh bananas, mocha whipped cream with chocolate and coated into chocolate cake crumbs. 

How to make German Mocha Mole Cake.

First, you have to prepare a chocolate cake and let it cool completely. For the chocolate cake I use a chocolate cake recipe that I love, the one used in this Chocolate Rose Cake and adapted for this recipe. The batter is made using hot coffee which makes the batter a bit runny but once baked it is moist and chocolatey, not to mention very easy to prepare. 

Once cooled, use a tablespoon to hollow out the center of the cake and turn the reserved cake into crumbs. 

Make the mocha whipped cream filling by whipping cream with instant coffee powder and powdered sugar. You can consider using gelatin or cream stabilizer if desired. I didn’t feel the need but go for it if that makes you feel more comfortable.  In the end,fold some mini chocolate rocks or shredded chocolate. 

Fill the cake with fresh bananas, and cover with the mocha whipped cream in a shape dome. 

Coat with cake crumbs and the cake is ready.

German Mocha Mole Cake – Maulwurfkuchen

This German Mocha Mole Cake is made with a chocolate cake, filled with bananas, mocha whipped cream with chocolate, and coated into chocolate cake crumbs.

Ingredients

Chocolate Mocha Cake

  • 1 cup (125g) all-purpose flour
  • 1/3 cup (40g) unsweetened Dutch-processed cocoa powder
  • 2 tsp (8g) baking powder
  • 1/2 tsp (2.5g) salt
  • 3/4 cup (150g) sugar
  • 1 egg
  • 1/4 cup (60g) vegetable oil
  • 1/2 cup (120g) buttermilk
  • 1 tsp (5g) vanilla extract
  • 1/2 cup (120ml) hot coffee

For filling

  • 3 medium fresh bananas

Mocha Whipped Cream

  • 2 cups (500g) whipping cream 
  • 1/4 cup (30g) powdered sugar
  • 2 ½ tsp (4g) instant coffee powder
  • 1 oz (30g) mini chocolate rocks

Instructions

Prepare the chocolate cake.

  • Preheat the oven to 350°F (180°C). Grease with butter a 8-inch (20 cm) pan and line with parchment paper.
  • In a medium bowl whisk together the flour, cocoa powder, baking powder and salt.
  • In another bowl mix egg with sugar and oil until well combined. Mix in buttermilk and vanilla extract. Incorporate flour mixture until well combined. Add hot coffee and mix to combine.
  • Pour the batter into the prepared pan.
  • Bake for about 25-30 minutes until a toothpick inserted into the center comes out clean or with a few crumbs attached.
  • Let cool completely.
  • Use a tablespoon to hollow out the center of the cake, leaving an edge of ½ inch (1cm).
  • Turn the reserved cake into crumbs.

Prepare the mocha chocolate whipped cream.

  • In a large bowl whip cream with powdered sugar and instant coffee powder until stiff peaks form.
  • Fold in the mini chocolate pieces.
  • Fill the cake with whole bananas.
  • Cover the cake with the mocha whipped cream in a dome shape.
  • Coat the cake with reserved cake crumbs.
  • Press down lightly.
  • Refrigerate for at least 30 minutes or until ready to serve. Enjoy!

How to make cream cheese banana bread.

The recipe for this banana bread is really easy and quick to prepare. First, you need to have about 2 medium ripe bananas that you can simply mash with a fork. 

For the banana cake batter, you don’t need special utensils, a whisk and a bowl are just enough. Mix egg with both white and brown sugar, add butter, vegetable oil, sour cream and vanilla. Mix in banana puree and incorporate dry ingredients. It is really quick and ready in a matter of minutes. For the banana batter, I like to use both butter and oil for this recipe. The oil for extra moisture and butter for its great flavor.

Once the banana batter is prepared, quickly mix the cream cheese filling ingredients. Pout about two-thirds of the banana batter into a parchment paper-lined loaf pan. Add the cream cheese filling and cover with the remaining banana batter. Swirl with a knife. 

At this point, if you like, you can add walnuts or pecans on top of the cake to add more texture and flavor. 

Bake the cake until a toothpick inserted into the center comes out clean. Let it cool before slicing it.

Ingredients

  • cup (190g) all-purpose flour
  • 1/4 tsp (2g) baking soda
  • tsp (6g) baking powder
  • 1 tsp (3g) cinnamon
  • 1/2 tsp (3g) salt
  • 1 egg
  • 1/3 cup (70g) sugar
  • 1/3 cup (70g) brown sugar
  • 3 tbsp (40g) melted butter
  • 3 tbsp (40g) vegetable oil
  • 1 tsp (5g) vanilla extract
  • 1/4 cup (60g) sour cream
  • 7 oz (200g) banana puree , from about 2 ripe bananas

For the Cream Cheese Filling

  • 7 oz (200g) cream cheese, room temperature
  • 1 egg
  • 2 tbsp (30g) sugar
  • 1 tbsp (10g) flour
  • 1/2 tsp (3g) vanilla extract

Instructions

  • Preheat the oven to 340°F (170°C).
  • Lightly grease a 8½ x 4½-inch (21x 11 cm -1 liter capacity) loaf pan and line with parchment paper.
  • Place the bananas in a medium bowl and mash with a fork.
  • In a medium bowl combine flour, salt, baking powder, baking soda and cinnamon.
  • In a large bowl, using a whisk or an electric hand mixer, cream together the egg with both sugars, butter and oil. Add sour cream and vanilla extract and mix until well incorporated.
  • Mix in the mashed bananas.
  • Gently incorporate the flour mixture. Set aside.
  • In a medium bowl whisk together the cream cheese, with egg, sugar, vanilla extract and flour.
  • Pour about two-thirds of the banana batter into the prepared loaf pan. Add the cream cheese mixture and cover with the remaining cake batter. Use a knife to create swirls.
  • Bake for about 50-60 minutes until golden brown and a toothpick inserted into the center comes out clean. If the bread browns too fast, cover with aluminum foil and continue baking.
  • Let bread cool in the pan for 10 minutes, and then invert onto a wire rack to cool completely.
  • Enjoy!

I am so excited about how this cake turned out. I think it is one of the most flavorful cakes I have ever made. You can never go wrong combining bananas with chocolate, caramel, toasted pecans and coffee. The salted caramel layer with bits of bananas and crunchy toasted pecans is the star of the cake. I really love its flavor and texture. With its play of textures and flavors, this cake truly is an amazing symphony for your taste buds.

The cake is really easy to prepare. You can prepare each step really quickly, in a matter of minutes. I highly recommend not skipping the caramel, banana and pecan layer, it really gives an amazing texture.

Ingredients

Banana Chocolate Sponge Cake

  • 1 egg
  • 2 tbsp (30g) sugar
  • 2 tbsp (30g) dark brown sugar
  • 3 tbsp (42g) vegetable oil
  • 1/4 cup (30g) cocoa powder
  • 1/4 cup (30g) all-purpose flour
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1g) baking soda
  • 1/4 tsp (1g) salt
  • 1 tsp (5g) vanilla extract
  • 1 ripe banana (80g) , mashed

Pecan Banana Caramel Filling

  • 1/2 cup (100g) sugar
  • 1 tbsp (15ml) water
  • 2/3 cup (70g) pecans , toasted, cut into smaller pieces
  • 2 tbsp (30g) whipping cream
  • 1 tbsp (15g) butter
  • 1 large banana (130g) ,cut into slices 
  • 1/2 tsp (3g) salt

Caramelized Chocolate Mousse

  • 8 oz (230g) caramelized chocolate ,cut in small pieces
  • 2/3 cup (160g) whipping cream
  • 1 ½ cup (360g) whipping cream (35% fat) , chilled
  • 2 tsp (8g) gelatin powder
  • 3 tbsp (45ml) cold water

For Decoration

  • 7 oz (200ml) whipping cream chilled
  • 1/2 tsp (1g) instant coffee powder
  • Banana chips
  • Mini chocolate rocks
  • Caramelized chocolate curls

Instructions

Prepare the Banana Chocolate Sponge Cake.

  • Preheat the oven to  350°F (180°C). Grease with butter a 8 inch (20cm) pan and line with parchment paper.
  • In a medium bowl, stir together flour, cocoa powder, baking powder, baking soda and salt.
  • In another bowl mash banana with a fork and set aside.
  • In a large bowl add egg, both sugars, vanilla extract and vegetable oil. Mix until well combined. Add mashed banana and mix to combine.
  • With the mixer on low, incorporate the flour mixture.
  • Pour batter into the prepared pan.
  • Bake for 10-12 minutes, until a toothpick inserted into the cake comes out clean. Let cool completely and transfer to a serving plate.

Prepare the Pecan Banana Caramel Filling.

  • Low the oven temperature to  300°F (150°C).
  • Place the pecans into a parchment paper lined baking sheet and let them toast for 15 minutes. When cool, cut the pecans in smaller pieces.
  • Cut a large banana into thick slices.
  • Place the sugar and water in a medium heavy bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a dark caramel color.
  • Add the cream. It will bubble a little bit.
  • Add the banana slices, butter and salt and let cook for about 1 minute stirring constantly with a wooden spoon or spatula.
  • Remove from heat and add the toasted pecans.
  • Spread the pecan banana caramel filling over the chocolate banana sponge cake and refrigerate until you prepare the chocolate mousse.

Prepare the caramelized chocolate mousse.

  • In a heatproof bowl add the caramelized chocolate and 2/3 cup (160g) whipping cream. Place the bowl over a saucepan with simmering water, over low heat, until all the chocolate is melted.
  • Meanwhile dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Dissolve gelatin over low heat, pour over the melted chocolate and stir to combine. Let the chocolate mixture cool completely at room temperature.
  • Whip the remaining 1 1/2 cup (360g) chilled whipping cream until soft peaks form. Add melted chocolate mixture and mix until well combined.

Assemble the cake.

  • Place a cake ring around the cake and line with an acetate sheet.
  • Pour the mousse on sides and top. Smooth the top using an offset spatula.
  • Cover and refrigerate for 4-6 hour or overnight.

Decorate the cake.

  • Whip cream with instant coffee powder until stiff peaks form. Transfer to a piping bag fitted with a St Honore Tip.
  • Starting from the center of the cake pipe a flower.
  • Sprinkle mini chocolate rocks and crushed banana chips. Finish the decorations with  some caramelized chocolate curls. Enjoy!
