How to make tortilla egg muffins

First, preheat the oven to 350°F (180°C) and use butter to grease 12 muffin cups. Leave them aside for later use.

Next, cook the bacon on medium-high heat until it turns crisp. Then, move it onto a plate lined with a paper towel and let it cool for a bit.

In a medium-sized bowl, whisk together the eggs, salt, pepper, nutmeg, and cream. Keep it aside while you prepare the tortilla cups.

Cut the flour tortillas into 12 circles, each about 3.5-4 inches (9-10cm) wide. You can use a cookie cutter, bowl, or cup – whichever works best for you.

Line the muffin cups with these tortilla circles.

Now, distribute 3 tablespoons (15g) of Parmesan cheese, the bacon, green onion, and feta cheese evenly among the tortilla cups.

Pour the egg mixture into the cups, making sure to divide it equally.

Sprinkle the remaining Parmesan cheese and some black pepper on top.

Bake for approximately 15-20 minutes, or until the tortilla cups turn a golden brown and the egg mixture puffs up nicely.

Move them onto a cooling rack and add a finishing touch of freshly ground black pepper and green onion. Then, it’s time to savor your creation!

This Potato Crust Quiche is a healthy, delicious, and comforting dish that combines the creamy texture of quiche with the savory flavor of potato crust. How to make potato crust quiche

First, you have to prepare the potato crust. Grate the potatoes and rinse well under cold water. Use a kitchen towel to squeeze as much liquid as possible. Transfer the potatoes to a large bowl and mix with salt, pepper, garlic powder, and olive oil. 

Spread the potatoes over the base and sides of a greased pie pan and press slightly. Bake at 400F (200C) for 30 minutes until slightly golden. While the crust is baking, cook the bacon in a medium frying pan until crisp and drain on paper towels. Grate the cheese and set aside until ready to use. Reduce the oven temperature to 350F (180C).

Now you can prepare the filling by whisking together the eggs with cream, salt, pepper, nutmeg and chopped green onions. 

At this point, you can easily customize this potato crust quiche to suit different dietary needs and preferences. Besides being gluten-free, you can adapt it to make it vegetarian or vegan too, by using dairy-free cheese and leaving out the bacon. You can use various ingredients for the filling, like spinach, red pepper, or mushrooms, and add more nutrients to this potato dish. 

Fill the potato crust with grated cheese and crispy bacon.  Pour the egg mixture over the potato crust. Bake in the oven until the filling is set and the top is golden brown.

  • 2 tbsp (30g) olive oil

  • 8 oz (230g) bacon , cut into small pieces
  • 4 eggs
  • 1/2 tsp (3g) salt

  • 1 cup (240g) cooking cream , 30% fat
  • 1 cup (100g) Gruyere or cheddar cheese , grated
  • 2-3 green onions , chopped

Instructions

Prepare the potato crust.

  • Preheat the oven to 400F (200C). Grease with butter a 9-inch (23cm) pie pan.
  • Peel the potatoes. Use the large holes of the grater to grate the potatoes.
  • Rinse well under cold water. Drain and transfer the potatoes into a kitchen towel and squeeze as much liquid as you possible can.
  • Place the potatoes into a large bowl. Add salt, pepper, garlic powder and olive oil. Stir to combine.
  • Spread the potato mixture over the base and sides of the prepared pie pan. Press slightly.
  • Bake for 30 minutes. Let cool slightly while you prepare the filling.

Prepare the filling.

  • In a medium frying pan, cook the bacon over medium-high heat until crisp. Remove and drain on paper towels.
  • Reduce oven temperature to 350F (180C).
  • In a medium bowl whisk the eggs with salt, pepper, nutmeg and green onions. Add cream and whisk until well combined.
  • Spread the cooked bacon and grated cheese over the potato crust. Pour the egg mixture over the cheese and bacon.

This crustless quiche recipe is very easy and quick to prepare and is made with basic ingredients you usually have in house. For this recipe, you simply have to cook some bacon slices until crisp. In that bacon grease, you will then sauté some onion and a bit of spinach. Then you quickly mix some eggs with cream and milk and stir in the bacon and onion spinach mixture.   • Add the spinach and let them wilt. Remove from heat and let cool slightly.
  • In a large bowl add eggs, salt, pepper and a pinch of nutmeg. Whisk to combine.
  • Add cream and milk and whisk to combine.
  • Add cheese, onion and spinach mixture. Add the crumbled bacon and stir to combine.
  • Pour the mixture into the greased cast iron pan.
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool for 10 minutes before serving.

These Crispy Sliced Roasted Potatoes are one of the best-roasted potatoes you can ever make. Potatoes never looked more beautiful than this and they taste as good as they look. Thinly sliced potatoes tossed in olive oil, Parmesan, garlic, breadcrumbs, and thyme are roasted to golden perfection and served with crispy bacon bits. There is no doubt these potatoes are a great side dish choice for Thanksgiving or Christmas or any other occasion at any other time of the year.

How to make Crispy Sliced Potatoes

This recipe for Crispy Sliced Potatoes is very easy to prepare, doesn’t require a lot of ingredients, is easily adjustable, and is aesthetically very pleasing.

First, use a mandoline, or a food processor to slice potatoes very thinly. Transfer the sliced potatoes to a large bowl. Add olive oil, Parmesan cheese, thyme, garlic, breadcrumbs, salt, and pepper. Toss to coat evenly.
Layer the potato slices into stacks and arrange them in a greased 9-inch (23cm) pan, stacked vertically.

Bake uncovered for 60-70 minutes at 375°F (190°C), until the edges and tops are crisp and golden brown and the centers are tender. Before serving sprinkle crispy bacon bits and fresh thyme and serve!

Parmesan, garlic, and thyme are adding an amazing flavor but feel free to use your favorite herbs or another type of cheese to better suit your tastes.

  • 1 small head (200g) of cauliflower

  • To cook the bacon preheat the oven to 400F (200C). Line a baking sheet with parchment paper and place bacon strips on it. Bake until bacon is crispy for about 15-20 minutes. Transfer bacon on paper towels to remove the excess fat. Crumble it up in small pieces and reserve for later use.
  • Separate broccoli and cauliflower florets in bite size pieces, add to a large bowl and add red onion, dried cranberries, bacon crumbles and sliced almonds.
  • Season with salt and pepper.
  • Make the salad dressing. In a small pitcher combine mayonnaise, sour cream, vinegar, mustard , sugar,  salt and pepper. Taste and adjust based on desired acidity.
  • Toss broccoli with salad dressing.
  • Right before serving top with more bacon crumbles and almonds.

  • 2 tbsp (30g) unsalted butter , melted

Instructions

  • In a large skillet over medium low heat, melt 2 tablespoons of butter. Add sliced fennel, sprinkle with salt and pepper and stir to coat. Reduce heat to low, cover, and cook until fennel is softened but not brown, stirring often, about 15 minutes. Let cool at room temperature.
  • To cook the bacon for topping preheat the oven to 400F (200C). Line a baking sheet with parchment paper and place bacon strips on it. Bake until bacon is crispy for about 15-20 minutes. Transfer bacon on paper towels to remove the excess fat. Crumble it up in small pieces and reserve for later use.
  • Preheat the oven to 350 F(180 C).
  • Bring potatoes to a boil in a large pot with water that has been generously salted. Cook until the potatoes are perfectly tender. Drain the potatoes and return them in the hot pot on low heat and shake them around for a couple of minutes to remove the excess moisture.
  • Using a potato masher, mash the potatoes with ¼ cup butter, add sour cream and half and half. Season with salt and pepper. Incorporate the reserved fennel and 1 cup of gruyere cheese. Do not over mix. Transfer the potatoes to a buttered 2 quart (2 liters) )shallow baking dish.
  • To make the pretzel crumbs topping, add pretzel to a ziplock bag and using a rolling pin, roll it over the bag,  back and forth to crush them into coarse crumbs. Transfer to a bowl, and mix in melted butter and Dijon mustard.
  • To complete the casserole,  top the mashed potatoes with crumbled bacon, remaining ½ cup cheese and top with pretzel crumbs mix.
  • Bake in the oven for approximately 20 minutes or until cheese is melted and crumbs are golden brown.

Ingredients

Filo Shells

  • 1 package (270g) filo pastry sheets
  • 3 tbsp (45g) butter , melted

Filling

  • 2.5 oz (70g) , pancetta or bacon
  • 4 large eggs
  • 3 tbsp chopped fresh chives
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1/3 cup (30g) Parmesan cheese , grated
  • 1/4 cup (60g) cream

Instructions

  • Preheat oven to 375F (190C) and grease 12 muffin cups with butter. Set aside until ready to use.
  • Fry pancetta or bacon over medium-high heat until crisp. Transfer to a bowl and let cool slightly.
  • In a medium bowl whisk the eggs with salt, pepper and cream. Add Parmesan cheese, chives and fried pancetta. Set aside until you prepare the filo shells.

How to make Quiche Lorraine

Begin by preparing the crust. In a medium bowl, whisk together flour, sugar, and salt. Incorporate butter using a pastry blender, fork, or pastry processor until crumbs form. Add water and stir until incorporated.

Wrap the dough in plastic wrap, shape it into a rectangle, and refrigerate for 1 hour. On a lightly floured surface, roll the dough into an 8×16 inch (20x40cm) rectangle.

Line a 5×14 inch (12x36cm) tart pan with the rolled dough and press the edges. Trim the excess dough. Prick the shell with a fork and refrigerate for 30 minutes.

Preheat the oven to 350°F (180°C). Line the shell with parchment paper and fill with pie weights or beans. Bake for 20 minutes. Remove the parchment paper and weights, and bake for 10 more minutes. Let it cool slightly on a cooling rack.

How to prepare the quiche filling

Cook the bacon over medium-high heat until crisp, then remove and drain on paper towels. In a medium bowl, whisk together eggs, salt, pepper, nutmeg, and chives. Add cream and milk, and whisk until well combined and air is incorporated.

Spread the cooked bacon and grated cheese over the crust, then pour the egg mixture over the cheese. Bake for 30-40 minutes until set and golden. Transfer to a cooling rack to cool slightly before serving.
