This Pomegranate Champagne Cocktail is a perfect treat for special occasions. It is very simple to prepare, based on the Classic Champagne Cocktail where Champagne is poured over a sugar cube soaked in bitters. I added a few pomegranate arils for an elegant splash of color.

The Champagne still shines through and is not replaced or hidden by any other juices. The bitters bring a wonderful taste to this drink while the sugar cube dissolves slowly showing all those bubbles and making a wonderful effect.

I have to admit that I’ve been trying pumpkin in various recipes, but never in a smoothie. For some reason, it seemed to me that it wouldn’t go very well. I’ve been asked for a recipe for a pumpkin smoothie and while searching for good ideas I ran over a recipe that used apples and oats alongside pumpkin. I loved the idea, a healthy and nutritious recipe that kids might enjoy as well, so I gave this Pumpkin Apple Smoothie a try.

This smoothie is incredible, beyond my expectations. It is true when everybody says that it tastes like a cake just in a healthier way. Pumpkin and apples make such a good combination turning this pumpkin-apple smoothie into a perfect fall treat. You can start your day with this pumpkin apple smoothie or have it as a snack later in the day.

My daughters would never eat roasted pumpkin by itself, if I hide it in various recipes like my chocolate pumpkin cheesecake, pumpkin muffins, pumpkin roll, pumpkin Dutch baby pancake and now in smoothies, they like it very much. I even filled some popsicle molds with some of this smoothie, put them in the freezer, and turned them into an incredible treat they enjoyed later.

This recipe for Pumpkin Apple Smoothie is adapted after Kristine’s Kitchen with slightly fewer changes. Added some more pumpkin and a whole banana, some honey, and a bit of vanilla along with all the pumpkin pie spice. Give it a try, it is a must for this time of the year.

Ever since I visited Barcelona this summer I’ve promised some of you to share a traditional recipe for red wine Sangria. As you know Sangria is one of the most popular drinks in Spain. There is nothing better in a hot summer day than take a moment of respite and enjoy a cold Sangria over ice in the company of your beloved friends.

Sangria is the kind of drink perfect for parties, family gatherings as it is quick, easy to prepare and can be made a day in advance.

All you need is a dry red wine, some fruits, your favorite brandy or liqueur and some sparkling water. Simple as that. In no more than 10 minutes this beautiful, colorful cocktail is done. The only thing is that is better to let it chill for at least 4 hours and even better overnight so the flavors combine, all the juices from fruits adding sweetness and aroma to the red wine.

I was quite excited about this recipe as it is very similar in taste and look like the ones served in Spain. Though Sangria is it often served during summer this is definitely a recipe worth making all year-round.

How to make melon mojito

To whip up this refreshing melon mojito, start by cutting 4 melon slices into 1-inch pieces. Then, puree the melon in a food processor until it’s smooth, yielding about 1 cup of melon puree. Additionally, cut 1 slice into small pieces for serving purposes.

Next, in a bowl, combine lime juice and sugar, stirring until the sugar is fully dissolved. Add fresh mint leaves to the mixture and gently mash them with a muddler to release their aromatic oils.

In a pitcher, combine the melon puree with the lime-mint mixture and water, stirring until everything is well incorporated.

When you’re ready to serve, fill your glasses halfway with ice cubes. Add a handful of pomegranate seeds, along with the small pieces of melon and additional mint leaves for garnish. Finally, pour the melon lemonade mixture into each glass, and enjoy this delightful and refreshing melon mojito!

Did you know that you can still make a Vanilla Latte Macchiato or a cappuccino at home without having an Espresso Machine or a Steam Wand? All you need is a simple French press. Lately, I’ve been delighting each morning with this Vanilla Latte Macchiato, and I wanted to share this with you as it is so easy to prepare.

Latte Macchiato is as you all know a beverage that contains coffee and it differs from a caffe latte as the milk is added first in the glass and then the espresso creates  a “layered” drink that everybody loves.

So let’s enjoy this drink together. Happy morning to everybody.

How to make vanilla latte macchiato without a machine or steam wand

To make a delicious layered coffee, begin by heating the milk with vanilla and sugar (if desired) in a saucepan. Ensure the milk is hot, but it does not need to boil.

Next, prepare the espresso using your preferred method, either a French press or a traditional stovetop espresso maker. If you find the espresso too strong, dilute it with a little hot water.

Pour the hot milk into a French press. Cover with the lid and pump the plunger up and down vigorously until you achieve the desired froth.

Fill a glass almost to the top with the frothy milk. Set the glass aside for a minute, allowing the milk to settle and separate from the thick foam on top.

Slowly pour the espresso over the milk. You’ll see the espresso layer settle between the milk and the foam, creating a beautiful three-layer effect.

Vanilla Latte Macchiato

Easy recipe for Vanilla Latte Macchiato, an amazing "layered" drink, without having an Espresso Machine or a Steam Wand. All you need is a simple French Press.

Ingredients

  • 2/3 cup milk
  • 1 shot of espresso
  • 1 ½ tsp sugar , optional
  • 1/2 tsp vanilla extract (you can also use vanilla bean paste or vanilla bean)
  • Cocoa powder for top

Instructions

  • Heat milk with vanilla and sugar if using. It is not necessary to boil it just make sure is hot.
  • Prepare the espresso with either the French press,  or as I do, with a simple traditional stovetop espresso maker. If you think it is too strong add some hot water to it.
  • Pour the hot milk into the French press. Cover with the top and pump up and down until the desired froth is formed.
  • Pour the frothy milk into a glass until almost full. Set aside for a minute to let the milk separate from the thick foam on top.
  • Pour the espresso over the milk and you will see how it sets between milk and foam, creating this three layer effect.
  • Sprinkle cocoa powder on top if desired and serve.

Ingredients

  • 3/4 cup fresh lime juice (about 4-5 medium limes)
  • 1/4 cup honey , or more to taste
  • 1 tbsp grated peeled fresh ginger
  • 3/4 cup apricot puree (about 5-6 fresh ripe apricots)
  • 4 cups cold water
  • Ice cubes for serving

Instructions

  • Peel and grate the ginger on the smaller grating slots of the grater.
  • Place lime juice and honey into a bowl or pitcher and stir until combined.
  • Peel apricots and mash them with a fork,  no need for a fool mash. (Make sure the apricots are ripe either wise  it will be difficult to mash)  
  • To make the lemonade combine lime juice mixture with the apricot puree, ginger and add water.
  • Add ice to serving glasses and fill each glass with lemonade. Garnish with lime pieces or slices.

Ever since I saw this recipe on SAVEUR website I was eager to give this a try. What attracted me the most was the idea to combine hot chocolate with red wine. What a brilliant idea and I never thought of it before. Who doesn’t love to delight with a cup of hot chocolate during the cold season? Or a hot wine? To combine these two is amazing.

Even though, I didn’t follow SAVEUR’s recipe. I did my own version, using good quality cocoa powder instead of chocolate and used no water during the boiling process. The reason I used cocoa powder is not only that it tastes delicious in this way too, but in the same time I avoided fat and calories which are contained in chocolate. I almost saved about 300 calories per serving using cocoa powder instead of bittersweet chocolate.
Even if this hot chocolate with wine is low fat and has far fewer calories it doesn’t loose any of its delicious qualities, it is still creamy and smooth and just perfect to be served. The combination with red wine makes it a true delight. Hope you will give this a try.

  • Bring wine to a simmer over low heat . ** Heating the wine first is optional, do that only if you want to reduce the alcohol level.  If not, simply add the wine over the cocoa and milk mixture, and bring everything to a boil.
  • Meanwhile in a bowl combine cocoa powder with sugar and salt. Add 2 or 3 tbsp of milk and stir well to combine.  Add the rest of the milk, stir well and add over the wine. Bring to a boil while whisking from time to time. 
  • Pour into your serving cups and serve.

Here is a great recipe for canned sweet cherries. This summer me and my husband had the chance to go cherry picking to one of his aunts orchard. We just went to have fun, wouldn’t have expected to really pick so many cherries. The cherries were just perfect, very firm and had nice red color, sweet, succulent and delicious. There is a huge difference in taste, texture and flavor of the fresh cherries who are just picked up from the tree.

I have decided to can some of them for the winter days. We love canned sweet or sour cherries, we serve them as a drink, or dessert, the taste is quite strong and refreshing. Actually the juice from canned cherries was the first juice my little daughter accepted to drink after milk. So this is one of the reasons I still keep doing canned cherries, as kids simply adore it.

If you don’t want to have so much juice, you can fill the jars with cherries up to 2/3 of it’s capacity. This depends on each person preference and the way is going to be served.

Canned Sweet Cherries

Canned cherries are a great way to preserve cherries over the winter. We serve them as a drink, or dessert, their flavor is quite strong and refreshing.

Ingredients

  • 6 pounds (3kg) sweet or sour firm cherries
  • lemon juice of 2 or 3 lemons
  • 4 tbsp (60g) sugar for each jar
  • 10 or 12 (27 fl oz-800ml) jars

Instructions

  • Wash the jars and lids thoroughly in hot soapy water or use your dishwasher machine. Let them drain well. Put the lids into a bowl of hot water and leave them for 5 minutes.
  • Wash the cherries in cold water. Remove the pits if desired, I preferred not to this time.
  • Fill each jar with cherries, up to 1/2 of its capacity. Add 4 tbsp of sugar on each jar.
  • Cover cherries in jar with boiled water leaving 1/2 inch head space. Squeeze the lemons and split the juice to the jars.
  • Preheat the oven to 350 F (180C).
  • Put the lids, and place the jars into a baking tray. Place the baking tray into the oven and add hot water into the tray. Leave for about 1 hour until the water in jars starts to boil, and some bubbles start to rise onto the top. Reduce the heat to 300F (150 C) and let them boil another 30 minutes. 
  • Remove from the oven and set aside to cool down. Keep them in a cool place or in your pantry until ready to be served. I like   to serve them chilled so  I refrigerate them a day before serving.
