These Homemade Eggless Churros are an amazing and delightful treat, consisting of strips of fried dough that are coated into a sugar and cinnamon mixture and served dipped in chocolate sauce or dulce de leche. Oh my… who could resist such a treat?

Churros are very popular in Spanish and Portuguese cuisine either for breakfast or as a snack throughout the day but have also become very popular worldwide and can be found on street stands in many places of the world.

Street churros can never compare though with homemade churros that can be served immediately as they are prepared, being able to enjoy their amazing texture right away. Churros are crispy on the outside while tender and airy inside, with a great flavor due to the sugar cinnamon coating. They are simply addictive and hardly can stop eating just a few.  I highly recommend making two batches as they are devoured in a matter of seconds.

How to make homemade eggless churros

The recipe is very easy to prepare and uses ingredients you basically have in the house.

Begin by whisking together sugar and cinnamon in a medium bowl, setting it aside for the perfect finishing touch.

In a medium saucepan, combine water, olive oil, sugar, and salt, placing it over medium-low heat until it reaches a gentle boil. Once the mixture is hot and bubbling, remove it from the heat and stir in the fragrant vanilla extract. Add flour and baking powder to the mixture, stirring diligently until a smooth and well-combined dough forms.

How to fry the churros

To bring these churros to life, transfer the dough into a cloth pastry bag equipped with a star tip measuring ½ inch (1cm) in diameter. Feel free to use a 6B tip for this purpose.

In a separate medium pan, heat oil over medium-high heat until it reaches a sizzling 350°F (180°C). Carefully pipe strips of dough, approximately 4-5 inches (10-13cm) long, into the hot oil. Allow the churros to fry until they achieve a delectable golden brown color and a crisp texture, typically requiring around 4-5 minutes. If necessary, flip the churros during the frying process and separate them to prevent sticking. Be mindful not to pipe too many churros at once; it’s best to work in small batches of 4 or 5.

Transfer them to paper towels to drain any excess oil. Repeat the process with the remaining dough, ensuring that every churro receives the same level of crispy perfection.

How to serve churros

Roll each churro in the delightful sugar-cinnamon mixture, ensuring that it coats the entire surface. Arrange the coated churros on a captivating serving platter, creating an irresistible display of golden goodness.

To complete this culinary delight, prepare the chocolate dipping sauce. In a heatproof bowl, combine chocolate and cream, melting them together using the bain-marie method. Once the mixture is smooth and heavenly, transfer it to a separate serving dish, ready to enjoy alongside the churros.

Ingredients

  • 1 cup (240ml) water
  • 2 tbsp (28ml) olive oil or vegetable oil
  • 1 tbsp (15g) sugar
  • 1/2 tsp (3g) salt
  • 1 tsp (5g) vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/4 tsp (1g) baking powder
  • 2 ½ cups (600ml) vegetable or canola oil , for frying

Sugar Cinnamon Coating

  • 1/2 cup (100g) granulated sugar
  • 1 ½ tsp (4g) ground cinnamon

Chocolate Dipping Sauce

  • 3.5 oz (100g) semisweet chocolate chips/chunks
  • 1/2 cup (120g) whipping cream

Instructions

  • In a medium bowl whisk sugar and cinnamon together and set aside until ready to use.

Prepare the dough.

  • In a medium saucepan add water, olive oil, sugar and salt. Place over medium-low heat and bring to a boil.
  • Remove from heat and stir in vanilla extract. Add flour and baking powder and stir until well combined and smooth.
  • Transfer the dough into a cloth pastry bag fitted with a ½ inch (1cm) star tip ( I used 6B).
  • In a medium pan heat oil over medium-high heat until hot, or until reaches 350°F (180°C).
  • Pipe about 4-5 inch (10-13cm) strips of dough into the hot oil.
  • Fry until golden brown and crisp, for about 4-5 minutes. Flip if necessary and separate churros in case they tend to stick one to another. Don’t pipe too many churros at once, work in batches of 4 or 5.
  • Transfer to paper towels to drain.
  • Repeat with the remaining dough.
  • Roll the churros in the sugar cinnamon mixture and place on a serving platter.

Prepare the chocolate dipping sauce.

  • Place chocolate and cream into a heatproof bowl and melt over bain-marie. Transfer to a serving dish.
  • Serve churros with chocolate dipping sauce and enjoy!

Some time ago, I received this recipe for doughnuts from a dear friend, and only now have I had the chance to try it out. I love it, and I’m sorry I didn’t try it sooner. My little girls enjoy these No Yeast Yogurt Doughnuts so much. These fluffy little balls of fried dough, served slightly warm and dusted with powdered sugar can make a great treat during the day or even for breakfast, alongside a good coffee or tea.

This recipe is so easy that you need less than 30 minutes to have them ready to serve. As they are made with no yeast, you don’t have to wait for the dough to rise, and there is no need to roll the dough and cut. It is very easy, you just need to mix the ingredients for the dough and it’s ready to be fried.

You can either drop teaspoons of dough in the hot oil or use a piping bag to get similar little balls of doughnuts. They can also be a perfect dish for whenever you have unexpected guests and wish to give them a warm welcome. Hope you will try these No Yeast Yogurt Doughnuts and enjoy!

How to make easy no-yeast yogurt doughnuts

Begin with whisking together flour, sugar, salt, and baking powder in a large bowl. Add beaten eggs, vanilla extract, and Greek yogurt, mixing until combined.

In a medium skillet or pot, heat oil over medium heat. Drop teaspoons of dough into the oil or use a piping bag to squeeze out 1-inch (2.5 cm) pieces of dough and cut with scissors for each doughnut.

Ever since I’ve tried cannoli for the first time in Italy I’ve been eager to try them at home. I really like to take on new cooking challenges as once fulfilled they bring me a lot of satisfaction. I kind of stay away from fried desserts but these Cannoli Siciliani got my attention and I knew I had to try them out sooner or later. And I am glad I did because I simply love them. These crispy pastry tubes are filled with a flavorful ricotta filling and dipped in chopped crunchy pistachios. Their beautiful flavor and texture combination is irresistible and you can hardly stop from eating just one.

Cannoli Siciliani is the kind of dessert that you can easily prepare in advance as you can prepare the shells even a week before serving. Every time, fill the shells only before serving so you can enjoy the crispy texture of the shells along with the smooth ricotta filling and crunchy nuts. You can always make variations to the ricotta filling, adding chocolate chips, candied fruits, different types of nuts, or whatever you like best.

How to make Cannoli Siciliani

Begin by preparing the shell dough. In a bowl add the flour, salt, cinnamon, and sugar. The butter is incorporated into the dry ingredients, using a fork or a pastry blender, until delightful crumbs form. Add egg and Marsala wine into the mixture, creating a harmonious blend of flavors. Knead the dough for a few minutes until it reaches a smooth consistency.

Shape the dough into a ball and place in the refrigerator  where it needs to rest for an hour. 

In the meantime, prepare the ricotta filling. Place the ricotta cheese in a sieve, allowing any excess moisture to drain away in the refrigerator for a minimum of 30 minutes. Transfer it to a bowl where you add powdered sugar and vibrant lemon or orange zest. Combine these ingredients and  refrigerate until ready to use.

How to shape the cannoli shells

On a lightly floured surface, roll the dough until it reaches a thinness of approximately 1/16 inch (1-2 mm). Carefully, cur circles measuring 4 inches (10 cm) in diameter. Reroll the dough until every last bit of dough has been used.

Heat about 2 inches of oil in a deep pot or fryer until it reaches 320-350°F (160-180°C). Line a baking sheet with paper towels and lightly grease the cannoli tubes with oil.

Next, roll each circle of dough into a 4.5-inch (12 cm) oval shape. Wrap the oval dough around the cannoli tube, brush one edge with egg white, then overlap the edges and press gently to seal them.

Once the oil is hot, place 2 or 3 cannoli at a time into the oil and fry for approximately 2 minutes, or until they turn golden brown, making sure to rotate them for even cooking. Place over a paper towel once ready. 

Place the ricotta filling into a piping bag fitted with a large tip and fill each cannoli shell. Dip each end in chopped pistachios and dust with powdered sugar.

Cannoli Shells

  • 2 cups (250g) all-purpose flour
  • 1 tbsp (15g) sugar
  • 1/2 tsp (1g) ground cinnamon
  • 1/4 tsp (1g) salt

  • 1 large egg
  • 1/3 cup (75ml) Marsala wine

For Frying

  • Vegetable oil (flavorless oil preferably - I used canola oil)

For egg wash

  • 1 egg white

Ricotta Filling

  • 25 oz (700g) ricotta cheese , drained
  • 1/2 cup (60g) powdered sugar
  • Zest from 1 large lemon or orange (about 1 1/2 tsp)

For Garnish

Instructions

Prepare cannoli shell dough.

  • In a large bowl sift flour with salt, cinnamon and sugar. Incorporate butter using a fork or a pastry blender, until crumbs are formed. Add egg and Marsala and stir until incorporated. Knead the dough for few minutes until smooth.
  • Form the dough into a ball, wrap the dough in plastic wrap, and refrigerate for one hour.

Meanwhile prepare ricotta filling.

  • Add ricotta cheese in a sieve over a bowl to drain, for at least 30 minutes in the refrigerator.
  • Transfer drained ricotta into a bowl, add powdered sugar and lemon/orange zest and mix gently to combine using a spatula. Refrigerate ricotta filling until ready to use.
  • On a lightly floured surface roll the dough until 1/16 in (1-2 mm) thick. Cut 4 inch (10cm) circles and set aside. Reroll the dough and repeat until all dough is used.
  • Heat about  2 inches of oil in a deep pot or fryer to 320-350F (160-180C).  Line a baking sheet with paper towels. Slightly grease with oil the cannoli tubes.
  • Roll each circle into a 4.5 in (12 cm) oval. Wrap the oval dough around cannoli tube, brush one edge with egg white, overlap the edges and press slightly to seal.
  • Once oil is hot place 2 or 3 cannoli at a time and fry for about 2 minutes until golden brown, rotating to cook evenly.
  • Lift out the cannoli shells using heatproof tongs and place on paper towels to drain excess oil. Repeat until all shells are cooked. Let cool slightly and then remove the metal tubes. 
  • Place the ricotta filling into a piping bag fitted with a larte tip and fill each cannoli shell.
  • Dip each end in chopped pistachios and dust with powdered sugar. Enjoy!
  • The shells can be stored unfilled in an airtight container at room temperature up to one week. It is best to fill them only before serving.

Everyone loves doughnuts, of all kinds, no doubt about that. As apple season is here these soft, fluffy Apple Doughnuts filled with spiced apples are simply one of the best treats you can enjoy this fall.

These doughnuts are fried plain, without any filling. I’ve prepared the filling separately, allowing you to customize them with your favorite flavors. Feel free to switch it up with seasonal fruits or get creative with options like chocolate, vanilla pastry cream, caramel, and more.

If you’re looking for a healthier option, you could also consider baking the doughnuts, although the texture may vary slightly.

How to make Apple Doughnuts

Prepare the doughnut dough by whisking together flour, salt, and sugar in a large bowl. In a small bowl, stir fresh yeast with 1 tsp sugar until it liquefies. Dissolve the yeast in 1/4 cup milk and then add it to the flour mixture.

Add the oil, egg, and the remaining milk, then knead until smooth and the dough slightly pulls away from the sides of the bowl. Cover the bowl with plastic wrap and let the dough rest for about 1 hour at room temperature until it doubles in size.

How to make apple filling

For the apple filling, place apple pieces, sugar, lemon juice, cinnamon, nutmeg, cloves, and water in a medium saucepan. Cook over medium heat for about 20 minutes or until the apples are soft. Transfer the apples into a bowl and set aside to cool until ready to use.

How to shape the doughnuts

On a floured surface, roll the dough with a rolling pin until it is ½ inch thick. Use a doughnut cutter or a 3-inch round cutter to cut out the doughnuts. Re-roll the remaining dough and continue cutting until no dough is left. Place the doughnuts on a baking sheet lined with parchment paper, about 2 inches apart. Cover them with a kitchen towel and let them rest for about 30 minutes.

How to fry doughnuts

In a bowl, mix together sugar and cinnamon. Heat 2 inches of oil in a deep pot or fryer to 320-350°F (160-180°C). Line another baking sheet with paper towels. Once the oil is hot, carefully place 2 or 3 doughnuts at a time upside down and fry until lightly golden brown on the bottom. Flip and fry the other side until golden brown. Remove each doughnut and drain it on paper towels. Repeat until all of the doughnuts are fried.

How to fill the apple doughnuts

While the doughnuts are still hot, toss each one with the cinnamon sugar mixture. Transfer the apple filling into a piping bag fitted with a plain tip. Use a skewer to create a hole on the side of each doughnut, then fill each one with apple filling.

  • 1/4 tsp (1g) ground nutmeg
  • 1/8 tsp ground cloves
  • 1/3 cup (80ml) water

Garnish

  • 1/3 cup (70g) sugar
  • 1/2 tsp (1g) ground cinnamon

Instructions

Prepare the doughnut dough.

  • In a large bowl whisk together the flour, salt and sugar.
  • In a small bowl stir fresh yeast with 1 tsp sugar until it liquefies. Dissolve yeast in 1/4 cup milk and then add to the flour mixture. Add the oil, egg and rest of milk and start kneading until smooth and slightly pulls away from the sides of the bowl.
  • Cover with plastic wrap. Let it rest for about 1 hour at room temperature (warm space) until doubled in size.

Prepare the apple filling.

  • Place apple pieces, sugar,  lemon juice, cinnamon, nutmeg, cloves and water in a medium saucepan. Cook over medium heat for about 20 minutes or until apples are soft. Transfer apples into a bowl and set aside to cool until ready to use.
  • On a floured surface, using a rolling pin roll the dough until ½ inch (1 cm) inch thick.
  • Use a doughnut cutter or 3 inch (7.5 cm) round cutter to cut the doughnuts .
  • Re-roll the rest of the dough and cut into doughnuts until no dough is left.
  • Place the doughnuts on a baking sheet lined with parchment paper, about 2 inches apart. Cover with a kitchen towel  and let rest for about 30 minutes.
  • In a bowl mix together sugar and cinnamon.
  • Heat 2 inches of oil in a deep pot or fryer to 320-350F (160-180C).  Line a baking sheet with paper towels.
  • Once hot, place 2, 3 doughnuts at a time upside down and fry until lightly golden brown on the bottom. Flip and fry the other side until golden brown.
  • Remove each doughnut and drain on paper towels. Repeat until all of the doughnuts are fried.
  • While still hot, toss each one with the cinnamon sugar mixture.
  • Transfer apple filling into a piping bag fitted with a (9 mm) plain tip. Use a skewer to create a hole on the side of each doughnut.
  • Fill each doughnut with apple filling. Enjoy!

French toast has always been one of our quick and easy favorite dishes for breakfast time. It takes no more than 5 minutes to prepare. Simply use old bread, cut it into slices, dip it into egg mixture and cook on medium heat on a nonstick pan. That’s it, so quick and easy but so delicious and comforting.

This time I have used an old baguette but any other bread will work as well as long as you let it go old. Using old bread makes the toast soak more egg mixture and hold it’s shape better while cooking.

French  toast can be served either as a savory or sweet dish. Children love this breakfast in either ways. I make French toast pretty often for my daughters as they really love it. Each time can be served differently. For sweet toasts you can choose to serve it with maple syrup, honey, jam, fresh fruits, Nutella, for the savory ones with fresh vegetables, homemade ketchup, cheese and the list can go on.

This recipe is for the sweet version, made with vanilla, cinnamon and served with powdered sugar and honey. If you want it savory simply take out the vanilla and cinnamon and add more salt.
