To make this pancake, pour the batter into a hot, buttered cast-iron skillet and bake it in the oven. Watch as it puffs up and forms a crisp edge with a tender, custardy center.

The addition of high-quality cocoa powder transforms a classic Dutch baby into a chocolate lover’s dream. It adds depth and a rich, chocolatey flavor. How to make Chocolate Dutch Baby Pancake

Begin by preheating your oven to 425°F (220°C). Place a 9-10 inch (23-25 cm) cast iron skillet into the oven for at least 8 minutes to heat.

In a bowl, whisk the eggs with sugar, vanilla extract, and salt. Add the flour and cocoa powder, stirring until well combined. Gradually add the milk and stir to combine.

Once the skillet is hot, add the butter and return it to the oven for 1 minute, or until the butter completely melts.

Remove the skillet from the oven and pour the batter into the hot skillet. Return the skillet to the oven and bake for 15-17 minutes. The Dutch baby will puff up around the edges and develop a crisp edge. It will deflate slightly after removing it from the oven.

  • Pour the batter into the prepared pan and spread evenly.
  • Divide the pan into thirds, or quarters and sprinkle your favorite toppings on the batter.
  • Bake for 13-15 minutes, until set and slightly golden.
  • Cut into 24 slices, and serve with honey or maple syrup. Enjoy.

If you haven’t tried a Crepe Cake by now you should definitely consider it. It is amazing how some basic, common crepes can turn into such an amazing and delightful dessert. I have shared with you an amazing White Chocolate Raspberry Crepe Cake made with classic vanilla crepes but now I wanted to share with you a chocolate version of the cake. So, here is the recipe for this Chocolate Mocha Crepe Cake, a cake with layers of chocolate crepes filled with an amazing mocha and mascarpone frosting.

Chocolate Crepe Cake

How to make Chocolate Mocha Crepe Cake

The recipe is very easy to prepare and requires no baking, which makes it perfect for summer days. First, prepare the chocolate crepes.

Prepare the chocolate crepes.

In a medium bowl mix whisk together the dry ingredients, flour, cocoa powder, instant coffee, and salt. In a large bowl, mix together the eggs with sugar and vanilla extract. Stir in milk, add flour mixture and mix well. Add the oil and sparkling mineral water and whisk until smooth.

Cook crepes in a 9-inch (23cm) non-stick pan over medium heat. Grease the pan slightly if necessary. Transfer each crepe to a wire rack to cool. I’ve got about 21 crepes.

Prepare the mascarpone mocha frosting

Now you can prepare the mascarpone mocha frosting, which is easy and quick and takes only a few minutes.

For this, mix mascarpone cheese until smooth. Add powdered sugar, vanilla extract, and instant coffee powder and mix to combine. In another bowl whip cream until stiff peaks form. Gently fold the cream into the mascarpone mixture and now the frosting is done and everything is ready for assembling.

Assemble the chocolate mocha crepe cake.

To assemble the cake place a bit of frosting on a serving platter and place the first crepe. Spread about ¼ cup of Mascarpone frosting. Top with another crepe and spread another  ¼ cup frosting. Repeat the process until all crepes are used. Spread the remaining frosting on top and sides of the cake, and smooth the top and sides. Refrigerate the crepe cake for at least 1 hour to set.

Make the chocolate ganache by melting chocolate with cream in a heatproof bowl over a pan with simmering water.

Use a spoon and start making drips around the edges. If the ganache hardens too much, heat it a bit over a bain-marie to get to a pouring consistency.

When you finish all the drips on the edges, fill the top with ganache and spread it evenly using the offset spatula. Refrigerate for at least 30 minutes before decorating. Decorate as desired and serve.

Ingredients

Chocolate Crepe Batter

  • 4 eggs
  • 1/2 cup (100g) sugar
  • 1/2 tsp (3g) salt
  • 1 tsp (5g) vanilla extract
  • 2 cups (480ml) milk
  • 3/4 cup (90g) cocoa powder
  • 2 tsp (2g) instant coffee powder
  • 2 ¾ cups (350g) all-purpose flour
  • 6 tbsp (80g) vegetable oil
  • 2 cups (480ml) sparkling mineral water

Mocha Mascarpone Filling

  • 2 pounds (1kg) Mascarpone cheese , room temperature
  • 2 ⅔ cups (640g) whipping cream , chilled
  • 1 ⅓ cups (160g) powdered sugar
  • 1 ½ tsp (7g) vanilla extract
  • 3 ½ tsp (7g) instant coffee powder

Chocolate Glaze

  • 4 oz (120g) semisweet chocolate
  • 5 oz (140g) whipping cream

For Decoration

  • 3/4 cup (180g) whipping cream
  • instant coffee powder for dusting
  • crushed coffee beans
  • chocolate swirls

Instructions

  • Prepare the chocolate crepes
    In a medium bowl mix whisk together the flour, cocoa powder, instant coffee, and salt. In a large bowl, mix together the eggs with sugar and vanilla extract. Stir in milk, add flour mixture and mix well. Add the oil and sparkling mineral water and whisk until smooth.
  • Heat a 9-inch (23cm) non-stick pan over medium heat. Sprinkle a teaspoon of vegetable oil or butter. Pour a small ladle of batter into the middle of the pan and with a circular move spread the batter to the edges of the pan.
  • Cook the crepe until the top appears dry. Flip over and cook the other side for a few seconds.
  • Transfer to a wire rack to cool. Repeat with remaining batter.
  • Stack crepes when cooled completely.

Prepare the mascarpone mocha frosting.

  • In a large bowl mix mascarpone cheese until smooth. Add powdered sugar, vanilla extract, and instant coffee powder and mix to combine.
  • In another bowl whip cream until stiff peaks form. Gently fold the cream into the mascarpone mixture.

Assemble the cake.

  • Place a bit of frosting on a serving platter and place the first crepe.
  • Spread with about ¼ cup of Mascarpone frosting. Top with another crepe and spread about ¼ cup frosting. Repeat the process until all crepes are used, I’ve got about 21 crepes.
  • Spread the remaining frosting on top and sides of the cake, smooth the top and sides.

Japanese Soufflé Pancakes are a unique and popular type of pancake that has gained widespread popularity in recent years. For a while now, I’ve been eager to share this delightful recipe for Japanese Soufflé Pancakes on my blog, and at long last, here it is! My family and I simply can’t get enough of these delicate pancakes; they vanish within seconds every time I make them.

As their name suggests, these Soufflé Pancakes are similar to miniature soufflés, boasting an incredibly fluffy and soft texture that’s light as a cloud. Additionally, their delicate flavor and texture will surely captivate your taste buds.

How to make Japanese Soufflé Pancakes

The recipe for these pancakes is quite simple and uses basic ingredients. However, it can be a little tricky until you figure out the best way to prepare them for your unique cooking style. Cooking time may vary slightly for everyone, depending on the type of pan you use or the heat level.

To make these souffle pancakes, first, prepare parchment paper rings and bind the ends with butter. Then, separate the egg whites from the yolks and whisk the yolks together with milk, vanilla, flour, and baking powder. In a separate bowl, whip the egg whites with salt, lemon juice, and sugar until stiff peaks form. Gently fold the whites into the yolk mixture and pour the batter into the prepared rings. Cook the pancakes over medium-low heat for 6-8 minutes on one side and 5-6 minutes on the other. Remove the parchment paper, dust with powdered sugar or maple syrup and fresh berries, and serve immediately.

Ingredients

  • 2 medium eggs , separated
  • 1 tbsp (15ml) milk
  • 1/2 tsp (3g) vanilla extract
  • 1/4 cup (30g) all-purpose flour
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1g) salt
  • 1 tsp (5ml) lemon juice
  • 2 tbsp (30g) sugar
  • oil for greasing the pan
  • fresh berries for serving , optional
  • powdered sugar and maple syrup for serving

Instructions

  • First prepare the parchment paper rings, about 3 inch (8cm) wide and 1 ½ inch (4cm) high. Bind the ends of the parchment paper with a bit of butter.  
  • Separate whites from yolks.
  • Add milk and vanilla extract over the egg yolks and whisk slightly to combine. Sift flour and baking powder and mix to incorporate and set aside to whip the whites.
  • Add salt over the whites and start whipping until foamy. Add lemon juice and gradually incorporate sugar.
  • Continue whipping until stiff peaks form.
  • Place a large nonstick skillet over medium-low heat.
  • Gently fold the whites into the yolk mixture.
  • Slightly grease the pan with vegetable oil and place the rings in the pan.
  • Divide batter evenly.
  • Pour about 1 tablespoon of water to create steam, cover and cook the pancakes for about 6-8 minutes.
  • Gently flip the pancakes, add another tablespoon of water if evaporated, cover and cook for another 5-6 minutes.
  • Gently remove the parchment paper and transfer pancakes to a serving platter.
  • Serve imediately, dusted with powdered sugar or maple syrup and fresh berries. The pancakes may deflate slightly after cooking. Enjoy!

These irresistible Double Chocolate Waffles are decadent delights with a crispy exterior and a tender, chocolate-loaded interior. Who could possibly say no?

This waffle recipe includes both cocoa powder and chocolate chips for a rich and intense chocolate flavor. Served with some more chocolate sauce on top could easily be considered Triple Chocolate Waffles. So good, so rich, so chocolaty, such a good texture balance….simply divine.

Waffles in general can be made for breakfast but these can make an amazing dessert as well. They are very easy to prepare and can be served right away which makes them a good choice for whenever you have unexpected guests or to simply satisfy your chocolate craving immediately 🙂

How to Make Double Chocolate Waffles

To start, prepare the chocolate sauce. In a medium saucepan, whisk together cocoa powder with sugar and salt. Add water and mix to combine. Place over medium-low heat and bring to a boil. Simmer for 1 minute, stirring continuously. Remove from heat, add vanilla, and set aside to cool until ready to use.

Next, prepare the chocolate waffles. In a large bowl, whisk together the dry ingredients: flour, cocoa powder, baking powder, baking soda, cinnamon, and salt. Separate the eggs. Mix the egg yolks with sugar until smooth and creamy. Add oil, one cup of buttermilk, and vanilla, and whisk to combine. Add the flour mixture and mix until well combined. Then, add the other cup of buttermilk and whisk to combine.

Whip the egg whites until foamy. Gradually add the two tablespoons of sugar and whip until stiff peaks form. Gently fold them into the batter, then incorporate chocolate chips.

Preheat your waffle iron and spray both surfaces with cooking spray or grease with oil. Pour about 1/4 to 1/2 cup of batter onto one side of the iron and close it. Cook according to your waffle maker instructions.

To keep them crisp until you prepare the others, place the cooked ones in the preheated oven at 200°F (100°C) on a cooling rack.

It’s best to serve them immediately, while still hot, with whipped cream or ice cream if desired, and with some fresh berries and chocolate sauce for a more decadent treat.

  • 1 ¾ cup (220g) all-purpose flour
  • 1/2 cup (60g) unsweetened cocoa powder
  • 1/3 cup (70g) brown sugar
  • 2 tsp (8g) baking powder

  • 1/2 tsp (3g) salt
  • 1/2 tsp (1g) cinnamon
  • 2 large eggs , separated

  • 2 cups (480g) buttermilk , room temperature
  • 1/3 cup (70g) oil (I used canola oil)
  • 1 tsp (5g) vanilla extract
  • 2/3 cup (120g) bittersweet chocolate chips

Chocolate Sauce

  • 1/2 cup (60g) unsweetened cocoa powder
  • 1/3 cup (70g) sugar
  • 1/4 tsp (1g) salt
  • 1/2 cup (120ml) water
  • 1 tsp (5g) vanilla extract

Instructions

Prepare the chocolate sauce.

  • In a medium saucepan whisk cocoa powder with sugar and salt. Add water and mix to combine.
  • Place over medium low heat and bring to boil. Simmer for 1 minute, stirring continuously. Remove from heat, add vanilla  and set aside to cool until ready to use.

This White Chocolate Raspberry Crepe Cake is one of the most delicious ways of serving crepes. It is a decadent dessert made with about 25 crepes topped one upon the other, filled with homemade raspberry jam and white chocolate cream cheese filling.

White Chocolate Raspberry Crepe Cake with Fresh Raspberries

As raspberries are in season now I chose to make this crepe cake with a raspberry filling but feel free to use any other berries or fruits to create a different impressive crepe cake each time.

How to make chocolate raspberry crepe cake

Begin with preparing the crepes. Next continue with preparing the raspberry jam for filling and chocolate cream cheese frosting. Continue with assembling the cake and let in set for at least one hour before serving.

How to prepare the crepes

In a large bowl, mix together the eggs with sugar, vanilla extract, and salt. Stir in the milk, then add the flour and mix well. Add the oil and sparkling mineral water, and whisk until smooth.

Next, heat a medium nonstick pan over medium heat. Sprinkle a teaspoon of vegetable oil or butter into the pan. Pour a small ladle of batter in the middle of the pan and, with a circular motion, spread the batter to the edges of the pan.

Cook the crepe until the bottom is light brown, then flip it over and cook the other side until light brown. Repeat with the remaining batter until all the crepes are cooked. Allow the crepes to cool completely.

How to prepare the raspberry filling

In a small saucepan, add raspberries, sugar, cornstarch, and lemon juice. Place over medium-high heat and bring to a boil.

Simmer, stirring constantly, for about 10 minutes until the mixture is reduced and thickened. Sieve the sauce to remove seeds and set aside to cool completely.

How to prepare the white chocolate filling

Place white chocolate and ¼ cup cream into a heatproof bowl and place over a pan with simmering water. Melt over low heat. In a large bowl, mix the cream cheese until smooth. Add powdered sugar and vanilla extract, then mix to combine. Stir in the melted chocolate and set aside. In another bowl, whip the cream until stiff peaks form. Gently fold the whipped cream into the white chocolate and cream cheese mixture.

How to assemble the chocolate raspberry crepe cake

Start by placing the first crepe on your serving platter. Spread about 2 teaspoons of raspberry filling on top. Add another crepe and spread about ¼ cup of the white chocolate and cream cheese filling on it. Repeat the process, alternating the two fillings, until all the crepes are used. You should use about 25-27 crepes.

Refrigerate the crepe cake for at least 1 hour before serving. Top the cake with the leftover white chocolate filling, decorate with fresh raspberries, mint leaves, and dust with powdered sugar if desired. Refrigerate any leftovers.

Ingredients

Crepe Batter

  • 4 eggs
  • 4 tbsp (60g) sugar
  • 1/2 tsp (3g) salt
  • 2 tsp (10g) vanilla extract
  • 2 cups (480ml) milk
  • 3 ½ cups (440g) all-purpose flour
  • 6 tbsp (80g) oil
  • 2 cups (480ml) sparkling mineral water

Raspberry Filling

  • 12 oz (350g) raspberries , fresh or frozen
  • 1/3 cup (70g) sugar
  • 2 tbsp (30ml) lemon juice
  • 2 tsp (4g) cornstarch

White Chocolate Filling

  • 5.5 oz (150) white chocolate , small pieces
  • 1/4 cup (60g) whipping cream
  • 10 oz (300g) cream cheese , room temperature
  • 3 tbsp (24g) powdered sugar
  • 1 tsp (5g) vanilla extract
  • 1 ½ cup (360g) whipping cream (35% fat) , chilled

Instructions

Prepare the crepes.

  • In a large bowl, mix together the eggs with sugar, vanilla extract and salt. Stir in milk, add flour and mix well. Add the oil and mineral water and whisk until smooth.
  • Heat a medium nonstick pan over medium heat. Sprinkle a teaspoon of vegetable oil or butter. Pour a small ladle of batter in the middle of the pan and with a circular move spread the batter to the edges of the pan.

If you love oranges, you must try Crepes Suzette, a classic French recipe. For this you need to prepare a flavorful sauce with oranges, caramelized sugar, and butter to warm the crepes. Then, add orange liqueur like Grand Marnier or Cointreau and flambé to evaporate the alcohol and create a stunning effect.

This impressive dessert is perfect for wowing your guests. You can even make the crepes a day in advance to save time.

How to make crepes Suzette

Begin with preparing the crepes following this crepe recipe instructions. Once cooked, fold the crepes into quarters.

Next, prepare the orange sauce. Place the sugar in a small saucepan over low-medium heat until it becomes golden and caramelized. Carefully add the orange juice, lemon juice, and orange zest. Note that the caramel will harden initially, but continue stirring to re-melt the caramel into the liquid.

Add the butter to the mixture, bring it to a boil, and then simmer for 10-15 minutes. Set the sauce aside until ready to use.

When you’re ready to prepare the crepes Suzette, pour a small quantity of the orange sauce into a skillet. Arrange the folded crepes in a circular pattern, slightly overlapping, in the skillet. Pour the remaining orange sauce over the crepes and place the skillet over low-medium heat, allowing the crepes to warm through for about 5 minutes.

Pour the liqueur over the crepes and use a torch to carefully touch the surface with the flame to flambé.

Decorate the crepes with orange peel and serve them warm, drizzled with additional orange sauce.
