These Crispy Baked Zucchini Chips are a delightful and healthy appetizer or snack option, perfect for satisfying your crunchy cravings.

Ingredients
  

  • 1 pound (500g) zucchini , about 1-2 medium zucchini
  • 2 eggs
  • 1 cup (125g) flour
  • 1 cup (140g) breadcrumbs
  • 2 tbsp (25g) cornmeal
  • 1 tsp oregano
  • 1 tsp (5g) salt

Instructions
 

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Spray some oil over the parchment paper and set aside.

  • Cut the zucchini into ¼ inch (6mm) thick rounds. Sprinkle salt over the zucchini slices and let them sit for 5 minutes.

  • Meanwhile beat the eggs into a deep plate.
  • Add flour to another plate.
  • Combine breadcrumbs with cornmeal, salt and oregano into another plate.
  • Dredge each slice of zucchini in flour.

  • Dip it in the beaten egg.

  • Coat it with the breadcrumb mixture.

  • Place the zucchini slices in a single layer on the prepared baking sheet.

  • Spray the slices with olive oil.

  • Bake for 17-20 minutes until golden and crispy.
  • Serve immediately with Greek Tzatziki sauce or with your favorite dipping sauce.
