(500g) ground chicken

small onion (80g)
, finely chopped
green onion

cloves garlic

medium carrot (3 oz-90g)
, grated
fresh parsley, half a bunch

(35g) breadcrumbs

potato ( 9 oz- 250g)
, grated and squeezed

eggs

olive oil

Instructions
Place ground meat into a large bowl.
Add all the rest of ingredients: onion, garlic, green onion, breadcrumbs, eggs, grated potato and carrot, fresh parsley, salt and pepper.
Mix until combined.
Make sure not to overwork the mixture.
How to fry meatballs in a pan.
Heat about 1 tablespoon of olive oil in a nonstick skillet over medium heat.
Take spoonfuls of chicken mixture, flatten slightly, and transfer to the hot skillet.
Cook the patties for about 4 minutes or until the bottom is golden and crispy. Flip and cook for 4 more minutes on the other side.
Transfer to paper towels to drain the excess oil.
How to bake the patties.
Preheat the oven to 400ºF (200C) and line a baking sheet with parchment paper.
Place the patties on a parchment paper-lined baking sheet.
Spray the patties with olive oil.
Bake for about 25-30 minutes or until the patties are nicely browned.
How to serve chicken meatballs.
Serve as an appetizer with your favorite dipping sauce or alongside your favorite side dishes.
Refrigerate the leftover patties.
